LIFESTYLE LETTER

Gather Around the Table There’s something special about October in Nebraska. The air gets crisp, the leaves begin to change and suddenly everything feels like a reason to gather around the table. Welcome to our Food & Drink Issue, where we’re celebrating the food, cocktails, flavors and people that make dining in our community so much fun. This month, we’re taking you around town to discover some of the local restaurants worth adding to your fall rotation. From familiar favorites to places you may not have tried yet, there’s no shortage of delicious reasons to get out and explore West Omaha. And because October wouldn’t be complete without a little Halloween fun, we’re also highlighting some of the creative pop-up bars bringing seasonal cocktails and festive experiences to Omaha. These aren’t your typical Halloween parties - they’re immersive, playful and designed to give you another reason to gather with friends and enjoy the season. But as much as I love discovering a great new restaurant or trying a creative cocktail, fall has always been about more than what’s on the menu. It’s about who you’re sharing it with. So this month, I encourage you to try somewhere new, support a local restaurant, invite your family to dinner or gather a few friends for a festive night out. Fall goes by quickly. Make the most of it, and make it delicious. Cheers!

HOW BIAGGI’S HAS BUILT A LEGACY OF HOSPITALITY SPANNING MORE THAN TWO DECADES.

ARTICLE BY NICHOLE PERINGER PHOTOGRAPHY BY SAMMI RODGRIGUEZ

Beyond the warmth of the wood interior and the cozy light lies something warmer and more wonderful: a place that holds memories, shared stories and decades of celebrations. Biaggi’s Ristorante Italiano has become a staple here in Omaha for many reasons. It’s a place regulars are known by name by servers who have been here for a decade or two, where families gather for baby showers and memorials and everything in between and where guests know they can find exceptional Italian-American comfort food. Biaggi’s really is more than a restaurant. It stands as a monument to the community it sits within and the people who have made it what it is. So, it’s no wonder that this year marks 25 years of doing just that: caring for the people who have come to make Biaggi’s what it is — a warm and welcoming place to come together.

A PART OF HER STORY

Biaggi’s Lobster Fettuccine gets its eye-catching color from squid ink and has become a guest favorite.

Behind the scenes, leading and guiding the restaurant’s staff, ensuring the guest experience is exceptional from start to finish and furthering the philosophy of Biaggi’s is General Manager, Renee McMahon. As with many careers, the path to general manager has come with its twists and turns. Renee has a unique background with experience in different fields, and feels all of it contributes to why she believes she is successful in this role. “I remember interviewing with Zach, the managing partner at the time, and expressing how important it was for me to have a work-life balance. As a mother of a child with autism, this is a non-negotiable for me. My son is my number one priority and he genuinely seemed to share the same values. I felt right away that Biaggi’s was going to be a great fit for me. The support I continue to receive from my team in this regard is one of the reasons I love working here,” Renee says with a smile. So, it is no surprise someone like Renee, who values people and balance, would end up being so focused on cultivating culture. CONTINUED >

For 25 years, Biaggi’s has built a reputation on care, consistency and a commitment to its guests.

THE PEOPLE WHO STAY

Biaggi’s has something special and unique that isn’t always prevalent in the restaurant industry: longevity, not just in its service but among its people. Employees have been at Biaggi’s for 10, 15 and even 20 years. A rare thing to find, Biaggi’s has successfully created a culture built on support, connection and a sense of belonging. “It’s a really great foundation,” Renee says. “I love the staff here. Truly, the impact of the front-of-house management team, Kevin Belton and Cait Wills, servers, bartenders, kitchen staff, sous chefs and many others who make Biaggi’s special can be measured in the relationships they have built. We all work really well together, front of house and back of house. We are one team.”

IN THE ROOM

And although it’s the people who truly make Biaggi’s a place you want to be, there’s something to be said for the old-world Italian warmth, too. The cozy atmosphere makes it one of the most welcoming restaurants in the Omaha area. Framed by warm wood and Italian decor, the dining room feels especially cozy when the fireplace crackles on cool evenings. It’s the perfect complement to a menu that delights the senses and keeps customers coming back time and time again. Warm and welcoming, the Biaggi’s dining room is a consistently delightful place to gather, no matter the occasion. Whether it’s a date night, an anniversary or a quick weeknight reprieve from

20

cooking dinner, Biaggi’s offers everyone who walks through the door a chance to slow down, settle in and find a little respite from the busy, stressful world outside. “The experience certainly feels a little upscale,” Renee adds, “but it’s not so elevated that it loses its approachable and comforting feel. We really want to provide our guests with an experience that is warm and inviting while still being accessible. That philosophy extends to our menu as well.”

FAMILIAR FOR A REASON

Known for its Italian-American cuisine, Biaggi’s menu is filled with longstanding staples, including Lasagna Bolognese and Fettuccine Alfredo. These are the dishes guests have returned to year after year. Alongside them are newer and more innovative offerings, creating a menu that evokes the comfort of down-home Italian cooking while still placing a high value on presentation and finesse. “There’s really something for everyone,” Renee says. “We have our dishes that people come back to, along with more innovative dishes, like our Lobster Fettuccine, which gets its eye-catching color from squid ink and has become a guest favorite. But if I were to recommend something that most people don’t think about, it would be our pizza.” With its own pizza oven and house-made dough, Biaggi’s offers an impressive lineup, with familiar standbys such as pepperoni

“We really want to provide our guests with an experience that and margherita, along with sausage and mushroom with truffle oil. It’s another example of the balance Biaggi’s has struck over the years: honoring the flavors guests have come to know while continuing to give them something new to discover. Renee hopes guests who venture in will come back to experience all that Biaggi’s has to offer, from its delicious bruschetta and large wine selection to house-made seasonal desserts. Whether it’s a recipe that has earned its place on the menu over the years or the curated monthly chef features, each dish is thoughtfully selected and prepared with the hope that guests leave happy, satisfied and already looking forward to their next visit.

THE BIAGGI’S EXPERIENCE

From the emphasis on presentation and creating a meal that is not only pleasing to the eye but genuinely delicious to the special care each member of the team takes to make guests feel welcome and cared for, every part of the Biaggi’s experience is thoughtfully considered. People return because Biaggi’s is a place they can depend on, from the food on their plate to the people who welcome them through the door. Omaha has no shortage of restaurants and new concepts are constantly appearing. But Biaggi’s has lasted 25 years. To Renee, the reasons are simple. “The team here is really amazing,” she says. “It sounds kind of cliché to say it, but our people are just

is warm and inviting while still being accessible. That philosophy extends to our menu as well.” really great at making Biaggi’s a place guests want to return to.” “We are proud to be the place guests choose to come together to celebrate important moments in their lives. Our private spaces are such an important part of what we do every day here at Biaggi’s. Our Event Coordinator, Cait Wills, does an amazing job of making sure each event feels special,” Renee says. Maybe that longevity comes down to a million little decisions made over 25 years. It’s the willingness to deliver dinner to a family in need or donate enough food to feed a high school football team before the big game. It’s the thousands of small ways they show up for their guests. Those moments may seem small on their own, but over time, they become something much bigger: a reputation built on care and consistency. Perhaps that’s why, as Renee puts it, “People just keep coming back time and time again.” And for Renee and the entire Biaggi’s team, there may be no greater compliment.

BIAGGI’S RISTORANTE ITALIANO Biaggi’s General Manager Renee McMahon and Event Coordinator Cait Wills help create a welcoming experience where every event feels special. Whether you’re planning a casual dinner, celebrating a special occasion or gathering with friends, Biaggi’s offers a warm, welcoming setting for it all. With private dining, catering and takeout available, it’s easy to bring a little taste of Italy to the table, wherever the occasion takes you.

FAIRWAY TO TABLE

ARTICLE BY NICHOLE PERINGER | PHOTOGRAPHY BY NICK FISHER

Indian Creek has a highly esteemed reputation in the Omaha metro community, especially in Elkhorn. Known for its community impact, challenging courses, stunning views and as host of the Pinnacle Bank Championship, Indian Creek has established itself as a destination both on and off the course. Now, the culinary team at Indian Creek, led by Restaurant Manager Trevor Taylor and Executive Chefs Kyle Lamb and Nico Janda are all looking to add a few new titles to that list — becoming the premier destination for approachable yet elevated dining in the West Omaha area. Approach is just one of the ways the team is working to turn that vision into a reality.

26

A Midwest ribeye, onion soubise, cheddar, caramelized onions and pickled peppers elevate the classic cheesesteak.

AN UNEXPECTED KIND OF RESTAURANT

Walking into Approach is a sensory experience. A juxtaposition of striking fixtures, clean lines and modern architecture all combined with warmth, lighting and comfortable seating. All of this is intentional. “The idea was to create a space that was both elevated and approachable.” says Trevor Taylor, Restaurant Manager. “ From the design to the food, we wanted there to be a place in the area that felt like that private club atmosphere but was open to anyone.” This philosophy is displayed in every aspect of Approach. From the paintings on the walls, most of which are sourced from local artists and tied to the Gottsch family, to a menu that is exciting as much as it is familiar. “You can come in off the course, have a burger and a Busch Light, or come in and get a filet and a bottle of wine.” explains Taylor. Approach was intentionally designed to fill a gap in West Omaha — a restaurant that offers a higher level of food, drinks and service without requiring guests to feel as though they needed to pay the price of admission. It’s truly a place built for everyone. That same commitment to accessibility and excellence doesn’t stop at the dining room doors though. It is perhaps most evident through what arrives on the plate.

“The idea was always to create a space that was both elevated and approachable.”

FAMILIAR FAVORITES, RETHOUGHT

Historically, the golf community has gravitated toward certain menu staples: burgers, wings, club sandwiches and more. But Approach doesn’t serve these favorites without giving them proper thought and attention, explains Executive Chef Kyle Lamb. “It might be a simple cheesesteak, but the care and passion we put into it make it more than that.”

CONTINUED >

Care and passion might be an understatement. Together with Executive Chef Nico Janda, Lamb has helped develop a cheesesteak that speaks to the deeper philosophy behind the menu: taking a golfcourse staple and elevating it to a point that makes it entirely memorable. “The thing that makes our sandwich special,” Lamb explains, “is we take a really good ribeye sourced here in the Midwest and shave it down, use an onion soubise sauce and fold in cheddar. We keep it really light and airy and top it with caramelized onions and pickled red peppers.” All of that comes together on a locally sourced, original Philly Blackbird Cheesesteak roll. And they don’t stop at elevating these familiar, well-loved dishes. Approach goes above and beyond to infuse intention and care into every detail. Sauces are made in-house, meats are brined and smoked and vegetables are sourced locally whenever possible. But the creativity at Approach isn’t confined to familiar favorites. For Kyle and the culinary team, the menu is an invitation to experiment.

WHERE CREATIVITY TAKES THE PLATE

For Executive Chefs Kyle Lamb and Nico Janda, inspiration begins right outside the doors, with the seasonal offerings available to them at any given time. “Having the ability to pivot and change menu items based on seasonality is important to us, as well as using local producers” Lamb explains. Being good stewards of the sustainable ingredients they use are deeply valued by the culinary team at Approach. That philosophy lends itself to the engaging offerings that regularly find their way onto a menu filled with new dishes, ensuring the experience at Approach is never static. “It’s fun to see the produce coming in that you may not see on other menus locally. We are really

28

C ULIN A RY C R E AT ION S | F OOD + BE VE RAGE

given free rein to build some really creative dishes and celebrate the ingredients,” Lamb says. A beautiful example of that local sourcing is Approach’s Wild-Caught Halibut, a beautiful cut of fish nestled among Nebraska-grown cucumbers, fennel and Mayakoba beans sourced directly from Hastings, Nebraska. “Everything in that dish is fresh, and the local ingredients really make it special,” Lamb explains. Whether guests are in the mood for something lighter, like fish, or a steak, they can rest assured no stone goes unturned. The steak at Approach was so carefully tested that the team went through 30 iterations from different purveyors before landing on the perfect consistency and flavor. Nothing at Approach is treated as ordinary. And the menu truly has something for everyone. Must-try dishes, like the Bresaola Plate, which Restaurant Manager Trevor Taylor describes as a “don’t skip this” moment, offer a delightful way to begin a meal. Or start with an unexpected favorite: Smoked Salmon Dip — served with house bread, olive oil and chives. The dish was first introduced as a way to sustainably incorporate a byproduct of their salmon entree. The salmon is cured, smoked and transformed into a dip served alongside housemade naan. “That dish sells like crazy,” Taylor says with a smile. And still, there’s so much more to celebrate.

GOOD PIES, GREAT POURS

For Chef Lamb, there is perhaps nothing he is more emphatic about than the pizza program at Indian Creek. “Our pizza program is easily the best here in West Omaha,” Lamb exclaims. With an innovative and incredibly talented pizza chef on staff, Chef Alek Bartles has become an integral and celebrated part of the Approach team.

“His creativity and attention to the scientific process of making the pizza dough are second to none, and I’m proud to be able to try his creations and work with him every day,” Lamb says. With months of experimentation under his belt, Bartles has perfected the pies served at Approach during the lunch hour, with seasonal specials regularly making their way onto the menu. But the same attention to detail that goes into the pizza also makes its way behind the bar. “I come from a heavy craft cocktail background,” Trevor Taylor says. “But the things we’re doing here are beyond what I’ve seen.” And it’s no surprise the same innovative drive that inspires everything on the plate would inspire every pour at the bar. “Take the blueberry mojito,” Taylor explains. “To make our blueberry syrup, we use a Spinzall, which is a centrifuge that spins 6,000 times per minute. So rather than cooking down the berries to make a syrup, we put them into the centrifuge. This creates a deeply rich blueberry flavor without adding any heat that might dilute it.” Like everything else, from mocktails to Arnorld Palmers with a twist, everything behind the bar is

both familiar and recognizable while making room for innovation and techniques that celebrate the drinks everyone knows and loves. And the wine service is no exception. “Wine at Approach is a curated program,” Taylor says. “We wanted to feature wines you wouldn’t normally see anywhere else.” Steering away from many of the conventional steakhouse staples, Taylor and his team instead aim to promote small wineries and family-owned vineyards, including Annafrancesca from Verona, Italy. “Anna is a Northern Italian winemaker who actually made a couple of trips out here to Omaha herself,” Taylor says. “They only do a couple hundred cases of some of these wines per year, so they are really special, and we’re honored to get to feature their wines here at Approach.” It’s truly an above-and-beyond philosophy at this burgeoning new restaurant experience, from the plates and beverages to the people who greet you as you walk through the door. “To me, there’s a distinction between service and hospitality,” Taylor explains. “Service is taking a food or drink order, but hospitality is the how — how you CONTINUED >

serve. It’s how you make each guest feel as they walk into the dining room, sit down and as they leave.” For Taylor, every interaction is about so much more than a greeting. It’s taking the time to learn names, listen to the needs of each table and help curate a dining experience that gives guests a reason to return time and time again.

THE GO-TO PLACE

In a city with no shortage of places to spend an evening, there are countless options when it comes to choosing where to celebrate, gather or simply enjoy a meal. For the team at Approach, the goal isn’t simply to give guests another restaurant to try. It’s to create a place they’ll want to return, whether they’re meeting friends for a drink, celebrating a special occasion or simply looking for a good meal close to home. That idea runs through every part of the Approach experience, from the care put into each plate and pour, to the intention behind the hospitality. It’s about elevating what’s familiar without losing the warmth, community and charm that have long been part of Indian Creek. “I love it that our community views this place as theirs,” Lamb says. It’s a truth that’s not lost on Kyle, Trevor and Nico. They care deeply about the community they’re part of, and that care is infused into every part of the Approach experience. SISTERHOOD, SIX FIGURES AND A SOLD-OUT SUMMIT

In an ever-changing workplace landscape, women are under mounting pressure to be everything and do everything at once. The generation before them was taught to put on the shoulder pads, take up space and prove they could do anything a man could. And although women today inherited that same confidence and tenacity, they’ve also watched the cost of fitting their lives into systems that were never designed with women, mothers and caregivers in mind. So many have decided to build something different, for them, on their own terms.

For women building businesses alone, finding a community that understands can make the work feel lighter.

HOW OMAHA WOMEN’S NETWORK IS PROVING THAT BUSINESS IS BETTER TOGETHER

Powers didn’t need another course or networking event. She needed to figure out how to build a business that fit the life she wanted to live. For years, the pieces of that vision existed separately. Then, in 2024, they came together as Omaha Women’s Network (OWN). OWN wasn’t really about collecting business cards over coffee. Powers had something much more specific in mind: creating the kind of room she wished existed when she was trying to figure it all out herself and she soon discovered she wasn’t the only Omaha woman looking for the same things.

WOMEN NEED EACH OTHER

The needs of women entrepreneurs are uniquely their own. Too often, they find themselves working from the kitchen table, shouldering a litany of decisions with little encouragement or guidance from others. There are no co-workers to delegate tasks to, no brainstorming sessions in the break room, no quick lunch break to laugh, decompress and remember they aren’t doing it all alone. Powers says many of OWN’s members are solo entrepreneurs, which is why the in-person component matters so much. “If you don’t have a group of gals around you who can reflect back to you, who can hold space for you and who could be there for you when you’re crying because something didn’t go right and then when you’re like jumping for joy because you just landed a big gig and celebrate with you, it can feel so heavy and hard.”

MORE THAN A MASTERMIND Beth Powers didn’t set out to create the Omaha Women’s Network, but after years of doing the work herself, she came to the realization that what Omaha women desperately needed was a place to find their people.

FROM VIDEOGRAPHER TO CONNECTOR

According to the Census Bureau’s latest combined data, 12.7 million of the nation’s 29.8 million nonemployer businesses were women-owned in 2022, that’s 42.7%. For many women, striking out on their own has become a way to build a career that works with, rather than against, the rhythms of their lives. Starting out as a videographer, Powers built a successful, referral-based business and was “booked and busy,” but eventually realized she was trading her most precious resource: time. “Becoming a mom really sharpened my vision and made me realize this is it. No one’s going to come figure it out for me,” Powers says. “If I’m going to be away from my kids working, the work has to be worth it and it has to pay me accordingly.”

OWN has a yearlong program called the Inner Circle mastermind for women working toward their first six figures and beyond. Members are placed into groups of eight and meet monthly for masterminds, networking events and business spotlights, with quarterly retreats, dinners and hot-seat coaching. Then there are co-working days, where women who might otherwise work alone can simply sit alongside one another. CONTINUED >

Beth Powers created OWN to give Omaha women the community she wished she had while building her business.

What sets OWN apart is the depth of connection members build. “I don’t think that you’re going to grow your business sitting on your computer going through an online course. I think you’re going to grow your business by being around other business owners, finding ways for you to collaborate, going out there and trying something, failing miserably, coming back and then talking about it, ‘How can we do it better?’” Powers says. And sometimes, that connection changes the trajectory of a business entirely.

36

M UST SE E | EDUCATI O N

WHEN CONNECTION BECOMES COLLABORATION

For OWN clients Jodi Krymuza and Tina Schwahn, that connection led to collaboration. The business coach and personal stylist discovered their work could complement one another through a workshop. They began hosting workshops together and now deliver keynote speeches as a team, while considering a partnership. Lauryn Mohr, a functional gut health specialist, and Nicole Niu, a pelvic floor therapist, found a similar connection at OWN’s annual Meant for More summit.

SIX FIGURES BUT NOT AT ANY COST

For OWN, the goal of reaching six figures is not simply about a bigger number on a spreadsheet. It’s about what that number can make possible. The mastermind is designed for women working toward their first six figures and beyond, but Powers’ own definition of success has changed dramatically over the years. When she was younger, she wanted recognition, followers and visibility. Now, her ambitions look a little different. “Success to me is my kids. I just want to be with my kids,” Powers says. “The more profitable my business is, the more time and choices I have to be with them.” For Powers, financial success isn’t the destination. It’s the freedom to choose how she spends the life she worked so hard to build. And that distinction is at the heart of what she hopes to give the women who come through OWN: not simply the tools to make more money, but the ability to decide what that money makes possible.

THE LEGACY

“A year after that Meant for More, they opened an in-person clinic called Origins Holistic Therapies,” Powers says. “Fast forward another year, now they’re bringing other providers into their clinic.” And while the connections made through OWN can open doors to new collaborations, clients and opportunities, Powers believes growth is about more than simply watching the numbers climb. For the women in her network, reaching that next financial milestone is ultimately about creating something bigger: more freedom, more choices and a business that supports the life they actually want to live.

Powers comes by her entrepreneurial spirit honestly. The daughter of two Omaha small-business owners, some of her earliest memories are rooted in their work. She remembers Saturdays spent with her mother at the hospital doing rounds and playing hide-and-seek among the clothing racks at her father’s store. She knows firsthand what building a business can demand from a family. But she also knows it can create something lasting. “I would love it if by the time my daughter is an adult that if she says, ‘I want to start a business,’ people are like, ‘Amazing,’” Powers says. Her hopes are big! She wants female entrepreneurship to become “more of the norm and not the exception.” When asked to finish the sentence, Omaha is better when women … she says: “Have more money.” For Powers, that answer isn’t simply about money as a measure of success. It’s about what financial independence gives women: choices, time, resources and the ability to build lives and businesses on their own terms. That’s what OWN is all about.

MEANT FOR MORE

If OWN is about building a business alongside other women, its annual Meant for More summit is the biggest expression of that idea. When Powers launched the event in 2024, she hoped 100 women would show up. They did, selling out the first year. The following year, she doubled her goal to 200 and sold that out, too, all while pregnant and leading the event from the stage. “I was eight months pregnant. And so last September, we sold it out and I was on stage eight months pregnant leading a 200-person event. It was lovely. I don’t recommend doing that,” Powers laughs. Now in its third year, Meant for More is designed to be less about packing in information and more about creating meaningful connections, with networking, a panel, keynote programming and a two-hour mastermind session.

OWN’s Meant for More summit has grown from 100 women to a sold-out 200-person event.

HALLOWEEN COCKTAIL POP-UP RETURNS TO NITE OWL WITH IMMERSIVE DÉCOR, CRAFT COCKTAILS AND SPOOKY FUN

H OW TO | FO O D + BEVERAGE

“We’re excited to build that world through new venues, creations and unexpected surprises.” Halloween is getting a stylish new twist in Omaha this fall as Nite Owl joins Black Lagoon, the popular Halloween cocktail pop-up transforming 34 bars across North America into festive, immersive destinations. Created by cocktail industry veterans Erin Hayes and Kelsey Ramage, Black Lagoon has grown from a one-time pop-up into a highly anticipated seasonal tradition. This year, Omaha is officially on the list, giving local cocktail lovers a chance to experience the fun without leaving town. For several weeks this fall, Nite Owl will receive a complete Halloween makeover featuring playful décor, cinematic lighting, seasonal music, collectible glassware and a special cocktail menu created exclusively for Black Lagoon. Rather than simply adding a few pumpkins and cobwebs, the experience transforms the bar into an entirely new destination for the season. “We’ve always wanted Black Lagoon to be a place where Halloween fans, cocktail enthusiasts and

everyone in between can come together,” says founders Hayes and Ramage. “We’re excited to continue building that world through new venues, new creations and unexpected surprises this season.” That sense of discovery is at the heart of the experience. Guests can gather with friends, explore the transformed space and enjoy cocktails designed specifically for the occasion. Each participating bar puts its own personality into the Black Lagoon experience while incorporating the signature elements that have made the pop-up a seasonal favorite. For Nite Owl, the transformation offers Omaha something new to enjoy this fall. Whether it’s a date night, girls’ night out or simply an excuse to gather with friends, the pop-up provides an easy way to celebrate the season without committing to a traditional Halloween event. The experience also gives Nite Owl an opportunity to showcase its cocktail program in a completely different setting. The limited-time menu features unexpected ingredients, seasonal flavors and creative takes on familiar favorites. Adding to the experience, Black Lagoon will offer limited-edition glassware that guests can purchase and take home. The collection includes custom-designed pieces by artist Kisira Hill, as well as the new Abyssa the Octo-Witch Mug, created in collaboration with Tiki Farm. With Omaha joining a lineup that includes cocktail destinations in cities such as Chicago, Denver, Miami, Nashville, New Orleans, San Francisco, Seattle and Toronto, Black Lagoon’s arrival puts Nite Owl and Omaha on a fun national Halloween cocktail circuit. For anyone who enjoys creative cocktails, festive décor and a reason to get together with friends, Black Lagoon at Nite Owl is one seasonal stop worth adding to the calendar. CONTINUED >

Abyssa’s Obsession puts a seasonal spin on the classic piña colada. Pumpkin-infused Kraken Black & Gold Spiced Rum is paired with Lustau Oloroso Sherry, coconut, pineapple, lime and tobacco bitters for a tropical cocktail with an autumn twist.

Bone Temple offers a creative take on the margarita. Teremana Blanco Tequila meets Lustau Amontillado Sherry, tart cherry, spiced oat orgeat, lime, vanilla honey, absinthe and tobacco bitters.

03/

For espresso martini fans, Moon shadow combines nutmeg-infused vodka, Mr. Black Cold Brew Coffee Liqueur, Giffard Banane du Brésil, Lustau Fino Sherry and cold brew coffee. The cocktails are just one part of the experience, but they may be the most delicious reason to stop by. With inventive ingredients and seasonal flavors, Black Lagoon gives Omaha cocktail lovers something new to sip while celebrating Halloween.

CHOCOLATE and WINE The Key to a Successful Wine and

Chocolate Pairing Lies in Finding the Right Combination of Flavors and Characteristics.

Pairing wine and chocolate together can be a delightful sensory experience that can elevate the flavors of both. While the concept of pairing wine with food is well-known, pairing it with chocolate may seem unconventional at first. However, when done correctly, it can create a harmonious balance where the flavors of the wine and chocolate complement and enhance one another. Wine and chocolate have a lot of similarities to each other. Both contain flavanols (antioxidants) and polyphenols (compounds found in plant-based food) that are good for you and have anti-inflammatory properties. These characteristics affect flavor so it’s somewhat challenging to pair wine and chocolate together. The more polyphenols, the more pronounced the bitter taste. For example, if you sip a delicious dry red wine alongside a hunk of dark chocolate, the wine will start to taste bitter and sour. The taste imbalance is coming from the heightened levels of flavanols (different types of tannin) found in both chocolate and wine that end up clashing against each other on your tongue. While it might sound counterintuitive, a good rule of thumb is to pair a wine that is “sweeter” than the chocolate itself. “Sweet” doesn’t refer to dessert wines alone. In the wine world, the term “sweet” is often used to denote ripe, fruit-forward flavors in a wine. These characteristics provide a nice balance to the bitter flavors of cocoa. Both wine and chocolate can have intense, dry flavors. In order to find the right balance, it’s best to choose wines that are a little bit softer and juicier than the chocolate you’re pairing it with. We’ve done the footwork to find several wines that partner well with chocolate. Here are our guidelines for matching chocolate with wine and a few of our favorite wine and chocolate pairings. We hope you’ll try them and then get inspired to experiment and create your own.

TIP 1: M ATCH SUGA R WITH SUGAR When it comes to pairing chocolate and wine, you don’t want to strike a balance, you want to match sugar to sugar. Sweeter chocolate like white chocolate does better when consumed with sweeter wines and bitter chocolate like dark chocolate enjoys being paired with dryer wines. Think of it as matching sugar with sugar. A good rule of thumb is to always pair wines that are equally or slightly more sweet than the chocolate being eaten with it.

TIP 2: M ATCH INTENSIT Y WITH INTENSITY If you pair an incredibly delicately flavored dark chocolate with a full-bodied, heavy red, the intensity of the wine will destroy any of the subtlety that might have been present in the chocolate. The opposite is also true: strong-tasting chocolate will blow a delicate wine out of the water. Keep this rule of thumb in mind: light-flavored chocolates enjoy being paired with light-bodied wines and intensely flavored chocolates prefer being paired with full-bodied wines.

T I P 3 : PA I R F L AVO R S W I T H F L AVO R S Wine and chocolate both carry their own intense flavors. If the chocolate contains other ingredients such as nuts, fruit, or caramel, consider how these flavors will play with the wine. This is especially helpful to remember when enjoying truffles with wine. To avoid creating a palate power play between the two, do your best to match fruity or floral chocolates with fruity wines like Moscato or White Zinfandel. Enjoy chocolate-covered nuts alongside a nutty wine like a Madeira or Marsala. Chocolate studded with dried cranberries might pair well with a fruit-forward red with berry undertones.

48

EAT R IGH T | FO O D + BEVE RAGE

CREATING THE PERFECT PAIR DA R K CHOCOLATE Bitter to semi-sweet dark chocolates, that are 50 to 100% cacao, have intense, bitter flavors, and earthy to fruity undertones. Match the intensity without adding more dryness by pairing these chocolates with full-bodied, yet fruit-forward wines. Pairs well with: Cabernet Sauvignon, Pinot Noir, Port, Merlot, Shiraz, Barolo

MILK CHOCOLATE Milk chocolate is typically creamier and sweeter with flavors of brown sugar, vanilla, and cream. It requires a wine that is light to medium in body, with a ripe fruit character. Pairs well with: Pinot Noir, Merlot, Sweet Riesling, Ice-Style Wine

WHITE CHOCOLATE White chocolate has a sweet, buttery flavor with notes of cream and honey. Sweet white and rosè wines help cleanse the palate of the rich flavors from white chocolate, as does sparkling spumante like Moscato d’Asti. Pairs well with: Sweet Riesling, Moscato, Semi-Dry Sparkling Whites, Gewurztraminer
