Bon Appetit! Allons Manger! Buen Apetito! However you choose to say it – in this issue we’re all about food, and we also give a warm and thankful welcome to Fall and Halloween! With the changing seasons, especially here in North Central Florida with that much-needed cooler weather, comes a change in what we are craving, and with Fall that often means comfort food. This is by far my very favorite issue of the year! I am not a seemingly picky person as those of you who know me are aware, because I am a very adventuresome eater, but I am actually picky – picky about quality, flavor, uniqueness, and an intense attention to detail. The restaurants we are featuring here do not shy from flavor and a sense of adventure and a commitment to their craft, and we encourage you to check them out, if you haven’t already.
Food brings us all together, and whether we’re sharing a meal at home with friends and family or enjoying a night out on the town, the time spent while enjoying food is invaluable and should always be savored.
In this issue we’re sharing some of our new (and new to us) favorite spots we hope you’ll enjoy, and also a wide array of events. It’s Fall Y’all after all, and events and activities are finally back in full swing!

WHAT BROUGHT YOU TO GAINESVILLE AND TO THE RESTAURANT BUSINESS?
What brought me to Gainesville was when my family moved here in 1989 from Athens, Ga, in search to find a new location to open a Mexican restaurant. When my father arrived in Gainesville, he noticed it was a nice small college town, and thought it would be a great place to raise a family.
WHAT HAVE BEEN THE GREATEST CHALLENGES AND SUCCESSES?
One of the greatest challenges that we have ever endured was when COVID hit. We didn’t know what to do. The world was in fear, and in devastation as we had never encountered a pandemic. We then had to focus our determination in providing solutions to run a safe environment for our business, and to do our best to not let go of any of our staff. We closed for 3 days which gave us time to strategize a “safe plan” so we could work and not let anyone down in our community. Not only did we serve tacos, burritos, fajitas, and margaritas, but also found ourselves giving
away home essentials; such as toilet paper, sanitizer, paper towels, and even meat and produce for people who were in need. It was tough times, but with the Grace of God, we were able to overcome it.
HOW DO YOU BALANCE WORK LIFE AND FAMILY LIFE?
I try my best to get evenings, or weekends off. Most importantly Sunday because it’s always been a tradition for us as a family day as well. The day of rest. I make it a rule now to put my phone on “Do not disturb” when it’s true family time. I admit it’s very hard, yet well worth it. I’ve always been taught, family comes first. Life is too precious and flies by so quick. It’s good to never forget one of the true purposes of what helps you get up in the morning and who you do it for.

A few favorite dishes of mine are the Empanadas, Chile Rellenos, Chile con Carne, Seafood Burrito, Carne Asada, oh
and definitely the Birra Tacos & Tacos el Pastor on Taco Tuesday. YUM!!!
DO YOU HAVE A MENTOR?
My mother is the most beautiful person I know. She has been such an inspiration and mentor throughout my whole life. She’s not only an amazing mother, but has always dedicated her life to helping others. I’ve witnessed how she truly has shed her blood, sweat, and tears just to sacrifice for her family and for other families too. From teaching techniques of her famous secret recipes, to always having the courage in never giving up. Most importantly is how incredibly she has always kept a strong faith, no matter what obstacles she has faced throughout her life. With such grace she has always taught our family to love thy neighbor, never judge, to always have compassion, give your 110% in everything you want to accomplish, always keep family as a priority, always be there for each other, and to always put God first. She would always say “God, Family, Tacos”. Just kidding. God, Family, and Love.

Preventative
The ability to do for ourselves and think for ourselves is one of the higher attributes for which we all strive. Including children in everyday activities and showing them how to complete daily routine tasks is the perfect way to help them build independence. The activity of preparing one’s own lunch provides a perfect opportunity to talk to your child about nutrition and what is meant by a balanced diet.
Using a picture of the food pyramid can be helpful, and your child can refer to the picture himself independently. Begin by packing the lunches together and gradually allow your child to take on more responsibility.
I would recommend packing the lunch the night before. First, prepare the environment by keeping items to be selected in places where your child can reach them. A bowl of fruit on the counter with an available stool, or on a lower shelf in the refrigerator, can be a handy place for children to access. Putting their available choices in
bowls or bins separated by food groups is easy and your child can help. Children love to sort and select.
Children as young as 4 and 5 years old can be shown how to pour liquid into a thermos, as well as scraping a carrot, washing, and cutting celery, and spreading peanut butter and other spreadable foods on bread.
These are common “practical life” activities in Montessori preschoolkindergarten classes.
If you are making a sandwich or wrapping something in foil, or even sealing a plastic baggie, demonstrate and break down each task into easy steps. Always allot enough time to do this. Therefore, I recommend packing lunches the night before. Finishing a complete cycle is important too, so have your children clean out their lunchboxes at the end of the day. When your children need help, be sure to offer just enough assistance for them to take the next step independently.
