STEP AWAY FROM THE HECTIC DEMANDS OF DAY-TODAY LIFE, AND STEP INTO THE TRANQUILITY THAT IS SALON WEST STUDIO AND SPA. From the furnishings to the music and the wall decorations, “Everything is designed to be comfortable,” salon owner Joni Bourdo says. “Having worked in this industry for so many years, I’ve worked where there are lots of hairdressers in one space, and I knew that when I had my own salon, I wanted something very quiet, very peaceful and very intimate. So, it’s quiet here—very much the spa atmosphere, a place where people can come and feel like they’re going to have a treat that day.” When Salon West Studio and Spa moved to its current location in 2012, Joni made sure that each service has its own area. “Everything that’s done here is an experience,” she says. “From the beginning to the end, it’s something you don’t forget because everything is done with such care and such skill. Each experience is unique.” Some of Joni’s earliest memories with her dad, also a hairdresser, have to do with time in his salon. “From the time I was a little, tiny girl, he would take us every Sunday to his salon, and we’d clean the entire salon! We had wigs to play with, did each other’s hair. My dad always had clips and brushes and rollers we could play with.” Joni’s area of specialty, like her father before her, is as a colorist. She’s studied Framesi Italian coloring and styling techniques and says that working with hair is exciting. “Nothing is the same. It’s the type of creative job that every day is different.” Joni says that she never takes for granted that people are letting her change their look. “When you look in the mirror, you want to have someone looking back at you that you like to see. When we work with people, it changes them. That’s a huge responsibility.” Joni and her staff have a combined 75-plus years of experience in hair styling, massage therapy, electrolysis, skin and nail care. “The people that I work with, we’re like a family,” Joni says. “The people here love and have a passion for what they do. They’re going to make sure it’s the very best. And not just the finished product—it’s the service, the care, the communication and time spent with that person. From the outside, you might never expect what can be found just through the main door: an eye-catching combination of rustic elegance met with delicious fare and friendly staff. Whether life-long or first-time, guests are received graciously by Colden and his wife and Cadwallader's co-owner, Mary, and it is easy to feel most welcome. “We think of people as coming into our house,” Colden says, “and when someone comes into your house, you want them to leave thinking, ‘I want to come back.’” Patrons show that many do, in fact, leave thinking about how soon they can return. Established in 1987, the restaurant’s moniker is derived from the name connection owner Colden has with Cadwallader Colden, an 18th-century physician and governor of New York. Initially, the couple opened a deli and wine cafe, but the draw to establish a fine dining restaurant soon won out. In the last 32 years, the restaurant has undergone several expansions. “Our seating at the beginning was so small that some of our regular customers wouldn’t tell their friends because they were scared they wouldn’t have a place to sit,” recalls Colden with a chuckle. “We expanded the first time just to meet demand. The second time, we expanded to have a private room.” The Wallers have a devoted customer base. “We have some customers that have been coming forever and are in their 70s and 80s," Mary says. "And now their children and grandchildren are coming...it’s a generational thing. We’ve shared so much with so many people—birthdays, anniversaries, weddings. We’ve seen a lot of people have babies, and we’ve seen people pass on.” “We’re a neighborhood restaurant, and we’ve got very loyal customers," Colden adds. "And that’s what makes it fun! It’s fun to see our regulars, and it’s fun to meet new people. We’ve enjoyed watching Augusta and Columbia County grow.” Cindy Pollard and her husband, Andy, have been dining at Cadwallader's for 30 years. "[We] originally started going to Cadwallader's for the food, but over the years, we’ve become good friends with Colden and Mary. We’ve had many family events there.”

Longevity also extends to the staff. “I’ve been fortunate to have some great employees to stick with me for years upon years," Colden says. "And they feel like family.” Cadwallader's has a menu filled with fresh local produce provided by local vendors and items made from scratch. “We believe in fresh quality," Mary says. "We keep it classic and simple. Sometimes less is more.” While perusing the menu, if you ask for recommendations on what to order, the first question to you, Colden says, will likely be, “How adventuresome are you?" "If they like to try different things, then we’ll recommend something unusual for them.” At the end of the night, what matters most to Colden and Mary is that “people have a good time.” “Sometimes from the kitchen," Mary adds, "we hear people in the banquet room laughing and having a great time, and that’s what we strive for.”

THESE COMPLIMENTARY DISHES BY CHRIS NAJMOLA, HEAD CHEF AT FÜSE RESTAURANT, ARE THE PERFECT DELICIOUS DUO. Chocolate and Chili Rubbed Chicken is Chris’s go-to recipe when he wants guests to feel well-fed and wowed, and his penchant for using hyper-local and seasonal ingredients inspired his Charred and Chilled Summer Veggie Salad. Füse Restaurant is located in downtown Augusta at the corner of Tenth and Broad Street, boasting an internationally-inspired menu and wide selection of locally crafted beer.

CHOCOLATE AND CHILI RUBBED CHICKEN Serves approximately eight + 6 pounds whole chicken + 1/2 cup extra virgin olive oil + 2 cups of your favorite barbecue sauce + Fresh cilantro and lime wedges CHILI RUB + 3 tablespoons 100% cocoa + 3 tablespoons dark chili powder + 2 tablespoons smoked paprika + 2 tablespoons granulated garlic + 2 tablespoons kosher salt WHERE THE MAGIC STARTS: Mix all dried spices, cocoa and salt thoroughly. Taste, then nod in approval. Section chicken into 10 pieces (legs, wings, thighs and halved breasts). In a large mixing bowl, mix chicken, oil and chili rub. Massage into meat evenly, making sure to get flavor into every nook and cranny. Allow to marinate for at least two hours in the fridge. Preheat oven to 400 degrees and warm up cast iron skillet on stovetop at medium-high. Add all chicken to skillet, skin side down, and brown for about five minutes. Flip each piece of chicken. They should have a nice color. Slide the skillet directly into 400-degree oven; bake for 35 minutes. Heat barbecue sauce in small saucepot on medium-low. Cook chicken until it reaches internal temperature of 165 degrees. Ladle sauce onto dish under chicken (nobody will likely need it after tasting your rub). Garnish with fresh cilantro and lime wedges, then enjoy!

CHARRED AND CHILLED SUMMER VEGGIE SALAD + 1 cup green onion, cleaned and cut into thirds + 1 cup red bell pepper, julienned + 1 cup baby portabella, cut in half and washed + 1 cup cherry heirloom tomatoes, cut in half + 1 tablespoon salt, fresh ground black pepper + 4 cups spring mix/favorite salad greens + 1/4 cup feta + 2 tablespoons fresh oregano CHAMPAGNE VINAIGRETTE + 1/2 cup extra virgin olive oil + 1/4 cup champagne vinegar + 1 teaspoon honey + Salt and pepper to taste WHERE THE MAGIC STARTS: Heat cast iron skillet over medium-high heat. Toss bell pepper, green onion, tomato and mushrooms in 2 tablespoons olive oil, salt and pepper. Once skillet is hot, toss in veggie mix. Leave until a nice char develops on the bottom of veggies (about three-five minutes). The top half of veggies should remain raw. Slide charred veggies onto a cold plate and refrigerate for about 15 minutes. Mix olive oil, champagne vinegar and honey. Add salt and pepper to taste. Congrats, you just made champagne vinaigrette! Lightly dress the greens, oregano and chilled veggies in a mixing bowl, then transfer to the chilled plate. Top with feta and enjoy!
