WITH BIG EVENTS AND PARTIES ON HOLD DUE TO COVID-19, SWEETS ON A STICK OWNER NICKI COOLEY SAYS HER BUSINESS NEARLY CAME TO A GRINDING HALT. However, this self-taught baker and decorator, who always had a passion for creating sweets that are both beautiful and delicious, decided to apply lessons she learned from starting the business out of her home in 2012, and then opening a commercial kitchen at her shop in The Rail District in 2017. Nicki pivoted to offering cookie kits, which were very popular during those first few months of the pandemic, and remained a sought-after item during the holidays. She also sells cake pops, hot cocoa bombs, already decorated cookies and chocolate-covered pretzels. “We host cookie classes as well, so the kits started as a fun alternative to in-person classes. We got back to hosting private events in-person, and plan on offering socially distanced, semi-private classes in 2021,” she reveals. She says she’s always done pre-sales and pop ups around holidays, and that her pre-coronavirus plan was to eventually expand to open a Sweets Counter to the public in 2021 after her youngest child headed to kindergarten. “But between lost income from canceled classes and larger party orders, it just seemed right to jump ahead and go for it in 2020. EASY GLAZE ICING FROM SWEETS ON A STICK BAKERY

[Makes enough icing for approximately 2 dozen cookies] INGREDIENTS

+ 2 cups powdered sugar + 2 tablespoons light corn syrup + 1-2 tablespoons milk + 1/4 teaspoon clear vanilla + Gel food coloring

DIRECTIONS 01 In large bowl, mix all ingredients together with hand mixer or spatula until smooth. Glaze should be thick, but settle to flat surface after a few seconds. To reach desired consistency, add more milk to thin, or powdered sugar to thicken. 02 Separate glaze into multiple bowls to color. Keep icing covered when not working with it. Add coloring 1 drop at a time and thoroughly mix until desired color. Once colored, scoop icing into decorating bags. If not decorating right away, icing can be stored in fridge for 48 hours. (Let icing come to room temperature before using.) 03 Decorate favorite sugar cookie recipe with icing by cutting small hole in piping bag, and squeezing onto cookies. Remember to start with small hole -- it’s easy to continue cutting bigger. Enjoy cookies right away or wait 12 hours for icing to harden; then stack and store cookies in airtight container. Richard says two main considerations to know for the 2021 tax season are that the standard deduction for 2020 increased to $12,400 for single filers and $24,800 for married couples filing jointly; and that income tax brackets increased in 2020 to account for inflation. “The closest things to ‘magic words’ when it comes to taxes are deductions and credits. Both keep more money in your pocket, but they do so in slightly different ways,” says Richard. “Tax deductions help lower how much of your income is subject to federal income taxes. Tax credits lower your actual tax bill dollar for dollar.” To encourage more charitable giving, Richard says the CARES Act allows taxpayers to deduct up to 100% of their adjusted gross income. AGI is one’s total income minus other deductions already taken, in qualified charitable donations when itemizing deductions. “However, when you use standard deduction, you can still deduct up to $300 in 2020,” he adds. “If you spent a lot of time in the hospital, or found yourself with some hefty medical bills last year, you might be able to find at least some tax relief,” Richard suggests. “You can deduct any medical expense more than 7.5% of your AGI. For example, if your AGI was $100,000, you can deduct out-of-pocket medical expenses above $7,500 in 2020. But you have to itemize your deductions to write off those expenses on your tax return,” Richard says. Richard says those who are self-employed can claim deductions on tax returns, including travel expenses and home offices. “But if you’re one of the millions of workers who were sent home to work remotely, you can’t claim the home office deduction because it’s reserved for self-employed individuals only.” The Earned Income Tax Credit is a refundable credit designed to help out low- and middle-income workers who earned up to $56,844 during the 2020 tax year.

WILL AFFECT PEOPLE’S TAXES IN SIGNIFICANT WAYS “Unfortunately, the coronavirus, and the government’s response to it, has created a ripple effect that will be felt when you file your taxes for last year,” says Richard. As part of the Coronavirus Aid, Relief, and Economic Security (CARES) Act’s $2 trillion relief package, the government sent up to $1,200 in the form of a stimulus check to millions of Americans shortly after the pandemic shut down most of the country. “The good news is your stimulus check won’t count as taxable income. Instead, it’s being treated like a refundable tax credit for 2020,” explains Richard. He says the CARES Act also offered Payroll Protection Program (PPP) Loans, which were designed to be “forgiven,” if those loans were used on payroll, rent, utilities or interest on mortgage payments. “But, heads up, small business owners: Any expenses paid with money from those PPP loans can be deducted from your taxable income with the recent COVID-19 Relief Act. Plus, you’ll have to get your loan forgiveness application approved by the Small Business Administration before you’re off the hook for the amount you borrowed,” he adds. “But because the SBA is processing applications for $525 billion in loans given to 5.2 million borrowers at the speed of a sloth wearing ankle weights, we don’t recommend holding your breath.” For Americans out of work (at least temporarily due to the pandemic’s effect on the economy) who turned to unemployment insurance for help, Richard says those who received unemployment benefits will need to pay income taxes on that money. “If you chose not to have taxes withheld from your benefits when you signed up, then you’ll either have to pay quarterly estimated taxes or set aside enough money from your unemployment benefits to pay your taxes come Tax Day.”

VA L E N T I N E ’ S SNACK MIX: INGREDIENTS + 4-6 cups rice squares cereal + 1 8-ounce bag strawberry candy melts OR 1 12-ounce bag of white chocolate baking chips plus 1 box of Strawberry Creme Jell-O Pudding + Valentine’s M&M’s and/or sprinkles + Red food coloring

DIRECTIONS 01 Measure cereal into large bowl. If using strawberry candy, use 4 cups of cereal. If applying chocolate chips route, use 6 cups of cereal. 02 Pour melts into small glass dish. Add 1/2 tsp shortening, if desired, to help chocolate coat the cereal. Microwave for 1 minute 20 seconds. Let sit in microwave for 3 minutes. Remove; gently stir. If chocolate leaves its shape and looks smooth, it’s done. If not, return to microwave in 15-second increments, letting it sit for 2-3 minutes each time, until melted and smooth. 03 If chips and pudding mix are used, add 4 tablespoons of strawberry creme pudding into white chocolate; stir gently until smooth. Add 2 drops of red food coloring, if desired. 04 Pour chocolate mixture over cereal; stir gently to coat. 5. Transfer cereal mixture to large piece of wax paper. Sprinkle with M&M’s and Valentine’s sprinkles. Let cool to set. Break into pieces. Store in airtight container. Candy can be made up to three to four days ahead. 32

We’re often like Jerry. Day after day, we run on our own spinning wheels. We go to work, come home, eat, watch TV, sleep…and wake up to do it all again. I was stuck on a wheel until a few years ago. Then, I answered my true calling, got off the wheel, and became a missionary to Nicaragua. Life is an adventure now. We’re planting churches, feeding children and changing lives for eternity.
