I am fascinated by artificial intelligence. I don't know much about it but I've been playing around with it lately as I build a library of thoughts and plans for the future of this magazine and Two Sparrows Village. A.I. knows a lot. If you haven't tried it, there are plenty of free apps you can peruse. I asked A.I. to write a lifestyle letter from the publisher of a magazine. Like magic, my computer compiled a beautiful letter, full of descriptive adjectives and flowy sentences that sounded so very professional. I was flabbergasted! The only thing was, it didn't sound like me. There's no doubt my writing style is very conversational, and I'm sure A.I. could write something that may sound more like I wrote it, but I really don't care. These letters come from my heart and no computer-generated program can make words sound like that... yet. I don't know much, but I know that, for now, I will continue to write my letters to our readers. It feeds me. I also know that this is the time of year when I get really sentimental. I consider all of the areas of my life that I am thankful for and I make my thankful list. I journal my prayers every day so this is not a new thing for me to write down what I am thankful for, but at this time of year, I write it all out at once. I don't know much, but I know I am very grateful for my husband and editor, Byron, and my precious daughter, Abby. I am grateful for my team of writers and photographers and I am super grateful for our advertisers who make this magazine come to life every month! If you enjoy reading this magazine, I implore you to support them as much as possible. I am grateful that the Lord gave me the opportunity to found and grow a local nonprofit that serves adults with intellectual and developmental disabilities. Mostly, I am grateful that the God of the Universe loves me enough. Enough. It's worth repeating. And he loves you enough, too. Thanksgiving is over and most of the food was gobbled up, but there are always leftovers. I mean, that’s one of the perks, right? But we were tired of the same old turkey noodle soup or tetrazzini, so we ventured out and tried some fresh new takes on Thanksgiving leftovers. Hope you have the chance to try one or all of these recipes after Black Friday shopping or while watching some Sunday football. Enjoy!

Turkey Potato Chowder

ingredients: • • • • • • • • • • • •

2 tablespoons butter 1/2 small onion, diced 1 clove garlic, minced. 2 tablespoons all-purpose flour 3 cups chicken stock 1 teaspoon Italian seasoning 3 cups leftover mashed potatoes 2-3 cups cooked turkey, shredded or cubed 1 cup half and half 1/2 cup corn, frozen salt and pepper (to taste) optional cheddar cheese, sliced green onions, and cooked crumbled bacon for topping

cooking instructions: 1. In a large stockpot or 5.5-quart Dutch oven, melt butter over medium-high heat, until it starts to bubble, about 1 minute. Add onion and garlic and sauté until soft and tender and starting to brown, about 3-4 minutes. 2. Add flour and mix well until evenly combined with the onion mixture and continue to cook for another minute. Whisk in stock and Italian seasoning and mix well. Bring the mixture to a simmer and stir constantly until it thickens, about 3-4 minutes. 3. Add in mashed potatoes and stir until all the potatoes have broken up. Let the soup simmer over medium heat for 8-10 minutes until thickened, stirring occasionally. 4. Add turkey and half and half. Cook until heated through, about 3-5 minutes. Stir in corn to warm through and season with salt and pepper to taste. 5. Ladle into bowls and top with shredded cheddar cheese, bacon, and some green onions, if desired.

Coconut Turkey Curry makes: 4 servings

ingredients: • • • • • • • • • •

1 tablespoon vegetable oil 1 medium onion, diced. 1 tablespoon garlic, minced. 1 teaspoon fresh ginger, grated. 1 tablespoon curry powder 1 (13.5 ounce) can coconut milk 1 cup turkey stock (or chicken stock) 1 tablespoon sugar 2 tablespoons lime juice (or lemon juice) 2 cups leftover cooked turkey, cut into 1-inch cubes. • 2 carrots, sliced 1/4 inch thin • 1 tablespoon fresh cilantro, finely chopped.

cooking instructions: 1. Heat oil in a large skillet over medium-high heat until the oil sizzles, about 1 minute. Add onion, carrots, garlic, and ginger and sauté until fragrant, about 1 minute. 2. Add curry powder and stir well until evenly combined. Continue to cook for 1 minute. 3. Add coconut milk, turkey stock, sugar, and lime juice. Stir well to combine and bring the sauce to a boil. Reduce to medium heat and let the sauce simmer for 15 minutes until thickened a bit. 4. Add cooked turkey, mix well and cook until heated through, about 3-4 minutes. 5. Top with fresh cilantro and serve warm with Coconut Rice or Steamed Rice.

Cranberry Sauce Oat Bars makes: 9 servings

total time: 50 minutes

cooking instructions: 1. Preheat oven to 350 F. 2. In a large bowl, use a hand mixer or stand mixer to cream together butter with brown sugar until light and fluffy. Add rolled oats, flour, vanilla, baking powder, and salt. Continue to mix until fully combined. The mixture will resemble crumbs. 3. Transfer the mixture into a 9-inch square baking pan, and firmly press it in to create an even layer on the bottom. Layer and spread cranberry sauce on top. 4. Make the pecan oat topping: In a shallow saucepan, melt butter over medium heat. Once melted, remove from heat and stir in brown sugar, oats, pecans, and cinnamon. Stir until fully combined. Sprinkle and evenly distribute the topping on top of the layer of cranberry sauce. 5. Bake for 30 to 35 minutes until lightly browned. Place on a wire cooling rack to cool down and cut into 9 even squares.

From Presidents to Tots Retired Peachtree City Marine and fellow volunteers help make Christmas merry for children in need.

A Fayette County resident who once was responsible for ensuring U.S. presidents safely reached their destinations is now responsible for ensuring toys reach the hands of children in need at Christmas. Retired Marine Lt. Col. Jeff White exudes the same passion for service as the local coordinator of Toys for Tots as he did during a long and distinguished military career that included piloting Marine One for Presidents Clinton and Bush. Like most Marines, his desire to serve didn’t end with his military career. “I know I’ve been blessed,” White said. “I feel invited and obligated to help wherever I can.” But he’s quick to add he doesn’t handle the job alone. “I’ve got a lot of great people who volunteer and help us out.”

White, who served in numerous countries and operations including Desert Shield and Desert Storm, said being on call 24 hours a day, seven days a week as one of the Marine One pilots, was tough on family life. But he said, “The Presidents were always very good, pleasant, and kind to us.” Although piloting the most powerful man in the world seems like a nerve-wracking task, White said, “My job was to get that helicopter wherever it was supposed to be safely. That’s what we did.” One of his favorite memories is of George W. Bush. Shortly before White left the unit, he’d had a “grip and grin” photograph made with President Bush. Bush asked him all the usual questions about his plans as well as

about his family. White shared with the president that his father was hospitalized with heart issues. About a week later, White remembers the president coming aboard and asking, “How’s your dad doing?” “I was blown away,” White said. “All the president has on his mind and all the stuff they have to keep up with and he remembered the dad of the guy driving his helicopter was in the hospital.” White also said the president’s mother, Barbara Bush, was known for her kindness, often gifting cookies when people visited Camp David. White’s military career also included service as the domestic plans officer for Homeland Security. After being stationed at Fort McPherson in Georgia, his family settled in Peachtree City in 2001. He flew for AirTran Airways and Southwest Airlines after his military retirement. “I’ve had an amazingly blessed and fun, exciting career,” he said. “But I never got into Toys for Tots until I got out of the military.” Toys for Tots was started in Los Angeles in 1947 after the wife of Marine Corps Reserve Major Bill Hendricks made some dolls. She told him to donate the dolls to an organization that helped needy children. When he couldn’t find such an organization, she told him to start one. For many years, the Marine Reserve Program ran Toys for Tots. Through his membership in Marine Corps League Detachment 1325, White learned that the Marine Reserve Program had a serious need for new manpower to run Toys for Tots. With so many Marines deployed to war, there weren’t enough people to run the program. Marine Leagues took up the slack and now run the majority of more than 800 Toys for Tots programs in the United States. Hank Berkowitz, Mike Foran, and White started the Fayette County Toys for Tots program in 2010, which has grown to include Coweta, Meriweather, Talbot, and Heard counties. That first Christmas they served 1,700 children. In 2022, more than 6,300 children were served with the help of 200 volunteers across the five counties. “This program has been very, very successful,” White said. “To serve 6,000 kids, it takes between 20,000 and 23,000 toys. We will

typically collect in the neighborhood of 14 to 15 thousand toys, and raise on average about $35,000 a year, sometimes more, sometimes less.” A large donation last year allowed the purchase of 250 bicycles. “That was a big hit,” White said. Donations to Toys for Tots should be new, unwrapped toys for birth through 15 years. Since most of the donated toys placed in about 200 collection boxes tend to be for younger children, White said donated funds help purchase items that pre-teens and teens would like, such as earbuds, wi-fi speakers, makeup kits, and purses. All local donations to Toys for Tots are distributed locally from distribution centers in Peachtree City and Newnan. White’s wife, Karla runs the Peachtree City distribution center. Manned completely by volunteers, White said 98 cents out of every dollar donated to Toys for Tots goes directly to buying gifts for children. Each child chosen receives three gifts from Toys for Tots and each county handles applications differently. Generally, names are gathered through other charitable

organizations, churches, school systems, and fire departments. White shared that hearing stories such as one from Talbot County about some children who cried for two days because they couldn’t believe they received bicycles makes the effort worthwhile. “Their families were beside themselves because they couldn’t afford these gifts,” he said. Knowing that Toys for Tots reaches more than 20 million children across the United States stokes his enthusiasm. “Our reach is huge,” he said. White is thankful and appreciative of all who contribute and volunteer locally. “There are so many people that help us get it done,” he said. “It’s just whatever we can do to make it better for the community.” But White added there is always a need for more help. “I need people,” he said. “I need people to help. My favorite room in the house, second only to the kitchen, is the guest room. A place where guests who come to stay can be spoiled and made to feel special. After a yummy and satisfying meal, family and friends get to retreat to a relaxing haven where they can unwind, rejuvenate, and feel welcomed. Valencia Marierose, a realtor with a passion and gift for interior design, shares her guest room and personal touches to inspire us. Whether you’re an avid host or just occasionally welcoming guests, here’s how to design and furnish a guest room that will leave a lasting impression. 1. Comfortable Bedding: The cornerstone of any guest room is, undoubtedly, the bed. Invest in a high-quality mattress that provides adequate support and comfort. Layer it with soft, clean linens, and an assortment of pillows. “I like a nice queen-sized bed and a plush comforter or duvet. My guest room is large enough for two queen beds. A well-made bed not only ensures a good night’s sleep but also adds a touch of luxury and thoughtfulness to your guest’s experience.” 2. Space Utilization: Consider the available space in the guest room and arrange furniture to optimize functionality and comfort. “I would consider the biggest size bed that can fit comfortably in the room.” A small seating area with a comfortable chair provides a spot for reading or relaxation. A small side table is useful for a lamp or alarm clock. A dresser or wardrobe is ideal for guests to keep their belongings organized and out of sight. 3. Personal Touches: Adding personal touches to the guest room helps create a welcoming atmosphere. Consider placing fresh flowers, a handwritten

welcome note, or a small basket of snacks and water to greet your guests. “A journal is a nice touch. I also love a nice blanket and nice thick socks. I’m talking about the socks that have the rubber on the bottom. You can drape them on the chair or at the foot of the bed.” Reading materials and recommendations for nearby restaurants and attractions can enhance your guest’s stay. 4. Neutral and Inviting Decor: A neutral color scheme exudes a sense of calm and appeals to a broad range of tastes. Soft, muted tones like whites, creams, grays, or pastels create a soothing environment. Incorporate tasteful artwork or framed photographs to add a personal touch without overwhelming the space. “I like different shades of one color - a monochromatic look in my guest room. It’s relaxing and inviting. I also love abstract art on the wall.” 5. Quality Lighting: A well-lit guest room is a welcoming space. Ensure a variety of lighting options, including bedside lamps, overhead lighting, and natural light during the day. Dimmer switches can help customize lighting to each guest’s preference. “I have lighting for different moods. My recessed lights are bright lights, my lamps provide warm lighting, and my ceiling fan light can be adjusted.” 6. Essential Amenities: Incorporate amenities to enhance the guest experience. Provide a small mirror, an alarm clock, a charging station for electronics, and a set of fresh towels. “If you can do a monogrammed towel, that is a really nice personal touch.” Provide extra bedding and blankets to accommodate different temperature preferences. Consider adding a television, a mini-fridge, or a kettle with tea and coffee to give guests the option for added comfort and convenience. 7. Privacy and Security: Ensure the guest room has adequate privacy with curtains or blinds and a lockable door. “A guest room with its own bathroom adds ultimate privacy.” Installing a fulllength mirror and a well-lit bathroom will contribute to a sense of security and convenience.

a festive pairing The age-old question, “What wine goes with turkey?” is answered. ARTICLE BY MARY ABEL

It’s a question heard every year about this time: “What are the best wines to serve with Thanksgiving dinner?” “In my early days in the wine business, the answer was pretty cut and dried because it was all based on the assumption that you had a turkey that came out of the oven that was dry, and so you’re almost guaranteed to need something with a little bit of sweetness to it to help balance that out,” James Lewis says. James is a sommelier who has been in the wine business for more than 26 years. “I’d recommend a sweet or off-dry Riesling or Gewürztraminer. Something that will help with that dry meat that you’re about to choke down.” But now, with all the ways people are preparing the big bird, he says that conversation has become a lot more interesting and fun. “People are frying turkeys, which come out really moist and delicious. They’re smoking turkeys and they’re doing them on the grill,” James says. “Now, when I’m asked that question, I always ask how the turkey is going to be cooked because any given preparation is going to call for something a little bit different. “If you’re deep frying it, it’s going to come out very moist with a fair bit of fat, so you need something that’s going to cut through that. So you can go with a dry white, you can do a dry Riesling, or you could try a French Chardonnay, which typically doesn’t have that big, rich mouthfeel that California Chardonnay would have. It’s crisper and cleaner with high acidity.” For those who prefer red wines, James says that a fried or smoked turkey can handle something a bit bolder and full-bodied. “Try something like a Pinot Noir. It’s not at all heavyhanded. When I’m talking about red wines, and

I talk about heavy-handed or big—Cabernet is big and full-bodied. I call it the linebacker of the wine world. Then you’ve got Pinot Noir, which is more about balance and elegance. So, if Cabernet is a linebacker, Pinot Noir would be the ballerina. They’re both athletes, but with different approaches to athletics, so they have different approaches to your palate. Cabernet is big, dry, and highly tannic, so you might serve a Cabernet or Malbec if you’re having a steak for Thanksgiving, but you wouldn’t want to do that with a turkey. “With a turkey,” James continues, “you want something that’s going to have a little more acidity, less tannins, and medium body; not that big mouth-filling richness. You can do a Beaujolais or an old-world Italian Sangiovese, which tends to be a very food-friendly wine.” Somewhere in between might be a soft, flirty rosé. And rosé wine seems to be having a moment. “Rosé was always thought of as a summer wine, but people are now drinking it year-round. It’s an excellent choice to go with turkey.” What about bubbles? “I almost hesitate to answer that because it’s kind of the easy answer. You can drink Champagne or sparkling with anything because of that really bright acidity. Especially if you have a fried bird, a Prosecco or sparkling wine is going to cut right through that fattiness and balance it out really nicely.” If you’re hosting a tableful of friends and family this year, James says it’s easy to bring together a collection of wines that will please the crowd. “If you do one bottle of sparkling, whether it’s white or rosé, a bottle of dry white, a bottle of rosé, and a bottle of medium-bodied red, you’ve got something to cover just about anybody’s preference.”

What if I’m serving ham this year? “Lots of people have ham for Thanksgiving, right? It’s very traditional to pair ham and Pinot. But again, you can get creative. You can do a Grenache, you can do a Beaujolais…really, any of those medium-bodied reds will be delicious.”

What about dessert? “If you’re having pumpkin pie for dessert, I would go with something like a tawny port. The spiciness of the pie combined with that kind of nuttiness and caramel notes of a tawny port? Lovely. And it would work with an apple pie as well.”

How much should I spend on a bottle of wine? “That’s kind of an impossible question to answer because wine is so incredibly subjective. That said, I’m a firm believer that there is an absolute ocean of delicious wine in that $15–$25 retail price point. If you go to your wine shop and tell them you’re looking for a nice off-dry Riesling for around $20, they should be able to find you something that’ll work really well. There’s no reason to break the bank.” James Lewis is a sommelier who has been in the wine business for more than 26 years, and he and his wife, Nancie own Crush Wine Bar in Castle Rock Colorado.

TELL US ABOUT THE LIFE-CHANGING CIRCUMSTANCE THAT HAS RECENTLY AFFECTED YOU. My daughter was diagnosed with T-cell lymphoblastic lymphoma, a form of leukemia that presented as a lymphoma versus a blood disease. But the tumor was so large it was pushing into her lungs and she was not able to breathe effectively. Her chemotherapy was intense and we spent weeks in the hospital. She ended her chemo and rang the bell on March 17, 2023. She is now in full remission! HOW DID YOU RECEIVE SUPPORT DURING THIS TIME? We had an outpouring of support from family and friends. There were meals prepared, gift cards, Uber eats at the hospital, gifts of blankets, and stuffed animals, it was a lot. It made my husband and I reassess our outlooks on life. My

mentality has shifted from wanting things done on my time to slowing down and having FAITH that God will make the right things happen for me in HIS time. By God’s grace, I managed to continue to run my business, be the president of the Women’s Council of Realtors in 2022, get my broker’s license in December of ‘22, and serve as fundraising chair for Two Sparrows Village. WHAT ARE YOU MOST GRATEFUL FOR THIS HOLIDAY SEASON? My daughter’s health and having her older sister home from college. Plus, I just got back from the most amazing trip to California, not to mention that our daughter received a trip from Make-A-Wish, GA to Hawaii! I am overjoyed that we’ve had so much family time this year.
