DELICIOUS FOOD AND MOUTH-BURNING HOT SAUCE PULL PEOPLE INTO TOMMY TAMALE IN GRAPEVINE, WHERE STEVE BARKER, AKA “TOMMY,” WELCOMES HIS GUESTS WITH WARM, OPEN ARMS. The business started as a door-to-door tamale-selling business in Decatur in 2010 until it was given the opportunity by the farmers market to become a vendor in Grapevine. There, Tommy Tamale quickly grew a following, and after six years of vending, Steve opened their brick-and-mortar location in September 2015. Tommy Tamale offers 16 different varieties of tamales and around 70 hot sauces. Since the business started because of its large following, the motto has still centered around customer service. “We literally try to walk around and say hi to everyone who walks through the door,” Steve says. “We think it’s important to take care of you, whether it’s the first time or the fifth time.” Tommy Tamale shops locally in Grapevine to support other vendors and businesses like them. The family-owned business gives back to the community through charitable events such as participating in feeding the elderly at the recreational center. Work has begun on a second location in Coppel that Steve hopes will open in March. It is a large step from owning a tiny tamale shack.

“We built our business on tamales, and from that, we’ve expanded to all the other Tex-Mex food,” he says. “No one else I know has built their business off tamales.” Most popular of their foods is the Tommy Bowl ($6), which includes a tamale, rice, beans and pico de gallo, the Tamale Pie ($6), which adds a tamale to the beloved Frito Pie, and nachos ($8) with either chicken, pork, steak or, of course, tamales. Customers can also take their own tamales to go to heat up at home. Tommy Tamale sells them by the dozen. Chicken tamales, for example, can be bought $13 for a dozen or $7.50 for half a dozen. SOME PEOPLE DREAD GOING TO WORK EACH DAY, BUT NOT KALYN MASTIN. What once was a pastime is now her life’s work, and she couldn’t be happier about it. “I’ve been taking photos forever, but at first it was just a hobby,” she says. “In 2014, I quit my HR job and decided this was what I wanted to do full time.” Since becoming a full-time portrait and wedding photographer three years ago, Kalyn Shae Photography has taken off. She opened her Dallas studio—which she shares with other photographers—earlier this year and also became a photographer for Grapevine Lifestyle magazine. Kalyn says the bulk of her work is wedding photography. As a destination wedding photographer, she has traveled throughout the United States and Mexico and said she would love to travel to more destinations. She has become highly sought-after, booking some weddings up to two years in advance. “I have really busy wedding seasons in the spring and fall,” she says. “I typically shoot 35 weddings a year.” In addition to her business, which she says is like her baby, Kalyn has a 1-year-old daughter, Ella, and husband, Jake. She says the most challenging and rewarding part of her day is learning to maintain a balance between work and family. “I really underestimated the amount of work being a mom and business owner was,” she says. “I wouldn’t change it for the world. But as a business owner, there are no set hours. I basically work all of the time. It’s been fun to learn and set boundaries for myself.” She says despite the long hours, owning her own photography business has been extremely rewarding. The most gratifying part of her work is showing her clients their wedding photographs. “I love seeing their reactions,” she says. “Wedding days are so hectic and so crazy; they’ve probably forgotten half of the moments that happened that day. Showing them and reminding them of the best day of their life—it’s extremely rewarding to be able to do that for somebody.”

IN GRAPEVINE, THERE IS A DENTAL OFFICE THAT IS NOT ONLY FULLY FEMALE-OWNED AND OPERATED, BUT ALSO ONE THAT VALUES ITS PATIENTS ABOVE ALL ELSE. Dr. Anissa Singratanakul, also known as Dr. Sing, bought the True Dental office back in June and has been leading the practice forward with a patient-centered mindset. Desiring to help people and also pursue her artistic side, she realized dentistry had just the mix she was looking for after a trip to her orthodontist in high school. She earned her doctorate in dentistry in 2012 from the University of Las Vegas Nevada School of Dental Medicine and moved to Texas to work in dentistry. In June 2017, she bought True Dental in the hopes of breaking into the male-dominated industry with cutting-edge technology and a fully female staff. “We’re shifting away from old-school impressions and using a digital scanner,” she says. “Everything you find here is a bit more modern.” The practice focuses on the patients, as Sing chats with each patient and calls after each major surgery to make sure every aspect of their recovery runs smoothly. Sing claims the best part of her job is helping her patients.

A GOOD DENTIST IS ONE THAT HELPS ITS PATIENTS [WITH] PROCEDURES THAT LAST.” The office even held a raffle for their patients at Christmas time, and the winner took home a TV. Sing lives down the street from the business, and says she has no problem being in the office in five minutes in case of an emergency. From-Scratch Pasta Yield: 1 pound WHAT YOU NEED

2 cups all-purpose flour, plus more for dusting 4 large eggs WHAT YOU DO

1. Mound the flour in the center of a work surface with a well in the middle. Crack the eggs into the well and beat with a fork until smooth, then work flour into eggs with the fork. Use a bench scraper to work in the rest of the flour a little at a time. When the flour is incorporated, form the dough with your hands into a rounded mass for kneading. Lightly dust your workspace with flour and knead dough about 10 minutes, until smooth and elastic. Cover dough with a bowl or plastic wrap and rest 1 1/2 hours, or chill overnight. 2. To roll by hand, flour a clean work surface. Vigorously roll dough to a very thin circle and roll constantly with even pressure as it stretches for several minutes until as thin as possible, almost translucent. 3. To cut by hand, lightly fold sheets one at a time into thirds and cut to desired thickness. Recipe from MarthaStewart.com.

1/2 cup heavy cream 8 ounces bittersweet chocolate, chopped 1 teaspoon pure vanilla extract 1 cup cocoa powder, for dusting WHAT YOU DO

1. Bring the cream to just a simmer in a saucepan over low heat. Pour the cream over the chocolate in a bowl and let stand about 10 minutes to melt the chocolate. Add the vanilla, stir until smooth and set aside to cool for 1 hour at room temperature. 2. Beat chocolate at medium speed until thick and light-colored. Spread over the bottom of a baking dish, smooth and refrigerate 2 hours until firm. 3. Pour cocoa powder onto a deep plate or shallow bowl, and using a melon baller or small ice cream scoop, scoop out balls of chocolate.
