GRILLED VEGETABLES WITH BALSAMICHONEY REDUCTION & FRESH BASIL SERVINGS: 8-10 Ingredients + 4 small zucchini + 4 small yellow squash + 2 small fennel bulbs + 4 new spring onions + 3 tablespoons olive oil + 2 teaspoons sea salt + Fresh ground black pepper + 1 small bunch fresh basil Ingredients for the Balsamic-Honey Reduction • 1/2 cup balsamic vinegar • 1/4 cup local honey • 1/4 teaspoon sea salt • Fresh ground black pepper Directions 1. Cut the zucchini and squash lengthwise into quarters and cut out any large seed clusters. Cut the fennel in half. Split the onions lengthwise.

2. Place all of the vegetables in a shallow baking pan and season with the olive oil, salt and pepper. Set aside to marinate at room temperature for 30 minutes.

3. Pick 10-12 basil leaves and make a small stack on your cutting board.

4. When the grill is hot, grill the vegetables over high heat for 4-5 minutes, turning a few times, until the skins are blistered and just cooked through.

5. Remove to a serving platter and drizzle a few spoonfuls of the balsamic-honey reduction over the vegetables.

6. Cut the basil leaves into thin slices and evenly distribute over the vegetables. Now you can serve local grilled vegetables at room temperature alongside your favorite dishes.

3. Rinse the bowl and pour the olive oil into it. Roll the ball of dough so that it’s covered in oil. Lightly cover with plastic wrap (allow the dough to breathe) and with a dishtowel.

Leave in a warm place and allow to double in size. (Time varies based on how warm your kitchen is, but in a cold oven with the light turned on, this usually takes about 1 hour.) Punch down, and cover with wrap and dishtowel.

4. Put the dough in the fridge overnight. If you’re doing this the same day, allow it to double in size again on the countertop, then punch down and roll out, allowing the rolled dough

Winstead Hill: Winstead Hill Park is located south of downtown Franklin on Columbia Highway. It's a 61-acre historic battle site with a Civil War monument and 3/4-mile walking trail.

Eastern Flank Battlefield: This 110-acre
