AS NOVEMBER ROLLS AROUND, WE’RE ANXIOUSLY AWAITING THE APPROACH OF THANKSGIVING, THE HOLIDAY SEASON AND TIME SPENT WITH OUR LOVED ONES. The winding down of the year always brings about a time of reflection for us— remembering everything we’ve done or accomplished in months past; looking back on turkey disaster stories, mornings watching the Thanksgiving Day parade or afternoons spent curled up on the couch after one too many pieces of pie; thinking of the people, experiences and things we’ve been blessed with in the last year. As we press pause on the hustle and bustle of life putting together a monthly magazine, we’re able to look back on the past year and, most meaningfully, the stories from all of you that have made what we do possible. We also take this chance to think of those less fortunate and encourage you to take the opportunity this giving season to donate to local organizations or charities giving back locally. ALS Association Nevada Chapter EVERY STORY ADDS UP 10

THERE ARE MANY DISEASES IN THE WORLD.
BUT HOWEVER MANY THERE ARE, THERE ARE ALWAYS PEOPLE THAT WILL HELP. One of these diseases is ALS, and the people helping is the ALS Association Nevada Chapter. ALS, or amyotrophic lateral sclerosis, is a frightening
illness that works by affecting the nerve cells in the brain and spinal cord. As ALS progresses, the nerves in your muscles get progressively weaker, until even the simplest of tasks become impassible mountains. You may also know ALS as Lou Gehrig’s disease; this baseball all-star was some people's first exposure to ALS. Lou was diagnosed with the most prominent type of ALS, which progressed quickly, yet he still made the most of his time. And it's not just far-off individuals who have been afflicted by this disease. In our state of Nevada, 160 people have been diagnosed with ALS. And that's when this story gets a little brighter. The ALS Association Nevada Chapter has helped 88 of those currently afflicted, as well as the families of those who have passed. The organization has three multi-disciplinary clinics that are specially tailored to treat with this illness of epidemic proportions. This nonprofit also takes continuous action to silence ALS forever with sizeable donations and contributions to research. ALS Association Nevada Chapter has helped people with ALS and their families have access to consistent care, treatment and services. ALS Association seeks to discover treatments and a cure for ALS and to serve, advocate for and empower people affected by ALS to live their lives to the fullest. And you can help too. More than 180 walks take place in communities across the country from February through November. Walk to Defeat ALS draws people of all ages and athletic abilities to honor a loved one with the disease, to remember those who’ve passed and to show their support for the cause. The ALS Association Nevada Chapter has a walk taking place this month as well as a charity golf tournament, Drive to Defeat ALS Golf Classic, in May at TPC Summerlin. Consider participating for this worthy cause.

INGREDIENTS ++ 2 packages fresh cranberries ++ 1 cup brown sugar ++ 1 orange, zested and juiced ++ 3 clementines, juiced ++ 1/2 teaspoon ground cinnamon ++ 1/4 teaspoon ground allspice ++ Pinch of salt
DIRECTIONS 1. Mix cranberries, orange zest, orange and clementine juice, cinnamon and allspice together in a saucepan; bring to a boil. Reduce heat, add sugar and simmer until cranberries pop and sauce is thickened, about 15 minutes. 2. Transfer sauce to bowl and refrigerate until chilled, at least 1 hour. Serve at room temperature. 3. Garnish with zest or mint sprig. Note: This is great to make the night before.

FANCY APPLE TART
Grandma May's Fancy Apple Tart
INGREDIENTS Any pie crust dough will work. You will need enough for a top and a bottom. ++ 3 large apples, peeled and thinly sliced ++ 1/3 cup sugar ++ 1 teaspoon vanilla extract ++ 1/4 teaspoon allspice ++ 1 teaspoon cinnamon ++ 2 tablespoons unsalted butter, melted ++ 1/8 teaspoon salt ++ 1 tablespoon flour
DIRECTIONS 1. Drape dough over rolling pin and transfer to 9or 9 1/2-inch fluted tart pan. A pan with a removable bottom is best. Fit dough into bottom and up sides of pan as evenly as possible and press off excess dough from fluted rim. Set tart pan on baking sheet and place in refrigerator for 15 minutes. 2. In a separate bowl mix, apples and filling ingredients. 3. Arrange apples evenly. 4. Lay reserved dough strips in a lattice pattern on top of tart. 5. Preheat oven to 350 degrees F. Set oven rack in center position. 6. Bake for 55 to 65 minutes, or until apples are tender and crust is golden and cooked through. 7. Transfer pan to rack and let cool.

THANKSGIVING IS A FANTASTIC TIME FOR FRIENDS, FAMILY, FOOTBALL AND OF COURSE GOOD FOOD. While I'm not that much of a sports guy myself, more than half of my family seems to be unable to resist the back-to-back football games. Even if sports aren't your scene, it's a pretty fun time with the constant stream of appetizers flowing from the kitchen as well as the main attraction: the Thanksgiving turkey. I usually take Thanksgiving to do some silent reflection and counting of my blessings as I help out in the kitchen. Thanksgiving has been hosted at my parents' house for as long as I can remember. From sides like Aunt K's cranberry sauce and Grandma May's apple tart, (see the Thanksgiving recipe article in this issue) to the pièce de résistance of the turkey and stuffing, it's always equal parts frantic and fun to help prepare the Thanksgiving feast. Yet the feasts and splendor of the night pale in comparison to the monumental feats that are on display as sandwiches the day after. CONTINUED >

The day after Thanksgiving, the whole family will go to the store and select their bread—nay, thrones—on which their toppings shall sit. My personal favorite is sourdough, and my dad's and uncle's is pumpernickel and of course, wheat bread is thrown into the mix. Then, armed with the humble beginnings of the mighty beasts, we will create sandwiches for the coming hike. We bring out all of the food from the night before: casseroles, turkey, mashed potatoes and cranberry sauce—all lined up, the perfect ingredients. With the grace of an artist possessed by a madman, these concoctions are created, capable of bringing delirium to any sane man or woman. And when completed, these sandwiches—works of art—are packed away in Ziploc bags and thrown in packs. After that, the true fun for the day starts. You see, while most families will spend the day after Thanksgiving shopping Black Friday deals, we drive down to Red Rock and try to work off last night's gluttony. The beauty of nature, peaceful and clear air all around. It truly is the perfect family tradition. Red Rock Canyon National Conservation Area lies in Nevada’s Mojave Desert and is located 17 miles west of the Las Vegas strip on Charleston Boulevard/State Route 159. The area is 195,819 acres of great scenic views and natural beauty. It’s known for geological features such as towering red sandstone peaks and the Keystone Thrust Fault, as well as Native American petroglyphs. Panoramic viewing spots dot the 13-mile scenic drive. Red Rock Canyon has more than 30 miles of hiking trails, rock climbing, horseback riding, mountain biking, road biking, picnic areas, nature observing and visitor center with exhibit rooms and a bookstore. The sheltered Ice Box Canyon, one of my personal favorites, has seasonal waterfalls. After walking the trail for a while, we stop and eat the sandwiches we made that morning. Our whole family loves the outdoors, so going Red Rock Canyon and spending the majority of the day there is truly a treat. While our tradition remains the same, our trail does not. Some years we venture out and follow the Willow Springs Loop. Other years, we brave Ice Box Canyon, Fossil Ridge Loop or the easy Lost Creek and Children's Discovery Loop trail. Whatever the trail, even at times other than Thanksgiving, it helps us be thankful for our family and each other's presence. So whatever your family traditions are, take time to be thankful this holiday season. And have a Happy Thanksgiving! 22

DIRECTIONS Combine maple syrup, whiskey and bitters in an old-fashioned glass until syrup is dissolved. Add a single large ice cube and garnish with orange peel and cinnamon stick, if desired.

+ 1 1/2 ounces vodka + 1 1/2 ounces Baileys Irish Cream Pumpkin Spice Liqueur + 3 ounces cereal milk (steep cereal of your choice—we like pumpkin spice Cheerios— in milk for 25-30 minutes, then strain)
DIRECTIONS Fill a rocks glass (or any unconventional container you have laying around) with desired amount of ice. Add vodka and pumpkin spice liqueur, then top with cereal milk. Cheers!

DIRECTIONS In a saucepan, combine sugar, salt and cocoa. Add water and bring to a boil, stirring for 2 minutes. Stir in almond milk and heat to desired temperature (don’t boil). Once at desired temperature, remove from heat, add vanilla and whisk until frothy. Top with toasted marshmallows and chocolate syrup—the more sugar, the better!

LOCAL’S CHOICE INGREDIENTS 2 cinnamon sticks, plus more for serving 2 medium apples, thinly sliced, Honeycrisp or Gala 1 medium pear, thinly sliced 1 medium orange, thinly sliced 2/3 cup pomegranate seeds 1 750 milliliter bottle pinot grigio 2 cups apple cider 1/4 cup brandy 1/4 cup orange juice 2 tablespoons lemon juice Club soda, for serving Optional: Figs For the Cinnamon Sugar Rim 2 tablespoons cane sugar 1/2 tablespoon cinnamon pinch of salt
INSTRUCTIONS 1. Place the cinnamon sticks and fruit into a large pitcher. Add wine, apple cider, brandy, orange juice and lemon juice. Allow to sit in the refrigerator anywhere from 3 to 24 hours; 6-8 hours is best! 2. Pour the sangria and fruit into glasses. Add a splash of club soda. Garnish with a cinnamon stick, if desired.
