LIFESTYLE LETTER
“Support Local, Linger Longer, Never Rush Dessert” Every restaurant in this issue started the same way. Someone decided the neighborhood deserved a better place to sit down, and October is when we get to say thank you for that. The days are shorter now, and the tables around Eagan are fuller for it. There's a particular kind of comfort in walking into a place where the people behind the counter know your order before you do, and this issue is full of it. These are the spots that turn a Tuesday night into something worth looking forward to, and a Friday into a small celebration. When Durrell Motley and his partners opened 721 Sports Bar & Lounge this spring, they built the kitchen first and the sports bar around it. The cheesesteak has already become the dish people talk about, and the story behind the name is its own kind of conversation starter. Greg and Lisa Petersen never treat their restaurant as finished. New menu items, seasonal cocktails, and a signature Old Fashioned named after one of their dogs keep regulars and newcomers coming back to what many still call Cooper's. The Italian Pie Shoppe has been part of Eagan since 1976, and last year the Dahmah family took the reins. Aaron Lehmann now runs nearly every corner of the kitchen himself, keeping the deep dish that made the restaurant a neighborhood fixture in the first place. As always, I would like to thank all of Eagan City Lifestyle's sponsors. Their generous support enables us to get our magazine directly into our readers' homes. Please don't hesitate to contact me (eagan@citylifestyle.com) if you have a story to share or a business to recommend. Here's to the tables that keep filling up, the plates that keep coming out of these kitchens, and the reminder that support close to home tastes better than anywhere else.

Where scratch cooking meets memorable sports nights for everyone together. When 721 Sports Bar & Lounge opened inside the former Eagan Arms Public House space on April 13, 2026, the idea was never to create a place packed with televisions and predictable food. Managing partner Durrell Motley and his fellow partners imagined something different. They wanted a restaurant where people could settle into a thoughtfully prepared meal, sip an inventive cocktail, and still catch every play without feeling like they had traded quality for convenience. That vision came from personal experience. Motley and his partners regularly visited restaurants around the Twin Cities, searching for a place that matched their changing tastes. They loved sports, yet they wanted better meals, better drinks, and a setting that welcomed couples, families, and professionals as much as devoted fans. Instead of accepting the usual formula, they decided to build the restaurant they wished already existed. "We were customers ourselves," Motley says. "As our tastes evolved over the years, we couldn't find a place that offered the kind of food we wanted while still giving us a great place to watch a game. We thought, why should we have to sacrifice one for the other?" And what about the name of the restaurant? Seven has symbolic importance across many traditions, while three also carries longstanding significance. Together, three sevens become twenty-one, leading to the distinctive 721 identity. It is a conversation starter before guests even open the menu.

RESTAURANT FIRST
From the beginning, the kitchen came first. Motley says many aspiring sports bar owners begin with televisions, burgers, and game schedules. His team reversed that thinking. They hired a chef from Philadelphia whose background includes cooking alongside respected chefs in Key West. Her approach centers on a scratch kitchen where sauces, dressings, and countless details receive the same attention as signature entrées. That commitment appears throughout the menu. Ranch dressing, Caesar dressing, and other sauces are prepared in-house. Cucumbers become house-brined pickles. Every plate is a unique, photo-worthy presentation that feels equally at home on a date night or while cheering through overtime. Ask Motley which menu item best represents 721, and the answer comes quickly. The cheesesteak has become the restaurant's calling card. Packed with tender meat, rich cheese, and plenty of flavor, it is the kind of sandwich that has guests planning their next visit before they have finished the first one. It has quickly become one of the restaurant's signature dishes, and after one bite, it is easy to understand why. Another guest favorite comes in burger form. Rather than offering pages of variations, 721 serves one double-patty smash burger that guests may customize. Cooper Sharp American cheese melts across the beef, while diced onions, house-brined pickles, and the restaurant's own sauce complete every bite. Even the bun carries the restaurant logo, and that’s not something you see at just any restaurant.
“We built a restaurant first, then added sports because nobody should settle for ordinary meals during every big game night.” CONTINUED >

“Great food brings people together, whether they arrive for kickoff, Guests searching for something lighter often choose the Thai Crunch Salad, another customer favorite. Its fresh ingredients and colorful presentation reflect the chef's style while appealing to a broad range of diners. Motley says many women order it, although plenty of men do as well. His personal favorite remains the lobster-and-crab grilled cheese, a comforting sandwich that brings together rich seafood and plenty of flavor.
BEYOND THE GAME
The beverage program follows the same philosophy as the kitchen. Cocktails receive the same level of attention as the food rather than becoming an afterthought. One of the most popular choices is the Banana Bread Old Fashioned. A fresh banana is torched before being added to the drink. The result? Warm caramel notes that complement the rum beautifully. The restaurant also partners with 45th Parallel Distillery in New Richmond, WI, which produces small-batch spirits made from grain grown on farms in Minnesota and Wisconsin. It is another way the team supports nearby producers while serving drinks with plenty of character. Guests who skip alcohol have thoughtful choices too. The Cucumber Mint Refresher has become a favorite mocktail. This refreshing choice offers bright flavor without feeling like a substitute. The wine list also surprises many visitors. Motley says female guests frequently comment on the variety available, which they rarely expect to find in a sports-centered restaurant. That attention extends beyond the menu. The interior leaves behind the familiar tavern appearance in favor of surroundings where friends feel comfortable gathering after work, couples enjoy dinner before an evening out, and families celebrate together. Televisions remain part of the experience, yet they never overpower conversation or the meal as it arrives at the table. "Our wives wanted a place where they would actually enjoy spending time," Motley says. "We wanted women to feel just as excited about coming here as anyone else."
BUILT TO GATHER
Motley also credits the partnership with the business's success. Seven partners contribute different talents, allowing everyone to focus on specific responsibilities while working toward the same goal. Alongside Motley are Michael Jones, Luke Moe, Thomas Harris, Matthew Holthaus, Miguel Tellez, and silent partner Kim Motley, Durrell's mother.
18

date night, family dinner, or cocktails after work; everyone deserves thoughtful cooking paired with genuine hospitality every single visit here in Eagan today alike always.”
For Motley, that philosophy also reflects his own connection to the Twin Cities. He grew up in Minneapolis and now lives in Woodbury. This gives him a local perspective in every decision. And it helps him welcome guests from across the south metro. Although he serves as managing partner, he quickly recognizes the contributions of the entire ownership team. That shared purpose appears in countless small touches. Staff members happily recommend menu favorites, suggest drink pairings, and greet returning guests by name whenever possible. Those moments help transform first-time visitors into regulars. Only a few months after opening, 721 has already earned enthusiastic reviews and a loyal following. That response reflects the original idea that inspired the restaurant. Build an outstanding place to eat first. Let sports become part of the atmosphere rather than the entire identity. Whether guests arrive for kickoff, a girls' night out, dinner with family, or cocktails after work, 721 Sports Bar & Lounge delivers an experience that proves sports bars can offer far more than wings and beer. Sometimes, all it takes is starting with the restaurant and letting everything else follow.

Greg & Lisa's Hidden Treasure keeps building its menu with fresh ideas, welcoming hospitalit y, and communit y spirit ever y day. ARTICLE BY ANN SCHREIBER PHOTOGRAPHY BY LISA CLINE

More than two years after opening Greg & Lisa's Hidden Treasure, Greg and Lisa Petersen continue to treat the restaurant as a place that never stands still. New recipes, fresh ingredients, seasonal cocktails, and thoughtful updates throughout the building all reflect a simple philosophy. If there is a way to make the guest experience better, they are willing to try it.
“We like involving our cooks in the menu choices because some of our best new dishes have come from them.” One of the most popular changes over the last year has been an expanded selection of gluten-friendly choices. Guests can now order burgers with gluten-free buns, enjoy Gluten Friendly Chicken Chunks, or substitute a gluten-free crust for any flatbread. Those additions grew from conversations with customers who wanted more choices without giving up the flavors the restaurant is known for. The menu has also welcomed fresh Mexican fare, something Greg says has quickly become a favorite. "We've added fresh Mexican fare. The sauces and veggies are prepped fresh every day. We're taking a lot of pride in that." Originally introduced as a limited side menu, the response has been so enthusiastic that many of those dishes are becoming permanent additions.
CREATIVITY FROM THE KITCHEN
The Petersens believe great ideas can come from anywhere.
"We like involving our cooks in the menu choices," Greg says. "We have received a lot of great feedback on the new items they have suggested, especially the Mexican items." That collaborative approach has produced an exciting lineup of new offerings. The Tropic Chaos burger combines pineapple pico with sweet chili sauce for a balance of sweet and savory. A fish taco is joining the menu, while ingredients such as hot honey and mango habanero sauces are finding their way into new recipes. The restaurant has also been investing in higher-quality ingredients across the menu, giving longtime favorites fresh life alongside the newest creations. Behind the bar, the menu changes with the seasons. Summer cocktails make way for fall selections, while one customer favorite never leaves. "The Deuce is the most popular. And I love it because it is named after one of our dogs," Lisa says. Made with Bulleit Bourbon, simple syrup, and bitters,

it is the restaurant's take on a classic Old Fashioned and has become a signature pour. "We also have the Electric Willie and the Hanky Panky Peach Tea," which are named after our other two dogs.
GROWING WITH THE COMMUNITY
With new apartments and townhomes opening nearby, Greg and Lisa are welcoming plenty of first-time visitors while seeing familiar faces return again and again. "People still think of us as Cooper's, but more and more are starting to see us as Greg & Lisa's," Lisa says. "It's nice to see new faces that come back and are already becoming repeat customers." Guests may also notice the building itself has changed. A refreshed cream-colored exterior gives the restaurant a new look. And of course, there are many improvements happening behind the scenes as well. "We love creating a fantastic eating experience from the food to the tables to the place," Lisa says. "We believe in a clean environment, too, and our customers notice it." The Petersens also remain active supporters of the Eagan community through youth sports, Eagan High School football boosters, fundraising events, and charitable gatherings. Their private event space, complete with patio access, is available for birthday celebrations, networking events, and nonprofit benefits, all with the goal of bringing people together.
LOOKING AHEAD
"We have learned a lot on every level," Greg says with a smile. "When we got started, we were really focused on learning how to be the best possible restaurant owners that we could be. At this point, we think we have it down. We make it work as best as we can and, most importantly, we're having a lot of fun. And we still love each other." That spirit carries over into welcoming new staff members alongside familiar faces, and into planning their annual Halloween celebration, complete with decorations, costumes, prizes, and a costume contest that has become a favorite tradition. For Greg and Lisa, every new recipe, every returning guest, and every fresh idea is another chapter in the story they continue to write together. For nearly five decades, The Italian Pie Shoppe has been part of the Eagan dining scene. Since opening in 1976, it has welcomed families, neighbors, sports teams, and friends looking for comforting meals made with care. In May 2025, the restaurant entered a new chapter when the Dahmah family purchased the longtime favorite, bringing fresh energy while honoring the recipes that made it a local tradition. Aaron Lehmann, son of George and Kim Dahmah, knows the neighborhood well. Before stepping into his current role, he spent 14 years at Wildcats Bar & Grill as a server, bartender, and manager, developing relationships with guests who became familiar faces. When the opportunity came to help lead The Italian Pie Shoppe, the timing felt right. "It felt like a no-brainer because we loved the food," Aaron says. The first few months were anything but easy. Aaron recalls that it was "all hands on deck" as the family worked through daily operations while shaping the restaurant into what they envisioned. Moving from a sports bar to a pizza restaurant also meant learning new skills along the way. "I do it all," he says. "I'm in the kitchen two days a week, I'm serving two days a week, I'm delivering pizzas. It's a lot, but it is good, too." However, Aaron isn’t doing it all on his own. In addition to the staff, his brother, Elias, also works at the restaurant, with family members pitching in wherever they're needed to keep daily operations running.
MORE THAN GREAT PIZZA
That hands-on approach reaches every part of the menu. Dough is made daily. Vegetables are cut fresh. They shred Burnett cheese each day. Meatballs are prepared from scratch, and even the Godfather Salad dressing is made in the kitchen. Fresh bread arrives from Denny's Bakery in Bloomington, another local business that helps bring each meal together. While the deep dish pizza remains a guest favorite, Aaron also points to the Chicago-style stuffed pizza with sauce layered on top as something people cannot find in many places nearby. Meat Lovers continues to be one of the restaurant's most requested pies, while Italian fries, garlic cheese bread, and spaghetti and meatballs have developed loyal followings of their own.

“If something g o e s w r o n g , we ’ r e committed to f ix ing it. But things don’t really go w rong , because we do everything we can to get it right the f i r s t t i m e .” "There aren't many places like us," Aaron says with a smile. That attention to detail extends well beyond the kitchen. Aaron credits much of the restaurant's recent growth to a renewed commitment to consistency and customer care. Sales increased by about 25% during the first year under the family's ownership, with another year of growth already underway. "We take our customers' needs very seriously," Aaron says. "If something goes wrong, we're committed to fixing it. But things don't really go wrong," he adds with a laugh, "because we do everything we can to get it right the first time."
BRINGING NEIGHBORS TOGETHER
The Italian Pie Shoppe is about more than serving dinner. It has become a gathering place where people celebrate birthdays, host team dinners, and reconnect over a favorite meal. The restaurant seats about 60 guests, with a private party room available for groups of around 25. Its connection to local schools has become another part of its story. From fundraising nights that return proceeds to school programs to partnerships with youth sports teams selling frozen pizzas, the restaurant enjoys finding meaningful ways to support the community. "Our community is so important to us, and we love giving back," Aaron says. "We're always open to these types of community partnerships." That spirit offers another reminder that supporting a neighborhood restaurant often reaches much farther than the meal itself. Whether gathering friends for deep dish, planning a family celebration, or organizing a fundraiser for a local school, every visit helps strengthen connections close to home. To learn more about the menu, rewards program, catering opportunities, fundraising partnerships, and upcoming specials, visit The Italian Pie Shoppe's website at https://www.italianpieshoppe.com/.

DON’T LET YOUR MEDICARE PLAN SURPRISE YOU ARTICLE BY ROLF WHITE
WHY THIS FALL’S OPEN ENROLLMENT DESERVES A CLOSER LOOK
30
M ON E Y M AT T E R S | FI NAN CE + LE GAL SE RVICE S
Medicare’s Annual Enrollment Period runs from October 15 through December 7. For Minnesota beneficiaries, this year’s review may be important. The goal is to confirm that coverage working today will continue meeting your needs in 2027. Premiums, deductibles, copays and prescription costs remain leading concerns nationally. Minnesotans may also see changes to Medicare Advantage and Cost plans. Carriers can discontinue plans, introduce replacements or reduce service areas. Some counties may have fewer choices, while others could gain Cost Plan availability. Final details were pending at the time of the writing of this article. Even when a plan continues, its provider network, prescription formulary, pharmacy arrangements, and extra benefits may change. Dental, vision, hearing, transportation and over-the-counter allowances should not be assumed to remain unchanged. Your Annual Notice of Change, or ANOC, is the best place to begin. Plans generally deliver it by September 30. The notice explains changes taking effect January 1, including premiums, copays, covered medications and benefits. If your plan is ending, it should also explain your options.
Rolf White
Research shows many beneficiaries overlook this document. A 2025 PAN Foundation survey found only 44% always review their ANOC. DEFT Research found that members learning about plan changes after January 1 were four times more likely to switch during Open Enrollment and generated twice as many complaints. Reviewing your ANOC now can help prevent surprises. Prescription coverage deserves attention. Negotiated Medicare prices for 15 additional high-cost medications take effect in 2027, but that does not mean every medication is covered by every plan. The standard Part D deductible is scheduled to rise to $700, and the annual out-of-pocket threshold for covered Part D medications will increase to $2,400. The standard Part B premium is projected at approximately $209.50 per month, as of the writing of this article. Before comparing plans, gather your medication names and dosages, doctors and clinics, preferred pharmacies and expected healthcare needs. Compare total yearly costs, prescription coverage and provider access before focusing on extra benefits or a low premium. With more changes possible this year, consider working with a knowledgeable Medicare insurance agent you trust. A careful review can help you enter 2027 confidently that your coverage still fits your healthcare needs and budget. For educational purposes only. Not personalized financial or tax advice.
