August Kids and Pets Issue As summer begins to wind down and the start of school commences, the carefree days of slower morning routines and spending more time adventuring is exchanged for busier school and sport routines and schedules. The summers tend to progressively feel like they fly by the older we get, as do the years, but the simple pleasures of summer never get old. Although the routine of school for our children is often a welcome friend by the time August rolls around, it is generally a little bittersweet. Our August issue is dedicated to the cutest members of our community— kids and pets. They both have a way of making us feel special and their loyalty and sense of wonder is refreshing. In this issue, we are highlighting kids who are making a difference in our community. We also wanted to share a few of our go-to spots to enjoy with kids and fur-kids. As summer comes to a close, we hope you are able to take some time to relax and spend time with the ones you love.

When she was just 11 years old, Isabella Long decided to start chasing a childhood dream of becoming a professional ballerina. Now, as an 18-year-old, Long, a former Riverside resident, is still chasing that dream, after graduating from Ellison Ballet in New York City. Long recently signed a contract to join and train with Houston Ballet’s second company, Houston Ballet II, one of the top companies in the country. When Long was just three years old, her parents enrolled her in her first ballet and tap classes. Long tells us she gradually began to gravitate more towards ballet than any other type of dance or sport because of the versatility, the technicality, the fluidity, and the work ethic needed to excel as a ballerina. She later found her way to Greenwich Ballet Academy, where she trained for a number of years. Long credits the studio for helping her to find a sense of community, even in a competitive environment. “The dance community taught me a lot,” Long said. “It’s so important to keep in contact with those people and see how they grow and how we all support each other.” Training at Greenwich Ballet Academy also helped Long to envision the opportunities out there for her. She said many of her peers at the academy were also beginning to think about dancing professionally, which helped her to find Ellison Ballet.

At 13, Long and her family made the decision for her to move to New York City to attend Ellison Ballet, a professional training program for students aspiring to a professional career. At Ellison, Long trained every day from 10:30 to 4:30, and had to learn to manage schoolwork on top of dance. “It was definitely very difficult to balance, but you just have to be really disciplined to get it all done,” Long said. Long said transitioning to Ellison and not living at home was a big adjustment, yet it helped to have family just an hour away. Now in Houston, Long said she will only come home every six months, with her family visiting occasionally. Though, for Long, it was an opportunity she said she couldn’t pass up. “I really loved the teachers, the studios, and the environment in Houston,” Long said. Yet, Long’s time as a dancer has not been without some challenges. In 2020, Long suffered a stress fracture in her second metatarsal and, due to COV ID-19, she had to wait to see a doctor and be diagnosed. A fter having to wear a boot for eight weeks and intense rehab, Long said she then tore a ligament in her hip. During this time, Long still had to
attend Zoom training classes but wasn’t able to dance, which she said she found to be tough. “It was really the getting back into dancing that I think was the most difficult,” Long said. “Because you’re healthy again and you want to do everything, but you don’t want to injure yourself again.” Long said along with the physical toll ballet has taken, she’s had to also learn to manage her mental health and credits her friends for helping her through difficult periods. “They’re going through the same problems as you so it’s so helpful to have good friends as an answer,” Long said. In thinking about the future, Long doesn’t have a set plan and is taking things as they come. Yet she said an ultimate goal would be to dance and travel in Europe. And even with the little free time Long has, she said she enjoys spending time with friends and family. For younger dancers with similar passions and goals, Long said they should never doubt their abilities. “I think it’s worth it to keep going,” Long said. “The end result of whatever you want to do with your abilities in the dance world or in ballet, I think it can really pay off in the end.”

Portland is a coastal oasis, a walkable city with award-winning restaurants, art galleries, locally-owned boutiques and shops, and great breweries, there is a ton to do and see in this amazing, small city. The Portland Harbor Hotel is in the heart of Portland’s historic Old Port district one block from the waterfront. With it’s central location it is the perfect place to stay and enjoy the great walking city. Pro tip: bring sneakers and plus the hotel is pet friendly. Our sweet pup, Jasper really enjoyed not having to stay home and miss the trip.
Located in the hotel is the Harbor Bistro + Terrace, nestled at the Portland Harbor Hotel in the heart of the Old Port District, it is not your typical hotel restaurant. The unique layout of a dining room and lounge together with a private, secluded terrace, offer an elegant and exclusive setting on Portland’s competitive restaurant scene. It was at about this time in the trip we learned that Portland was a culinary lovers dream! The menu is imaginative while using the humble ingredients sourced from local farmers, fishermen and foragers creating a dining & entertainment option that redefines what it means to be “a hotel restaurant.” Offering local, coastal cuisine, Harbor Bistro+Terrace is a great place to come together, eat well, and feel at home. When you are finished with the perfect lobster roll it is time to go enjoy the most beautiful Portland sunset. Head on over to Bud Light Park. It is about a 10 minute drive from the hotel and one of the best sites to be seen. We curated a small list of some of our favorite and can’t miss spots in Portland. What a bustling tiny city full of love and delicious food. Continue on in the pages of this issue to see the opposite experience on a Maine’s favorite tiny island, Diamond Cove. Take the two trips back to back and it is the perfect combination of fun and ultimate relaxation.
Must visit spots in Portland Central Provisions: make a reservation, this restaurant is a must. Delicious cocktails, perfect small plates, top notch service and an incredible atmosphere. Eventide: a seafood joint that gives you the authentic summer-inMaine year round known for local oysters, the lobster roll and the crab roll. They don’t take reservations so be prepared to wait a bit. Tandem Coffee: Became our go-to coffee spot, you can’t go wrong with any of their food but highly recommend the egg sandwich (available until it runs out so don’t sleep in). Wharf: located on the warp in the Old Port neighborhood, this upscale seafood restaurant should be one of your stops for a dozen (or two) of oysters. Root Wild Kombucha: a local kombucha brewery with and without alcohol makes it a great pit stop as you walk through the city exploring. Eastern Promenade: perfect for a walk or run along water, it’s a great spot for a picnic where you can take advantage of the local food trucks. Western Portland Promenade: After picking up your morning drink from Tandem Coffee, take advantage of this lovely walk.

A Maine island getaway rich with history and natural beauty, The Inn at Diamond Cove is on Great Diamond Island in Casco Bay. Just a 30-minute ferry ride from Portland’s Old Port district, the Inn is the centerpiece of Diamond Cove, a small private island community of beautiful condominiums that was once Fort McKinley, a military base built between 1891 and 1907 to defend Portland Harbor during the Spanish-American War. This off-thegrid location is perfect for those that want some R&R in nature with limited phone service. With no cars allowed, be prepared to bring everything you need on the ferry with you. Pro-tip: pack a cooler with snacks, drinks and anything you might want, most units come equipped with a fridge and select with kitchenettes. Ferries do run all day but you’ll likely want to stay put. Don’t forget to pack books and bug spray! Fill up on delicious food in Portland and then head on over to The Inn at Diamond Cove for the ultimate relaxation vacation. Spend some time relaxing at one of the many small and secluded beaches, most are equipped with lounge and Adirondack chairs. The Inn at Diamond Cove features onsite dining, for breakfast don’t skip on the blueberry pancakes and for dinner we recommend the crab cakes. Although ferries do run all day, you’ll likely want to stay put. Aside from the hotel, there are only two additional on-island dining options including the Crown Jewel. This restaurant offers seafood with a twist, and features adorable pink island decor. The Diamond’s Edge Restaurant and Marina offers more traditional seafood fare, with a view overlooking Diamond Cove. Post-dinner, enjoy a stunning sunset at Sunset Park and head back to the Inn for a night-cap at the fire pit and mingle with other guests.

Grilled Corn Salad Yield: Serves 4-6
Ingredients • 2 ears corn, grilled and cut from the cob • 1 small shallot, thinly sliced into rings • 1/4 cup fresh feta or goat cheese, crumbled • 3 sprigs basil, leaves removed and torn • 1/4 cup extra virgin olive oil • 1 tablespoon red wine vinegar • Black pepper to taste • Jalapeño, thinly sliced (optional) Instructions • Place corn kernels into a bowl with the rest of the ingredients and stir to combine. • Taste, and re-season with salt, pepper, and vinegar to taste.
Steak with Chimichurri Sauce Yield: Makes about 1 cup Ingredients • 1 cup (packed) fresh Italian parsley • 1/2 cup olive oil • 1/3 cup red wine vinegar • 1/4 cup (packed) fresh cilantro (optional) • 2 garlic cloves, peeled • 3/4 teaspoon dried crushed red pepper • 1/2 teaspoon ground cumin • 1/2 teaspoon salt Steak • 1 ½-2 pounds flank steak, or steak of choice Instructions • Make sauce: Puree all ingredients in processor. Transfer to bowl. (Can be made 2 hours ahead. Cover and let stand at room temperature.) • Preheat grill to medium-high heat. Sear steak for 6-8 minutes on each side until heavily browned on the outside and slightly pink in the middle. • Thinly slice steak across the grain and top with Chimichurri sauce.
