Mimi’s Pumpkin Bread Cupcakes Try out Mimi’s pumpkin bread recipe for yourself! Remember, you can use any sort of baking container from muffin tins to loaf pans for this recipe.
INGREDIENTS + 2 cups pumpkin (fresh and pureed or canned)
+ 1/2 cup pecans + 3 cups sugar + 1 cup vegetable oil + 3/4 cup water + 4 eggs + 3 1/2 cups flour + 2 teaspoons baking soda + 2 teaspoons cinnamon + 1 teaspoon nutmeg + 3 1/2 teaspoons cloves
DIRECTIONS Combine all ingredients in a bowl. Mix well. Pour into greased pan of choice. Bake at 350 degrees for 1 hour or until center springs back at light touch.
