AS THE SPRING SUN MELTS AWAY THE REMNANTS OF ANOTHER MINNESOTA WINTER AND LAWNS SLOWLY BEGIN TO TRANSFORM FROM BROWN TO GREEN, MINNESOTANS ARE CALLED TO THE OUTDOORS. 01. Olympic Hills Golf Club, Eden Prairie, MN: After undergoing a complete renovation between 2013 and 2015, the course at Olympic Hills Golf Club reopened in August 2015. A business executive and law firm co-founder, Dave coached his four Eden Prairie kids’ football, soccer, basketball, volleyball, lacrosse and mock trial teams for over 50 seasons, sometimes juggling two or three sports at a time. He and his wife, Mary, can count the few events they missed on one hand – including their son’s collegiate football games – thanks to the firm-wide, family-friendly culture Dave and his partner nurtured. His memories from running the Salvation Army’s Most Amazing Race with his three daughters in three successive years are personal treasures. “We laughed and smiled our way through the entire event.”

the P h i l a n t h r o p i st Mike Gruidl Recently Retired Investment Broker Mike and his wife, Cathy, raised two kids in Eden Prairie. Even when he was working as an investment broker, Mike dedicated countless hours volunteering in the community. In addition to serving as a leader in the local Lions Club, he organizes drives to collect and distribute winter gear, “energy packs” and bus tokens to homeless people through his friendship with Alan Law, “The Sandwich Man.” He also helped establish his philanthropic pride and joy - the local chapter of Let’s Go Fishing. This “hidden gem” provides free boat trips and fishing for Eden Prairie seniors, veterans and youth.

the Encore Executive Mark A. Weber Executive Director, Eden Prairie Community Foundation

Mark moved around a lot as a kid, but he’s lived and worked in Eden Prairie for decades. Starting as a cub reporter with our local newspaper, he devoted 34 years to journalism as a reporter, editor, publisher and eventually general manager of the parent company. Mark is starting his fifth year leading the foundation’s board of directors in his “encore career” and says that, “after nearly 40 years in the community, I’m still helping write Eden Prairie’s story.” A runner and long-time Rotarian, Mark and his wife, Roma, have two grown sons and live with an elderly Welsh Corgi.

Mike started working in his dad’s Jennings Red Coach Inn kitchen when he was 12. The former owner of three restaurants in the Minneapolis Warehouse District, Mike moved his business investment to the suburbs in 2006, opening a modern version of the original family restaurant. He named it Jimmy’s after his dad. Jimmy’s donates 25% of all December gift card sales to local charities - $28,000 last year. Taking “pride in doing my part,” Mike is also involved in the growth of the Minnesota 100 Club, which provides instant help to families of fallen on-duty police officers and first responders. 24

the Business Leader Lyndon Moquist Managing Broker, Edina Realty, Eden Prairie Office Lyndon and his wife, Julie, moved to Eden Prairie to raise their daughters in 1997. They still call it “home.” He’s worked for Edina Realty as a realtor and managing broker for almost 30 years and managed the local branch’s 75 employees since 2012. A dedicated volunteer in the community, Lyndon plays the trumpet at St. Andrew’s Church, chairs the local Tax Board of Appeals and Equalization, belongs to Rotary and coached in the Eden Prairie Soccer Club for over a decade. DE-STRESSING in a stressed-out world

A little bit of stress can be good. In fact, it is essential for your health and well-being. It can give your body energy and be a motivator. It can protect you in the case of danger. Stress is the fear that you won’t get everything done well enough. It can come from multiple sources: •It can be a learned behavior from your parents or boss •Stress can come from emotional resonance from the past that gets triggered by a certain event •Your work life. Your work may have become your life, which leaves no time for fun and relaxation •Home life demands such as chores, challenging family members or taking care of aging parents •Television and radio - confrontational programming, news and violent programs contribute to higher stress levels

Stress is a warning that something needs your attention. Is your life out of control? Are you having trouble managing it? It is common to experience acute or chronic stress in today’s world. If you don’t satisfy the stress you are feeling it can have serious physical and mental consequences: •75-90% of all doctor’s visits are due to stress-related ailments and complaints •The lifetime prevalence of an emotional disorder is more than 50%, due to chronic stress •Physical conditions that are related to chronic stress are: Headaches, diabetes, arthritis, depression, impotence, anxiety, sleep, asthma, stomach issues, digestive issues, high blood pressure, skin conditions, heart issues, glucose imbalance, muscle tension

Practicing these behaviors can help you better manage your everyday stress: •Reframe situations by focusing on the positive instead of the negative reduces the feeling of stress •Change the words you use. The word “excited” feels better than “anxious” or “stressed out” •Stop avoiding what ever is hanging over your head. It’s not going away, so get it done! •Have realistic goals •Delegate - chores around the house or at the office •Change your self-talk. The brain makes no moral judgments. It accepts what you tell it •Exercise is a great way to burn off stress. Improper food habits can stress your body internally •Put your work away at the end of the day. Make your list before you leave the office so your day starts with a plan •Allow your mind and body the opportunity to relax and recharge •Practice good sleep hygiene: and get enough sleep Finally, the 5,4,3,2,1 breathing technique is a highly effective tool for managing your stress level. FOR COOPER HAYS, BEING ATHLETIC WAS ALWAYS AN INTEREST, BUT WHEN HE STARTED WRESTLING, IT BECAME A PASSION. After struggling with his weight in middle school, he made it a goal to be a varsity wrestler by 9th grade. And he did it. “Wrestling gave me a way out of my problems, not only physically, but mentally and spiritually.” After college, he graduated to mixed martial arts. “After my wrestling career, I felt I was missing something.” Hays said. “That thing was combative sports.” He is now a certified personal trainer and an MMA fighter. Exercises that use your own body weight are great for guys with any fitness background, MMA fighters and weekend warriors alike. “These can be done at home, and are extremely beneficial,” Hays told us.

DIRECTIONS 1. Mix the flour, paprika, garlic powder and cayenne pepper together in a shallow bowl. 2. Fill your skillet with oil to about 1-inch deep and heat to 350 degrees. 3. Coat your chicken breasts in the flour and seasoning mixture, then carefully place them into the heated oil. 4. Cook until golden brown with an internal temperature of 165 degrees. 5. Lightly toast your sesame seed bun, then top with pickles, fried chicken breast and slaw to taste.

INGREDIENTS (TACOS) 1/2 red onion, coarsely chopped 3 cloves garlic, peeled

MARINATE THE STEAK IN THE REFRIGERATOR FOR UP TO 24 HOURS FOR EXTRA FLAVOR.

2 tablespoons adobo sauce 2 tablespoons olive oil 2 teaspoons cumin 2 teaspoons dried oregano Salt and pepper, to taste Choice of steak Fresh flour or corn tortillas Lime, optional

DIRECTIONS 1. Blend the red onion, garlic, adobo sauce, olive oil and seasoning in a food processor or blender, adding water as needed until smooth. 2. Marinate the steak in the mixture for at least 30 minutes prior to grilling. 3. Heat 2 tablespoons of oil in a large grill pan and add the steak, cooking to desired doneness. Let rest in a foil tent for 10 minutes then chop into small pieces and assemble tacos as desired.
