Setting a Proper Table

One of my favorite shopping places that I frequented with my mother was Marshall Field's. Upon entering the store, we would walk past the perfume and makeup counters, then ride the escalator down two floors. Waiting for us at the bottom were the most glorious displays of china, silverware and crystal you have ever seen. Names like Wedgewood (Colonnade Black was my fave), Noritake, Haviland, and Lenox in the china department, and Gorham, Waterford, and Royal Doulton crystal goblets and wine glasses were a shiny, sparkling feast for the eyes. And we ate it up! (pun intended) At a young age, my mother set in me a love for all things entertaining. She taught me the proper way to set a table, and I still set it that way today. This is what she taught me: 1. Lay out a crisp tablecloth. Then, place the dinner plate in the middle of the setting about one inch from the edge of the table. 2. Next, center the salad plate on top of the dinner plate. 3. Place the bread plate above, and to the left, of the dinner and salad plate. Place the butter knife horizontally on the bread plate. 4. Place the dinner fork to the left of the dinner plate and the salad fork to the left of the dinner fork. The bottom of the silverware should be even with the bottom of the dinner plate. 5. Place the knife to the right of the dinner plate and then set the spoon to the right of the knife. 6. The dessert spoon and/or fork should be placed horizontally above the dinner plate. 7. Water, white and red wine glasses go in the upper right corner of the place setting. The water glass should be closest to the guest and the red wine glass goes just behind the white wine glass. 8. Fold the napkin and place it on the salad plate, or under the forks to the left. 9. Add a place card above the dessert spoon. Write the guest's name on both sides so they can find their seat, and the guests on the other side of the table will know who they are talking to. 10. The coffee cup and saucer can be set below the glasses with the dessert course. Happy table setting, y'all! Hope you enjoy our food and drink issue this month.

Over the last number of years, Chris Benziger has been uniting people, over wine, to benefit some of Georgia’s finest non-profit organizations. Whether hosting virtual or in-person wine tastings for hundreds of people, sponsoring classic fundraising events, or virtual charity broadcast dine-along television, Chris along with his niece Jamie Benziger, of Imagery Estate Wines (yes, they are all incredible vintners), are 100% committed to the goodness of Georgia’s non-profit organizations. It was as if supporting organizations like Georgia Ovarian Cancer Alliance, Georgia Lawyers of the Arts, Pediatric Brain Tumor Foundation, Les Dames d’Escoffier International, EDIN, and ADL (Anti-Defamation League) had enriched their lives beyond measure and challenged them both to do even more in our world to benefit others. It so happens that I reached out to my California friends at the beginning of April 2020 with a curious idea of how they could take a pivotal role in helping many local charities survive the pandemic. Our country had just shut down, and people were scared. What about the future? Some of my favorite charities

were already beginning to feel the effects of the initial shutdown; something had to be done. Since we were all using Zoom anyway, it seemed only logical that we could apply the technology to wine tastings. Chris and Jamie’s simple gesture of sharing their wines brought our giving communities together to enjoy, laugh, sip, and most importantly, check in on one another, virtually. It was a great success but it would not stop there. What’s up next for Chris? Well, he is headed to Fayetteville to host an incredible evening of food, fun, and fundraising all to benefit Fayette County’s own Two Sparrows Village. This November 17th, Chris Benziger is hosting the 2nd Annual Bird Bash in support of Two Sparrows Village at Christian City. This curated wine and culinary event is being held at Town Stage at Trillith and will feature ENZO STEAKHOUSE & BAR, Fayetteville’s newest fine dining Italian restaurant, in partnership with some of Sonoma County’s favorite wines. “Food and wine are two of the elixirs of life,” said Chris, “getting people together to celebrate around food & wine, while CONTINUED > OCTOB ER 2 0 2 2 | C I TYL I FE STYL E . championing a good cause like Two Sparrows Village, is a fun way to make people aware of an issue and give them an avenue to help.” Recently, Chris and Jamie both came to Atlanta for a visit and had a chance to meet some of the incredible members of Georgia’s charity community. In true Benziger fashion, the dynamic duo arrived with cases of estate wines from their vineyards, and an impromptu in-person wine tasting was held, gathering new and old friends together for the first time in a long while. Both Chris and Jamie have been working tirelessly to change our world; taking their love of wine and spreading a message of charity and hope across the nation, one glass of deliciousness at a time.

During this evening of fellowship, the people who gathered had a chance to express their gratitude for everything that the Benziger Family of Wines had done to ensure their individual and collective success. Two Sparrows Village founder, Jennifer Conforti happened to speak with Chris about his connection to the special needs community. “We have several friends that have children that have autism,” said Chris, “and we need to be proactive in our approach to the world we want to live in, meaning we need to actually get up and do something and not just talk about it.” Needless to say, Two Sparrows Village's approach ‘to providing a supportive living environment for adults with intellectual disabilities within an inclusive community,’ empowered Chris to help make a difference right here in our own backyard. “Giving is one of the most basic tenets of a functioning society,” said Benziger, “we can judge the merits of a community on how well they take care of those that might need a helping hand.” Join Chris Benziger and all of Fayette County as we gather to celebrate Two Sparrows Village at Christian City and let’s all do our part to make this world a better place. “Who isn’t awkward? We’ve all had an awkward moment. We all have an awkward story. We can all relate.” The Poliaks have traveled extensively. Andrew has been to over 2,000 breweries worldwide and has tasted close to 6,000 unique beers. "We have a very big experience in craft. The experiences give Amanda and I a unique opportunity to bring some of those tastes and flavors we've enjoyed around the globe, to Fayetteville." In 2008, Amanda began brewing at home, which at the time was Lake Stevens, Washington. She experimented with different tastes while perfecting her technique, and before long was self-distributing to bars and restaurants. Today, according to Untappd - a mobile phone application that allows you to share and rate your favorite beer - Amanda's beers rank towards the top with a 4.08 out of 5 rating. Andrew is thrilled. "That is incredible. Real beer nerds are loving on the beers that Amanda's creating." This is a testament to Amanda's experiences and knowing what will work. But what about the name Awkward Brewing? On a quest for dinner ingredients, Brandi Ching Wheeler looked through the self-serve market windows at rows of leafy greens, like the ones she was buying. “I’m excited,” she said. “This is real food.” Brandi has discovered a little know gem of the Southside and one of Georgia’s best-kept secrets— Alō Farms. With no plowed fields, sea or sun in sight, lush greens and tilapia grow in symbiotic harmony inside a large repurposed building, behind Osmose on Highway 74 in Peachtree City. This unique farm has developed a system that could be the answer to the world’s growing need for local, nutrient-rich food and farming efficiency. “What we're doing in here is creating a living and natural ecosystem indoors, so we're able to grow 365 days a year,” Alec Brown, general manager, explained. The farm is the brainchild of Alec’s father, Jefferson Brown, who researched and developed an alternative, indoor growing method capable of producing multiple crops per year after seeing starving children while on mission trips. “That really got to me,” Jefferson said. The method combines aquaculture with growing crops of lettuce, herbs, sprouts and micro-greens, and other vegetables. The produce is sold to local restaurants and residents who want certified, naturally-grown food that is free of pesticides and other chemicals. Alō products are also available through Market Wagon, an online ordering and delivery service.

EFFICIENT PROCESS Mediterranean tilapia comes to Alō from hatcheries and is raised in large tanks inside the building. After solid wastes are removed from the fish tanks,

ammonia-rich water, which would be harmful to the fish if allowed to build up, is circulated to the other side of the building where the crops grow. The plants, which contain no known GMOs, rest on rafts, dangling their roots in the water to absorb the nutrients, while also filtering the water. The filtered water is then re-circulated back to the fish tanks in a 24/7 gravity-fed cycle. Water quality, temperature and humidity are monitored at least three times daily. The system also follows a day/night schedule with the full-spectrum incandescent lights going off at night to give both plants and fish a rest. With an indoor space of about half of an acre, Alō Farms can produce more than 125 acres of organic farmland for the same types of crops. The seed is planted in stone wool, which has a cotton-candy-like consistency that allows root growth and water circulation. From seed to harvest most Alō plants reach maturity in 35 to 42 days compared to more than 100 days for plants grown in soil. With less evaporation, the method also requires much less water. More than 5,000 heads of lettuce and several hundred pounds of microgreens and herbs are harvested each week. The tilapia, hand-fed premium non-GMO food, reach maturity in about nine months when they are humanely processed. "With more than 7,000 fish in the building, there’s no fishy smell, which attests to their stress-free environment," Alec said. He hopes this healthy and sustainable way to produce fish, free of mercury and other chemicals, will become a way to meet the worldwide need to get fresh fish in urban environments. Alō has already sold about 14,000 filets this year.

Named for a Greek word that means to feed, nourish, sustain and develop, Alō began as two smaller farms with the primary mission to create community around food security, purity and nutrition. Alec, who formerly trained professional athletes, helped build the new, larger farm, which had its first harvest in 2021. “This is one of the first indoor ecosystems like this that we know of in the world that's fully indoor,” he said. “Definitely one of the biggest ones.” With a lack of biodiversity and nutrients in foods shipped from great distances, Alec is proud of Alō Farms’ ability to feed an enormous amount of people with nutrient-dense food grown close to home. “A lot of our customers need natural and clean nutrition that doesn't have herbicides and pesticides,” Alec said. Alec enjoys eating the tilapia but has a difficult time naming his favorite Alō produce. “You can't go wrong with the butter mix,” he said. “It's just a great mix. I love the Muir (lettuce). It's nice and crispy crunchy—and the power salad with those mixed micro-greens—you feel the difference when you eat it.”

OUTREACH PROGRAMS Alō Farms, which is as much about education and innovation as it is about nutrition, offers tours to schools and other groups. “S.T.E.A.M. is really important to us,” Alec said. With the dwindling number of farmers having an average age of 69, Alec added that it’s important to introduce the next generation to agricultural innovation. Sweet Thangs THERE’S NO PLACE LIKE HOME-MADE WHEN YOU HAVE NOT ONE, BUT A MOUTH FULL OF SWEET TEETH. I don't know what was more appealing to me as a kid - the juicy yellow pineapple ring, the bright red cherry that sat like a bullseye in the middle of the pineapple ring, or the sweet mushy brown stuff that surrounded them both - but I can tell you that to this day, pineapple upside down cake reminds me of my Uncle Lee. He's my father's brother and former Senior Chef at the elite New York Yacht Club for more than 20 years and gone way too soon. Uncle Lee, who lovingly called me String Bean as I was super skinny as a kid, made sure the dessert table was covered with all kinds of sweet thangs. Everything, and I mean everything, was made from scratch - pumpkin pie, sweet potato pie, apple pie, lemon meringue pie, a variety of cakes and cookies, cobblers of every kind, and more, covered his dining room table and overflowed to a card table that sat off to the side. Ah, but the pineapple upsidedown cake, tender and buttery, was my favorite. I'd wash down my hunk of a slice with a tall glass of something cold, but today, my equally generous slice is paired wonderfully with a hot steamy cup of dark roast coffee. When I became an adult and left home to join the Air Force, my leave time always included a visit to Uncle Lee's house, and I was always his String Bean. Although Uncle Lee is no longer with us, my family continues the dessert table tradition at pretty much every occasion where sweet thangs have come to be expected; and you can bet that pineapple upside-down cake never loses its childhood appeal. Homemade desserts, along with memories of the best uncle ever, continue to fill me and satisfy me in ways my mouth full of sweet teeth could ever be.

Pineapple Upside Down Cake zoomed to popularity shortly after the invention of canned pineapple in the early 1900's. When the Hawaiian Pineapple Company (now Dole Pineapple) sponsored a recipe contest in the mid-1920's, fully 2,500 of the more than 60,000 recipes were for pineapple upside down cake.


PINE APPLE UPSIDE DOWN CAKE INGREDIENTS • 1/4 cup butter, melted • 1/2 cup brown sugar • 20-ounce can of pineapple slices, drained (or fresh pineapple) • Pitted maraschino cherries Cake • 1/2 cup butter, softened • 3/4 cup sugar • 2 eggs • 1 teaspoon vanilla extract • 1-1/2 cups all-purpose flour • 1-1/2 teaspoon baking powder • 1/4 teaspoon salt • 1/2 cup milk DIRECTIONS 1. Preheat oven to 350 degrees and grease an 8” x 8” baking dish. 2. Topping: Sprinkle the brown sugar on the bottom of the baking dish. Melt butter and pour over the top of the brown sugar, mix together, and spread evenly over the bottom of the dish. Place the pineapple rings on top of the brown sugar mixture, then place a cherry in the center of each pineapple slice. 3. Cake: Add the butter to a large mixing bowl and cream for 1 minute. Add the sugar and cream again for one minute. Add the eggs one at a time and mix thoroughly with each addition. Add the vanilla and mix. Combine flour, salt, and baking powder. Sift into the bowl and mix. Add the milk, mix and then gently spread cake batter over pineapple. Bake for 40 minutes or until golden brown and a toothpick comes out clean. Let cool to room temperature and turn cake upside down onto a cake plate.

It was a dish that was, and to this day, a must have. The type of beans could always change, but the flavor was always the same..... delicious and full of warmth. A must try!!

MOM’S CALICO BEANS ingredients: • 1 lb sausage • 8 slices bacon • 2 whole onion, coarsely chopped • 1 cup brown sugar • ½ teaspoons garlic salt • 2 teaspoons prepared mustard • Pepper to taste • 1 16 oz. can yellow or butter beans, undrained • 1 16 oz. can green beans, undrained • 1 16 oz. can pork and beans, with juices • 1 16 oz. can kidney beans, with juices • 1 16 oz. can lima beans, undrained • 1 can tomato soup • 1 12 oz can tomato paste

directions: 1. Preheat oven to 350°F. 2. In a large skillet over medium heat, fry the bacon until crispy. Remove the bacon from the pan and set aside. 3. Save 2 Tablespoons of the grease (discard the remaining grease). Saute the onions and crumbled sausage in the saved bacon grease. Once the onions are translucent and sausage is cooked through, stir in the brown sugar, garlic salt, mustard and pepper. Mix to combine. 4. Stir in the beans, one can at a time, along with the tomato paste and tomato soup. Cut the bacon into bite sized pieces and add it to the bean mixture. Thoroughly combine all the ingredients. 5. Place mixture into large bean pot or dutch oven. Bake uncovered at 350°F for 1 hour.
