OCTOBER—WHEN THE YOUNGER SET GETS TO BINGE ON CANDY AFTER TRYING OUT A NEW "IDENTITY," BE IT A SUPER HERO OR HORROR CREATURE. And it's not just the littles—seems like lots of folks like to try out an alter ego this time of year. But forming an "identity" can be a lifelong process (after all, Grandma Moses found her identity as an artist in her late 70's!) Here's a lesser known secret: I was Mrs. Highlands Ranch 2013. I'd never exactly been a "beauty queen," but I gave it my all (see photo—taken on LODO's balcony!) I didn't win the Mrs. Colorado America pageant, but there were things I'd learned in that process that led me to throw myself into becoming a freelance writer, which led me to becoming an editor. I realized that once you experience rejection and survive, you find you don't actually have that much to lose—except to risk never trying—and through experimenting with one identity (pageantry) I found my way to another (writer and now, publisher.) It's all a journey, right?

DR. STEVE LEONARD IS KIND OF A BIG DEAL IN

PEDIATRIC CARDIOLOGY. He's one of only five surgeons in the state who can perform a delicate and

surgery

called “the Norwood”—a procedure

for

babies

who don’t get enough oxygen into their bodies because of a malformed cardiopulmonary system. Leonard was recently featured on CNN Headline News for operating on a Mongolian baby girl's heart—and saving her life. The story drew national attention for Leonard, who donates his time and skill free of charge, and for Rocky Mountain Children's Hospital, which provided the operating room and covered additional costs. ”I honestly don’t know why [it drew attention],” Leonard puzzles with his quiet, humble smile. "It [the procedure] isn’t anything we don't do every day.” Through his volunteer work overseas, Leonard has helped save countless lives. When his mentor and close friend, Dr. Hisashi Nikaidoh, tapped him in 2003 to be co-surgeon in San Pedro Sula, Honduras, Leonard first thought was, “What do I need to do to make this work?" Leonard had four children of his own in school at the time, but knew that ”accompanying Nikaidoh in Honduras for the 10-day mission would save even more lives and allow them to triage the most viable patients.”

What most struck Leonard was “the incredible need. I couldn’t have imagined the sheer number of young lives being affected by these heart defects—issues that are commonly treated by surgeons in the U.S.” What started out as one trip in 2003 became 13 by the year 2015. "Each trip was around 10 days. The goal was to perform 20 surgeries a week, followed by several post-op days for observation," says Leonard. "The worst part was seeing these families carrying their gravely ill children into San Pedro Sula as we were about to leave,” explains Leonard. "Patients had been pre-selected and had already been treated by the time these new families would arrive at the end of our 10-day mission commitment. We had to turn them away." Leonard says all he could do at that point was pray for the grief-stricken families. Leonard

Nikaidoh dreamed of establishing an independent, self-sustaining pediatric neonatal surgical program that could operate without the two surgeons’ physical presence. Their answer came when Dr. Victor Paz—the only pediatric cardiac surgeon in Honduras at the time—stepped up to head this program. Aligning with the foundation that Drs. Leonard and Nikaidoh worked so tirelessly to build, the program has kept the namesake of Leonard’s and Nikaidoh’s original mission in 2002: The Little Hearts Project.

EDDIE MERLOT’S - ENGLEWOOD FARLAND BOTTOMS: CHEF, WHEN YOU TAKE YOUR FAMILY OUT FOR DINNER, WHERE DO YOU GO? CHEF JOHN COX: Now that our children are grown and out of the house, my wife and I don’t out to eat all that often. The reason being is that my wife would rather I prepare the meal—because it just simply tastes better. She asked me once why that was so true. I told her that I cook love into each meal that I prepare, and that is the reason that if we do go out, I can tell that the chef does the same thing. FB: WHAT DO YOU ENJOY THE MOST BEING AN EXECUTIVE CHEF? JC: I like to create dishes. From time to time we will invite wine vendors in to give us more ideas about the pairing of wine with certain dishes. I am always looking for the best wine to go with each of our dishes. FB: WHY DO YOU THINK SO MANY OF YOUR STAFF STAY WITH YOU VS. GOING TO ANOTHER RESTAURANT? JC: More than just loyalty, I believe they stay here because they have bought into the notion of serving quality food. They enjoy knowing that the food they have delivered to the table has been made from scratch and it has that certain love and care that goes into its preparation. FB: WHAT WAS THE ONE QUESTION THAT I DID NOT ASK THAT YOU REALLY WANTED TO ANSWER? JC: You asked where we go as a family, but you did not ask why. I am very particular about where I go with my family. It has always been true that I choose the restaurant because of one thing only: quality. It does not have to be a big restaurant, as some of my favorite places are nothing more than a “hole in the wall.” I continue to go there because I know that the food is made from scratch, and it has that quality that is so often missing from some restaurants. LODO’S BAR AND GRILL - HIGHLANDS RANCH FARLAND BOTTOMS: CHEF, WHEN YOU TAKE YOUR FAMILY OUT, WHERE DO YOU GO AND WHY? CHEF JESSE SHELTON: I really enjoy going to a bistro, because I am looking back to where I started, and I especially enjoy getting a good “bang for my buck”. Also important to me and my family is both the total experience and the atmosphere. FB: I NOTICED THAT THE OTHER CHEFS ENJOY THEIR OWN MEAL CREATIONS. WHAT WOULD BE YOUR CREATION? JS: Since we are a bistro that features all styles of hamburgers, I created the 1946 Burger, which features its own combination of garlic and aioli sauce. Plus our hamburger comes fresh every day for our restaurant. People really seem to enjoy that particular burger. FB: HOW DID YOU COME INTO THE FOOD INDUSTRY? JS: When I was growing up, it was my dad who was the primary cook. He spent all his time creating new and exciting dishes. He was not a professional cook, but he just enjoyed cooking for us. I got my love for cooking from him, and in some ways, I got his creativity, as well. FB: WHAT ELSE CAN YOU ADD TO WHAT WE HAVE ALREADY TALKED ABOUT?

JS: I grew up playing hockey in Denver and our hockey coach was part owner in a restaurant in downtown Denver—we frequently went there because of the atmosphere. It was there I learned the phrase, “Inspire to always seek to help someone’s day.” My simple statement is that I always want to give more than I receive.

YOUR FAMILY OUT TO DINNER, WHERE DO YOU GO AND WHY? CHEF BRYAN ANDERSON: My wife and I always look for a restaurant that fills us up— something that gives us that “home-y” feel. Something like Italian, Vietnamese, or sushi. I don’t usually go to another steakhouse. If I want steak, I cut it myself, bring it home, and cook it. FB: “SUSHI?”—SPOKEN BY A CHEF IN A STEAKHOUSE? BA: I grew up in New Orleans, so I can eat sushi or fish every day. I was cleaning my own fish at five. FB: DO YOU HAVE SUSHI HERE AT PERRY’S? BA: We do have steak tartare and tuna tartare. FB: WHEN YOU ARE SITTING IN A RESTAURANT, DO YOU FIND YOURSELF QUESTIONING SOMETHING ABOUT THE MEAL, I.E., HOW WAS THE DISH PLATED? BA: My wife and I will frequently discuss the meal between us. “What can I do to put a different spin on this dish? What would I have added as part of the meal? Should something have been omitted and another choice added in its place?” Typically, a certain plating of a dish will spur ideas with me, about how I would have done it differently. FB: BASED ON WHAT YOU JUST SAID, COULD IT BE SAID THAT THERE IS A CERTAIN

BETWEEN CHEFS? BA: Yes. There are similarities [in their creations] because there are only so many things you can do with a dish. I think that we each are competitive in our own way—but we went into the kitchen instead of construction or painting pictures. We are hard workers, and we enjoy working with fire and knives. ROAD TRIP (CON TI N U ED) CRESTED BUTTE—WHERE MOUNTAIN BIKING ORIGINATED AND SKIING REIGNS IN THE WINTER MONTHS—IS ALSO THE DESTINATION FOR COLORADANS WHO WANT TO RESET THEIR RHYTHM IN A HIP, RELAXING HIDEAWAY TOWN. It's dog friendly, bike friendly and there's a shuttle all day long to get around town with ease, encouraging "green" travel. Stay in the condos of Crested Butte Mountain Resort and spend time in and around town throughout your stint. Fall colors are in their prime, so Kebler pass is a worthwhile side trip. The main street, Elk Avenue, is slated for visitors' eat-drink-shop cravings. See and be seen with outdoor dining options or hunker down in a private corner of a coffee shop or at a bar. Climb to the peak of Crested Butte at 12,000 feet. Hikers of all ages and sizes attempt and successfully reach the summit (it may not for little ones, though, as it requires scaling talus to reach the peak.) Allow at least 1.5 hours from the chair lift to the top of the mountain and back. As tourism is the main industry, everyone is welcoming of visitors and newbies. LOOKING FOR SOME NEW COLORADO BEERS TO QUAFF AT YOUR NEXT TAILGATE, BARBECUE OR NEIGHBORHOOD GAME NIGHT? Wilson Seawright, beer specialist at Davidsons Beer, Wine, & Spirits in Highlands Ranch, has a few ideas for you. Among his favorite trends in 2018 are the growing number of craft lagers and pilsners (“People are looking to come down from the big double IPAs and big barrel-aged beers”), the relocation of sour beers from hard-to-find bombers to readily accessible six-packs, and of course, the continued popularity of IPAs. Here, Seawright compares takes on the three styles from six Colorado breweries.

IPAs IPA is short for India Pale Ale, a style invented in Britain when sailors loaded up their beer with extra hops to act as a preservative. Today’s IPAs are defined by their hoppiness, which can be bitter, fruity, tropical, grassy or piney. For our taste test, Seawright chose beers from Vail Brewing Co.—a 4-year-old brewery owned by longtime Vail area locals—and Station 26, which opened in 2013 in a 1960’s fire station building in Denver’s Park Hill neighborhood. VAIL BREWING CO.’S GORE CREEK IPA (VAIL, 7.0%) + Gore Creek, described by Vail Brewing as “unreservedly traditional,” won a 2018 World Beer Cup bronze medal in the “American Style Strong Pale Ale” category. + Seawright says the beer has more of a malt backbone, is slightly sweeter, and has more traditional, grapefruit-forward hop notes than its competitor in the category. + Gore Creek, Seawright says, is well-balanced between malt and hops and tastes like a more traditional West Coast IPA. STATION 26’S JUICY BANGER IPA (DENVER, 7.4%) + The flagship IPA was an early hit for Station 26, Seawright says, but demand for the hoppy brew was so high that it took the brewery a while to get it into cans. + Juicy Banger is more on the tropical side of the IPA spectrum, Seawright says: mango and papaya notes with some pine notes and just a touch of honey. + Seawright says the beer is not as malty, nor as sweet, as Vail’s Gore Creek.

What once were for-the-adventurous oddities lurking in liquor stores’ back coolers have gone mainstream. Now found in six-pack cans from a variety of breweries, sours—concocted through an alchemy involving wild yeast, bacteria and special methods of fermentation—have exploded in popularity over the past few years. Seawright says they are the perfect jumping-off point for wine lovers looking to get into beer. One of Denver’s primary purveyors of the style is Crooked Stave, located in the Source marketplace in RiNo. Here they face off against Odd13, which opened in 2013 in downtown Lafayette. ODD13’S DURAZNODOR (LAFAYETTE, 4.5%) + Odd13’s kettle sour with peach and apricot tastes like an unoaked white wine, Seawright says, with loads of stone fruit flavor. + Duraznodor is not as juicy as the Sour Rosé, and it pours clear, almost like a pilsner. + A little more sour than the Crooked Stave sour, Duraznodor has a nice head that doesn’t last too long. CROOKED STAVE’S SOUR ROSÉ (DENVER, 4.5%) + Unlike a lot of sours, Sour Rosé is fermented in oak, giving it a more mature, wine-like flavor, Seawright says. + It looks like a beautiful pink rosé when poured into a glass. + More juicy and acidic than the Duraznodor, Seawright says, Sour Rosé is the perfect balance of tart and sour.

PILSNERS The classic beer style with origins in Germany and Czechoslovakia is technically a lager, known for its pale yellow color, floral hoppiness, high carbonation and crisp, bitter finish. Among the Colorado breweries offering their take on the style are River North Brewery, which opened in 2012 in the then-nascent RiNo area, and Storm Peak Brewing Co., the 4-year-old Steamboat Springs brewery owned by brothers Wyatt and Tyler Patterson. RIVER NORTH PILS (DENVER, 5.3%) + The pilsner from the recently relocated downtown Denver brewery is a favorite of staff and customers, Seawright says. + “It’s one of my favorite pilsners because of its effervescence,” he says. “It’s got a lasting head on it for five minutes easily.” + Seawright describes the River North Pils as very light, crisp and easy drinking, with a creamier mouthfeel and a hop flavor reminiscent of fresh-cut grass. STORM PEAK GAPER PILS (STEAMBOAT, 4.9%) + This American take on the pilsner style is dryhopped with Falconer’s Flight, a very lemony, aromatic hop. + It is a little darker in style and not quite as effervescent as the River North Pilsner, Seawright says. + Seawright describes Gaper as “an incredibly easy-drinking pilsner built on a light cracker malt note, balanced with a hint of citrus.”

We like taking the full circuit for moderate climbs, mild technical stretches and fantastic views. Take Grigs Road south to the Douglas County Regional Trail parking lot. Head west on the East/West Regional Trail until you come to the Buck Snort trailhead on the left. Jump off here, and stay left for the next 6.5 miles, following Tenderfoot to Badlands, for some long speedy sections of clean singletrack. As you circle the west side of the circuit, catch Outlaw trail for some tighter turns and more technical sections, again staying left at every chance. After some tight zig zags you’ll land on Longhorn Ledge. Add a short extension to Beeman Point for a panoramic view. And let it rip down Longhorn back to Buck Snort and out.
