THE BOTTLED GOLD OF EL DORADO
El Dorado County has continuously shined with its wealth of outdoor adventures, thriving agriculture, and renowned wine, craft beer, and spirits scene. However, what sets our community apart is its deep-rooted history intertwined with the iconic gold rush which has helped to shape a unique array of towns and businesses.
Placerville, situated at the heart of the region, was originally known as Dry Diggins, a gold mining camp located beside Hangtown Creek; later dubbed simply 'Hangtown' (for reasons obvious to its visitors). The name ‘Dry Diggins’ depicted the miners' laborious non-river mining task of carting dry soil by hand to running water for gold extraction, symbolizing the hopeful spirit of those who ventured here. These small towns vividly exemplified the rough-and-tumble lifestyle of the era.
The prospect of riches, however, often came with significant challenges and hardships. The need for these weary miners to seek solace usually came in one simple form: The local tavern. A place where they could indulge in libations, swap stories, and get a reprieve from their arduous daily tasks. Contrary to popular belief, whiskey was not the primary offering during these early gold rush days. Brandy was the more accessible and affordable choice. However, whiskey held its reign supreme, as evidenced by a "storied" bottle in 1865 fetching nearly its weight in gold.

Visiting Cris Stellar and his daughter Erica at their tasting room is a surprising experience given its unassuming location in the business park. Stepping inside, you're instantly transported back to that gold rush era, evoking nostalgia for simpler times and inspiring hope for better days ahead. "We focus on distilling whiskey for taste rather than for mixing cocktails," Cris explains. Prepare to stand, not sit, at their vintage bar, sampling some of the finest whiskeys you've ever experienced while listening to them passionately share their journey in distilling.
Cris reveals that he began his distilling venture in 2012 with a desire to create a tailored whiskey to his own taste. With no plans for commercial distribution, his now renowned 'Rubicon' remains their top-selling product. “Do your own thing; find your own path,” has evolved into a guiding principle for the ethos of his business. Cris further shares, “We do what we love for the locals, not for social media. We pour things the people want to enjoy. We pour from our hearts.” When asked what’s the best bottle they sell, Erica states that this is extremely subjective. “It depends on one’s personal preferences. We want to ensure the right bottle goes to the right person, regardless of distilling age. We help patrons to learn their flavors, and discover their pallets.

Testosterone therapy (TTh) has long been a subject of both fascination and controversy. Dr. Karla Alberts, ND has been prescribing testosterone therapy for 12 years at her clinic, Summit Naturopathic – a multidisciplinary clinic that specializes in cardiometabolic health and bioidentical hormone therapies (bHRT) for both men and women – with offices located in Truckee and El Dorado Hills. We met with Dr. Karla Alberts to discuss the benefits of TTh for men and the misconceptions that may surround its reputation. Below, you will find a few common questions Dr. Alberts has encountered in her practice.
No, testosterone does not cause prostate cancer or any other type of cancer. This is one of the biggest misconceptions that I see with patients and practitioners alike. This fallacy came about as the result of a poorly designed study over 80 years ago, and we’ve been working to overturn this false perspective for many decades. Numerous, impressive studies have shown that men with higher testosterone levels have no increased risk of prostate cancer, and there are even studies to suggest that higher testosterone can actually lower the risk of this disease.
THERE A RISK OF HEART
OR STROKES ASSOCIATED WITH TESTOSTERONE THERAPY?
A recent landmark study called the TRAVERSE trial, was an FDA-mandated trial to investigate the cardiovascular safety of testosterone. The study was vast and well-designed and looked at testosterone use in men who either already had pre-existing cardiovascular disease or possessed a high risk for it. The results provided reassurance that there was no increased risk of heart attack or stroke with testosterone use in these men.
Another important moment for TTh was in 2015, when, in an attempt to resolve these controversies, an international expert consensus conference was held to determine the benefits and risks of TTh. A panel of medical experts sifted through decades of research, and unanimously concluded the following: The evidence does not support increased risks for cardiovascular events or prostate cancer with TTh. And we continue to see evidence in support of this.
SUPPORTING THE OCCURRENCE OF "ROID RAGE" IN INDIVIDUALS UNDERGOING TESTOSTERONE THERAPY?
Aggressiveness and moodiness aren’t caused by high testosterone, but rather by what testosterone turns into, which is estrogen. It’s important to manage estrogen not just to mitigate side effects, but also to protect the prostate. In my practice, we have several ways to manage estrogen and keep it well-balanced. Testosterone, in all actuality, is quite calming and tends to balance out aggression, anxiety, and mood swings.
Simply put - to make life better and to enhance the longevity of life. Testosterone improves mental-emotional well-being, sleep, stamina, motivation, and energy, and also improves thyroid function. It improves sexual health and most certainly has a significant impact on intimacy and the quality of our relationships. It also enhances the ability to gain and maintain muscle mass, which is of utmost importance as we age. Testosterone has been shown to lower our risk of diabetes, Alzheimer’s, depression, cardiovascular disease, and prostate cancer. The risk of not doing TTh - in my opinion, is greater than the risk of doing it.

Testosterone can be administered in many ways - oral, sublingual, topical, injections, and pellets. I can prescribe all routes of administration, and find injections to be the most efficacious for male patients.
In addition to keeping an eye on testosterone and estrogen levels, my patients get a comprehensive workup twice per year, which also includes an assessment of thyroid and adrenal function, markers of inflammation and nutrient status, cardiovascular health, and metabolic markers. If any of these are imbalanced, we address them. All patients get custom recommendations for optimal dosing of testosterone and supportive supplements. Nothing describes summer better than a good cookout! And what is a cookout without a good, quality steak and the perfect grilling recipe?
1. Thaw and acclimate the steak. For searing to occur, the proteins in steak need to be heated to at least 310°F. Tossing cold meat onto a hot grill lowers the temperature and can prevent a crust from forming, so it’s important that any frozen steaks are thawed completely before cooking.
2. Salt your steak 30-45 minutes before grilling. This causes the salt to draw moisture from within the steak up to the surface, where it dissolves the salt and creates a brine that gets reabsorbed into the steak where it breaks down tough connective tissues.
3. Oil the grate on the grill, not the steak. Use tongs and a paper towel dipped in vegetable oil to lube your grates.
4. Manage your heat well. Remember that your grill needs to be hot for your steak to get a good sear. But if it’s hot enough to cause your oil to smoke, it’s too hot.
5. Use the 60/40 rule. The best-tasting steaks are seared on both sides and cooked evenly in the middle. The simplest way to do that is to only flip your steak once. The 60/40 rule suggests that 60% of your cook time should be spent on one side, and 40% on the other.
6. Keep the lid closed. It may be tempting to peek, but trust the experts and keep it shut! Opening the lid makes your grill lose heat, which makes steaks cook unevenly.
7. Check for doneness. A meat thermometer will give you the most accurate temperature reading:
• Rare: 120°F
• Medium Rare: 130°F
• Medium: 140°F
• Medium Well: 150°F
• Well: 160°F
8. Let your steak rest. Pull your steaks from the grill once they’re cooked to 5-10 degrees below your target temperature and rest for 10-15 minutes.
