We live in a world that constantly pushes us to be productive—to plan, optimize, and make the most of every minute. I’ll be the first to admit, I fall into that mindset more often than I’d like. It’s easy to feel like if something isn’t measurable or moving us forward, then it somehow isn’t worth the time.
But the more I think about it, the more I realize that a life that’s too structured is missing something essential—space to explore.
Not everything meaningful can be planned. Some of the best moments come when things don’t go exactly the way we expected when we try something new, get a little off track, or simply slow down enough to notice what’s around us. There’s something powerful about being a beginner again, about stepping into the unknown without a clear outcome.
For me, that’s shown up in simple ways. Whether it’s heading out with my family without much of a plan, trying a new restaurant, or just taking a walk somewhere we haven’t been before, those moments tend to stick with us the most. It’s rarely the big, perfectly planned experiences—it’s the unexpected ones, the ones that allow us to connect, laugh, and just be present together.
Lately, I’ve been more mindful of how we spend our time as a family. Some of our favorite “adventures” aren’t really adventures at all, they’re just moments where we step away from our routines. A board game outside, exploring a new trail, or discovering a local spot we hadn’t noticed before. Those are the times that seem to matter most.
This month’s issue is a reminder to give yourself permission to explore—whatever that looks like for you. It doesn’t have to be a big trip or a major change. Sometimes it’s as simple as saying yes to something new, taking a different path, or carving out time for the people and moments that matter most.
Let’s make space for the unexpected. Because more often than not, that’s where the best memories are made.

Winnipeg in the winter, and a 17-year-old waits 45 minutes in the cold for Keanu Reeves. Her fingers are numb. She is not there for an autograph. FLM: WHEN DID YOU FIRST THINK ‘I BELONGED IN THE AIR’? WHERE DID THAT DESIRE AND PASSION COME FROM AND HOW DOES IT SHAPE YOUR ACADEMY TODAY?
Daniela Aly: My path into aviation didn’t begin from the cockpit; it began from a passion for people, training, leadership, and building something meaningful. What drew me to aviation was its impact on individuals. Aviation changes people. It builds discipline, confidence, decision-making, accountability, and character. Over the years in business and training, I became fascinated not just with airplanes, but with the process of developing exceptional professionals. I saw aviation as one of the highest forms of training and mentorship. My vision was never simply to create another flight school. It was to build a modern training environment where students feel supported, challenged, and inspired, an academy that combines high standards with innovation, structure, and community.
Amro Aly: Since childhood, I dreamed of being a pilot, watching planes take off and land, hoping to one day fly myself. Instead, life led me to a physics degree and a corporate career. Yet my passion for flying persisted. Daniela gifted me a discovery flight one Christmas, sparking a journey that brought me to the cockpit. That first experience grew into a life-changing path that inspired us to open a flight school. Our academy is founded on the same excitement that drew me to aviation. We’re dedicated to training exceptional pilots, fostering a supportive, professional environment, and investing in innovative training technology that enhances safety and learning. Knowing what it’s like to dream about flying from the outside, that perspective shapes our academy today. We want every student to feel their dream is achievable and have the guidance, structure, and community to reach it.

FLM: WHAT NEED OR GAP IN FLIGHT EDUCATION DID YOU FEEL WASN’T BEING MET BEFORE YOU OPENED YOUR DOORS?
Daniela: We opened Avia Flight Academy in 2019 with a simple mission: to improve flight training and create a better experience for aspiring pilots. Back then, the industry felt fragmented: Part 61 schools offered flexibility but often lacked structure and consistency, while Part 141 schools provided rigor and structure but sometimes lacked the flexibility students needed to train around their goals and schedules. Their focus was heavily on numbers rather than training quality. Our vision was to build a school that combined the best of both worlds—the flexibility of Part 61 with the professionalism, structure, and rigor of an organized curriculum. That philosophy still defines us today.
Amro: I personally experienced this training gap as a pilot in training, moving between schools and instructors while facing unpredictable, non-transparent costs. Recognizing that every student’s path differs—some aiming for aviation careers, others pursuing lifelong dreams and many juggling work and family. I knew a better approach was possible. Today, this perspective shapes structured curriculums, mentorship, and investments in modern aircraft, avionics, simulation, and student support. We continually seek to improve learning and raise training standards in the aviation community.
Q: WHAT PROGRAMS DO YOU OFFER? WHAT IS THE MOST POPULAR?
Daniela: We offer recreational private pilot and airline pilot programs, as well as the Young Aviator Academy in the summer. Private and airline pilot programs are equally popular, with 50-50 split that varies by season and demand.
FLM: WHO ARE YOUR TYPICAL STUDENTS OR CUSTOMERS AND WHAT GOALS DO THEY COME IN WITH?
Daniela: Typical students want to fulfill their dream of flying. They either wish to learn to fly so they or their families can fly themselves, or to fulfill their dream of becoming a professional pilot. They come from different backgrounds but all have one thing in common: the dream of flying.
FLM: WHAT DOES A NEW STUDENT’S FIRST DAY USUALLY LOOK LIKE?
Amro: We believe the first day of training sets the tone for the entire experience, so we focus on creating a professional, supportive, and organized introduction to aviation training. During onboarding, students are introduced to the entire flight training process, including our standards, procedures, curriculum structure, and training expectations. We walk them through our scheduling and training management platform, explain how lessons and progress tracking work, and ensure they understand the path ahead. This is also when we assist students with applying for their Student Pilot Certificate and help answer any initial questions they may have about training, timelines, and goals. Our goal is for students to leave onboarding informed, confident, and excited about their aviation journey. We use this opportunity to reinforce the importance of our safety program, safety is fundamental to everything we do.
FLM: WHAT VALUES GUIDE THE WAY YOU TRAIN AND MENTOR NEW PILOTS, ESPECIALLY THOSE WALKING IN FOR A DISCOVERY FLIGHT WITH ZERO EXPERIENCE?
Daniela: Safety is our foundation. Integrity means honest communication and clear expectations. Transparency is key.

We believe informed students are successful. Excellence means doing the small things right every lesson and flight. We aim to create a supportive, challenging environment where students are prepared to succeed. Aviation is always evolving, and so are we.
FLM: TELL US ABOUT THE CAMPS YOU OFFER FOR ASPIRING YOUNG AVIATORS.
Amro: We wanted to give younger students the opportunity to experience aviation early, in a way that is exciting, approachable, and educational. For many kids, aviation can feel distant or intimidating. Our goal is to make it accessible and inspire the next generation of pilots, engineers, leaders, and aviation professionals. Through our Young Aviators Academy, students are introduced to the fundamentals of flight, aircraft systems, aerodynamics, navigation, weather, aviation safety, and flight planning in a fun and interactive environment. Students also have the opportunity to experience simulator sessions, hands-on activities, airport operations, and introductory flights.
FLM: WHAT SKILLS, BEYOND FLYING, DO KIDS COME AWAY WITH FROM YOUR PROGRAM?
Daniela: What makes these programs special is that they are not just about airplanes; they are about building curiosity, confidence, teamwork, and problem-solving skills. We want students to leave feeling inspired and realizing that aviation is something they can truly pursue if they choose to.
FLM: WHAT’S BEEN YOUR MOST MEMORABLE FLIGHT PERSONALLY OR AS AN INSTRUCTOR OR MENTOR?
Amro: I especially remember the students who came into training doubting themselves. People balancing careers, families, or personal challenges and then seeing the transformation that aviation brings out in them. Watching someone realize, ‘I can actually do this,’ is incredibly powerful.
FLM: WHAT’S THE MOST REWARDING PART OF BEING AN ACADEMY OWNER AND PILOT?
Daniela: For me, flight training goes beyond checking boxes; it’s about building exceptional aviators prepared for real-world flying and lifelong success. We inspire people to pursue their flying dreams, support their journey, and take pride in their success.
Amro: The most fulfilling moments are watching students grow from complete beginners into safe, confident pilots. Seeing a student complete their first solo, earn a certificate, achieve a career milestone, or even overcome self-doubt is incredibly rewarding because you know you were part of that journey. I also take great pride in building a culture and community around aviation. Watching the academy continue to grow, support the aviation community, and positively impact students and families is incredibly fulfilling. At the end of the day, the most rewarding part is knowing that what we built truly makes a difference in people’s lives.

Conlon Amendola Is Setting a New Standard in Family Law
Formidable, discerning, dynamic, and empathetic; these words describe the women of Conlon Amendola, a highly regarded family law practice specializing in high net worth and highly complex divorces. Founded in Southport in 2024 and led by co-founders Jacquelyn Conlon and Bonnie Amendola, who have a collective six decades of combined experience, and associate Laura Brea, this women-led team embodies strength, clarity, and compassion.
Fairfield Lifestyle Magazine sat down with them to gain insight into law and leadership. It quickly became clear that they are true trailblazers. Attorney Conlon started her professional career at the Center for Naval Analyses, an independent organization dedicated to national security. While on track toward a graduate degree in Operations Research she realized she didn’t enjoy it at all and pivoted to law.
Attorney Amendola began her undergraduate studies at the University of Pennsylvania, where she initially explored business courses at Wharton. Finding them monotonous she turned instead to her true passion: political science and meaningful change through law. She ultimately followed in her mother Elaine’s footsteps - one of the first women to graduate from Yale Law School and a passionate grassroots advocate for women’s rights
The road wasn’t easy. It was a different time and the boys’ club was in full effect. Despite all that, Jackie and Bonnie built their careers and created the firm they once wished existed.

Jacquelyn Conlon: Back when I started, Law was mostly a man’s world. Power went to the heads of a lot of male attorneys, they became bullies and the workplaces could be toxic. Most men felt a “female attorney” didn’t belong - I’m very competitive, so I worked harder and proved I did. They stopped seeing me as just the “female attorney” after my second or third trial success.
I swore to myself when the day came that I had my own firm, I would not treat people the way I was treated. Everyone who works here is respected, and their opinions are respected and heard. It’s far more collaborative than the firms Bonnie and I started in.
Bonnie Amendola: My mother always said the only way to get people to respect you is to be exactly who you are. In that era, law firms were not friendly to young women. As well, Courts and law firms expected female attorneys to wear skirted suits and pantyhose. Following my mother’s advice to be myself, I let them know I wouldn’t dress in that way. I told the firm I would dress professionally - in my own way, or they could find another associate. They backed down.
Laura Brea: Being an attorney and starting in this field is challenging enough, I can’t imagine how hard it was to put up with the sexism and unrealistic expectations. Thankfully, however, those experiences led Bonnie and Jackie to create an environment that allows all to thrive, an environment where I’m not afraid to ask questions. My law school friends at more highly structured firms are often surprised by how open and collaborative we are. We do have structure, but it doesn’t get in the way of serving clients in the best way.
FLM: WHY DID YOU CHOOSE TO CREATE A FIRM TOGETHER?
JC: We have the same philosophy about Family Law, the same vision, but very different approaches. We think differently, but
we always come to the same solution. Bonnie is smart, loyal and honest, and I can’t ask for more in a partner.
BA: I trust Jackie completely. We share the same core beliefs despite very different styles, and having an equally experienced partner to discuss strategy with is invaluable.
DO YOU THINK HAVING A FEMALE LAWYER HELPS A MAN IN A DIVORCE?
JC: It depends on the client. People usually choose lawyers who think like them. Sometimes a man may prefer a female lawyer, but, I think, it’s ultimately about the individual, not gender-based.
BA: You quickly learn that not all husbands are devils and not all wives are angels. We represent clients based on the facts—gender doesn’t factor into it. We typically have a healthy balance of male and female clients.
FLM: WHAT DREW YOU TO FAMILY LAW?
JC: Family Law suits my personality. It touches on so many different facets of people’s lives. You have to understand business valuations, Trusts and Estates, psychology, family dynamics and so much more. It lets you see the full picture.
LB: Family law is one of the most important areas of law because we’re helping people. The decisions we help with will have a lasting impact on them and their children - whether it’s pre-nuptial or dissolution. It’s a multi faceted process with unique interpersonal relationships.
FLM: WHAT IS YOUR PHILOSOPHY AND APPROACH?
BA: Brevity and clarity are the keys to a successful trial lawyer coupled with respect for the law, the Court, and the process. You must maintain decorum, raising your voice just makes you loud, it doesn’t make your argument any better.
JC: I strategize and do a lot of research. A lot of people think trial lawyers are good on their feet - but it’s the result of a lot of research and studying to explore all scenarios that may or may not arise. Bonnie and I are Guardian Ad Litems. We won’t do something if it’s going to hurt a child, we won’t let children be used as pawns - and we won’t continue to represent a client that wants to do that.
FLM: WHAT HAVE BEEN THE MOST REWARDING ASPECTS?
BA: No matter what, I always equate success with success in Court, no matter how big or small because in family law, we don’t win - we get an outcome, one that hopefully allows all parties to move forward with dignity.
JC: Seeing that our clients have moved on, and are happy - and that their kids are doing well and thriving. Knowing you provided the help that set that course — that’s what makes it worth it.

THE PERFECT CUTLET

Chicken cutlets hold a special place in our hearts as one of the first dishes Liv made for Jarrett early in our relationship and the one that made Jarrett really believe in a future for Suburbia. Chicken cutlets are such a humble dish in terms of letting a few simple ingredients really shine, but behind that tender yet crunchy bite is a labor of love - a series of simple techniques that elevate an ordinary chicken breast into something truly craveable. And although this recipe is for Suburbia’s basic cutlet, there are a million ways to put your own spin on them from seasoning to serving.
CHICKEN CUTLETS
Ingredients:
• Boneless, Skinless Chicken Breast (Bell & Evans)
• AP Flour | 1~ cup per 4 breasts
• Zesty Italian Dressing Packet Mix (Good Seasons) | 1 tbsp per 4 breasts
• Sherry Cooking Wine (Holland House) | ¼ cup per 4 breasts
• Breadcrumbs (4C - Seasoned) - 1 cup per 4 breasts
• Panko Breadcrumbs (4CSeasoned) - 1 cup per 4 breasts
• Fresh Grated Pecorino Romano - ½ cup per 4 breasts
• Cooking Oil (Zero Acres) - enough to fill your Dutch Oven to ~2.5-3” high
Equipment
• Meat Mallet
• Ziplock Bag - 1 Gallon (optional )
• 3 large bowls
• Dutch Oven
• Stainless Steel Tongs
• Paper Towels
• Cooling Rack
• Cling Plastic Wrap (optional )
Directions
STEP 1: (OPTIONAL) PRO-TIP FOR EASY CLEAN UP
Cover your kitchen workspace / a large portion of your countertop in plastic cling wrap so you have a large surface to rest your prepped cutlets and to make clean up easy at the end! Not necessary, but highly recommended.
STEP 2: PREP YOUR DREDGING STATION
Take your 3 large bowls and in the first add your AP flour with the Zesty Italian Seasoning mix. Mix the two so they are well incorporated and set aside. In the second bowl, combine your eggs, another sprinkle of Zesty Italian Seasoning mix, and the Sherry.** Mix and set aside. In the third bowl, add your breadcrumbs, panko crumbs, and grated pecorino.
STEP 3: PREP YOUR CHICKEN
One of the key elements to a great chicken cutlet is achieving the right thickness. A cutlet is not just a breaded and fried chicken breast, it needs to be pounded out, which will

achieve two things simultaneously - 1.) it will tenderize the chicken and 2.) it will create more surface area for an optimal meat to breading ratio. We aim for a thickness of about a 1/4”. Typically Liv can get 3 to 4 cutlets from a single chicken breast by first slicing lengthwise into 3 to 4 pieces and then beating each with a meat mallet for a consistent thickness across the cutlet.
STEP 4: HEAT YOUR COOKING OIL
Fill your Dutch oven to about 1/3 full (or approximately 2.5-3 inches worth of oil) and heat over medium to medium-high heat to 350-375°F. If the oil is too cool, the cutlets will soak up the fat and become soggy; if it’s too hot, the breadcrumbs will burn before the chicken cooks through. If you do not have a thermometer, you can drop a single larger piece of panko into the oil to see if it’s at temp. You are looking for the oil the bubble up around the panko flake. If it sinks to the bottom without much movement from the oil, it is not hot enough yet. Move onto Step 5 while you wait for your oil to heat up.
STEP 5: THE 3-PART DREDGE
Once all cutlets are cut and pounded, each will go through a 3 step coating process from the 3 bowls you prepped in Step 2 - first the flour, then the egg, then the breadcrumbs. Make sure to tap off excess at each stage. Once you get to the third stage (breadcrumbs) make sure to really pressed them into the chicken to give it a
nice crust. Let your cutlets rest on your plastic covered counter while you dredge the remaining cutlets. Resting your cutlets actually helps keep the final crust intact.
STEP 6: THE FRY
Gently place a few cutlets in your hot oil. Do not drop them as they will splatter. Do not crowd the pot as it will bring down the temperature and lead to soggy cutlets - A 7Q Dutch Oven can probably hold 2-3 cutlets per batch without being overcrowded. Fry the cutlets for 2-3 mins per side or until they reach an internal temperature of 165°F.
STEP 7: THE DRY
Upon removing each batch of cutlets from the fryer, transfer to your wire rack that has paper towels below it to catch the excess oil and sprinkle with flakey sea salt. Repeat the process until all cutlets are fried.
One of the best opportunities to customize this recipe to make it yours is at the dredging station. Feel free to experiment by adding spices to the AP flour mix or additional wet flavor components to your egg mixture like pesto, caper brine, or mustard. The opportunities are endless.
