think it’s safe to say that we’ve all experienced Thanksgiving Feasts that have gone awry. Many years ago it was my cousin’s turn to host and the evening could not have been more beautiful. When it was time to be seated, she beamed with pride Gigi Spires and Guy Fieri. as she carried an expertly prepared golden-brown bird into her dining room – and dropped it on the floor. There were gasps, followed by sympathetic reassurances that everything would be all right. Fortunately she had several Tombstone pizzas in the freezer and the meal went on with minimal delay. (Postscript: The following year she sent invitations to The Second Annual Turkey Drop Dinner.) When it comes to Thanksgiving meals, I think most people have one item that they avoid. For me, that item is stuffing. One year it was so stale that I could barely muster an obligatory bite. But as I politely scattered the remnants about my plate, I noticed the ingredients included tiny bits of burger. I thought, “Why didn’t they just stuff this thing with White Castles?” And that was the inspiration for my White Castle Stuffing. Whenever I roast a turkey, I stuff it with sliders, accentuated with a little sage or poultry seasoning. And lots of diced hamburger dill pickles. (Chef ’s Note: The buns don’t hold up well to the heat. So stuff a few extras in there. Or some croutons.) Recently I met Gigi Spires, a Williamson County realtor who experienced an epic Thanksgiving disaster. I’ll let her explain: “I took the turkey out of the oven and put it on a platter, proudly carrying it into the dining room. We started to carve it and realized there was a problem. The turkey was raw! We carved it and threw it into the microwave to try to salvage it. But it was terrible and like rubber. “There were about 10 of us there and it was my first time to host the holiday … and the last for awhile. I was embarrassed but we did have a good laugh. My mom took the blame as she had told me to cook it super low all night. But she forgot to tell me to turn the oven up in the morning.” Oops. Later, Gigi sent a letter to a producer at Food Network that led to an appearance on Dear Food Network: Thanksgiving Day Disasters where she prepped and roasted turkey breasts with celebrity chef Guy Fieri in his backyard. If there’s a moral to this story it’s this: If you’re Thanksgiving feast fails, embrace it with a healthy dose of humor. And keep a stash of frozen pizzas on hand. Just in case.

NISSAN AWARDS $100,000 TO GOVERNOR’S BOOKS FROM BIRTH FOUNDATION FOR TENNESSEE’S IMAGINATION LIBRARY Nissan North America has extended its commitment to early childhood literacy in Middle Tennessee by granting $100,000 to Governor’s Books from Birth Foundation (GBBF). Joined by First Lady Crissy Haslam, Nissan presented the check to GBBF President Theresa Carl during a recent reading event at Casa Azafrán Early Learning Center in Nashville. Nissan has contributed $1.1 million to GBBF since 2005. The donated funds will be used to provide age-appropriate books each month to preschool children who are enrolled in Dolly Parton’s Imagination Library programs in Davidson, Franklin, Rutherford and Williamson counties - the four counties where Nissan has operational facilities in the state. “Nissan sponsors many educational programs to help children and youth learn and grow,” said Rebecca Vest, Nissan vice president of corporate development and social responsibility. “There is no better way to nurture opportunity in the communities where we live and work than to promote literacy and a desire to learn among children from an early age. Designer Alan Sherwood suggests hitting the Internet for ideas before taking on any home improvement project. “Houzz and Pinterest are the leading spots for generating ideas, as you can quickly look and see ideas for designs that you like,” he says. Tear out is often an area that you can do yourself and save some money, but it can be labor intensive.” And that’s where time factors into the equation. People who often do their own removal of old cabinets, for example,

sometimes expect to have new ones the next day. But it doesn’t work that way. Sherwood adds, “Cabinets are four weeks delivery on average. There are a couple of providers with a shorter ship date, but they are not consistent. Tile showers can take two weeks to build up the pan and apply the proper sealant. Basic tile installation takes a few days to provide dry time between each layer. Stone fabricators in the area are busy and can have a several week backlog.” Finally, once you’ve decided what you like, it is time to go shopping. Sherwood says the big box stores are a great place to start, but there are many more resources available. “The Home Depot and big box stores have a few selections of popular granite, tile, and cabinets starting at bottom dollar pricing. Tile stores will provide a wide selection and better interior design consulting support, as well as better pricing CONTINUED > and much more variety to choose from.

“Cabinet specific stores have custom cabinet solutions and can generate nice drawings of your cabinet layouts. Kitchen and bath specialty stores will represent more variety and better quality than the big box stores, and they often showcase local providers for cabinets and stone countertops.” He adds, “Granite today is an affordable countertop. Today’s granite price is lower than ever, and there are many colors and finishes available. Granite fabricators work with granite yards to provide a wide range of choices at full size. Fabricators often have sample sizes but less full slabs to choose from.” Colleen Ellen, co-owner of Ellen|Sherwood Design, makes note of the new design trends the firm is seeing. “Our region is finally catching up to the rest of the nation with increased use of quartz products. Quartz gives the look of granite or marble without the imperfections that can be found with natural stone products. “Cambria quartz is a major U.S. quartz provider that just opened a new distribution center in Nashville and added Ellen|Sherwood Design as an approved fabricator. Also, leathered granite tops are very popular right now. Many of the dark colors look good but a white Casablanca leathered look is beautiful as well. “As far as tile, the wood-look is very popular as well as actual tile made from reclaimed wood. Anything arranged in chevron and herringbone patterns are hot right now as well as brick tiles that are hung vertically in straight lines instead of the typical horizontal look. “Brick shapes are still trending in anything from polished, small, large, rustic, etc. We are also seeing more and more shapes such as hexagons in all sizes.”

If you’re still undecided about hiring a design firm or being a DIY-er, Sherwood suggests doing your homework. “Design firms are great because they do a lot of the leg work for you. They know the industry, who to contact, and how it is supposed to be done. They can walk through the project with you and make sure that all the work is done correctly and to everyone’s expectations. “We would recommend that they are accredited by a nationally recognized program. We also always recommend you get references to insure a positive history and repeat customers. The relationship can be key. The firm needs to be able to provide you with what you want, and provide it to the latest trends and required codes and regulations.” “My number one advice for DIY-ers is YouTube, friends and forums. Check out how it is done on YouTube and see what people are talking about in industry specific forums such as on the Stone Fabricators Association website.” Ellen adds that Ellen|Sherwood’s design philosophy is simple: to serve customers with the highest level of professional customer service, offer a large selection of the latest trends, and to provide reliable on-time delivery and skilled installation.

INGREDIENTS

1 fresh turkey (14 to 16-pounds) 1 T dry rubbed sage 1/2 tsp granulated garlic 1/2 tsp granulated onion 1 tsp salt 1 tsp pepper 1 tsp oregano 1 tsp thyme 1 lemon, zested 1 T canola oil FOR BRINE

6 quarts water 8 cups ice cubes 1 cup kosher salt 1/3 cup brown sugar 1/2 cup molasses 7 fresh sage leaves 1 T black peppercorns

DIRECTIONS Remove the legs and wings from the turkey, or have your butcher do it. Reserve for stock. Put turkey breast into a large pot or doubled-up clean plastic bag. When brine mixture is completely cooled, pour over turkey and place in refrigerator for 12 hours. Rinse under clear cool water for 5 minutes, drain well and pat dry with paper towels. In a small bowl, combine dried spices and lemon zest. Rub turkey with canola oil, lightly sprinkle rub on turkey, any extra rub can be placed in cavity. Cover loosely, refrigerate for 4 hours. Remove from refrigerator and let rest on counter for 15 minutes Preheat oven to 425 degrees while turkey is resting. In a large, deep baking pan, fitted with a rack, place turkey breast side down and roast for 35 minutes. Carefully turn turkey over and reduce heat to 375 degrees F. Continue to roast turkey for 1 hour 45 minutes or until temperature at the deepest part of the breast reads 170 degrees F on an instant-read thermometer. Make sure to check bird every 15 minutes after first hour has passed. Remove from oven, loosely tent with foil, let rest in pan for 10 minutes. Carve and serve immediately.

FOR BRINE In a large stock pot, combine 3 quarts water, 1 cup kosher salt, brown sugar, molasses, sage leaves and peppercorns. Heat until salt dissolves, remove from heat. Add 3 quarts cool water and 8 cups ice. 28

I first had this salad at a summertime dinner party and it was perfect for that occasion. It has great color, flavor and is easy to make. That also makes it ideal and practical for Thanksgiving. It goes right onto guestsâ€™ plates with the rest of the meal so if you want to serve a salad, try this. Itâ€™ll minimize the number of dishes and clutter on the table. Variations of this recipe are available on many name-brand websites. This particular version is from allrecipes.com.

INGREDIENTS 1 (15 ounce) can peas, drained 1 (15 ounce) can shoe peg corn, drained 1 (15 ounce) can green beans, drained 1 (2 ounce) jar pimentos 1 cup chopped celery 1/2 cup chopped green pepper 1/2 cup chopped onion 1 cup white sugar 1/2 tsp ground black pepper 1 tsp salt 1/2 cup vegetable oil 3/4 cup white wine vinegar

DIRECTIONS Mix together the peas, corn, green beans, pimentos, celery, bell pepper and onion. In a saucepan over medium heat, combine the sugar, black pepper, salt, oil and vinegar. Bring to a boil and pour over salad; mix well to coat. Refrigerate for 24 hours.

INGREDIENTS 1 cup raw white potato, peeled and grated 1 cup raw sweet potato, peeled and grated 1 cup apple, peeled and grated 1 cup carrots, peeled and grated 1 cup golden raisins 1 cup dark brown sugar 1 cup all purpose flour 1 tsp baking soda 1/2 tsp cinnamon 1/2 tsp nutmeg 1/4 tsp salt 1/2 cup coconut oil, melted 1 cup walnuts or pecans, chopped (optional)

I have always known this dish to be on our Thanksgiving table. My Aunt Linda made it when we gathered to celebrate with my dad's side of the family. It became such a favorite among my mom, sisters and me. I remember the first time mom brought it to my grandma's house. My grandma was none too happy to have an unexpected dish on her table. She let it be known that no one would eat that dish. And ... it was the first dish empty that day! As a new bride, I had a similar experience when taking it to my in-laws' home. Now, as our family spends Thanksgiving with my husband's side of the family, I am certain to have this dish in tow. But ultimately, mom still makes it better than anyone!

DIRECTIONS Grease a 2-quart casserole dish. Preheat oven to 375 degrees. Adjust oven rack to middle. Sift together the flour, baking soda and spices. Stir together the white potato, sweet potato, carrots and golden raisins. Add brown sugar. Add dry ingredients and mix until well combined. Fold in the melted coconut oil. Pour into greased casserole dish. Smooth top. Cover with aluminum foil. Bake covered for one hour. Remove foil. Sprinkle the top evenly with chopped nuts. Bake an additional 15 minutes until golden brown on top. Let sit for 15 minutes and serve.

INGREDIENTS CAKE

3 sticks unsalted butter, room temperature 3 cups granulated sugar 5 whole eggs, room temperature 1 T lemon extract 1 tsp pure vanilla extract 8 ounces 7UP Lemon Lime Soda, room temperature 3 cups cake flour (Recommend: Swan’s Down Cake Flour) Additional butter & cake flour to coat the inside of the Bundt cake pan ICING

1 cup powdered sugar 2 T 7UP Lemon Lime Soda (or ginger ale)

DIRECTIONS

Preheat oven to 350 degrees In a large bowl using a hand mixer or stand mixer, blend the butter and sugar until light and fluffy (about 5 minutes). Next, add the eggs to the batter one at a time until each is thoroughly blended. Add the lemon and vanilla extracts, mix well. Add the cake flour and 7UP to the batter alternately beginning and ending with flour. Be sure to stop periodically to scrape down the sides of the bowl. (Here’s the order: 1 cup flour, mix; ½ cup 7UP, mix; 1 cup flour, mix; ½ cup 7up, mix; and the last cup of flour, mix.) All of the batter should be well incorporated. Finally, using your hand or clean paper towel, rub the inside of a Bundy, or angel food, cake pan with room temperature butter, just a thin even coating. Then put about a ¼ cup of cake flour into the pan and roll it around allowing it to stick to the butter in the pan, again, just a thin coating. Shake out the excess flour. Pour the cake batter into the cake pan evenly. Bake at 350 degrees for about 1 hour and 10 minutes or just until a wooden skewer comes out clean. Cool the cake in the pan for 10 to 15 minutes, remove and place it on a plate or cooling rack to finish cooling for about an hour. If desired, add the icing after the cooling process. In a medium bowl, combine the powdered sugar and soda. Whisk until combined and then pour evenly over the cake.

he Second Annual Pilgrimage Music & Cultural Festival capped its twoday run on Sunday, September 25

at The Park at Harlinsdale Farm in Franklin. More than 30,000 attendees turned out for 60 artists appearing over five stages, more food trucks than you could count and many local vendors who showcased their crafts throughout the weekend. Both artists drew large crowds that sang along to every song and shared the same enthusiasm of the performance as the artists themselves. s an outsider looking into the beautiful windows of ECCO Salon in Downtown Franklin, David Colón sees many things that contribute to it’s success. For starters, I should explain that David considers himself an outsider not because he’s a big burly man (for many a “dude” have been dappered up by the exceptional women at ECCO), but rather because he’s a big burly BALD man--a condition that makes it tough for him to offer much to those in the business of hair. But the thing that gives Mister Colón the audacity to walk through ECCO Salon’s front door with a smile is the “Norm-like” greeting he gets on the other side. “It’s like Cheers,” Colón says, “the place where everybody knows your name. I see people getting cut, colored and styled not just by a professional, but by a friend.” David Colón is a local film producer with Motion Poet Productions. He is also the co-creator of a new reality TV concept entitled, "The Bigger or Better Project." Colón’s co-creator? None other than ECCO salon’s owner, Lisa Vanderheyden Asselin. “The series is a game show that features small town business owners meeting big-time needs in their community,” Lisa says. Colón can’t say enough about his friend and new partner: “I've known Lisa for awhile and aside from being an incredible business owner and leader, she has this amazing, giving spirit. And she's also wildly creative.” The two have tossed around several TV show ideas but this one has seemed to stick. “And all those conversations happened right here in the salon,” Colón says.

ECCO Salon’s creative collaborations don’t stop there. David Colón, along with filmmaker Michael Birkland, have recently opened their new media and ad agency, FRESH Media, just upstairs. “Lisa’s heart for connecting people is contagious,” says Melissa Milligan, a veteran stylist with the salon. And it’s not hard to see. ECCO’s entire team of meticulously trained specialists brings Lisa’s same heartfelt approach to their clients everyday, be it a quick cut and style or an all day beauty makeover. “Even though it’s the same wonderful people working day in and day out, it always feels like a new experience,” David says. “And you walk out of those doors looking as good as you feel.” It’s the kind of feeling that makes you long for the next time you’ll be back... to that little downtown salon where everybody knows your name.
