If I had to name a few of my greatest joys in life, food would be one of them! I love the way food draws people together, takes us back to our childhoods and makes experiences that much more fun and memorable. From popcorn at the movies and pumpkin pie at Thanksgiving to trying a new restaurant for date night, food has a unique way of fostering joy, comfort and community. This is by far our most decadent edition of the year and you are literally in for a treat, no pun intended. If you were like me in the past—someone who rotated between favorite spots but had the desire to venture out and try new things—then this edition is for you. We have had the pleasure of meeting numerous restauranteurs in Frederick and have been blown away by the level of class, creativity and care. We hope the heartfelt stories, recipes, local guides and more inspire you to expand your culinary horizons! Whether meeting friends at that cool new spot you have been curious about or celebrating National Hispanic Heritage Month by trying one of Centro Hispano de Frederick’s recipes, we encourage you to branch out and have some fun. P UP U S A S COUNTRY: EL SALVADOR beginner INGREDIENTS • 2 cups masa harina • 1 1/2 cups warm water • 1 1/2 tsp salt • 4 ounces grated cheese (Oaxaca or mozzarella) • Oil INSTRUCTIONS 1. Combine masa harina with salt in a bowl. Add water and mix for two minutes. Let is rest for 15 minutes to hydrate the mix fully. 2. Coat your hands with oil. Form a small ball. Create a well in the middle with your thumb. Fill with cheese and pinch to close. 3. Add oil to the skillet (medium heat). Once oil is hot, place pupusas and cook for four minutes per side.

CE VICHE COUNTRY: PERU beginner INGREDIENTS • 1 1/2 lbs fresh fish filets (corvina, halibut, escolar, hamachi or mahi-mahi) • 1 onion thinly sliced • 1 cup freshly squeezed lime juice • 1-2 habanero peppers cut in half, deveined and without seeds • 2-3 springs of fresh cilantro/ Finely chopped cilantro • Salt to taste • Sliced lime or lemon for garnish

INSTRUCTIONS 1. Cut fish into small cubes, place in glass bowl and cover with cold water and 1 tbsp of salt. Cover and refrigerate. 2. Rub thin onion slices with 1/2 tbsp of salt and rinse in cold water. 3. Rinse fish to remove the salt. 4. Place cubes of fish half of the sliced onions and hot peppers in a glass bowl and pour lime juice. Sprinkle a pinch of salt. 5. Cover and refrigerate for about 5-15 mins. 6. Remove cilantro sprigs and hot peppers from mix. Taste fish ceviche and salt to taste. 7. Use spoon to place the ceviche in each serving bowl, add sliced onions to each bowl, sprinkle with finely chopped cilantro and diced or sliced hot peppers.

AREPAS COUNTRY: VENEZUELA beginner INGREDIENTS • 2 1/2 cups lukewarm water • 2 cups Harina P.A.N. • 1/2 tsp salt • 1/2 tsp butter

INSTRUCTIONS 1. In a medium bowl, add the lukewarm, then the salt. 2. Slowly mix in the harina P.A.N. with a spoon, and then begin kneading with hands. Knead for 2-3 minutes. Cover with towel and let rest for 10-20 minutes. 3. Separate the dough into equal sized balls. Place on a platter. 4. Heat skillet over medium heat. Add 1/2 tsp butter. Flatten each ball of dough into the arepa shape. (Keep bowl of water and use to avoid any cracks.) 5. Cook arepas on each side for six minutes until charred. 6. Once all arepas have been charred on both sides, place in the oven and broil for five extra minutes. 7. Place arepas in basket lined with a towel and serve with your favorite fillings.

INGREDIENTS For Dough: • 5 eggs • 8 tbsp unsalted butter • 1 cup sugar • 1 1/2 cup flour • 1 tbsp vanilla extract • 1 tsp baking powder For Cream: • 14 oz sweetened condensed milk • 1 1/2 cup milk • 12 oz evaporated milk For Topping: • 1 1/2 cup whipping cream • 2 tbsp sugar • 1 tbsp vanilla extract • Strawberries (optional)

INSTRUCTIONS Dough 1. Preheat oven to 350 degrees. 2. Sift flour and add baking powder into a bowl. 3. In a separate bowl, beat butter and sugar for a few minutes. Add eggs and vanilla extract and continue beating. Gradually add flour mixture and continue beating. 4. Pour into large, buttered gratin dish. 5. Bake for 30 minutes. Cool for 20-30 minutes. Cream 1. Mix the three milks and pour mixture over the dough gradually. (Dough should absorb all of the liquid.) Topping 1. Beat the whipping cream with an electric mixer. As it begins to thicken, add the sugar and vanilla extract and continue beating. Cover the cake with this cream. 2. Garnish with fresh berries.

“My dad just said, ‘Hey, I need your help’…so I was not going to leave him all by himself…I hopped on board to help him out. I started in the kitchen and my love for food just grew from there.”

Welcome to Lucky Corner, a family-owned Vietnamese restaurant bathed in elegant dim lighting and savory aromas. With graceful light fixtures dotting the ceiling, plush leather booths to sink into and calm, friendly staff to serve you, one step into this place is a step into a state of relaxation and phenomenal hospitality. Lucky Corner has more than earned its raving reviews from locals and visitors alike, but the journey here was certainly a long, hard road. The story begins with a family, looking for a fresh start and better prospects. Hailing from Vietnam, Pha Huynh and his family were headed to the United States to pursue their dream. Traveling by boat and with two children, the voyage was a risky one—and with the youngest crying nonstop, they had to make an impossible decision: get caught and face the consequences, or split up and try the longer route when the time was right. They chose the latter, leaving son, Trung Huynh, and mother, Ha Duong, in Vietnam while Huynh and his daughter made their way to the States. It took ten years, a season as refugees in Thailand, two more failed voyages and persistently hard work on Pha’s part before Ha and Trung were finally able to join their father and sister. “...my father migrated here when he was younger with my sister—empty-handed—and just worked his way to where we are today…I wouldn’t be here if it wasn’t for my father, who did all the paperwork and got my mom and myself over here,” Trung shared. But that hard work and perseverance has led Pha Huynh to far more than a joyous reunion with his family in their long-awaited destination. With a catering business back home in Vietnam, cooking has always been a family affair, and Pha

Huynh wasted no time putting that experience to work when he arrived to his new home. He went from taking dishwashing positions in restaurants to earning his title as an award-winning chef with the luxurious Grand Hyatt Washington hotel. As he continued to embark down the chef path, his skills were sharpened and broadened—along with the types of cuisine he became familiar with—and a burgeoning desire to open his own restaurant was revealing itself. Pha began searching for the perfect location to pursue this dream, but heavy competition and expensive rent led him to continue his search. As he made his way northward through Maryland, he finally stumbled upon the original Lucky Corner location on 7th and North Market that was for sale. It was just what he’d been looking for! From then on, Pha and his wife, Ha, worked hard to transform Lucky Corner into something of their own by resolving preexisting issues and introducing new items and systems—but they didn’t keep the hard work to themselves. In fact, it seems diligence runs in the family, as that’s what lured their son, Trung, into the business. “I did not want to get into the restaurant business…” Trung explained. “I was just trying to pursue a career in business management…but then my dad just said, ‘Hey, I need your help”…so I was not going to leave him all by himself…I hopped on board to help him out. I started in the kitchen and my love for food just grew from there.” With hard work and service instilled in him through the example of his parents, Trung set his future plans aside to support the family business when they needed him. Now, they’re a local favorite.

Frederick is awesome. We think so, you think so–and though we’re biased, it’s not just us. People who visit our city from far and wide rave about its charm, its diversity, its up and coming downtown and its blossoming cuisine scene. Some love it so much they go from visitor to resident. That’s just what happened for the distinguished Chef Tim Jones, and of all the places he’s seen and lived, it looks like he intends to make his forever home here in Frederick. Born and raised in the Bronx, Tim always knew he wanted to pursue a career in the food industry—and it was all thanks to his mother, an extraordinary chef who cooked with skill and heart. “...my mom really instilled in me a passion for food because she would always get so excited about anything we would cook…” he shared. “My mother was just a good cook in general, and that inspired me to be a good cook because it would make her so happy—it would make me happy—to cook things and see people respond…” And she didn’t just cook for family. She cooked for many friends from many different backgrounds, each of them unknowingly inspiring her to branch out beyond a single type of cuisine. “My mother just embraced everybody’s culture which inspired me to get more into food; we had friends who were Puerto Rican, so she made good Puerto Rican food…she had friends from Yugoslavia and she’d figure out to make the food that they would make…there was nothing we didn’t eat in my house,” Tim recalled. This passion and skill for cooking that was second nature to his mother was contagious for young Tim—so much so that he dove headlong into the food and hospitality industry as soon as he could. Circumventing New York City’s law that doesn’t allow anyone younger than 16 to work in restaurants, he purchased a folding bike at 14 years old and made the long trek to his first job at Nathan’s in Westchester County. He was going to get into the industry one way or another—and things have only gone up from there. Today, Tim is entering into a new role as the Senior Executive Chef for George Washington University in D.C., overseeing all food service to campus students, faculty and guests. Between five dining halls and 7,000-9,000 students, he’ll certainly have a tall task– but he’s more than prepared for it.

Graduating from the renowned Culinary Institute of America at 20 years old, Tim has had a successful and colorful career with an impressive resume. He earned his place as the youngest-ever Banquet Chef at the famous 5-star Diamond Waldorf Astoria Hotel in New York City. He has worked everywhere from New York restaurants to opulent Four Seasons, Hilton and Hyatt hotels. He ran the kitchens of the University of Nebraska Medical Center and worked as Executive Chef at large Midwest casinos. Most recently, he was the director of food and beverage for Washington Nationals Park, and now he transitions into his new position with George Washington University. You could say he’s experienced it all, and he’s been everywhere. And out of all these places, Frederick stole his heart, and we can’t say we don’t see why—all bias acknowledged. Upon graduating from culinary school, his mother moved to St. Louis and worked in real estate, but when the market dropped, she was on the hunt for a new home. She ended up finding that home in Frederick, along with his sister, Timika—and that’s what drew him here. “I was in New York and I was missing my family...and I said, ‘You know what? Let me move back to where family is,’ and I decided to move here to Frederick and slow down my life a little bit,” he shared. “We always liked Frederick, because Frederick is a very diverse community, where it’s multiracial, multicultural, it’s got a very good, thriving, exciting downtown community that people are engaged in, and a lot of activities…every weekend there’s something going on that’s hospitality, food and beverage related that’s exciting…Frederick has become my home and I truly love living in Frederick.” And of course, food is an important factor. Some of his favorite spots? Here’s what he had to say: “...I love Thatcher and Rye—one of my favorites to go to…Sardis has the best chicken—I’m addicted to it, and last but not least, Jerk and Jive. I love their oxtails. Frederick has come a long way with the food scene and the food is very diverse and eclectic!” We’re glad to have such an esteemed chef and awesome human in our community, and we’re excited to see where his culinary skills will continue to take him.

It’s the ultimate outdoor game-day experience you can enjoy in your own backyard or anywhere you love to gather your team for the season. Praline Pecan Crunch Snack Mix Ingredients • 8 cups brown sugar or cinnamon cereal squares • 1 cup pecan halves • 1/3 cup light corn syrup • 1/3 cup firmly packed brown sugar • 3 tablespoons butter • 1 teaspoon vanilla • 1/2 teaspoon baking soda • 2 cups white chocolate-covered pretzels • 1 cup salted peanuts • 2 packages of large waffle cones or paper bags Instructions 1. Heat oven to 250°F. Spray a 13 x 9-inch baking pan with non-stick cooking spray. Combine cereal and pecans in pan and set aside. 2. In a 4-cup microwaveable bowl, combine corn syrup, brown sugar and butter spread. Microwave on HIGH 1 minute 30 seconds. Stir. Microwave 30 seconds to 1 minute 30 seconds or until boiling. 3. Stir vanilla and baking soda into mixture. Pour over cereal mixture; stir to coat evenly. Bake for 1 hour, stirring every 20 minutes. Spread on baking sheet and cool completely; break into pieces. When cooled, add peanuts and pretzels. Makes about 10-11 cups. Store tightly covered.

DIY Football Goalpost Use these mini goalposts as tailgate decor or to play table-football at your next tailgate party. These vintage inspired goalposts are easy to build and display. • ½ inch Copper Pipe (total 66 inches length) cut into the following measurements: • 9.5 inches long (4 total) • 4 inches long (4 total) • 5 inches long (2 total) • 1 inch long (2 total) • ½ inch Copper 90 degree elbow fittings (6 total) • ½ inch Copper Tee fitting (2 total) • ½ inch Copper end cap fittings (4 total) • Copper Pipe Cutter • Gorilla Glue • Wood Block (drill ⅝inch hole) • Measuring Tape and Sharpie Using a pipe cutter, measuring tape and sharpie, cut all copper pipes to proper size using the list above. Next, glue each of the copper pieces together by following the diagram found at SilvertoothHome.com/Blog/ Tailgate-Party. Allow glue to dry. Once dried, place the goalpost into a wooden block using glue to secure into place. Wait until glue is fully dry before using. Cheers!

Football Apple Hand Pies Apple Hand Pies are a perfect hand-held dessert that tastes like fall Ingredients • 21 ounces apple pie filling, store bought or homemade below (you won’t need it all) • 1 tablespoon cinnamon • 2 package pie crusts (4 crusts), I use Pillsbury • 1 egg • 1 teaspoon milk • Store-bought icing in a tube for laces (optional) Instructions 1. Preheat oven to 425°F. 2. Chop apple pie filling into small pieces and mix with cinnamon. Beat the egg with milk until combined. 3. Roll out the pie dough to ⅛-inch thick and cut the dough into12 football shapes. 4. Add 1 ½ tablespoons apple pie filling to 6 of the footballs. 5. Brush egg wash around the edges and top with remaining 6 football shapes. Use a fork to crimp the edges firmly together. Make two slits on the top of the pie. 6. Brush with the remaining egg wash and bake for 12 minutes. 7. After cooled, pipe on laces with icing if using. Notes • Hand pies can be baked in an air fryer for 8-10 minutes at 350°F. • Any flavor of pie filling may be substituted.
