The Perfect Steak ARTICLE BY CASEY WEBER, TALL GRASS MEAT COMPANY Nothing describes summer better than a good cookout! And what is a cookout without a good, quality steak and the perfect grilling recipe? 1. Thaw and acclimate the steak. For searing to occur, the proteins in steak need to be heated to at least 310°F. Tossing cold meat onto a hot grill lowers the temperature and can prevent a crust from forming, so it’s important that any frozen steaks are thawed completely before cooking. 2. Salt your steak 30-45 minutes before grilling. This causes the salt to draw moisture from within the steak up to the surface, where it dissolves the salt and creates a brine that gets reabsorbed into the steak where it breaks down tough connective tissues. 3. Oil the grate on the grill, not the steak. Use tongs and a paper towel dipped in vegetable oil to lube your grates. 4. Manage your heat well. Remember that your grill needs to be hot for your steak to get a good sear. But if it’s hot enough to cause your oil to smoke, it’s too hot.

16

C HE F ’S SE LE CT ION | F OOD + BEVERAG E

5. Use the 60/40 rule. The best-tasting steaks are seared on both sides and cooked evenly in the middle. The simplest way to do that is to only flip your steak once. The 60/40 rule suggests that 60% of your cook time should be spent on one side, and 40% on the other. 6. Keep the lid closed. It may be tempting to peek, but trust the experts and keep it shut! Opening the lid makes your grill lose heat, which makes steaks cook unevenly. 7. Check for doneness. A meat thermometer will give you the most accurate temperature reading: • Rare: 120°F • Medium Rare: 130°F • Medium: 140°F • Medium Well: 150°F • Well: 160°F 8. Let your steak rest. Pull your steaks from the grill once they’re cooked to 5-10 degrees below your target temperature and rest for 10-15 minutes.

The Barre Method That Helps Create an Ageless Body

"If you were to look at a dancer's body from the neck down, it would be difficult to determine the age of that person. THAT is what this method does. Everything we do in the studio is intended to either strengthen or lengthen muscles. It's a winning combination. A client once said: "It's as if women who practice this method have freezedried their youthful figures." These are words spoken from Greenwich Barre Studio owner, Cindy Sites, speaking of her signature barre method, Method For Life. Sites was formerly a trained classical ballet dancer, saying barre wasn't necessarily about the exercise, but about the "beauty, grace and fluidity of movement," which she passes along to her clients. From in-studio, on-demand and zoom classes offered, there is something for everyone. WEBSITE: greenwichbarrestudio.com IG: @greenwichbarrestudio CONTINUED >

Green juice

C ULIN A RY C R E AT ION S | LOCAL SE RVICE S

Because after weeks of indulging, we’re ready for some vitamins!

The Best Green Smoothie After a few weeks of indulging in holiday celebrations, January always makes me crave some fruit and veggie packed recipes; something a bit healthier. This green smoothie is always my first starting point. Not only is it pack with nutrients, it’s filling, and delicious. Green juices often get a bad reputation but I promise you this is the best one I’ve ever tasted

IN G R E D I E N T S • 2 heads of romaine lettuce • 1/2 cup spinach (usually I just put in a giant handful) • 1/2 cup coconut water • 1 whole banana, peeled • 1 whole apple • 1 whole pear • 1 whole lemon, rind removed • ice

and I swear every time I drink it consistently, my skin is noticeably brighter. Thanks, vitamins! The recipe below requires a regular sized blender (think Vitamix) as there are many whole ingredients but it does produce two large smoothies which is great for sharing or storing in your refrigerator for the next day. Enjoy!

DIRECTIONS 1. Combine romaine, spinach and coconut water and blend to create more space in the blender. 2. Add your fruit and ice and blend until smooth. You can add more water here if you prefer a thinner smoothie. 3. Pour into a glass & enjoy!

“This green smoothie is always my first starting point. Not only is it packed with nutrients, it’s filling and delicious.”

Instructor at Club Sweat

YOU'RE AN INSTRUCTOR AT CLUB SWEAT, TELL US A LITTLE BIT ABOUT WHY YOU LOVE THAT WORKOUT AND WHAT MADE YOU DECIDE TO BECOME AN INSTRUCTOR?

CR: I had been going to Club Sweat for years before becoming an instructor and really fell in love with the classes. The short, 45-minute, full body workout has your heart pumping, body sweating, and since I could easily fit it into a busy schedule, I quickly got hooked! As a class attendee, I was inspired by the instructors and their balance of pushing the class to its limits but doing so in a fun, fast-paced environment. I guess I was so inspired, I later became an instructor myself! I wanted to share my love of the workout and hopefully motivate others working towards their fitness goals, the same way my instructors had motivated me. Club Sweat has an amazing and supportive community of instructors and members that I'm proud to be a part of.

WHAT IS YOUR FAVORITE SPOT TO PICK UP A HEALTHY SNACK/MEAL?

CR: The lemon ginger tea from Aux Délices is amazing. I highly recommend the curry chicken salad sandwich from Something Natural, or anything from Green & Tonic!

G E T ACT IV E | FI TNES S

“As simple as it sounds, my primary health and wellness goal for 2024 is working towards a strong and nourished mind and body.”

WHAT IS YOUR FAVORITE WAY TO UNWIND?

CR: For me, it’s actually the way I begin each day. I wake up early, put on calming music, light a candle, and take time to pray and reflect on all that I’m grateful for. In a world that has our attention pulled in every direction, I find it very grounding to start my day this way and help keep a positive perspective. After a long day or a tough workout, I also love a hot Epsom salt bath!

WHAT ARE YOUR HEALTH & WELLNESS GOALS FOR 2024?

CR: As simple as it sounds, my primary health and wellness goal for 2024 is working towards a strong and nourished mind and body. I started 2023 with a new year resolution to say “yes” to everything that brings joy and opportunities for personal growth. With that mindset, I’ve leaned into what is most fulfilling and have also found it increasingly simple to identify and remove what doesn’t feel additive towards my personal goals. From a fitness perspective, aside from being an instructor at Club Sweat, I also strength train at Iron Camp in Greenwich. Getting and feeling stronger has been so rewarding and I look forward to continuing that progress in 2024!

PRO-AGING IN YOUR 20S

scheduling annual skin exams, managing stress, establishing a good sleep routine, and limiting alcohol and refined sugars. Prioritize sun protection, establish healthy habits, manage stress, and consider in-office procedures like laser treatments and neurotoxins. It's time to invest in your skin's future resilience! Investing in your skin now will set the stage for graceful aging.

PRO-AGING IN YOUR 40’S

As visible effects of aging become more apparent, especially for perimenopausal women, Dr. Dolder suggests focusing on skincare ingredients scientifically proven to provide results, such as hyaluronic acid, ceramides, B5 for hydration, and retinol, growth factors, and peptides for collagen stimulation. She advocates for reducing inflammation through an antioxidant-rich diet and considering bioavailable collagen supplements. In-office dermatology procedures like fillers, Botox, and energy-based treatments become crucial for maintaining skin health. To explore advanced dermatological treatments and personalized skincare plans, connect with Dr. Sarah Dolder and her team at Greenwich Point Dermatology. This is the decade to bank as much collagen as you can!

PRO-AGING IN YOUR 50S

As you reach your 50s, a more intense approach to pro-aging becomes crucial. Address skin dryness, fine lines, and sagging with targeted skincare—peptides, B5, hyaluronic acid, and retinols take center stage. Explore options for hair growth support and consider hormone replacement therapy for overall well-being. In-office dermatology treatments, from neuromodulators to deep resurfacing lasers, offer preventive and corrective solutions. GL: What inspired you to become a public speaker and write a second book? LF: My passion for giving back, whether through benefit auctioneering or inspiring others, led me to become a public speaker. The desire to share insights on confidence, sparked by frequent questions from women asking about my journey, inspired my second book. I aim to empower others to claim their confidence because, as I believe, confidence is not born; it is made. This mission now extends to my podcast, "Claim Your Confidence," allowing me to reach even more individuals.

Their belief in trying anything without the fear of failure serves as a constant inspiration, fueling my passion for what I do. Their influence has not only shaped my professional journey but also instilled a profound sense of motivation to continuously explore and embrace new opportunities.

GL: What are some of the biggest challenges you've faced in your career, and how did you overcome them? LF: Historically, auctioneers have been male. When I trained as an auctioneer, I always thought I had to wear a black suit on stage and affect a formal British accent so I didn’t stick out. That all changed when I realized I’d be far more successful selling as myself, in my bright, bold dresses and statement jewelry and my big Southern personality. Whenever I need a reminder to claim my confidence I use the SLAM method - a surefire way to rid myself of Imposter Syndrome. • S - stop counting yourself out. • L - listen to what people are saying and don’t make up a negative ending • A - accept there are no good stars in life • M - make your point and don’t back down

GL: Describe a typical day or week in your professional life. LF: No two days in my life are the same, but they all touch my true passions: auctioneering, motivating and inspiring others, and exploring the world. I do anywhere between 2 - 4 auctions per week depending on whether I am in high season or low season, many of which I have to travel for, all while running my agency, hosting a podcast and CONTINUED > JANUARY 2 0 2 4 | C I TYL I FE STYL E . training gin auctioneers. I find time to do some sort of exercise every day whether that be running or biking - or simply walking to school drop off and all my meetings in NYC which can easily mean 5-6 miles of walking. Exercise is a huge priority for me - the way we show up for our body is the way we show up for everyone around us.

GL: How do you balance your work and personal life? LF: I don’t believe a true work life balance exists. I prefer to think of the balance as sprint & plateau periods. My job is SO busy in the prime auction season (fall and spring), I spend every minute when I am not onstage or traveling with my family. During the slow periods I have more coffee meetings, informational interviews and lunches. In the off seasons, I make it my mission to travel with my family as often as possible. Throughout the year, though, I find that open communication with both your partner and your kids is crucial - especially when there are very busy periods.

GL: Can you share details about any current projects you're working on? LF: I’m thrilled to have just announced my first, annual “Claim Your Confidence Retreat”, which will be held in January at Shou Sugi Ban House in the Hamptons. If you are looking to kickstart 2024 with a boost of confidence and a road map to help you get there, this retreat is for you! I designed the retreat as an intimate gathering to help attendees build their confidence from the inside out. I’m taking many of the concepts I discuss in my books – from networking to the art of negotiation to public speaking – and turning them into interactive workshops and oneon-one discussions that will arm attendees with the tools they need to kick-off the New Year with intention and confidence. My hope is that everyone who attends this retreat will leave feeling rejuvenated and ready to jump into 2024 with a clear vision of their goals, and a roadmap for how to achieve them.

GL: With January being our Health and Wellness issue, what would you say to inspire people who have made a resolution to change their approach or mindset going into 2024?

LF: Start by writing down your three biggest priorities in life, and then make sure that whatever you are pursuing in 2024 aligns with those values. Always remember that you can change your life at any time, and that anything is possible when you see roadblocks as hurdles instead of barriers. Every single choice you make in life is yours to make, so make the choices that allow you to live the life you want. JANUARY 2 0 2 4 | C I TYL I FE STYL E . C OM/ G R E E N W I C H

A Cleaner FUTURE NEW ENGLAND PROPANE HAS AN A+ RATING FROM THE BETTER BUSINESS BUREAU FOR GOOD REASON

ropane may be the most versatile fuel on the planet. It can be used to keep homes and businesses warm, heat water, fuel on-road and off-road vehicles, and much more. Perhaps most importantly, propane has a lower carbon intensity and is significantly cleaner than other fuels. Renewable propane, which can be made from plant material, food waste and recyclable plastics, has the same chemical makeup as nonrenewable propane, which means not only is it cleaner, but it is future-proof as well, and will become more commercially available in the coming years.

And, propane is not only a cleanair fuel, but it also keeps working when the electricity goes out. As founder and owner John Barry III says, “It really is a great energy source and solution, and we are proud to be able to offer and support it.” New England Propane was founded in 1988 in Greenwich, formerly called Greenwich Propane. Barry is a Greenwich native, having grown-up here. Fun fact about Barry? He is an accomplished world-class sailor who has sailed around the world one and a half times, as well as an avid skier and sportsman. The company provides propane and customized propane

solutions for all residential and commercial applications, servicing all of Fairfield County, parts of Litchfield, New Haven counties in Connecticut, and portions of Westchester, Putnam, and Dutchess counties in New York. Their business approach is simple: “We have two overriding principles in the way New England Propane does business,” Barry says. “We provide exceptional service every chance we get, and we treat everyone the way we would wish to be treated ourselves.” WEBSITE: newenglandpropane.com FACEBOOK: New England Propane Co., Inc.

Empowering Tomorrow’s Leaders

GIRLS WITH IMPACT UNVEILS INSPIRING SERIES FEATURING RISING STARS IN BUSINESS AND BEYOND

ARTICLE BY LAURA SABIA

Girls With Impact, founded by Greenwich resident Jennifer Openshaw, is on a mission to empower young women with the essential skills, tools, and networks needed to thrive in the world of business and beyond. As a local nonprofit based in Greenwich, Girls With Impact is dedicated to fostering the growth and development of the next generation of female leaders. We are thrilled to announce an exciting new series that will showcase and celebrate the inspiring stories of girls who are reaping the benefits of this impactful program, highlighting their achievements and the positive impact they are making in their communities. Join us in championing these young trailblazers throughout 2024 as they embark on their journeys toward success and leadership.

Sydney Fulton, 20 Hometown: Windsor, CT Studying at Howard University

GL: WHAT DID YOU END UP FOCUSING ON AFTER THE GIRLS WITH IMPACT PROGRAM?

SF: Although I didn’t finish out the venture I designed and created with Girls With Impact, I was able to create another one. My venture is called HUE Corp and I created this program during my senior year of high school. HUE Corp focuses on the upliftment and empowerment of young black girls throughout the matriculation of their high school careers. It teaches them to rise above all of life's challenges that they face because of who they are and be their true unapologetic selves.

GL: ARE THERE ASPECTS OF THE PROGRAM THAT YOU FOUND PARTICULARLY CHALLENGING OR REWARDING?

SY: Growing up I have always been shy. I grew up very creative with many ideas and ways of thinking. Girls with Impact challenged me by stepping out of my comfort zone and pitching to people something that was important to me at the time, which was fluffy headbands. It is rewarding to this day because being challenged to speak on my passions plays a partial role in why I can easily voice what I care about, what I am passionate about, and overall explain to others the importance of my words and what I have to say.

GL: HOW HAS GIRLS WITH IMPACT HELPED YOU PERSONALLY OR PROFESSIONALLY?

SY: Girls with Impact impacted me professionally because it was my first look into being an entrepreneur. It exposed me to what it takes to run a business and what knowledge I needed to know. It also pushed me to imagine things for myself that I didn’t believe I would like had I not been a part of the program.

H E A LT H Y T I P S fo r t h e NEW YEAR inging in the new year also comes along with new R resolutions to encourage ourselves to become the best versions of ourselves. It is a great opportunity to look to ourselves, yet placing an excessive emphasis on your New Year’s Resolution will ultimately be met with disappointment. So many New Year’s Resolutions, and goals in general, fail when they lack specificity, a plan on how the goal will be achieved, accountability, and when the goal is unrealistic. To ensure success, try creating a small goal focusing on one habit that you’d like to address. This small goal can be reassessed and modified periodically as you are seeing your desired change. Finally, during this time, there are many promotions for different fad diets. Fad diets are proven to not be effective in sustainable weight loss and most have undesired associated health consequences. Various characteristics of a fad diet to look out for include promise of an increased amount of weight, specifically in a short window of time; requirement of the elimination of a particular food group; promotion of one specific food or food group; and encouragement of a particular product or liquid meal replacement. Given the promised results, participating in a fad diet can be tempting; however, it is essential that lifestyle changes are sustainable. Unfortunately, the faster weight loss is achieved, the faster you will gain it back when your behaviors deviate from the diet; therefore, sticking to small changes at a time can promote an overall more healthful and sustainable outcome.
