NOVEMBER PROMPTS THE BEGINNING OF YEAR-END THOUGHTS AS WE SELF-REFLECT AND TAKE STOCK OF OUR LIVES. Thanksgiving is the time when the world gets to see a better slice of humanity. It’s a period of pondering exactly what we can be thankful about, right? I try to remind myself to be thankful about all opportunities, even the ones that come with struggles, because they’re all chances to keep learning and progressing and living life. This month, we especially want to express gratitude for all those among us who work during holidays rather than spending time with family and friends, often overeating and watching football: first responders, firefighters, police officers, emergency medics, tow truck drivers, convenience store operators, hospital personnel, coaches, athletes, retail employees, as well as news reporters and broadcasters. To them, we send a heartfelt “thank you” for all they do for the rest of us! If you'd like to help others in a firsthand way on Thanksgiving morning, consider volunteering for the annual Gobble Gobble Give initiative, which feeds, clothes and encourages homeless people. See our story on PAGE 30 for details. This month, we also showcase a customized sweet potato recipe for which the chef says will satisfy guests time and again. I can almost smell it now! To work off some of those extra pounds, we’ve included a few exercises in our Healthy Living department. Before the year's end, consider visiting one of the area's most intriguing vineyards, Arrington Vineyards. IT WAS MUSIC TO MANY PEOPLE’S EARS WHEN ARRINGTON VINEYARDS OPENED ITS DOORS ON JULY 1, 2007. After all, the vineyard is owned by country music artist Kix Brooks, winemaker Kip Summers and entrepreneur John Russell. This “wine country experience in picturesque rolling hills of middle Tennessee” vineyard makes an excellent road trip, located just 25 minutes south of Nashville. “We have an incredible overall vibe here at the vineyard, plus peaceful, romantic sunsets,” says David Dea, Arrington Vineyards vice president of marketing and chief financial officer. He adds that guests routinely share that the vineyard satisfies and matches whatever mood they’re seeking—whether quiet, upbeat or musical—whatever “they want or need at the time.” From gourmet picnics and Food Truck Fridays to weekend “Music in the Vines” free events and cigar nights, the 72-acre vineyard excellently showcases its 15 acres of grapes between Sept. 1 and mid-November. Chambourcin, vidal blanc, viognier, corot noir and bignoles grapes are grown there. Parking is free, and the vineyard crew provides golf cart drivers on busy weekends to help shuttle guests up and down the hill. Guests also can park by the vineyard’s rustic Grand Barn when it’s open for public events. Both the parking lots and tasting bar are handicap-accessible. CONTINUED >

Kevin’s love for cooking propelled him into the restaurant business as well as into being classically trained in French food preparation techniques at Johnson & Wales University’s Culinary School in Rhode Island. He says he believes in using fresh, high-quality products from local farmers and sources the best fish and food from around the world. A Nashvillian since 2003, Kevin’s resume includes the Wild Boar, F. Scott’s Restaurant and Five Daughters Bakery, before establishing his own catering business in 2013: the Unicorn Nashville. SWEET POTATO GNOCCHI WITH SPICED PARMESAN CREAM INGREDIENTS + 2 large sweet potatoes (about 2 pounds) + 1/4 cup canola oil + 3/4 cup ricotta cheese + 1/2 cup Parmesan cheese, finely grated + 1 1/4 cups sifted all-purpose flour, plus some extra flour for dusting the preparation surface (about 1/4 cup) + 1 tablespoon brown sugar + Pinch of nutmeg + 1 tablespoon butter + 2 cups Spiced Parmesan Cream (recipe follows)

DIRECTIONS 1. Preheat oven to 350 degrees F. 2. Peel and rinse sweet potatoes; cut lengthwise coat, then place on a sheet tray. Bake potatoes until cooked through, 30-45 minutes. 3. Place potatoes in a bowl and mash until smooth with a fork or potato masher. Stir in ricotta and Parmesan cheese; add flour, brown sugar, salt and nutmeg. Mix well with hands until a dough ball forms (add more flour if dough seems loose, but it should remain a bit sticky). 4. Place dough on a flat, floured surface and cut into four pieces. Wrap each piece of dough in plastic wrap and place in refrigerator to cool for 15-20 minutes. 5. After dough has cooled, take it out of the refrigerator and remove plastic wrap. Using your hands, roll each dough piece into a long tube or rope shape, each about 3/4 inch in diameter. Dust pieces with flour as needed to keep dough from sticking to hands or table. Cut tubes into 1 1/2-inch pieces; set formed gnocchi on sheet tray covered in flour. 6. Boil large pot of salted water, then turn down heat to medium-high; add gnocchi and cook until they float, about 1 minute. Remove gnocchi from water, toss with enough olive oil to lightly coat pieces and place in refrigerator until ready to use.

DIRECTIONS 1. In a medium-sized saucepan over medium-high heat, add wine and reduce heat by more than half. Keep watchful eye on wine to ensure it doesn’t burn or reduce too much. 2. Add heavy cream, cheese and allspice to wine; cook for 10 minutes. Remove from heat; add salt and pepper, if desired. TO SERVE: In a large pan, melt butter over medium-high heat. Add gnocchi and brown all over. Next, add Spiced Parmesan Cream (recipe follows) and lightly stir until gnocchi and cream are heated through and sauce coats the back of a spoon.
