Hello Eden Prairie Lifestyle Readers,
This is the annual ladies’ issue! It is one of my favorite issues for two reasons. Naturally, the women of Eden Prairie deserve far more acclaim than a single magazine can contain. Better yet, the ladies’ issue is also the easiest to line up stories for. You would have to study our city with a magnifying glass in order to discover one square inch of it that a woman has not already made better.
On our cover we are delighted to feature April Jones, doctor of naturopathic medicine and master of science in nutrition. Dr. Jones combines the science of modern medicine with the philosophy of natural healing on her mission to empower women to take their wellness into their own hands. She exclusively treats women, but I have it on good authority that Dr. Jones genuinely improves the foundations of her patients’ health.
I love the Healthy Kids Running Series. Jennifer Knapp brought the fiveweek youth running program to Eden Prairie only a few years ago, but it has already become a massive hit among local parents who appreciate an opportunity to teach their kids the spirit of sportsmanship and community. Many of them also appreciate an opportunity to deplete some of their kids’ apparently limitless energy.
For this issue we are proud to have interviewed Jenifer Loon, executive director of PROP. She and PROP’s many volunteers and donors are all leading Eden Prairie’s fight against hunger and homelessness. They are personifications of our city’s benevolence, one and all. PROP is just one of the non-profits that receive funding from the Edina Realty Foundation – yet another fine example of a local organization that makes a direct positive impact on our community every day.
Finally we have Eden Prairie Center. It is truly a unisex destination for dining, entertainment and shopping that offers everything from wedge sandals to ice augers. As a sensitive, modern magazine publisher, I wouldn’t dare suggest that either of those things might appeal more to one gender than the other.

“Giving to a worthy cause is always rewarding, but I admit to feeling even greater joy when I see that money go toward great non-profits in my hometown. That includes the Eden Prairie Foundation, which is a conduit to many philanthropic organizations around town. We donate to PROP and Second Harvest Heartland, both food shelves that have already helped thousands of families in the Twin Cities. My wife volunteers at PROP, and she says the needs for food donations and housing assistance have only become greater since the pandemic. Another of our beneficiaries, The PROP Shop, offers clothing and household items to local families in need.
“We give to several non-profits that create and provide housing, including the Minnesota Assistance Council for Veterans, Habitat for Humanity, Onward Eden Prairie, and Church of St. Vincent de Paul, which runs a homelessness prevention program that helps low-income families pay their rent and mortgages. We also donated to Project Friendship, a community initiative that builds positive and supportive relationships in our community and provides outreach to many who are overwhelmed by home maintenance.

People Reaching Out to Other People, or PROP, is a testament to the decency and kindness of the Eden Prairie community. Although it is best known as a food shelf, PROP also provides housing, wraparound support, and employment and mental health services free of charge. PROP currently serves approximately 1,200 local households that are facing a crisis. A great many families will weather a storm and rise above it thanks in no small part to the non-profit’s efforts.
“Our Food Mart looks just like any other small grocery store,” said Jenifer Loon, executive director of PROP. “Whoever they are and wherever they’re from, anyone is welcome to walk through our doors. They browse the shelves freely, loading their cart with the items they would like to bring home based on their family size. Food Mart only stops resembling a conventional grocery once you notice there are no cash registers.
“Staging our food program this way is beneficial for many reasons. It is quicker and easier for our clients to take what they want rather than ask us for it. It prevents waste, because people don’t bring home foods they dislike even when they are free. Most importantly, Food Mart’s familiar atmosphere gives our clients a greater sense of normality. No one should feel like they forfeited their dignity just because they needed help.
“PROP also offers curbside service, where clients can wait in their cars while our volunteers assemble their personalized orders. Another option is curbside express where clients receive a prepackaged box of nonperishables, as well as meat, eggs, dairy and produce. We also provide home delivery to many of our senior clients, as well as those who are mobility challenged.
“PROP’s Food Mart is the culmination of our entire community’s support. We thank our volunteers who so selflessly give their time and hard work in filling shelves and assisting clients, as well as the many grocery stores that donate thousands of pounds of food every month. Our financial donors allow us to purchase much-needed goods from other non-profits such as The Food Group and Second Harvest Heartland. And of course, we’re thankful to everyone who brings us food. PROP began over 50 years ago when the Beckmann family arranged a food drive through their church. It only goes to show how big a difference even one small act of kindness can make.
“Food creates immediate relief, and it frees up our clients’ limited budgets for other necessities. But we understand that people often need greater help regaining their self-sufficiency, which is why we provide financial support as well. If a family lives in Eden Prairie or Chanhassen, they can come to us for assistance paying their rent or mortgage. Many of our clients avoid homelessness once we have negotiated back rent payment plans on their behalf. In addition to housing, our clients may request assistance paying for utilities, prescription medications, child care, and even the training and education they might need to improve their employment opportunities.
“We have our own employment coordinator on staff. She supports our clients who are job searching by helping to ensure they are prepared and have the tools and resources they need. This can include resume preparation, interviewing skills and online application processes. We strive to match job seekers with local employers

An electric cornflower blue sky hangs over Staring Lake Park. If not for the distant hum of a Cessna taking off, the lacrosse field would be totally silent. Preschoolers stand there in a row. Some are grinning ear to ear. Others look as intent as border collies watching a squirrel through a plate glass door. A few of them appear confused. “Who are these other kids?” they ask themselves. “Why did my mom pin these numbers to my shirt? It’s covering up my favorite Paw Patrol character…”
A megaphone crackles to life in the hands of a toddler. The amplified voice of Leo Knapp snaps every child’s head to
attention. “On yoah mahk … get set … go! ” Instantly tiny feet begin beating against the grass as the kids all commence their mad dash. The crowd erupts while the pint-sized sprinters barrel toward the 75-yard finish line.
Because they are human, every mom and dad in attendance hopes their own child will win. Of course, they also possess the savoir faire requisite to avoid embarrassing themselves by taking the competitive aspect of Healthy Kids Running Series (HKRS) even remotely seriously. They didn’t come to the park to prove their children are the fastest in the southwest metro.

They came because they cherish camaraderie, sportsmanship, and the sense of belonging – and want their own kids to do the same.
“The nearest HKRS used to be over in Woodbury,” said Jennifer Knapp, Leo’s mother. “My husband Jeromy and I brought our older son Charlie there. The drive wasn’t too horrible, and it’s worth the trip even if you’re only going to Nadia Cakes, but ultimately we had better places to be than on 494.
“I called the HKRS national office to ask if they could open a chapter in Eden Prairie, or at least closer to it. It turned out that’s exactly what you’re supposed to do if you would like to become an HKRS community coordinator.
“April 30th marked the beginning of HKRS’ fourth series in Eden Prairie. Registration for the current five-week program is still open, and we’ll begin our fifth series this September. We hold foot races for children aged two to 18 on Sundays at 4pm.

Every child races against their peers on an age-appropriate course: 50 yards for our youngest competitors, and two miles for the oldest. Everyone runs on grass, which is a famously forgiving surface to faceplant on. Kids compete each week for a chance to earn points and win trophies. We award a medal to every participant for all their hard work at the grand finale on June 4th. We also give a Healthy Kid award to the kids who exemplify the positive attitude and personal improvement that are the founding principles of the HKRS.
“Every race day has a special theme, like sports, animals or rainbows. Universal Pictures sponsored one of last year’s races – ‘The Minion Fun Run,’ for which dozens of children dressed in varyingly convincing Minion costumes. Last October we observed Breast Cancer Awareness Month by wearing pink, eating Sergeant Shortbread’s delicious pink cookies, enjoying the beautiful ‘Think Pink’ display by Card My Yard, and passing out donation flyers for Susan G. Komen. We’re big on supporting our fellow non-profits, and are ecstatic to have recently partnered with Race for the Cure.
“I think my favorite is superhero and princess day. That’s when we see an astounding number of little Spider-Mans and Elsas, and also when members of the Eden Prairie Fire Department and Eden Prairie Police Department come to show off their neat vehicles. A
lot of our racers are right at that age when seeing a fire truck feels like winning the lottery.
“Participating in HKRS has been wonderful for my sons. Even when they’re racing up and down the hallways inside our own home – very noisily, I might add –they’re still being positive and supportive toward one another. They bring that same spirit to every other sport and activity they participate in. Leo and Charlie also made lots of great friends through HKRS, and now have playdates all over the southwest suburbs.
“My husband and I have taken a lot from HKRS as well. We’ve certainly made our own fair share of new friends. It is invigorating to feel the true spirit of community during so many beautiful days at the park. More than anything, creating an environment where kids can flourish has felt incredibly rewarding. It is amazing how much confidence they can gain over the course of just five races. Some shave 20 or even 30 seconds off their first race time, but no one really participates in HKRS so they become a better runner. They come for a positive introduction to a healthy and active lifestyle – and of course to have fun!”

“I combine the science of modern medicine with the philosophy of natural healing to help my patients lead their most vibrant lives. We investigate the root causes of their health concerns, consider any obstacles they are facing, and develop treatment plans together. Many of my patients come to me with specific medical issues. Many others want to feel more energized, avoid becoming ill, or just stay active and live longer. They all benefit by improving the foundations of their health: sleep, movement, diet, stress management, and connecting to nature.
“I strengthen those foundations through nutrition, targeted supplementation, and stress management techniques, but botanical medicine is my favorite of all the naturopathic modalities. It has been around for as long as people have known about plants, and there is overwhelming science supporting its effectiveness as a treatment for a wide range of conditions. Botanical medicine’s gentler approach makes it a good first
option for treatment. And as a naturopathic doctor, I am fully qualified to administer herbal remedies that won’t interfere or otherwise interact with any prescription medications my patients might already be taking.
“I treat many of my patients for anxiety. Natural remedies such as passionflower, lavender, chamomile and valerian root can all help them feel calmer and more collected. Different herbs are better suited for treating certain symptoms of anxiety, however. Whether you’re experiencing racing thoughts, heart palpitations, gastrointestinal upset or any combination thereof, I’ll make certain you have the ideal tea, capsule or tincture.
“I frequently treat women for their hormone concerns, with a special emphasis on preconception and postpartum support. Helping a woman achieve her dream of becoming a mother is intensely rewarding – but so too is helping her manage the stress and fatigue that so often accompany new motherhood. “Science reveals more about the foundational importance of the gut microbiome almost every day. It can be directly related to almost any other symptoms in the body, which is why my practice also focuses on gastrointestinal health. I help women naturally strengthen their GI tracts, which also supports them in absorbing better nutrition from their diets. That is also the goal of my holistic nutrition services, in which I advise simple dietary changes that can dramatically enhance overall well-being.
“Naturopathic medicine gives us the means to treat mental health issues as well. Addressing an underlying medical condition, nutrient deficiency or hormonal imbalance can greatly relieve symptoms of anxiety, stress, fatigue and burnout.
