DOMAIN CONSTRUCTION Built by women. Delivering excellence for over 16 years. DESIGN AND BUILD | REMODELS | ACCESSORY DWELLING UNITS Terri Lasater has spent 23 years in construction, and the best part is still the same: sitting down with a client and figuring out what they actually want. Domain Construction is woman-owned and woman-operated, built on the belief that the people living in a home should have a hand in shaping it. From the first drawings through permitting, construction, landscaping, pools, and lighting, her team handles every step — so you have one partner, not six. Over 600 projects later, every one comes with a full one-year warranty and a level of care you can feel long after the crew has gone.

LIFESTYLE LETTER

A Taste of What Makes North Central Hays County Home There’s something special about gathering around a table. Food has a way of slowing us down, starting conversations and bringing people together—and the stories behind what we eat and drink often tell us just as much about a community as the meal itself. That spirit is at the heart of our October Food & Drink issue. This month, we’re also introducing Built Here, a new feature celebrating the people whose vision, leadership and hard work are helping shape Hays County. We begin with Hays CISD Superintendent Dr. Eric Wright, reflecting on nine years of leadership through some of our community’s most challenging moments. His legacy is one of service, innovation and, above all, people. The people behind our local food and drink scene have stories worth savoring, too. Tamra and Travis Tindol, owners of Hays City Store and Taste on Main, have created destinations that reflect their distinctly different tastes—and their shared love of bringing people together. At Proof Liquor & Deli, Rebecca and John Hatch have built a business grounded in faith, family and a genuine commitment to giving back. From there, we head into the Hill Country. At Driftwood Estate Winery, Gary Elliott and his family share nearly three decades of perspective on a Texas wine industry they helped pioneer, watching it grow from its experimental beginnings into one of the state’s most celebrated wine regions. In Boots to Bottles, we travel to Johnson City to meet Chris Conrad, whose passion for cowboy boots, Texas culture and his new Conrad Family Wines is creating an experience that brings all three together. And because living well is about more than what’s on our plates, Connected by Community explores the friendships, purpose and new possibilities that come with community living. Parker Mayland, at Mariella of Sage Spring Senior Living in San Marcos, shares how residents often discover that some of life’s greatest joys come from connection—and sometimes, from having someone else do the cooking. We’ll also meet the team behind LZ Electrical Services and discover a wellness-inspired mocktail at Meridian with a little something unexpected behind it. Ultimately, this issue is about more than food and drink. It’s about the people who create, serve, build and share—and the connections that make Hays County feel like home. So pull up a chair, pour yourself something good, and enjoy. Cheers, JILL KING, PUBLISHER @ H AY S C I T Y L I F E S T Y L E

A California native and U.S. Army veteran, Gary Elliott brought his love of wine and craftsmanship to Texas after marrying his wife, Kathy, a proud Texas native. Together, they built Driftwood Estate Winery from the ground up on family land owned for over 75 years, planting the first vines in 1998 and establishing the winery in 2002. We remain a family-owned and operated winery rooted in the Hill Country, crafting award-winning Texas wines.

Wright’s influence on Hays CISD continues with the requirement for Hays CISD students to earn at least 40 hours of community service to graduate high school, a provision that takes effect this school year with the Class of 2027.

IN HIS OWN WORDS “It is imperative that students learn from highly qualified role models and that their talents are recognized and used as a foundational cornerstone,” Wright said in a statement about his retirement. “Achievements are evident when you set a positive learning climate that is based on excellence, fairness, equity, justice, and trust. Managing a school district is not a solitary pursuit. People want to have a voice regarding their schools, including parents, students, employees, and community members. As an educational leader, my job is to communicate and challenge individuals. Working together, we are successful when our future graduates are well prepared to be happy, productive, and competitive in the global economy.”

WRIGHT’S SERVICE IN NUMBERS • Student body grew from 19,125 to more than 25,000 • Created 2 nonprofits - the Hays Clothes Closet and Hays Hope2 • Got more than $1.5 billion in bond projects approved • Created 4 new elementary schools and the district’s fourth comprehensive high school • Expanded multiple campuses, including all 6 middle schools

Superintendent Dr. Eric Wright rang the proverbial first day of school bell for the last time in his 9-year tenure as the second-longest serving superintendent of Hays CISD. His exceptional community-building skills and loyal service led Hays CISD through tough times – the pandemic, a fentanyl crisis, a fatal school bus accident and reading score deficiencies. But his legacy will live on through his many safety and scholarly initiatives. “At the time (Dr. Wright began in 2018), we had failing schools, low staff morale, and high turnover,” said School Board Secretary Esperanza Orosco. “That all changed with Dr. Wright as a key factor. Now, we enjoy academic success; benefit from sound, thoughtful, and genuine servant leadership; and we’ve become the most employee-friendly school district in Texas.” Wright’s efforts to centralize school safety resulted in the district’s first chief safety and security officer position (a superintendent’s cabinet position), which later expanded to an entire safety and security team. He also led the effort to make all school buses in Hays CISD safer than the law requires, even though the district was not at fault in the crash that claimed the life of a pre-k student in November 2024. When Wright started, reading scores in the district were at a deficit. He implemented a program teaching students how to read on grade level using phonics as a base, and now, the district exceeds state and regional averages. Another initiative he began was striving to have 100% of its middle and high school students involved in some type of extra or co-curricular program like fine arts, athletics, student council, CTE competition clubs, or another type of student group. Long before Tamra and Travis Tindol shared restaurant kitchens, dining rooms and dreams, they shared history. They dated in junior high, reconnected 25 years later and married in 2011. Their partnership eventually became the foundation for two distinctive Hays County restaurants—and a hospitality story built on experience, instinct and grit. Restaurants were familiar territory. Travis spent years managing Flores Mexican Restaurant in Dripping Springs, while Tamra grew up with a family restaurant and was a general manager. Her grandparents owned a diner in

her small hometown of Crystal City, and she worked at restaurants through college at Texas State University (at the time Southwest Texas State). Travis calls Tamra his greatest influence, especially in understanding how to make guests feel genuinely welcome and work hard. Their first shared venture began close to home. Hays City Store, a former convenience store with a kitchen about a mile from home. “It had shuttered,” until they saw possibility in the property. Working with a “shoestring budget,” as Tamra says, they transformed it into a relaxed café and bar, serving Texas comfort food and memorable margaritas. The beginning was all-consuming. With few boundaries between business and home, every day revolved around the restaurant. Over time, the couple learned to build balance—and strong teams. What started as a 30-guest operation at “The Store” grew into a 400-seat Hill Country destination with live music and 40 beers on tap. That success was both a blessing and challenge. Their goal remained constant: food, atmosphere and authenticity that guests love. It also inspired another restaurant. Taste on Main reflects flavors and design influences gathered through the couple’s travels. Located in a century-old building in downtown Buda, the restaurant pairs exposed brick and tin ceilings with plush seating, an elegant bar and abundant natural light. A spacious back deck, known as the Treehouse, sits among four towering oaks. Where The Store embraces rustic Texas comfort, Taste offers an elevated experience with steak, seafood, pasta, wine and bourbon. The Italian steakhouse gives diners the polish of an Austin evening without leaving Buda—or encountering a hint of pretension.

The Hays City Store and Taste menus reveal the couple’s different tastes. Travis reaches for chicken-fried steak or a smash burger and margarita. Tamra favors Friday-night catfish with hush puppies and macaroni and cheese, or East Coast oysters, filet mignon, pasta marinara, and a generous Bordeaux. Running both restaurants depends on trusted managers and hands-on leadership. They remain involved in daily operations, while Travis embraces the unofficial role of “gopher” for both properties. The greatest reward is found beyond the numbers: hugs, smiles and high-fives from happy guests, along with many friendships formed around their tables. Their advice to aspiring restaurateurs is candid: experience matters, as do location, facility design, a clearly communicated vision and a thoughtful menu. It takes “a lot of work and a lot of luck,” says Tamra— and the first year can consume nearly everything. Still, the stress carries a reward. At both restaurants, Tamra and Travis hope guests leave remembering excellent food, sincere service, a beautiful setting, and, most importantly, a genuinely good evening. It’s hospitality grounded in community. For more information, visit tasteonmain.com.

The Spirits of Buda LOCAL LIQUOR BUSINESS VALUES FAITH AND COMMUNITY

If you like buying beer at H-E-B, ordering a spicy margarita at a local restaurant, or bringing home a bottle of red wine for dinner when you stop for lunch, you can thank Rebecca and John Hatch, longtime Buda community activists and owners of Proof Liquor & Deli. The two began their love story as civil servants. Rebecca was working for the Texas General Land Office and John on the campaign trail. Thirty-five years and three kids later, they have given back to Hays County in more ways than one as they’ve expanded their business. “We are community and faith-driven, which I know sounds funny because we own liquor stores,” says Rebecca Gibson Hatch. “But we do try to put our money where our mouth is. We want to be partners in the community.” Raising two sons and a daughter in Buda, the Hatches have served on numerous parent-teacher associations, booster clubs, youth sports associations and boards. John was the former Chair of the Chamber of Commerce and Rebecca is now on the Hays County Food Bank board of directors. “My favorite thing about Buda is it’s still got that smalltown feel,” Rebecca says. “The town leaders have allowed us to keep that way of life, which sets Buda apart.” The power couple just opened their third liquor store in Burleson. They came to the liquor business by way of a petition to change the laws regulating alcohol sales in Buda. In 2003, after the successful effort to allow sales of beer and wine in Buda, they created Texas Petition Strategies (TPS). “That’s how we knew there was an opportunity to open liquor stores.” John and Rebecca bought his business partner out of TPS in 2015 and have been the sole owners since then. TPS has conducted more than 500 petition drives.

Before 1999, Buda was a dry town. Since then, there have been several different alcohol elections in the area. In November 2012, voters passed Proposition 1, legalizing standalone bars and liquor stores within city limits, changing Buda’s status from a “damp” to “wet” city. Proof, one of the first liquor stores in Buda, opened in 2015 and was bought by the Hatches in 2023. But first, they opened Crystal Springs Liquor in Winona in 2011. This year, they opened a second Proof Liquor and Deli location – a 9,000-foot liquor store in Burleson, where they are “feverishly” working to open the deli. Proof’s artisanal sandwiches are another community service. From the spicy pickles in the Angry Byrd turkey sandwich, Rebecca’s favorite, to the Hammy Sammy with fried shallots–John’s number one go to. They also make house-made soups, empanadas, salads and desserts from 11am-9pm Monday through Saturday. This spring, Proof was named the “Foodie Favorite” by the Greater Buda Chamber of Commerce and the Buda Economic Development Council. As longtime members of the Buda United Methodist Church, the Hatches believe that the more they give back to the community, the more blessed they will be. Their civil service roots are a testament to

the community values by which they run their business. To that end, they always provide a family and friends’ discount to veterans and first responders. When asked about their number one way to support the community, Rebecca didn’t hesitate to call out the public schools. In addition to the countless volunteer hours they put in while their kids were in school, the Hatches are big supporters of the Hays Education Foundation, individual school campuses and organizations in and around Buda. They are also proud parents of a teacher. They attribute the Hays Consolidated Independent School District for the success of all of their children: John Robert is a systems engineer in North Carolina, Gibson and his wife Megan are attorneys in Wisconsin (who gave them their first grandchild) and their daughter, Hannah, a social studies teacher at Lehman High School in Kyle. “We are very pro public schools,” she says. “We believe that supporting our public school system is more than a political issue. Driftwood Estates Looks to the Future

Texas Wine Pioneers For nearly three decades, Gary Elliott and his family have watched the Texas Hill Country wine industry grow from a small, largely experimental enterprise into one of the most dynamic agricultural and tourism industries in the state. At Driftwood Estate Winery, they have experienced that evolution, often leading the way. As they approach 30 years of winemaking, they’ve earned a reputation for wine that goes beyond the countless Texas competitions and awards, achieving nationwide recognition and respect. What began as a relatively small operation—with roots literally and figurately planted by Gary and his wife Kathy—has grown into a winery, vineyard,

22

While the summer heat is rough on all flora and fauna here, it’s the spring freezes, diseases, and scarcity of water that pose the most serious threats to grapevines. Winegrowing in Central Texas, with unpredictable seasons, has never been for the faint of heart. Late freezes last year devastated the crop, and this year, Driftwood Estate harvested only about a ton and a half of grapes from a vineyard that can produce 60 to 80 tons in a good year. When asked if he gets stressed out by the volatility and instability, Gary dismisses the notion with a smirk: “This is farming.” CONTINUED >

and brewery that has become part of the fabric of the region. For that fabric to be sewn, early on Gary spent countless hours in Austin advocating for the legislation that would make it possible to be an operating winery, and winemakers and wine lovers alike have benefited from his labors. Gary’s daughter, Laura Elliott, has been part of the business for more than a decade, working in the tasting room before taking on a bigger role behind the scenes. Today, she handles much of the winery’s design and branding, including its wine labels and photography, as well as social media and the retail shop. That shop has become a destination of its own, stocked with wine glasses and humorous wine-themed gifts alongside Texas-inspired gifts, jewelry, hats, blankets, and products from makers and brands she particularly enjoys. But the heart of Driftwood Estate Winery remains the vineyard, which rolls out in the fields below the tasting room. The Tuscan-style views and serene ambiance have long-made Driftwood a beloved spot to enjoy a tasting or relax on a blanket with a bottle of wine when we finally feel the relief of autumn’s coolness. His smirk disappears when talking about water. The creek that once supplied water for irrigation has been dry for roughly two years. They’re now irrigating just a couple of rows at a time to keep the vines alive. It’s a sobering reality in a part of Texas where population growth has placed increasing pressure on groundwater resources. For an agricultural operation, the consequences can be immediate. A vineyard can survive a poor harvest. It cannot survive indefinitely without water. But Driftwood Estate Winery has a history of meeting challenges head-on. Gary has spent much of his career working on obstacles facing Texas grape growers, including Pierce’s disease, a bacterial disease that blocks water-transporting vessels and can kill grapevines. His work with researchers, growers, and state officials helped advance the approval of tools to combat the disease in Texas. Driftwood Estate, one of just two wineries in the region thirty years ago, is now part of a flourishing industry in the Hill Country, where visitors and locals can enjoy hundreds of wineries. And while the ongoing dryness is likely to remain a problem, the winery has plenty of wine in reserve. It hopes to always have access to high-quality grapes, largely due to its partnership with Newsom Vineyards in the High Plains. Strong harvests in previous years have produced vintages that are still being enjoyed today. Among the current standouts is a newly released Petit Verdot, a softer, fruit-forward red. The winery’s celebrated Alamo Red, a classic Bordeaux blend of all five of the Bordeaux varietals, and Longhorn Red, a Cabernet/Syrah blend, also remain favorites—with both earning top awards in major competitions. Over the years, Driftwood Estate wines have repeatedly surprised judges accustomed to the more established wine regions of California. (the Paris Wine Tasting of 1976)—several Texas wines performed exceptionally well, with Driftwood Estates leading the Texas contingent. And this year, four other Hill Country wines won their first-ever gold medals at the Decanter World Wine Awards, the largest international wine competition. As another fall approaches, visitors will come to Driftwood Estate Winery to enjoy a glass of Texas wine and take in the Hill Country landscape. Behind that leisurely experience is an agricultural operation working hard to not just survive but to thrive— and a family hoping that the next chapter of Texas wine will have enough rain to make it possible. Connected By Community Community living opens the door to friendship, purpose and new possibilities

Parker Mayland, Community Sales Manager at Mariella of Sage Spring Senior Living in San Marcos, talks about how seniors thrive in their community.

Q: What are some unexpected things residents discover they enjoy about community living?

A: Many residents are pleasantly surprised by how much they enjoy the dining experience. They love having delicious meals, lots of variety, and the freedom from cooking and cleaning. We often hear it's like dining on a cruise ship! In a broader sense, many tell us they wish they had made the move sooner because of the friendships and fulfilling lifestyle.

Q: Sage Spring recently participated in a back-to-school drive benefiting Mendez Elementary School. What inspired this event? A: The relationship is special because both the residents and students genuinely enjoy spending time together. For our residents, it brings back fond memories and provides a meaningful sense of purpose and connection.

26

M UST SE E | L I FE + C ULTU RE

The back-to-school drive is especially meaningful because Mendez is a Title I school, and many families need extra support. This is a tangible way our residents make a difference in the lives of local children.

Q: For those considering assisted living, what are some signs that it may be time to explore a move— and how can that decision feel less overwhelming?

A: Some are obvious, like frequent falls, hospital visits, or increasing care needs. Others are more subtle, like difficulty keeping up with household tasks, preparing meals, managing medications, or increased isolation after the loss of a spouse. My advice is to start exploring options before a crisis occurs. When seniors can make the decision themselves, the transition is often much smoother. Families can ease the process by focusing on what their loved one will gain: safety, support, friendship, and the freedom to spend more time enjoying life. BOOTS ARTICLE BY JULIE FUSTANIO KLING

Cowboy Boot Maker Buys Wine Castle to Boost His Brand If Chris Conrad has lived a big life, this year was the biggest. In January, he bought a castle just outside Johnson City, built a boutique hotel modeled after a Spanish colonial fortress that protected the mission system in the early days of the republic and started Conrad Family Wines. This fall he is introducing eight varieties of Texas Republic wines that his patrons can sip while immersing themselves in Texas culture at his Hill Country boot shop. A history buff and a proud fifth-generation Texan who traveled the world before starting his custom leather boot company in 2011, Conrad comes to the Hill Country from Houston. And he plans to stay, drawing on Texas history to create experiences that correlate with his brand. “We are big on the experience,” he says, adding that he wants to host a lot of concerts and events at the Republic Wine Castle. “It’s so bombastic. It really fit our brand.” His boot and leather goods shop in Houston has doubled its business in the last five years with live country music and other experiences. In the fall, he takes high end clients out with alligator hunters to harvest hides. He also owns a crocodile farm and a tannery in Mexico to vertically integrate his supply chain. Towering over US Route 290, the castle, which was only built five years ago, is an elevated experience in itself. “As you go in, it is a very elegant Texas theme,” he says. “Outside we have a Luckenbach green field. We will be doing concerts out there.”

28

In his renovations on the 37-acre property, he gave the medieval castle a Lone Star feel. He moved the winery’s fermentation offsite to Johnson City and created a honky-tonk music hall and a luxury hotel with a pool. Where there was once a dungeon, he created a bespoke wine cellar where he plans to open a small local steakhouse. “We are big on local–100 percent Texas wines and foods,” he says. In July, just before they planned to open the Presidio Hotel and the Republic Wine Castle shop, heavy rain in the Hill Country flooded the castle. “We lost some of our hotel rooms,” he says. “The hydrostatic pressure behind it made us shut down. But we made it bigger and badder.” As an engineer who used to work on multi-million-dollar oil and gas projects in Asia and Europe, Conrad isn’t daunted by floods or systems that require precision, like making wine. He caught the wine bug while living in Italy and he has been making 100 percent Texas wine for 25 years as a hobby. In fact, he sees winemaking as a natural extension of his custom boot business. “The creativity in building a boot is like building a wine,” he says. “We took existing stock that we had and we blended it to make these.” By these, he means his Texas Republic Tempranillo, Petit Syrah, Sangiovese, Pinot Gris, Viognier, Sweet Red and White, and Sangiovese Rosé.

On each label, augmented reality technology enables people to scan the image with their smart phone to tell a story about Texas history. While the history of the Republic is very much alive at Republic Boot Co., the story of wine in the Hill Country is just beginning to be told on the world stage. This year, four Texas Hill Country wineries upset the wine world by being the first Texas varietals to win gold at the 2026 Decanter World Wine Awards. (Ab Astris Winery’s Souzao 2022, the Turtle Creek Vinyard’s Tannat 2023, the Adega Vinho Winery’s Estate Tempranillo 2021, and Spicewood Vineyards’ Las Montañas 2022.) “In Texas, we are trying to educate the market on these varietals they may never have had,” he says. “It’s cool to have a Texas steak and not have to have California wine. Now you can have an excellent Texas wine to go with it.”

Powering Central Texas LZ Electrical Services builds its reputation through craftsmanship, timeliness, and personal Attention For Mathew Ellzey, becoming a master electrician began with a simple introduction. At 21, his future brother-in-law was working in the electrical trade and encouraged him to give it a try. Ellzey quickly discovered that he enjoyed the work and began what would become a nearly 30-year career built around solving problems, serving customers, and doing each job correctly. Ellzey spent more than 22 years with Fox Service Company and gained experience with a couple of other companies as well. In February 2021, he started LZ Electrical Services serving a broad stretch of Central Texas, from Buda to Kerrville. “Distance doesn’t matter,” Ellzey says. Like many business owners, Ellzey once imagined steady expansion. Experience, however, taught him that growth also brings administrative demands. “Everyone wants to grow, but I like the ease,” he says, noting that maintaining a manageable operation allows him to remain personally involved in the work. He has added limited support while keeping the company intentionally small enough to protect its dependable, hands-on service. That approach has helped LZ Electrical Services earn trust among homeowners and business owners throughout Buda, Hays County, and surrounding communities. Ellzey says the foundation of that trust is straightforward: quality workmanship and timeliness. Whether the project is residential

or commercial, his standards remain the same, with only minor adjustments for the property’s scale and needs. The company handles new construction, remodels, generator connections, electric-vehicle chargers, and other electrical services. Remodels have become an especially active part of the business, strengthened by a productive relationship with local designers Leslie Petershagen of ATX Interiors and Rudy Lopez of 1626 Construction. These projects can also uncover the most surprises. One common challenge is discovering do-it-yourself electrical work completed incorrectly—or even illegally—behind walls and fixtures. Identifying and correcting those hazards is essential to making an older property safer. Technology and changing lifestyles are shaping customer requests as well. Ellzey has seen growing interest in EV charging installations, along with some increased demand for backup-power options, particularly portable generators. Rapid development throughout Hays County has produced another trend:

homeowners upgrading builder-grade electrical features soon after moving into newly constructed houses. Although Ellzey is committed to his work, his life is not defined by electrical panels and wiring. He and his wife of 29 years, Erin, have built a close family that includes their son, Thomas, daughter, Aspen, their son-in-law, Bubba, and grandsons, Liam and Beckett. He is also a longtime car enthusiast. Over the years, that enthusiasm has remained a meaningful counterpoint to the precision and responsibility required in his electrical work. Away from work, Ellzey enjoys his dark grey Corvette Z06. He has bonded with one longtime customer over their shared passion for Corvettes. Their professional roles recently took an amusing turn when the customer, an orthodontist, put braces on Mathew. Mathew jokes, “After years of working for him, it feels a little strange to now have his hands in my mouth.” Erin is the household’s wine enthusiast, with a collection of more than 150 bottles. She and her “Wine Wednesday” ladies enjoy visiting Serrano Winery in Fredericksburg and have other Hill Country wine favorites. Mathew is the ladies’ wine chauffeur until it’s 5 o’clock, when he gets to enjoy his favorite libation – rum and Coke Zero. Through every project, Ellzey brings the same practical philosophy to LZ Electrical Services: keep the work personal, arrive when promised, and never compromise quality. In a fast- growing region, that steady approach continues to keep homes, businesses, and relationships powered. For more information on LZ Electrical services, visit www. lzelectricalservices.com.

This October, Meridian, located in Buda, TX, is featuring The Zoi Pain Killer, a mocktail built around Pain Release, one of the newest tinctures from Zoi Medicinals. Zoi Medicinals Pain Release Formula is a blend of Chinese and Western herbs designed to support the body’s natural response to pain and inflammation through multiple pathways. Unlike products that rely primarily on a single mechanism, Pain Release combines herbs with documented analgesic, anti-inflammatory, circulatory, antispasmodic, and restorative properties. Zoi Medicinals is Meridian’s sister company, producing herbal tinctures designed to support everyday wellness in a simple, approachable way. At the bar, The Zoi Pain Killer is built with hibiscus mint tea, honey, ginger beer, lime, and a brown sugar cinnamon syrup. It lands bright and refreshing at first sip, then softens into something warmer and slightly spiced. The Pain Release tincture is what brings it all together, tying the drink directly to the Zoi Medicinals experience.
