or good food. It needed to be something specific and special. Being the typical kids we were, we rolled our eyes and sighed when asked to speak up. We knew it was coming and we dreaded being made to think after gorging ourselves with turkey and stuffing (in Chicago, we made stuffing, not dressing), mashed potatoes and gravy, and green bean casserole. But we could not eat the apple, pumpkin or pecan pies until we exclaimed our thanks so we took a deep breath and picked something to share. Now that I am all grown up, I have so many things I am thankful for that I find it hard to choose only one! But, if I were to choose, writing these Lifestyle Letters is absolutely on my list. I ask God to inspire my words every month before I sit down at my computer to type and this is no exception. SAINT BERNARD WHAT IS RILEY’S STORY? Riley was surrendered by her previous owner, no fault of her own. WHAT ARE RILEY’S FAVORITE HOBBIES? Belly rubs and car rides. She is also the best movie buddy. For Riley, it is all about being with her humans. WHO DOES RILEY GET ALONG WITH BEST? Riley is a very loyal girl. She does great with kids, meeting new friends and dogs her size. WHAT TYPE OF FAMILY WOULD BE THE BEST MATCH FOR RILEY? Riley is very dependent on her human and misses them when they’re away. She would be an ideal companion for someone who can devote a lot of time at home, cuddling Riley. HOW IS RILEY UNIQUE? Riley is a beautiful dog. Her looks, markings and soft coat make her stand out from the crowd. For a Saint Bernard, she is on the small side, and she drools/sheds much less than you would expect. She has fantastic manners and will kindly alert you when she needs water, food or to use the restroom.

WHAT ARE WESTLEY’S FAVORITE HOBBIES? Going for long walks! Saying “hi” to new people and new smells make him happy. If you sit down expect him to come snuggle up next to you. WHO DOES WESTLEY GET ALONG WITH BEST? Westley meets many new human friends on our walks. His belief in life is that humans have two hands and they should be using both to give him attention. He is intrigued by other dogs, but a slow introduction is best. He gets a little over-excited. WHAT TYPE OF FAMILY WOULD BE THE BEST MATCH FOR WESTLEY? An experienced and active owner who loves to go for adventures outside. A family who wants a snuggle buddy.

You may find that your shift in focus will help you resist distractions with your phone and food. Persistent: Find little ways to maintain your health. Planning to holiday shop? Park your car far away from the storefront. Try to reach a goal of 10,000 steps per day. ch icken ch i l i verde i n g re d ient s + 1.5 lbs skinless, boneless chicken thighs or breasts + sea salt and pepper to taste + 1 Tbsp extra virgin olive oil + 1 small yellow onion, chopped + 1 bunch fresh cilantro, chopped + 1 poblano pepper, chopped + 3 cloves garlic, minced + 1 tsp dried oregano + 1/2 tsp cumin + 2 cups chicken bone broth (or whatever broth you like) + 2 handfuls baby spinach
i n st r uc t ion s 1. Pat chicken dry with paper towel. Season to taste with salt & pepper. 2. Chop/mince all vegetables and herbs and set aside. 3. In the Instant Pot, set to the sauté setting (medium), add olive oil and let it heat up for a minute or so. 4. Add chopped onion and poblano first for a couple minutes until soft. 5. Next, add the chopped cilantro and lastly, the garlic. Stir everything together and let it cook for 30 seconds or so - do not burn the garlic. Lastly, add remaining spices and stir. 6. Add the chicken thighs over top and broth. Hit “Cancel” on the Instant Pot to stop the sauté, close the lid, and set it to 10 minutes on “Pressure cook - high”. 7. Be sure to use the natural release feature until all the steam is released (do not open the vent yourself or liquid will come out), it shouldn’t take too long! 8. Once ready, remove your chicken pieces and add to a mixing bowl to shred. You can shred manually with two forks or if you have a stand/ hand mixer, it’s a great trick to blend it for a quick shredding hack! 9. Once shredded, add your chicken back into the Instant Pot to join the sauce. Add your baby spinach over top and stir it in manually to wilt. Season to taste with any more spices or salt. 10. Serve over cauliflower rice, brown or white rice, or any veggies you like or eat it alone! Optional toppings are avocado slices, sour cream, tortilla strips or more cilantro!
