AROUND TOWN with exposed brick. Sweetgreen worked with local artist Naomi Clark to create custom artwork for the Greenwich location that uses bold coloration, fragmented forms, and gestural brushstrokes. For every meal sold on opening day, sweetgreen donated a meal via their Impact Outpost program to the Carver Center in support of food-insecure children and families in Port Chester, New York. In solidarity with the movement for Black Lives, sweetgreen also donated meals to the NAACP in Port Chester, New York.
THE CAFÉ AT GREENWICH LIBRARY NOW OPEN The Café at Greenwich Library is run by Abilis as a competitive employment program and provides those with special needs meaningful employment, an opportunity to learn important job skills and to be gainfully employed. As a nonprofit, Abilis supports more than 700 individuals with special needs and their families from birth throughout their lives. The Café at Greenwich Library, has been newly remodeled as part of the ongoing Reimagine, Renew and Repurpose renovation project.
MASON STREET'S SWEET NEW SPOT Pastry chef, Raphaël Dequeker, opened Raphaël's Bakery just days before Christmas. The bakery makes you feel as if you are in a French village, featuring baguettes, croissants, brioches, and macarons. Raphaël said everything will be baked on site, using only the finest quality ingredients, including Les Moulins de Paris flour imported from France. Even the Bongard oven is from France.

GL: WHAT INSPIRED YOUR INTEREST IN COOKIE-MAKING? EV: So, I have been using a sugar cookie recipe that has been passed down from my Grandmother. I can remember baking these cookies when I was young with my mom for all of the holidays! I started baking and selling cookie orders for Pour Some Sugar on It two years ago. GL: WHAT WAS THE FIRST COOKIE YOU EVER BAKED? EV: I’m not sure I can recall the very first cookie I ever baked, but the first cookie I baked for Pour Some Sugar on It were watermelon-shaped cookies. GL: WHEN DID YOU DECIDE TO TURN YOUR PASSION INTO A CAREER? EV: I baked cookies for a get-together with my friends, and one of my closest friends asked me why I haven’t sold them. That is when the lightbulb went off and Pour Some Sugar on It was founded.
GL: WHAT’S THE MOST UNIQUE COOKIE YOU’VE EVER BEEN ASKED TO DESIGN? EV: This story makes me chuckle every time I think about it. I was asked by a customer to make an order of cookies for her daughter’s birthday. Her daughter happens to be in medical school at NYU and the customer requested I make sperm and ovary cookies. It was a riot and I’m pretty sure I laughed the entire time I decorated them!
GL: WHAT’S THE AVERAGE TIME IT TAKES YOU TO FULFILL A COOKIE ORDER? EV: For a custom order, I require at least a week’s notice in order for me to gather the proper supplies/ cookie cutters/sprinkles/food coloring/exc that I would need. From start to finish, it takes me about 3-4 hours to bake and decorate a dozen cookies (this all depends on the design and amount of colors used).
GL: WHAT’S YOUR FAVORITE COOKIE PROJECT YOU’VE EVER MADE? EV: To date, my favorite cookie project I’ve ever made were the cookies I created for Pure Barre Darien’s six year anniversary. Pure Barre has been near and dear to my heart for over a decade (and I happen to be an instructor!). They were incredibly fun to decorate, and it was even more exciting to see how impressed the clients were at my work.

Roasting a chicken shouldn’t be intimidating and is something I think everyone should know how to do. It’s a staple in our house. It’s perfect for a small dinner party because it’s hands off and if roasting for the family it leaves lots of leftover chicken for meal prep. Our favorite way to prepare a roast chicken is to spatchcock the chicken beforehand by removing the spine and rib bones. We recommend buying the chicken at OG Butcher or Fleisher’s Craft Butchery and having the butcher do this for you – or you can simply skip this step.

1) Heavily salt chicken, cover loosely and refrigerate for at least one hour but overnight will yield the best results. If you have time, you can leave overnight for the perfectly tender roast chicken. Once ready to cook wipe off excess salt and pat dry before roasting. 2) Preheat oven to 400°. 3) Season chicken. Add garlic and herbs under the skin of

the chicken. + ¼ cup salt + One 3-4-lb chicken + 3-4 garlic cloves, chopped + 1 tsp fresh rosemary + 1 tsp fresh thyme + ½ tsp fresh ground pepper + ½ tsp salt + 1 lemon, sliced in pieces about ¼ thick + 1 onion, sliced in pieces about ¼ thick + 2 carrots, cut in chunks
4) Cover the bottom of cast iron skillet with a bed of sliced onions, carrots and lemon. 5) Set the chicken on top of the bed of onions, carrot and lemon breast side up, tucking in the wings so they don’t burn. Roast for 20 minutes. Turn the bird over, and roast breast side down for 20 minutes. Turn it over again and roast breast side up for another 20 minutes or until done. 6) Let the meat rest, tented, for 15-20 minutes before carving.

CRISPY SMASHED P O T A T O E S
1) Bring salted water to a boil in a heavy bottomed pot. Once boiling, steam potatoes in a steamer attachment for 10 minutes. Let cool for a few minutes. 2) While potatoes are steaming. Sauté onions in oil in a cast iron pan over medium-high, in about 2 tablespoons of oil, until golden brown and crispy. Set aside. 3) On a large cutting board, press the steamed potatoes with the bottom of a large glass until smashed. They should be flattened but not falling apart into pieces.

4) Heat remaining oil in cast iron skillet (making sure all onion debris is removed). Once oil is hot, lay potatoes in skillet, making sure they don’t overlap, season and fry for about 4-5 + 15-20 small new potatoes + 1/4 cup avocado oil or peanut oil + 2 Tablespoons + 2 large yellow onions cut into rings + Salt
