BEET SALAD WITH RASPBERRY, WALNUTS, AND FETA CHEESE ingredients:

1. Place beets in a baking dish. Add one inch of water. Cover and bake at 400 degrees for 30 minutes or until tender.

2 fresh red beets 1/4 cup balsamic vinegar 2 tablespoons walnut oil 1 teaspoon honey Dash salt and pepper 1-2 cups fresh raspberries (or a variety of berries) 3 tablespoons chopped walnuts, toasted 4 cups torn mixed salad greens 1 ounce fresh feta cheese

2. Meanwhile, in a separate bowl, whisk the vinegar, oil, honey, salt and pepper. (Set aside for dressing.) 3. Cool and peel beets. Cut beets to size of preference. 4. In a large bowl, combine the beets, berries and walnuts. Pour dressing over mixture and toss gently to coat. 5. Top salad greens with beet mixture. Sprinkle feta cheese on top.

1 cup whole milk 1 tablespoon unflavored powdered gelatin 3 cups whipping cream 1/3 cup honey 1 tablespoon sugar 1/8 teaspoon salt 2 cups assorted fresh berries

directions: 1. Place milk in a small bowl. Sprinkle gelatin over. Let stand for 3-5 minutes to soften gelatin. 2. Pour mixture into a saucepan. Stir over medium heat until gelatin dissolves, but before the milk boils. Add cream, honey, sugar and salt. Stir until the sugar dissolves. Remove from heat. 3. Pour into six wine glass-sized glasses to half full. Cool slightly. Refrigerate until set (at least 6-8 hours). 4. Spoon berries on top of the panna cotta and serve.

4 cups berries, fresh or frozen 1 cup sugar 1 cup water 2 tablespoons freshly squeezed lemon juice 1/8 teaspoon salt

directions: 1. Heat the sugar and water in a small saucepan over medium-low heat until the sugar is completely dissolved. 2. Add the salt and lemon juice to the warm sugar syrup. 3. Puree the sugar syrup mixture with the blueberries in a food processor or blender until completely smooth. This the sorbet base. 4. Chill the sorbet base in the freezer in an air-tight container until it is frozen. (Chill for at least an hour.) Since the age of 5, James Smith, the restaurant’s founder and owner, has enjoyed Caribbean food as part of his family menu. Fast forward to adult life, he was living in Frederick and noticed the absence of this cuisine in the area. Today, he and his wife, Danielle, run two locations (Jerk N’ Jive Bar & Kitchen on Prospect Boulevard and Jerk

A trip to their new Bar & Kitchen location is an instant transport to the Caribbean itself, both due to the authentic, high-quality food and the atmosphere. the towering palm tree in the center of the restaurant, to the constant stream of island tunes, it’s natural to forget you’re still in Frederick. And while looks can be deceiving, that’s certainly not the case with Jerk N’ Jive. The food and drink here is more than a match for the aesthetic. Think: authentic oxtail stew, a whole fried red snapper, jerk chicken nachos boasting homemade cheese sauce and creamy coconut shrimp. And drinks? All of their beer and bourbon selections will delight, and many rave about the Jive Juice—their version of a rum punch—and the tropical mimosa. When it comes to Caribbean food, this is the real deal. In January, Frederick County’s Office of Economic Development (FCOED) announced the 2022 recipients of the Top 50 Under 40 award. These 50 young leaders exemplify what it means to be a consummate professional across a variety of industries. From lawyers and scientists to artists and personal trainers, Frederick is filled with industry leaders who are accomplishing goals and setting the stage for the next generation of professionals. The FCOED recognizes and celebrates the Top 50 under 40 each year. The recipients of the award were nominated by the people around them based on testimonials of their leadership and generosity to the community and their significant contributions to their company. The FCOED is the bridge between the business community and the local government. With just over 6,000 small businesses in the county, Frederick County continues to rapidly grow. There is a diverse business community supporting each other as they serve the community

because, here in Frederick, passion drives progress. “Our county is such a special place. Our businesses, economic development partners and leadership have worked together to ensure a strong economy and have created real momentum over the past several years. I look forward to our future and hearing about Frederick County’s continued success,” said Helen Propheter, former Executive Director of FCOED. Propheter retired in June after 30 years of dedicated service to the Frederick County Government and seven years as executive director. HOW COVID PAVED THE WAY TO THIS FAMILY’S (UNKNOWN) DREAM

Tucked away on a serene acreage is the family behind Frederick’s new Lumber JAKKSS Millworks—named for the family members: Jay, Ashton, Kiernan, Killian, Sloane and Shaye. Jay Jeffrey’s inclination for woodworking goes back to his childhood. Raised in Bangor, Maine, the trade was a familiar one, and his father, Mike, was often in his home workshop making headway on a project for someone dear to him. Some of Jay’s favorite memories are his father’s version of babysitting: handing him and his younger brother some wood, nails, and a hammer, and letting them have at it. All that observation and “working” side-by-side with his father was enough to spark Jay’s interest and skill in the craft. But Jay didn’t pursue this interest until later in life, after a few twists and turns to get him here.

Jay graduated from Westfield State University with a degree in Computer Informations and Business Management. Having gained experience in the sports fundraising arena during his college career, he moved to Frederick in 2007 to open up his own business. By 2011, Jay was helping run the Frederick Indoor Sports Center, where he met Ashton at a special event. After asking her out the same evening, the rest is history. In 2012, they purchased their first home and the location for the family business they’d yet to conceive of. Fast forward to the arrival of Covid and both of Jay’s businesses were put on hold. The pandemic was not friendly to his field of work; and with two little ones and a newborn on the way, things felt uncertain. “So at the beginning of Covid-19, we wondered what we were going to do? And by June I was getting antsy, so I built this,” Jay shared as he gestured to the handmade, solid-wood pavilion we were sitting beneath. By July of 2019, Jay and Ashton bought a Slabber sawmill from New Zealand with the intent to simply procure and slab logs and then sell them. Instead, it transformed into the family-owned, solid wood fabrication business that the Frederick community is coming to know, love and rely on. By December of 2019, the winter weather had forced them to stow away the sawmill altogether, and they started creating charcuterie and cribbage boards. Before they knew it, everyone wanted them. Months later they received a 30-table order for a wedding facility, and they have been on full throttle ever since. “...The niche we’ve found ourselves in is solid wood fabrication, but everything we do is completely custom,” Jay shared. Handcrafting everything from bourbon cabinets, to live-edge office tables, to bulk orders of bar tables, to name-engraved cutting boards, The Jeffreys and their skilled team thrive on providing beautiful, custom-made products created from local, high-quality solid wood. Still, the quality and beauty of their creations aren’t all that set them apart. They’re involved from the heart with every project they take on, committed to making sure it’s even better than what the client had dreamed of. “We separate ourselves...we’re gonna ask them what they like,” Jay explained—and he’s committed to letting each client share their vision, and then makes suggestions throughout the process that are in line with the vision yet enhance the finished product. The Jeffreys responded to the pandemic with hope and creativity, and it paved the way for their dream. Almost three years later, their family of six has a thriving small business that is expanding quickly.
