In the blink of an eye, we are quickly approaching the halfway point of 2024. It is hard to believe that the end of the school year is here, and that summer is upon us. June is a month when we celebrate the fathers in our lives. Fathers play an import ant role in our lives helping to shape us into who we are. A positive father figure can instill confidence, teach important life lessons, and serve as a role model for healthy relationships.
In the spirit of Father’s Day, we want to celebrate the men of our community. Celebrating the men of Eagan is about recognizing their contributions, which reinforce the community's foundation and propel it toward a prosperous future.
This month we feature five men in the community who not only run businesses, but also work to improve the community. We feature two men, Jon Althoff and Scott Swenson, who work to raise awareness and funds to support those who are affected by breast cancer. We talked to Lee Tomlin at Eagan Arms Public House about all things Irish whiskey. Finally, we talked to Chase Straight from Polytek Surfaces about how you can make a major transformation to your garage in 24 hours.

Keith Hittner
Keith started his career as a CPA, auditing banks and their mortgage files. He then became the owner of Minnehaha Falls Garden Centers, working with homeowners to beautify their family “castle.” This ultimately led him to find his calling in real estate, particularly in selling homes catering to the well-being of families. "I love home construction. I love real estate because it's where families raise their kids," Keith shares.
Keith's approach to real estate goes beyond the conventional. He sees the importance of creating spaces that shelter families and promote their health and wellness. In partnership with his wife, Sheila, he educates homebuyers on making ecofriendly decisions that enhance their quality of life. From choosing sustainable materials to integrating wellness, the Hittners are redefining what finding the perfect family home means.
Their passion for healthy living extends beyond real estate. Keith finds joy in barbequing, which leads to his successful Rack Shack Barbecue venture. Even after selling the business, Keith stays involved in the barbecue world, working to develop the distribution of their savory and sweet sauces. Through initiatives like the Joy Collaborative and their work with Crescent Cove, they have significantly impacted families in need, especially those with special needs children and those navigating end-of-life care.
Through his work in real estate and beyond, Keith is not just selling homes. He and his wife nurture healthier, happier communities one family at a time.

Jayce Apelgren
Jayce Apelgren isn't just any dentist; he's a dedicated family man with an eye on bringing more smiles to the local community. Together with his wife, Katee, they run Apelgren Dental, but their story and mission stretch far beyond the walls of their clinic.
Jayce's journey into dentistry began with a childhood accident that led him to dream of becoming a dentist. He wanted to help people the way he was helped when he was young after a swimming incident left him with two chipped front teeth.
After graduating from the University of Minnesota dental school in 2015, Jayce worked hard to achieve his dream. But Jayce is on a mission to do more than fix teeth. He believes in "making people smile," and it's not just talk.
The team at Apelgren Dental actively engages in community events in Eagan and Prior Lake, participates in the Dakota County Chamber of Commerce, and volunteers for the Mission of Mercy and Give Kids a Smile, providing free dental care to those in need. He and the team even visit schools to teach children about oral health. “It helps kids become comfortable with the dentist early on,” he shared. Through donations and volunteering, Jayce and Katee are more than dentists. Together, they're community leaders dedicated to bringing smiles to everyone.

Bryce Hill
Bryce Hill is a local chiropractor and the owner of ChiroWay Chiropractic in Eagan. Since moving from Grand Forks, North Dakota in 2018, he has embodied the Twin Cities lifestyle. His love for Minnesota sports doesn't hurt.
At ChiroWay, Bryce focuses on helping his clients manage the various stresses of life—be they physical, emotional, social, or chemical—through regular chiropractic care. Ian Smith
Ian Smith owns Omega Exteriors in Farmington. After working in nine states, he settled in Minnesota, seeking to launch a business that would benefit local homeowners. With seven years of experience and three years running his own business, Ian is now laser-focused on improving homes with new roofing, siding, windows, and gutters.
“We’re all about culture,” shared Ian. “While we want to make a buck, it doesn’t matter if we’re not a great place to work.” Omega Exteriors strongly emphasizes creating a positive workplace. Ian leads a team of about 40 people and ensures everyone enjoys their job and feels appreciated. “I enjoy seeing a project come together that we have been working on for days or weeks. It’s awesome to show a homeowner the before and after and know we’re contributing to making their home someplace they’ll love.”
Ian learned to work hard from a young age, starting with mowing lawns and later learning about sales when he was 16. His favorite part of his job is making old homes look new again.
Ian is also deeply involved in his community. This summer, his company will give free roofs to two families—focusing on veterans, single mothers, and other families who are unable to invest in a roof on their own; his goal is to give back to the community he has chosen as his home. In his spare time, Ian coaches wrestling at Hopkins High School and Cannon Falls High School.

Travis Sims

Men Wear Pink in Minnesota
RAISING AWARENESS AND FUNDS IN THE FIGHT AGAINST BREAST CANCER

Breast cancer. It’s not something any of us want to think about. But unfortunately, with about one in eight women receiving a breast cancer diagnosis each year, it’s not something we can ignore. Though men can have breast cancer, too, it is far more prevalent in women—and it accounts for 30% of new female cancers annually.
If you’re reading this article, there’s a good chance that breast cancer has touched your life in some way. Whether a family member, friend, colleague, or perhaps you—it impacts all of us. Yet there are men in our community who have chosen not to accept that the disease is just something that might happen to someone they care about. They’re doing what they can to create change by raising funds for research, finding a cure for cancer, and raising awareness to ensure those suffering from the disease can find support and services to help their battle.
That’s where the Men Wear Pink initiative comes in, and two local gentlemen are taking it upon themselves to make a difference. Enter Scott Swenson and Jon Althoff.
Scott Swenson's involvement with the Men Wear Pink campaign began nearly a decade ago when he was approached by the American Cancer Society (ACS) to become an ambassador for what was then called their Real Men Wear Pink initiative. At the time, Scott, surrounded by the women in his life—three daughters, a wife, and four sisters—recognized the statistical likelihood that breast cancer could affect his family directly. Motivated by this personal connection and the disease's broader impact, he embraced the role with a commitment to make a substantial difference.

Jon Althoff & Scott Swenson
Scott's approach to fundraising was community-centered, leveraging social connections through Facebook and email to encourage donations. His efforts evolved into a highly anticipated annual October event—a barbecue at his home featuring pizza, beverages, and live music. He eventually moved the gathering to a pavilion at the Eagan Central Park to accommodate growing attendance and weather uncertainties. The modest goal of raising $2,000 to $3,000 annually burgeoned into a remarkable $30,000 by the end of 2023.
Scott wanted to involve more champions in the cause and reached out to Jon Althoff, a colleague whose personal life had been deeply affected by breast cancer—his wife and twin daughters are survivors of the disease. Jon's familial experience and his commitment to the cause made him an ideal candidate for an ambassador role. Once involved, Jon brought new energy and ideas to the campaign, and together with Scott, they were soon asked to co-chair the initiative.
As co-chairs, Scott and Jon have spent each October raising funds and expanding a network of men dedicated to making a difference. Their partnership is all about leadership in action—Scott, with his largescale community events, and Jon, through innovative fundraising activities like his field goal challenge, which alone raised over $10,000 last year with the participation of local mayors from West St. Paul, Rosemount, and Farmington.
As the co-chairs for the Minnesota Men Wear Pink campaign, Scott and Jon demonstrate the power of collaboration and the importance of community involvement in addressing critical health issues. Their work with the Men Wear Pink campaign does far more than raise awareness—it builds networks for breast cancer patients. But Scott and Jon need your help. More ambassadors can mean more funds dedicated to research.

Polyurea is known for its extreme flexibility and durability. Polyurea flooring can take a tremendous amount of abuse because it is malleable and can take physical impacts and disperse them, much like the rubber on a car tire. The flexibility of the polyurea enables the floor to expand and contract with the concrete underneath, which is critical in our Minnesota climate. The hardest part for most people is getting all their belongings out of the garage, but this also provides a wonderful opportunity to go through years of clutter and reorganize their garage into a more usable space.
The first step is for the floor to be profiled with a grinder, which helps to extend the life of the floor by giving it the greatest adhesion possible to the existing floor below. The grinding process removes contaminants, sealers, and existing coatings, and opens the pores of the concrete. At this point, any cracks in the existing floor will be filled and ground flat, and then the floor will be vacuumed. A basecoat of polyurea is applied to the floor, and then the floor is fully covered with polymer flake to give it the desired appearance. The basecoat is allowed to dry for 60 to 90 minutes, and then the floor is scraped to remove loose flakes before being vacuumed to make sure there are no loose flakes on the floor.

The final step is the application of the clear topcoat. The floor can be walked on six to eight hours later; after 24 hours, you can park on your new garage floor.

The Perfect Steak

Nothing describes summer better than a good cookout! And what is a cookout without a good, quality steak and the perfect grilling recipe?
1. Thaw and acclimate the steak. For searing to occur, the proteins in steak need to be heated to at least 310°F. Tossing cold meat onto a hot grill lowers the temperature and can prevent a crust from forming, so it’s important that any frozen steaks are thawed completely before cooking.
2. Salt your steak 30-45 minutes before grilling. This causes the salt to draw moisture from within the steak up to the surface, where it dissolves the salt and creates a brine that gets reabsorbed into the steak where it breaks down tough connective tissues.
3. Oil the grate on the grill, not the steak. Use tongs and a paper towel dipped in vegetable oil to lube your grates.
4. Manage your heat well. Remember that your grill needs to be hot for your steak to get a good sear. But if it’s hot enough to cause your oil to smoke, it’s too hot.
5. Use the 60/40 rule. The best-tasting steaks are seared on both sides and cooked evenly in the middle. The simplest way to do that is to only flip your steak once. The 60/40 rule suggests that 60% of your cook time should be spent on one side, and 40% on the other.
6. Keep the lid closed. It may be tempting to peek, but trust the experts and keep it shut! Opening the lid makes your grill lose heat, which makes steaks cook unevenly.
7. Check for doneness. A meat thermometer will give you the most accurate temperature reading:
• Rare: 120°F
• Medium Rare: 130°F
• Medium: 140°F
• Medium Well: 150°F
• Well: 160°F
8. Let your steak rest. Pull your steaks from the grill once they’re cooked to 5-10 degrees below your target temperature and rest for 10-15 minutes.

Once the most popular spirit in the world, Irish whiskey experienced a sharp decline in the late 19th century when the number of distilleries dropped from at least 28 to two. With the opening of the Cooley Distillery in 1987, Irish whiskey has seen a boom in popularity with more than 30 distilleries in Ireland today.
If you are looking to learn more about Irish whiskeys, there is no better place to start than Eagan Arms Public House. They have 136 different types of Irish whiskey there for you to try. Lee Tomlin, the resident whiskey expert, is happy to talk about whiskey with anyone who walks in, and he even does regular whiskey and scotch tastings where he delves into the history, distilling, and tasting of the spirits.
I was fortunate enough to sit down with Lee and get a quick primer in Irish whiskeys. According to Lee, “Irish whiskey is a beautiful, easy drinking whiskey.” While he doesn’t have a favorite, his love and appreciation for the spirit was evident in our conversation. Irish whiskeys typically fall into one of four categories – single malt, single potstill, grain and blended. Single malt whiskeys contain only malted barley that can be taken from multiple barrels from a single distillery. They must be produced at one distillery in a single potstill and must be distilled at least twice, but triple distillation is common. Single potstill whiskeys are like single malts; however, they can contain a blend of malted and unmalted barleys. The blend of malted and unmalted barleys was a clever workaround by distillers to avoid the taxes imposed on malted barley. Single grain Irish whiskeys can contain multiple grains that can be malted or unmalted,
but they must be distilled at a single distillery. Blended whiskeys can contain different different grains, malted or unmalted, that can be distilled at more than one distillery.
For someone’s first foray into Irish whiskey, Lee recommends a good single potstill whiskey like Redbreast. Made by the Midleton Distillery in County Cork, Redbreast has a full-bodied and fruity taste. It is aged in a combination of bourbon and sherry casks which helps it develop a distinctive smoothness and depth.
Tullamore D.E.W. Blended Irish Whiskey or Bushmills Original are two other recommendations for entry points. These blended whiskeys combine different whiskeys, mixing grain whiskey with either single malt whiskey, single potstill whiskey, or a combination of both. Blended whiskey is typically less expensive and faster to produce when compared to malt or potstill whiskey. Blending allows distillers to create whiskeys with a wide range of flavors as well as maintain consistency from batch to batch.
Waterford Single Farm Origin offers something truly unique in that it is a limited edition made from 100% Irish barley that is grown on individual farms. The flavor of the whiskey is influenced by the soil, microclimate and site that the barley is grown on.
For Irish whiskey cocktails, Lee likes to use Jameson. The quality for the price point is very good, and you can make some fantastic cocktails or Irish coffees with it.

A good barbecue sauce is comprised of a variety of the same six components. The key is to discover what style you enjoy most, and don’t be afraid to experiment. Oh, and taste often during the preparation process to adjust if so desired.
SOMETHING SWEET
This can be honey, cola, molasses, preserves, brown sugar, or syrup. This caramelizes as you cook, bringing those smoky, sugary flavors.
SOMETHING TANGY
Think vinegar, mustard, or citrus. This is what brings the zing to your sauce.
SOMETHING SPICY
This provides your heat: a hot sauce is a great choice. A good rule of thumb is to use about 1/2 teaspoon for every cup of sauce you’re making.
SOMETHING LIQUID
It can be beer, water, chicken stock, soda, or wine. Start with about 1/2 a cup and see what happens.
SOMETHING TOMATO
You’ll most likely use ketchup, but you can also use tomato paste.
THE SPICE COMBINATION
This can depend on your liking and taste and can include anything from onion powder to garlic powder to chili powder to allspice to cayenne pepper to mustard powder to liquid smoke to cumin to Worcestershire sauce and more. Start with a teaspoon of salt, and keep tasting as you experiment with your desired spices.

• 2 cups ketchup
• 1 cup water
• 1/2 cup apple cider vinegar
• 5 tablespoons brown sugar
• 5 tablespoons sugar
• 1/2 tablespoon black pepper
• 1/2 tablespoon onion powder
• 1/2 tablespoon ground mustard
• 1 tablespoon lemon juice
• 1 tablespoon Worcestershire sauce
DIRECTIONS
In a medium saucepan, combine all ingredients. Bring mixture to a boil, reduce heat to simmer. Cook uncovered, stirring frequently, for 1 hour 15 minutes.
