Lifestyle Letter
D
uring this month of St. Valentine, Eden Prairie Lifestyle would like to celebrate our love for the local businesses that keep our beautiful community running. When we buy or donate locally, it benefits not only our neighbors, but also the growth of Eden Prairie as a whole. Although there are bountiful amounts of EP owned businesses; we decided to step out and profile a few companies in the cities that surround us as well. We adore what these businesses stand for, the people that have created them, and the products they sell.
On a more personal note, there are so many things that have been filling my life with love lately. Other than my job and beautiful friends and family, here are a few more things that I have been loving this season: True crime podcasts (for commutes and workouts), Moscow Mules (for long nights and fancy dinners), loose fitting blazers (for the perfect business casual look), and ramen shops (for the best warm-me-up meal). I hope you find some familiar faces and businesses in this issue, if not, send us some! Eden Prairie Lifestyle is just as much your magazine as it is ours. We want community content and input, as well as your event announcements and photos. Send your contributions to our facebook or email, nora.johnson@lifestylepubs.com.

As Julia Child says, "I enjoy cooking with wine, sometimes I even put it in the food I'm cooking." Wine should be added to food early enough in the cooking process that it has time to simmer. As wine cooks down, the alcohol evaporates away and the flavors begin to concentrate. Use a light hand at first until you get familiar with cooking with wine. Typically, white wines impart their delicate flavor to seafood, and dishes like chicken piccata and vegetable risotto. Red wine adds depth to bolder dishes like beef bourguignon, mushroom steak sauce, and of course, great-grandma's famous pasta sauce. Using wine in a reduction or to deglaze a pan creates an intense and complex sauce. It easily picks up those coveted brown bits that elevate the flavor of any dish. But be careful—light and overly fruity wines can ruin a sauce. The fruitiness is lost during the cooking process and will leave the sauce too acidic, ensuring those lovely brown bits have gone to waste. Red or White? Let's be clear about what is considered a good cooking wine. The so-called "Cooking Wine" found in your local grocery store next to the fancy vinegars and Worcestershire sauce is a poor excuse for a cooking ingredient. They are low in alcohol content, highly acidic, and contain a massive amount of salt. Instead, choose a wine you would pair with the meal. Use one that is fruity, medium or full-bodied, and with little or no oak flavor. Wine aged in oak barrels tends to turn bitter and harsh when cooked in food. For red wines, Pinot Noir and blends such as Côtes du Rhône will produce consistent results. Again, avoid wines aged in oak such as the robust Cabernet Sauvignon. White wines should also be dry and full-bodied. Try a Sauvignon Blanc, unoaked Chardonnay, or even a French Vermouth.

produce a better sauce than a wine picked from the bargain bin? Well, maybe. America's Test Kitchen tested sauces made
from
similar
wines
in the $5, $10, $20 and $30 price points. They discovered that the $5 wines cooked down to sweet, syrupy sauces, while the $10, $20 and $30 bottles were smoother,

multiple layers of flavor. Although tasters favored wines in the two more expensive price ranges, none thought the difference justified spending an extra $10 or $20. They found that limiting the price to $10 left cooks with plenty of good shopping options.
Cooking Tips:
• Add a light, dry white wine
to melted butter and baste grilled, broiled, or baked fish. • Mix wine with different herbs and olive oil to make a delicious salad dressing. • Stir in a couple tablespoons of red wine into brown gravy. Slowly simmer to create a luscious sauce for beef. • Freeze leftover drinking wine in ice cube trays for future cooking use. • Use a wine-based marinade to help keep meat, poultry or seafood moist while it cooks.

RED WINE REDUCTION FOR SAUCES
Makes about 2 tablespoons Two tablespoons of this potent wine reduction can be substituted in a recipe, such as a pan sauce, tomato sauce, or roast beef jus, that calls for one-half to three-quarters cup of wine. Add this reduction near the end of the cooking time—the way you might finiswh a sauce by swirling in some butter. The reduction can be kept for up to two weeks in an airtight container in the refrigerator. 1 small carrot, chopped fine (about 2 tablespoons) 1 medium shallot, minced (about 2 tablespoons) 2 button mushrooms, chopped fine (about 3 tablespoons) 1 small bay leaf 3 sprigs fresh parsley 1 cup fruity, smooth, medium-bodied red wine blend Heat all ingredients in 12-inch nonstick skillet over low heat; cook, without simmering (liquid should be steaming but not bubbling), until mixture reduces to 1 cup, 15 to 20 minutes. Pour through strainer and return liquid (about 1/2 cup) to clean skillet. Continue to cook over low heat, without simmering, until liquid is reduced to 2 tablespoons, 15 to 20 minutes. he annual Minneapolis Boat Show presents hundreds of boats at the Convention Center each year as the kick-off to the summer boating season. Minnesotans start planning for when the ice goes out marking the annual boating ritual in the land of lakes. There are reportedly 11,842 lakes, 69,200 miles of rivers and streams, and about 4,000 miles of water trails, making boating of all kinds a focal point of outdoor activity for Minnesotans. What's new and exciting is that we can now approach our fun on the water with sustainable mobility - electric drive systems delivering power, endurance, and convenience. For the first time since WWII, boat building has returned to this historic northern shipyard on the banks of the St. Louis River in Duluth. Symphony Boat Company, out of Duluth, specializes in creating beautiful boats with electric drive systems. Marcel LaFond, the founder, has merged the art of boat making with the electric drive systems producing the most exciting new boats and power supply to come to market. Symphony Boat Company offers customized designs to amaze and delight even the savviest of boaters. You can have one built with features seen on almost any modern or classic boat out there; they can build it for you and make it yours alone. 20

Think of the excitement Tesla has generated today; everyone wants one Symphony Boat Company is bringing you much the same. If you can avoid the high levels of pollution by switching to quiet, modern and emission-free electric drive systems - why wouldn't you? Torqeedo electric motors power the SBC crafts, producing zero emissions on the water. These motors do not require any maintenance and generate almost no noise. SBC designs are aluminum bonded with foam to add stiffness, insulation, and buoyancy and the inner skin is epoxy sealed Oukome Plywood. All the wood or bamboo throughout each boat is bonded with epoxy, and exposed wood is treated with UV inhibitors for longevity. You get the best of both worlds with an aluminum foam bonded hull, a wood interior and the high-performance electric drive system from Torqeedo. den Prairie’s Encore Boutique is home to an eclectic assortment of new and expertly consigned clothing and accessories. The store first opened in 1988, moving to its current location not long after Kay Nordbye purchased it from the previous owner in the mid-2000s. Encore consigns everything from Target to Chanel, as long as the pieces are on trend and in like new condition. But, what makes Encore unique is their inventory. Along with local customers, they carry clothing from all over the country. Customers from Ohio, Wisconsin, and even New York ship their clothing and accessories to the store for consignment. It’s common to see clothing from Milan and London hanging next to items from Target and Von Maur. To complete your outfit, Encore also carries a small number of new items, such as leggings, scarves, and jewelry. In the center of the store is an eye-catching display of designer handbags. With the increasing popularity of recycling and vintage clothing, Nordbye sees some of the stigma around consignment shopping slowly starting to fade. “Over the holidays, we sold a lot of designer purses and watches from Kate Spade, Louis Vuitton, Michael Kors, and Tory Burch to be given as gifts. Five years ago, that would have been unheard of.” With the store selling close to one thousand items per week, the consigned pieces don’t generally last for very long. Seasoned customers have learned if they like something, they need to grab it before it’s gone. Nordbye shares the story of a woman in labor who called a friend to rush over to the store and buy a top she was eyeing. She knew it would be gone if she waited until after giving birth. She now brings her toddler to the store. As an added bonus, Encore has a CONTINUED > February 2017 | Eden Prairie Lifestyle

rewards program where customers earn points every time they shop. While Nordbye loves clothing, it’s the people that make her day feel like anything but work. She shares story after story of memorable customers who experience life’s highs and lows within the walls of the store. She says, “Eden Prairie is such a wonderful place. I could write a book about the great people who come in here.” Every staff member at Encore takes great pleasure in making personal connections with customers while taking the time to learn their likes and dislikes. They also love helping customers step outside their comfort zone. Nordbye says, “Each person has their own taste and will gravitate towards the same colors or silhouettes. It’s exciting to encourage them to shake things up. Many customers come back to the store and tell us how many compliments they received about the outfit we helped them put together.” Nordbye says one of the most rewarding things about being a local business owner is giving back to the community. Every few months, they gather items that did not sell and hold a charity rack sale. Everything is priced at $5 or less with the proceeds going to their charity fund. Encore Boutique donates money to local school events and programs, The PROP Shop, and women’s shelters. If you’re interested in setting up a consignment appointment, please call the store at (952) 944-9290. To find out about their upcoming charity rack sales or other store events, you can sign up for their email list or view their Facebook page. Senior Travel Service Bringing families together for life’s big events
ARTICLE NANCY RENNEKE
S
pring and summer are our favorite times for celebrating family events. The season for graduations, weddings and family reunions is on its way, marked by everyone getting together with lots of pictures to document special gatherings. But sometimes, “everyone” is hard to accomplish. Lots of our families include seniors living far away. Orchestrating their safe travel to attend these events can feel daunting, even impossible. Senior Travel Companion Services specializes in helping families get their older relatives to the party. Eden Prairie resident Carol Giuliani created this unique business to remove barriers and bring families together. Carol first discovered her affinity for the elderly when she was only 15 years old. She worked in a nursing home and found herself drawn to the Holocaust survivors and their stories. Carol’s life experiences and big heart create the perfect collection of skills and patience needed to coordinate custom travel and accompany seniors. A travel enthusiast with vast globetrotting expertise, she has served as a caregiver to seniors for 34 years
26
Eden Prairie Lifestyle | February 2017
and has logged over 23 years as a guardian and conservator. Decades later, Carol continues to serve seniors in these roles and enjoys their company while she helps them travel to visit or live near loved ones. People who know Carol describe her as adventurous, resourceful and unflappable. Combine those traits with her appreciation for golden-agers, the “gift of gab” and her zest for travel and you have a person ideally suited for her one-of-a-kind business. Carol is a savvy traveler and a resourceful trouble shooter. She has flown from Minnesota to the East Coast with an elderly gentleman so he could attend his granddaughter’s graduation. She coordinated a trip to San Francisco and accompanied a woman moving to a memory care home close to her family. She has packed clients’ bags, booked flights, driven cross country, rented scooters, played Scrabble and even cooked dinner (she’s also a gourmet cook!) for her companions. The mission for Senior Travel Companion Services is, “to help seniors maintain dignity and independence while removing physical
and emotional obstacles to travel.” Carol says she loves a challenge and that many phone calls from potential clients start out with, “I don’t know if there’s any way you can help get my mom to travel to…” First, she says it’s important to know that what might seem overwhelming to family members, is fun for her. “Seniors have so much history. Listening to them tell their stories and learning about their lives is my favorite part of my work.” Carol has numerous experiences where she’s created a travel atmosphere that turned reluctant travelers into her friends. She also points out that an unrelated, neutral companion may be more patient than family members when the challenges that inevitably crop up while accompanying a senior long-distance occur. The confidence that stems from her years of care giving experience helps, too. Carol’s travel companion business provides a unique combination of services that aren’t offered by anyone else in the area. Home care aides might provide health services but lack travel expertise.
Travel sites may specialize in senior tours, but don’t offer the personal care many seniors require. The patience, humor and resourceful personality are uniquely Carol’s. Her process is both detail-oriented and user-friendly. The attention to detail comes naturally because she’s an attorney; she’s also bonded and insured. Every element of a client’s trip is customized to suit individual needs. She meets with seniors and their families to learn about their travel goals and expectations. She provides a questionnaire to document health issues, medications, physical capabilities and personal backgrounds. She can be as involved with travel budgets, itineraries and entertainment as her clients want. She follows up every trip with a full accounting and a trip report, accompanied by suggestions for future travel. “Travel can be empowering. Both for seniors and their families.” Carol has taken on this goal with gusto and continues to educate herself and the seniors she serves. Taking continuing education classes on senior needs such as “Tandem Strength and Balance” helps her keep her travel companions safe. She also pays it forward. Carol offers free seminars, “Travel Tips for Seniors and Everyone” across the metro area in assisted living homes, churches, and community centers. It doesn't take long to learn that this isn't just a business for Carol. She has taken a career path to create the perfect opportunity for integrating her love of travel and admiration for seniors. “Everyone deserves to take part and have fun in life. Whether I am listening to a client sing at a relative’s funeral or serving cake at a graduation party, I think I am lucky to have been a part of that life experience. I’ve learned a lot about life and successful families from being a small part of these seniors’ travel and their families’ events.” Carol is grateful for seeing senior care evolve from restraints in nursing homes of the past to concierge services in assisted living homes today. Her role as a guardian and conservator offers a lot of insight into industry trends and her latest observation is that, “baby boomers want to live life to the fullest and travel is part of that.” If there’s a big family event on your horizon, consider including a far away relative. Your high school graduate will feel even more important when her grandma comes all the way from New York. Grandparents from Florida sitting in a place of honor at your son’s wedding reception reminds everyone of the vows they made sixty years ago. A favorite aunt’s toast at the family picnic might include a story no one has ever heard before. If they’re independent and able, Carol says she will make herself scarce. If they need assistance with personal care, she’ll happily join the party and help them so you can tend to your guests. A visit to her website offers a peek into some of Carol’s travel companions’ stories. The testimonials reveal that she has both embedded herself in family events and kept to the sidelines, based on her clients’ needs and wishes. She also helps families relocate loved ones when they want them living nearby in assisted living and memory care homes. Adventure travel for seniors is featured on her website, too. Drinks:
What’s a party without a signature drink? Choosing an on-theme crowd pleaser is sometimes difficult, but we’re here to help. Don’t feel obligated to have all your beverages be pink or red (though it’s a charming touch) but do feel obligated to have a delicious drink your guests will love. The full recipes for all of these drinks are on Popsugar.com.
POMEGRANATE MIMOSA We love mimosas just as much as anybody. The color is perfect for a red-and-pink party. You can also use cranberry juice for a bolder red! The best part about mimosas - they are so easy and delicious. Win-win.
GINGER SALTY DOG Want your cocktail to compliment all of your delicious, sugary snacks? Then this salty drink is what you’re looking for. Grapefruit, ginger simple syrup, vodka, and coarse salt to rim the glass.
THE BEE'S KNEES What this cocktail lacks in Valentine's themed color, it makes up for with its adorably affectionate name: The Bee’s Knees, honey, gin, with a squeeze of both lemon and lime juice. Make it up in advance, and this sweet, simple cocktail is sure to win over your guests!
NEGRONI COCKTAIL This classic Italian cocktail is deliciously boozy and perfect for a coldweather holiday like Valentine’s Day. Its reddish hue is a bonus for your V-Day aesthetic. Mix gin, Campari, vermouth, and a twist of orange for garnish.

Movies: Everybody loves a good romantic movie. Play one of our favorite romantic movies in the background at your soiree. -The Holiday -Titanic -Love Actually -Pretty Woman -When Harry Met Sally -You’ve Got Mail -Notting Hill -10 Things I Hate About You
Activities:
Nothing gets the ball rolling at a party like games.
WHO'S WHO This game is perfect for a Valentine party because you can choose characters that are on-theme! For a Valentine’s Day edition of this game, you’ll write down the name of 20 (or however many guests you’re expecting) characters from popular romance films on sticky-notes and put one on each guest’s back. During the party, they can ask other guests questions in a quest to figure out which character is on their back. Intentionally steering your friends off course is encouraged. This game is hilarious and super low-key, allowing your guests to chit-chat and enjoy themselves while still participating. THE NEWLYWED GAME This is perfect for a party with lots of couples. The host will ask questions to each group, and they have to guess the answer that their partner would say. Be prepared to laugh at your friend's hilarious answers to questions about their spouse, and be sure to soak up some knowledge on your own before the party starts!
Invitations:
You can be like everybody else and send out a group email inviting your guests to your party, or you can get your creative juices flowing. Sending a card in the mail is a perfect way to invite your guests. Not sure where to begin? Try searching Samantha Hahn’s page on flickr for free, printable Valentine’s Day cards. To be more original get a box of candy hearts and writing the invite on the box and sending them out. Imagine getting such a sweet invitation on a box of Valentine’s Day candy. Talk about a flashback to grade school card exchanges. It’s almost too perfect. CONTINUED >

Appetizers:
Sweet Treats:
One of the most important things a great host knows: feed the people. Food is such an important (and fun) element of a party. Deciding what type of food is sometimes difficult. Dinner? Apps? Treats? Finger food? Plated food? Sit-down dinner? Once you’ve got that decided, you’re golden.
Here are a few of our favorite Valentine’s themed sweet treats your guests will enjoy while mingling, drinking, and playing party games.
HEART SHAPED PIZZA Heart-shaped pizzas are not only tasty and on-theme, but they’re also fun at a party and are easy to eat. Prepare in advance the heart-shaped pizza dough using a cardboard cut-out as your guide, and when guests arrive set out a selection of toppings for your guests to DIY. If you are thinking of doing pot-luck style, invite your guests to bring toppings to share, and you provide the crust and sauce. Your guests will have fun making their pizzas, and everyone loves to hang out in the kitchen anyway.
RED VELVET POPCORN Everybody loves popcorn. You may have noticed a surge in popcorn brands in your grocery store aisles, and we’re here to help your party include the hottest trends in snacking. This flavored popcorn is to die for, and getting small carriers for people to dish their popcorn into will add a super cute flair to this treat.
HEART SANDWICHES This may be the easiest Valentine’s Day recipe ever. All you need is a heart-shaped cookie cutter, bread, and any sandwich toppings you want! Make bite-size sandwiches your guests will love.

CHOCOLATE DIPPED CARAMELS Make these delicious chewy nuggets for your party guests by dropping store-bought (or homemade, if you’re a superhero) in chocolate and any cute valentine’s colored toppings. Pink sprinkles are our favorite, but adding some nuts will please the healthy eaters in your group.
Ingredients 2 oz cream cheese, softened 1 Tbs corn syrup 1/2 Cup powdered sugar 1 tsp vanilla 1 Bag popcorn, popped 4 Red velvet cupcakes, unfrosted DIRECTIONS 1. In a large mixing bowl, combine the softened cream cheese, corn syrup, powdered sugar, and vanilla. Use a stand or hand mixer to blend into a creamy glaze. 2. Fold one bag of popcorn into the cream cheese glaze. 3. Use your hands to crumble four unfrosted red velvet cupcakes into the mixing bowl. Use a spatula to gently fold the cupcake pieces into the popcorn mixture. 4. Spread mixture out on a baking sheet lined with a silicone mat or wax paper and allow it to harden for about 10 minutes.

SETTING A NEW PACE THE JAGUAR F-PACE IS ONE FEISTY FELINE ARTICLE EMILY GLASER
F
rom the anticipatory hum of a purr to the all-out, pedal-down roar, there’s something about a Jaguar that makes your heart beat a little faster. With a growling engine and feline sleekness, the new F-PACE, a medium luxury SUV, is all Jaguar. “We designed the all-new F-PACE to be, first and foremost, a Jaguar,” says Ian Callum, Director of Design at Jaguar. But it’s so much more than the wee convertibles of the automobile maker’s past. “The F-PACE is an all-weather Jaguar sports car, life-proofed for five people and their belongings.” The first thing you’ll notice about the F-PACE is its strapping silhouette, the very lines of which exude untapped power. Muscular rear haunches and an angular rear window reveal a spacious trunk area, perfect for storing sports equipment and Sunday’s golf bag. You’ll find Jaguar’s signature in the single-sheet body, thanks to the brand’s expertise in aluminum. Everything about the vehicle’s exterior whispers of the inherent athleticism of the performance SUV. And that’s truly what the F-PACE is—a performance sports utility vehicle, designed to get you and your four passengers to the ends of the Earth and your next adventure.
But who said adventures had to be messy or minimal? The luxurious, spacious interior brings Jaguar’s meticulous attention to detail and craftsmanship to a modern world. Slip into the available leather sports seats and experience slick comfort with 14 different adjustments, heating and cooling. And with the 12.3-inch virtual instrument cluster, every bell and whistle is at your fingertips. Remember what we said about this being a decisively modern Jaguar? Look no further than the advanced driver assistance systems for proof of the F-PACE’s technological savviness. The All Surface Progress Control controls the throttle and brakes, so the driver can concentrate on—and truly enjoy—the fun of steering. The advanced stereo camera delivers Autonomous Emergency Braking and a pedestrian detection to initiate full braking automatically, plus Lane Departure Warnings and Lane Keep Assist to help drivers avoid collisions. Of course, the F-PACE also offers blind spot monitoring and parking assist, but our favorite feature might be the Intelligent Speed Limiter, which can automatically increase or decrease the vehicle’s max speed depending on the local speed limit.
Those modern touches continue far beyond the actual driving experience. The Jaguar InControl Touch infotainment system is standard in the F-PACE, and it’s as intuitive and modern as these systems can get. The navigation system is leagues above the piddly version you’ll find on your phone with turn-by-turn instructions that can show on the head-up display right before your very eyes. Features like Commute Mode memorize your route to work and automatically offer alternative routes in the face of congestion or traffic. Don’t forget that this is an SUV. It’s been tested at locations around the world, from the most frigid tundras to the driest deserts, to ensure every tire grips the road and offers you the thrill of an exhilarating, but always safe, ride. Both the 3.01 340 hp or 380 hp supercharged gasoline V6 engines with 8-speed transmissions offer four-wheel power and torque to get you across every highway and dirt road out there with oomph. With a polished and almost surreptitious aesthetic and a ruggedness prepared to take you anywhere, the F-PACE is all class, all comfort, and all Jaguar. 2017 F-PACE Base Price: $40,990 Fuel Economy: 18 city/23 highway Horsepower: 340 to 380 horsepower Engine: 2.0-Liter Turbocharged 180hp In-Line 4-Cylinder Diesel AWD; 3.0Liter Supercharged 340hp V6 Gasoline AWD; 3.0-Liter Supercharged 380hp V6 Gasoline AWD Photos courtesy of Jaguar For more information, visit jaguar.com.

Parting Thoughts
A Healthy Heart Starts with Healthy Soil ARTICLE KELLY LORENZ
H
ave you given much thought to the dirt within which you plant your vegetables each spring? Have you added any compost or microbes to the dirt lately? There is more to dirt than just being an anchor for the plants to grow in. That is why we call good dirt, soil. Soil holds the basic needs for all life. Billions of microbes live in the soil and feed all living things. It is time you give your plants the microbes & nutrients they need to grow and produce a crop that is nutrient rich from top to bottom. Soil is alive, It has vitality, a word defined as “of, or manifesting life.” Every cubic inch of healthy soil is a miniature world of beneficial living organisms carrying out nature’s amazing processes to break down organic matter, making it available to plants’ roots. Those roots take up these life-giving elements to nourish the plant that nourishes you. (Posted on March 4, 2014, by Dr. Earth) Dr. Earth is one of the most innovative organic gardening companies in the U.S. They remind us that all over the planet, human health relates directly to soil health. Healthy, living soil gives life to everything that grows in it and is the main source supplying our plants with the sustenance they need to properly develop into naturally thriving, insect-resistant,
nutrient-packed produce. When we eat a piece of a plant that came out of living soil, our body draws out the nutrients we need to stay alive and be healthy. By looking at this life process in reverse, we stay alive by extracting the life from living plants that depend on living soil. Your home garden is an amazing source of produce. You can enjoy nutrient-dense herbs, vegetables, and fruit and spend less money doing so. It will require a little work on your part to keep the garden watered adequately and the weeds at bay from competing for those valuable nutrients and space. Soil enhancers for your garden are available in different names or forms including Compost, Activated Compost, Garden Soil with Probiotics, and soils enhanced with mycorrhizae, micronutrients and/or microbes. All of these are geared to help you create the best soil, or the best base, for your plants to grow and thrive in. We are all on a quest to lead a happy & healthy life. With one small step, you can make a huge difference towards living a long and healthy life. Let this be the year you take action with a simple step into your garden and reap the healthy benefits for you and your family. For more tips and information, visit www.themustardseed.com
“Healthy soil creates a healthy garden, which produces healthy plants to provide nutrients for us, for animals we love and care for as pets, as well as the plants we consume as food.” Milo Shammas
