LIFESTYLE LETTER

Let's Eat!

October 2022 PUBLISHER S

Bruce Bernstein | bruce.bernstein@citylifestyle.com Mindy Katz | Mindy.Katz@citylifestyle.com EDITOR

While it is sad to see summer go, we love the fall at Fairfield Lifestyle Magazine. We enjoy living in New England with its changing seasons; we welcome the fall with its colorful foliage and the slight chill in the air. And for us, there is no better way to celebrate fall than by dedicating an issue to food. It must be obvious by now that we love food! We love dining out, exploring new cuisines, as well as cooking and baking at home. We enjoy sharing a meal at a restaurant with each other and with friends and cooking for loved ones. Our cover story this month features Artisan’s Executive Chef-Partner, Frederic Kieffer. We loved learning more about Chef and his creative vision for arguably one of the most talked about restaurants in Connecticut. If you need some advice about where to eat in town, take some from Victoria Fingelly, a long-time resident and realtor in town who shares her favorite local hotspots in Fairfield Food Faves. If fall inspires you to cook at home, please try the recipe for Pasta ala Norma from Paci. We are thrilled that they are sharing their recipe for this delicious vegetarian dish. For those of us who like to indulge in a sweet treat after a meal (or for that matter, at any time of the day), Be Chocolat is the place to go for delectable chocolates and ice cream. And don’t forget to try their amazing Belgian waffles on the weekend. And if all of our food coverage has you yearning for something else to sink your teeth in, don’t miss our conversation with Tory Brown, Founder of the incredibly popular and Fairfield favorite, The Two Oh Three. We are so excited to co-host the Taste of Fairfield this month with the Fairfield Moms at Delamar Southport. Don’t miss this showcase of the best food and drink that Fairfield has to offer. It’s fall y’all. We hope you enjoy the October issue and celebrate the new season by sharing a great meal with family and friends. The Two Oh Three celebrates Fall with their newest products.

WHEN A PASSION PROJECT TURNS INTO AN ICONIC LOCAL BRAND MEET FAIRFIELD NATIVE, TORY BROWN, FOUNDER OF THE TWO OH THREE

22

LOCA L LIM E LIGH T | L IFE + CULTURE

THE TWO OH THREE IS SUCH A FABRIC OF OUR COMMUNITY. WHAT WAS THE IMPETUS FOR STARTING IT? Our mission to celebrate Connecticut began about seven years ago while in college out of state. After not being able to find any gear to rep our pride, we were determined to create our own. One shirt led to two and before we knew it, an entire line of 203 products was born. The 203 officially launched in the summer of 2014. At the time, we didn’t know the effect the company would have on the community. What originally started as a hobby quickly took on a life of its own and has since transformed into a lifestyle brand for everyone.

Left: The Two Oh Three Founder, Tory Brown, outside her new store. Below: Just some of the many offerings at the new The Two Oh Three store.

HOW OFTEN DO YOU DROP NEW MERCHANDISE? We have two formal launches per year—Fall/ Winter & Spring/Summer and are always adding new products to the mix. We’re constantly inspired by our customers, new trends, and other local brands that want to collaborate! CONGRATS ON YOUR FIRST RETAIL STORE! WHAT MADE YOU EXPAND FROM E-COMMERCE TO BRICK-AND-MORTAR? With “local” at the heart of our business, it was always a goal to have a physical presence in the community. We enjoy being able to connect online, but at the end of the day, nothing beats being able to build relationships with our customers face to face. The town of Fairfield has played a colossal role in our brand’s story, and we are so thrilled to have our first store right here in town. From day one, the Fairfield community embraced our brand’s mission and continues to be some of our most loyal and consistent customers. (Thank you, guys!)

THE T WO OH THREE

WHAT ARE SOME WAYS YOU EMBED THE TWO OH THREE INTO THE COMMUNITY? Fairfield has a powerful small business community, and we feel very lucky to be a part of it. Working with other businesses is really at the core of The 203. We lean on others, and others lean on us; it’s what our community is all about. Our gear is locally designed, printed and embroidered right here in Connecticut. We work with several local artists to design and create specialty products for us every season. Beyond material things, we like to enhance our customers’ lives with unique local experiences. Our brand comes to life on social media, where we visually foster the essence of a CT lifestyle. We use platforms to constantly connect and communicate with our followers. HOW IMPORTANT IS THE CUSTOMER TO THE DESIGN PROCESS? Our customers are everything to us and they are at the core of our design process. We love getting their feedback—both good and bad! We appreciate their ideas and are constantly asking for suggestions. Our Fall ‘22 collection includes a diverse mix of 203 products that are perfect for adventures in Connecticut! Flannel picnic blankets, cozy loungewear, camper mugs, hostess gifts and trendy home accessories to name a few! CONTINUED > OCTOB ER 2 0 2 2 | C I TYL I FE STYL E . C OM / FA I R F I E L D

PACI RESTAURANT A TASTE OF ITALY IN FAIRFIELD WITH THE DELICIOUS PASTA ALA NORMA

ARTICLE BY DANA EPSTEIN ALTMAN PHOTOGRAPHY BY ABBY COLE

One step inside the beautiful Paci Restaurant, and you’ll immediately forget that you’re technically at the Southport Train Station. Artistically presented in a renovated 1800’s former freight depot with high ceilings, Paci’s menu will transport you directly into the heart of Italy. Menu selections reflect organic garden produce and other fresh ingredients based on market availability. Their award-winning wine cellar features a collection of rare and delicious vintages along with many unsung gems of fine Italian wines. We checked in with Chef Gabriel Calle for the recipe of one of Paci’s most popular dishes—Pasta Ala Norma with Fettuccine. We can’t wait to replicate this warm, veggie-packed dish at home this fall. Oh, and don’t forget to pair it with a glass of Chianti Classico. Salute!

PASTA ALA NORMA WITH FETTUCCINE Makes 6-8 servings Preparation time: 30 minutes INGREDIENTS • 1 ½ lbs eggplant • 1 large onion • 1 lb zucchini • 1 lb yellow squash • 6 to 8 cloves of garlic • ½ cup extra virgin olive oil • salt & pepper to taste • 1 tsp oregano • Red pepper flakes to taste • 1 cup fresh basil • Grated Parmigiana cheese to taste • 2 lbs San Marzano tomatoes (canned is fine) • 1 ½ lbs fettuccine

PREPARATION STEP 1 Slice and chop onions, eggplants, zucchini, and yellow squash ½ thick. In separate batches sauté the eggplant in extra virgin olive oil until golden and soft. Sprinkle with salt & pepper and set aside. Cooking separately, repeat the same for the onion, then zucchini, then yellow squash and set aside. STEP 2 In a 6-quart pan add the chopped garlic, red pepper flakes and ¼ cup extra virgin olive oil, sauté until golden. Add the tomatoes, oregano and salt & pepper to taste. Cook until saucy about 12 to 15 minutes stirring occasionally. Add chopped fresh basil at the end. Now add the cooked eggplant, zucchini, yellow squash to the cooked tomato sauce and simmer for 6 to 8 minutes. STEP 3 In a large pot of boiling water add one TBL of Kosher salt, cook fettucine; if fresh pasta, cook for 4 minutes, if hard pasta, cook 7 to 10 minutes. Drain pasta, toss with sauce, and serve. Sprinkle with grated Parmigiano cheese (optional). BON APPETITO!

FO OD FAV E S CURATED BY FAIRFIELD NATIVE, VICTORIA FINGELLY ARTICLE BY DANA EPSTEIN ALTMAN

When it comes to finding great food in Fairfield, you don’t have to look far—the choices are plentiful! This is why we love hearing from our community on everything from tried-and-true favs to hidden gems. So, when Fairfield native, Victoria Fingelly, the Managing Director of Higgins Group Southport Harbor Brokerage, offered to share her coveted list, we were all ears…

AURORA’S When heading out with family and friends for a relaxing evening with great food, Aurora’s is it! Located in Fairfield center, this husband and wife led bistro welcomes everyone as family and proceeds to serve up a wide variety of small plates and generously portioned entrees. I especially like the freshness and wide selection of well-prepared dishes. Aurora’s always surprises with interesting daily specials in addition to their ample menu offerings. aurorasfairfield.com

GRAY GOOSE When I am looking for a slightly less formal go-to Southport eatery with consistently innovative, great food, a widely varied menu, and a lively crowd I head straight to the “Goose”. An experienced staff provides excellent service and makes everyone feel welcome. Lovely indoor and terrace dining options and the front porch and bar area are the places to be for Happy Hour! Best to make a reservation as it is always busy at the Goose. Fantastic Brunch as well! thegraygoosecafe.com

LUIGI’S What better way to spend a Friday night than enjoying pizza (onions and peppers, please), a family-style salad (don’t forget the gorgonzola) and a carafe of wine at Luigi’s? Luigi’s is my favorite for pizza, but it doesn’t stop there. Pasta, chicken and veal dishes, seafood, salads—Luigi’s does it all. And they do it very well. Owner, Giulio Cavalli, and his wife make sure everyone feels very much at home at their comfortable and elegant trattoria. Plenty of great food and wine and super friendly staff have always kept me coming back. luigisfairfield.com

TEQUILA REVOLUCION When I’m shaking my head about what to make for dinner, I place my online order with Tequila Revolucion … Tequila Chicken Fajitas and Carne Asada Yucateca, add a well-deserved tip, then swing by for pick up on my way home. One of the best Mexican restaurants in Connecticut, if not the BEST, Tequila Revolucion specializes in authentic dishes: fajitas, tacos, enchiladas—all of my favorites. Whatever dish you decide to order, one thing’s for sure, the food will be made with fresh, quality ingredients and flavors that are consistent and delicious. tequilarevolucionff.com

THAI KIT FAIRFIELD Having returned from a recent trip to Southeast Asia, I was delighted to discover Thai Kit. With food on par with any rival, Thai Kit presents authentic, traditional Thai cuisine. In a modest storefront setting, the inviting interior and warmth of the staff keep me coming back. I especially love the lime chili chicken and vegetable pancake. The Pad Thai and curries are outstanding and the nasi goreng (spicy rice dish with tofu and egg) is delicious! The warm, welcoming staff is passionate about the food they serve, and they truly create sumptuous fare. thaikitfairfield.com

HORSESHOE CAFE For many of us locals, a rite of passage was our first visit to “The Shoe.” That was sooo long ago! During my wonderful Nicholas Fingelly Real Estate years, it was an unwritten law that any sale of importance was celebrated with “drinks at The Shoe” and everyone tried to show up for the fun! Fairfield’s version of Cheers, The Shoe serves up great pub fare in a tavern atmosphere and is an ideal gathering place for friends after work. Open mic and music performances are featured every Monday night. horseshoecafesouthport.com

Whether you’re looking for an elegant dining atmosphere, a cozy tavern feeling, or a gorgeous outdoor patio experience, complete with a highly coveted world-class menu, you can find it all in one place at Southport’s legendary neighborhood spot, Artisan. Drawing its name from the bevy of talented artists involved in its inception, the vibe at Artisan is that of astonishing beauty. Whether it’s the rare pewter bar top from France, the ironwork at the bar and in The Copper Room (their private dining room) made by a local Brooklyn ironworker, or the Scandinavian fireplace built by a Norwegian builder flown in for that purpose, Artisan celebrates global craftsmanship at its finest. And we haven’t even gotten to the food yet. Artisan is part of Greenwich Hospitality Group, founded by Charles Mallory. Mallory and Executive Chef-Partner, Frederic Kieffer, combined their experience and expertise over a decade ago to create a unique and innovative casual/fine dining restaurant. The New England-inspired American farm-to-table cuisine abundantly evolves with the seasons. As a Chef managed establishment, Artisan truly offers a one-of-a-kind experience. The gorgeous dining room conveys the charm of a countryside living room paired with a bar/ lounge designed to capture the energy of a tavern. The outdoor patio is a rustic chic haven tucked away in a magical courtyard. Chef Frederic Keiffer came to Fairfield County via Paris and New York City. Having grown up in the countryside west of Paris, Kieffer spent his summers working in local restaurants where he discovered his true passion. He studied cooking for six years — apprenticing all over the Paris restaurant scene and graduating from L’École Supérieure de Cuisine Française (ESCF-Ferrandi). His career began in the kitchen of Tentation Caterers, running the culinary arm of The Museum of Natural History in Manhattan. After working at New York City’s Water’s Edge and Man Ray Restaurant, he had the opportunity to open l’escale at the Delamar Greenwich Harbor Hotel. In 2011, Chef Kieffer became Executive Chef and Partner of Artisan. We were thrilled to sit down with Chef Kieffer for an enlightening culinary conversation.

HOW WOULD YOU DESCRIBE ARTISAN TO SOMEONE WHO’S NEVER BEEN? It is a little bit of a hidden gem tucked away from the Fairfield downtown with beautiful outdoor dining for spring/summer days and warm and cozy indoor dining for the fall/winter months.

WHEN DID ARTISAN FIRST OPEN AND HOW HAVE THINGS EVOLVED SINCE THE VERY BEGINNING? We have been open since 2011 and have had a very organic growth. Since we are located at the Delamar Hotel, rather than downtown with street and foot traffic, we really had to rely on word of mouth and the community at large to grow.

SINCE ARTISAN BEGAN OVER A DECADE AGO, WHAT’S CHANGED ON THE BUSINESS FRONT? We have noticed that our clientele has changed over the years, especially lately. Some of our initial guests have relocated, but we have also seen an influx of new guests, especially since the pandemic began. Overall, this is a good thing. It also means that it is like a new opening, so we have the opportunity to once again gain the trust and loyalty of these new guests. CONTINUED > OCTOB ER 2 0 2 2 | C I TYL I FE STYL E . HOW WOULD YOU DESCRIBE YOURSELF AS A CHEF? Passionate. I love what I do and would not change it for anything in this world. There are so many facets to being a chef. We affect not only our guests with our food, but also our coworkers with inspiration, and the multitude of people that work to harvest/make the products that we use daily.

WHICH FAMOUS CHEF DO YOU ADMIRE MOST AND WHY? There are a few, but the ones I like are rarely in the everyday news, they spend their time working on their craft and/or helping the industry.

WHEN IT COMES TO SEASONAL MENU PLANNING, WHAT INSPIRES YOU? Everything that is available or grows at that precise moment.

HOW IMPORTANT IS SUSTAINABILITY IN THE OVERALL MISSION OF THE ARTISAN? Sustainability is one of the most important responsibilities of a modern Chef, other than inspiring the next generation of Chefs. We cannot be perfect, but we try our best in every decision that we make to have the least negative impact on our world.

WHAT ROLE DOES THE ARTISAN PLAY IN SUPPORTING THE LOCAL COMMUNITY? It is always an ongoing process. We have established relationships with local farmers and butchers including Custom Meats, the Fairfield Cheese Company, and also fish companies that work directly with local fishermen.

36

H OT SP OT | FOOD + BEV E RAGE

IS THE VIBE OF THE ARTISAN FORMAL FINE DINING OR MORE NEIGHBORHOOD CASUAL? There is nothing formal about Artisan, it is definitely a neighborhood place where good vibes, attentive service, and well-executed, unpretentious meals are served.

IF YOU WEREN’T THE CHEF AND YOU CAME IN FOR DINNER, WHICH ROOM WOULD YOU SIT IN AND WHAT WOULD YOU ORDER? Definitely outdoors on the patio or in the tavern. The menu changes frequently so not everything is available year-round, but I think I would go for the clam chowder, the venison carpaccio (seasonal) the chicken liver mousse, the pig croquettes (fall) the gazpacho, and the halibut cheeks.

MOST POPULAR DISH ON THE MENU? Clam Chowder Maryland or Florida Crab Cake Fried Pickles Cioppino Lobster Fra Diavolo Hanger Steak Caramel Cheesecake

IF THE WORLD ENDED TOMORROW, WHAT WOULD BE YOUR LAST MEAL? The world won’t end tomorrow, so I keep on cooking.

When Belgian-born, Benoit Fortin, followed his passion for chocolate and became a Master Belgian Chocolatier in Brussels, he had no idea his “hobby” would lead to being hand selected for the World Chocolate Expo in Shanghai.

There’s chocolate and then there’s Belgian chocolate. Once you experience the latter, chances are you’ll no longer be satisfied with the former. Enter … Be Chocolat. One step inside this beautiful chocolate atelier—the smell alone is divinely heavenly—and you’ll instantly be transported to chocolate nirvana. The Belgian kind. When Belgian-born, Benoit Fortin, followed his passion for chocolate and became a Master Belgian Chocolatier in Brussels, he had no idea his “hobby” would lead to being hand selected for the World Chocolate Expo in Shanghai. Sixteen years later, Benoit and his marketing-minded wife, Sylvie, are the proud purveyors of Be Chocolat in Greenfield Hill. This darling duo has been sharing their authentic love for luxurious, mouth-watering, curated chocolate for over two years—and the community is lining up in droves. Just like the exquisite taste of local artisan chocolatier shops in Brussels, Be Chocolat uses only the finest Callebaut Fairtrade chocolate exclusively. Every single piece of chocolate is handmade in small batches to maintain the subtleness of the exceptional ingredients. Innovatively unique pairings such as Rosemary Raspberry and Cinnamon Cardamom Cayenne, join traditional menu favorites such as Double Dark and Peppermint. Seasonal items for fall are in high demand, including Pumpkin Spice,

Cranberry Orange, Chai, and Caramel Apple Cider. And if that wasn’t enough to tantalize your tastebuds, Be Chocolat is also known for their to-die-for Belgian coffee and their weekend-only, made-to-order, Belgian waffles. Yum and yum. And if all this coveted chocolate wasn’t enough, Be Chocolat has something else special for us to devour. New on the menu is their handmade ice cream made from the same small-bath ingredients used for their chocolates: crunchy Biscoff cookies from Belgium, grass-fed Vermont butter for salted caramel, and they even process their own honey-roasted peanut butter mixed with milk chocolate. And yes, if you’re lucky enough to score a Belgian waffle on the weekend, you can absolutely enjoy it with a scoop on top. Even though both Benoit and Sylvie hail from Belgium, they’ve quickly matriculated into the community and can be found connecting with their neighbors and friends on curated collaborations, events, and partnerships. And because we had to know, when asked each of their personal favorite flavors, both Benoit and Sylvie share the same: for chocolate, it’s the Rosemary Raspberry and for ice cream, it’s the Biscoff. Something tells us you can’t go wrong with any of their intoxicating offerings. bechocolat.com
