Jessica and Tyler Gustafson aren’t your average gym owners. In fact, they don’t own a gym at all. They own two Discover Strength studios—a strength training concept built on evidence, expertise, and efficiency. After opening their first location in Wayzata in 2021, the

Tyler had previously worked for the company’s CEO as one of its first employees. When the franchise opportunity arose, they jumped at the chance to turn their passion into a profession.

Gustafsons launched their second in Apple Valley in November 2023. And while the business is booming, their focus is anything but numbers.

“We’re not in this just to build muscle,” Jessica says. “We’re here to help people live better, longer, stronger lives.”

Clients train one-on-one with an exercise physiologist or in a small group, working through a fullbody strength training session in just 30 minutes. Every movement is coached, every session is customized, and every trainer is highly credentialed.

FITNESS ROOTED IN MILITARY DISCIPLINE AND PERSONAL EXPERIENCE

Before becoming franchise owners, both Jessica and Tyler served in the military—she in the Air Force and he in the Navy. Their mutual love of fitness followed them throughout their careers, and when they returned to Minnesota, they became clients of Discover Strength.

Jessica shares. “It wasn’t about trends or appearances. It was about real results that supported your health.”

Each 30-minute session at Discover Strength is tailored to the client. Everyone receives a free introductory workout, where your physiologist will assess your goals, medical history, and any injuries—so you can feel the difference of an evidence-based workout designed just for you.

From there, it’s all about quality over quantity. “Twice a week is all you need when it’s this focused,” says Tyler. “There’s no fluff—just real strength training that makes a difference.”

It’s also designed to be approachable. “We understand the hesitation that comes with starting something new,” Jessica says. “People are intimidated by gyms. They worry they’re not ‘fit enough’ to begin. But our job is to meet you where you are and guide you forward—safely and effectively.”

The trainers at Discover Strength aren’t personal trainers in the traditional sense. They’re highly educated experts with degrees in exercise science, physiology, or kinesiology—plus additional certifications from organizations like the American College of Sports Medicine. Some even hold specialty certifications for working with cancer patients and athletes.

Their approach is rooted in ongoing education. Each year, the Discover Strength team partners with universities and reads peer-reviewed journals to stay on top of the latest research. “We’re not here to follow fads,” Tyler says. “We’re here to follow the science.”

“Americans are more sedentary and unwell than ever,” Tyler notes. “Strength training isn’t just about looking fit—it’s about warding off disease, improving mental health, and reducing the risk of injury as we age.”

Muscle, as they explain, is more than tissue—it’s an endocrine organ that supports metabolism, cognitive function, and even emotional well-being. And for older adults, maintaining strength is a key factor in avoiding falls, breaks, and extended recovery times.

A cultural treasure shaped by two artists, embraced by a community, and rooted in the land.

For Cheryl Caponi, Caponi Art Park isn’t just a legacy project— it’s a lifelong passion shaped by love, vision, and the desire to give something meaningful back to Eagan.

Caponi’s late husband, sculptor and Macalester professor Anthony (Tony), first set eyes on the wooded, hilly land in 1950. In the late 1970s, while others saw development potential and a fast-growing suburb in the making, the Caponis saw something else.

“Everyone who visits the park gravitates toward the snake—it’s part sculpture, part retaining wall, all story.”

“We just didn’t want to turn it into a housing development,” Cheryl recalls. “We were going against the tide at the time, and the city of Eagan was overwhelmed with all the housing requests. We came at them with a completely different idea—we wanted to create a cultural hub.”

Tony Caponi, known for his monumental sculptures and international exhibitions, envisioned a large-scale outdoor art environment that would keep him inspired into retirement. Cheryl, an artist herself with a BFA (Bachelor of Fine Arts) from the University of Minnesota, brought her own creative energy and organizational talents to the table.

Together, they created Caponi Art Park—an open-air gallery, community gathering place, and celebration of nature tucked into nearly 60 acres in the heart of Eagan. Next year, the park will celebrate its 35th anniversary.

“We’re planning to make a big deal of it,” Cheryl says.

But for Cheryl, the milestone isn’t just about looking back. It’s about looking ahead—and inviting the community to shape what comes next.

“Our vision was initially from us. Now we want the community to be part of the future.”

MORE THAN AN ART PARK

Over the years, Caponi Art Park has evolved far beyond the couple’s original vision. What began as a place to showcase Tony’s sculptures has grown into a gorgeous, evolving landscape featuring works from more than 10 artists, walking trails, interactive events, educational programs, and live performances.

Even as the park has grown, its core mission remains: to blend art, nature, and community in a way that feels accessible and enjoyable to all.

“We think of art as an equal part with nature,” Cheryl explains. “It’s about creating an organic experience. You’re not walking into a museum. You’re stepping into a space where art and landscape are in conversation.”

Ask Cheryl to name a favorite sculpture, and she pauses—not because she doesn’t have one, but because they each carry a story.

“I’ve been so involved with every part of the park that it’s hard to choose,” she says. “But the first two pieces are really special.”

The first is Snake, a striking cement relief sculpture embedded into the side of a hill near the art studio. It also serves as a retaining wall, making it as functional as it is symbolic.

“Everyone who visits the park gravitates toward the snake,” Cheryl says. “And it’s fitting that this is the Chinese Year of the Snake. The piece will be restored this June—almost like it’s being reborn.”

The second is Pompei , a dramatic work made up of 17 large panels installed on the hillside. Inspired by the historic eruption that destroyed the city of Pompeii, the piece is deeply personal.

“My husband grew up in Italy, so this was a big part of his history,” she says. “When we needed to fill that large space on the hill, this idea was born.” Pompeii offers a lovely opportunity for families to enjoy art and a history lesson, all in one experience.

Another significant and recent addition to the park is the Wodakota Walk, a permanent web-based, augmented reality installation created by Spirit Lake Dakota artist Marlena Myles. Through digital art, animation, and sound, this immersive experience invites visitors to explore five stops across the park that share Dakota stories and values.

“Wodakota” means peace, balance, and kinship—concepts that Marlena weaves into the natural landscape to reveal our interconnectedness with plants, animals, and the cycles of Grandmother Earth. The project is described as a bridge to Indigenous wisdom and offers visions of the past, present, and future.

“Caponi Art Park was born from two artists’ love for the land—and today, that love continues through community.”

To experience Wodakota Walk, visitors can download a free app (available on Android and iPhone) and follow prompts around the park. There’s even a coloring page Marlena designed, inspired by the installation, that families can download and enjoy at home.

“The land inspired Tony to create, and Tony’s creations shaped the land. Now, it inspires others.”

Looking forward, Cheryl hopes to see even more engagement from the people who walk the trails, admire the sculptures, and attend the summer programs.

“There’s space here for others to contribute,” she says. “We want feedback from the community about where the park should go next.”

That could mean more participation from local and emerging artists, expanded cultural events, or even hands-on opportunities for volunteers and creators of all ages.

After all, Caponi Art Park has always been about more than just art—it’s about belonging. Whether you’re visiting for the first time or returning to a favorite sculpture, there’s a sense that you’re part of something shared.

And that’s exactly how Cheryl wants it.

When Kang Liang opened KYURAMEN in Eagan in October 2022, he wasn’t just bringing noodles to town—he was bringing a feeling. “We want everyone to enjoy stress-free ramen in a fun, relaxed, and welcoming environment,” says Liang, who owns the Eagan location in Eagan Town Centre.

The idea for KYURAMEN started with a simple love of Japanese ramen. The franchise’s founder traveled to Japan many times to study and taste different regional flavors. His mission? Liang himself shares that same passion. “I love Japanese food and culture,” he says. “I’ve known the franchise owner for years, and when I saw the look and feel of the original restaurant in New York, I knew I wanted to bring that same energy to Minnesota.”

KYURAMEN Eagan offers something for every ramen lover, whether you’re into spicy broth, creamy pork-based soup, or light soy flavors. “We have nine different kinds of ramen,” Liang explains. “Each one has its own flavor profile and toppings, so there’s a lot of variety.”

Among the best sellers? The Kyushu Spicy Tonkotsu Ramen (#6 on the menu) brings the heat without overpowering the rich depth of its pork-based broth. Looking for something Instagram-worthy? Try the Omurice—a soft omelet served over rice that opens to reveal a perfectly runny yolk. “People are surprised we offer something like that at a ramen shop,” Liang says. “It’s definitely different.”

And let’s not forget the appetizers. Liang’s personal favorite is the pan-fried dumplings—crispy, savory, and satisfying. Pair them with a cold brown sugar bubble tea, and you’ve got the kind of meal that turns a regular weeknight into something to look forward to.

Embrace the natural sweetness of sun-ripened fruits and the invigorating zest of garden-fresh herbs. From crisp berry infusions to fragrant herbal blends, enjoy the art of crafting delicious and revitalizing beverages that celebrate the fresh flavors of summer.

This sangria emphasizes fresh garden herbs and the sweetness of seasonal berries.

Ingredients:

• 1 bottle wine (such as Sauvignon Blanc or Pinot Grigio or Garnacha)

• ½ cup brandy or rum

• ½ cup elderflower liqueur

• 1 cup sparkling water

• 1 cup fresh strawberries, sliced

• ½ cup fresh raspberries

• ½ cup fresh blueberries

• ¼ cup fresh mint leaves

• 2 sprigs of fresh rosemary

• 1 cucumber, thinly sliced (optional)

• 1 lime, thinly sliced

Instructions:

In a large pitcher, combine the white wine, brandy (or rum), and elderflower liqueur. Stir gently to mix. Add the sliced strawberries, raspberries, blueberries, mint leaves, rosemary sprigs, and cucumber slices to the pitcher. Gently muddle the berries and herbs slightly to release their flavors. Cover the pitcher and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld. Just before serving, add the sliced lime and sparkling water or club soda. Stir gently. Serve the sangria over ice, ensuring each glass gets a mix of fruit and herbs.

ROSEMARY GRAPEFRUIT PEAR FIZZ

LIME MINT

ROSE MOJITO

This cocktail balances the tartness of grapefruit, the sweetness of pear, and the distinct notes of rosemary, all brought together with a bubbly finish.

Ingredients:

• 2 oz Gin (or Vodka)

• 1.5 oz Fresh Grapefruit Juice

• 1 oz Pear Liqueur (or Pear Juice)

• 0.75 oz Fresh Lime Juice

• 1 sprig of Rosemary

• Sparkling water

• Garnish: Rosemary sprig, grapefruit slice, pear slice

Instructions:

Place the rosemary sprig in a cocktail shaker. Lightly muddle the rosemary to release its oils. Add the gin (or vodka), grapefruit juice, pear liqueur and lime juice to the shaker. Add ice. Shake well until thoroughly chilled. Strain the mixture into a chilled glass filled with ice. Top with sparkling water or Prosecco. Garnish with a rosemary sprig, a grapefruit slice, and a pear slice.

A Lime Mint Rose Mojito adds a floral twist to the classic mojito, creating a refreshing and elegant cocktail. Here’s a recipe that balances the traditional lime and mint with the delicate aroma of rose.

Ingredients:

• 10 fresh mint leaves

• 1 lime, cut into wedges

• 2 tablespoons white sugar (or simple syrup, to taste)

• 2 ounces white rum

• 1 ounce rose water (adjust to taste, as it can be potent)

• Club soda or sparkling water

• Garnish: Mint sprigs, lime wedges, edible rose petals (optional)

Instructions:

Muddle:

Place the mint leaves and lime wedges in a glass. Add sugar. Use a muddler to gently crush the mint and lime. Pour the white rum and rose water into the glass. Stir well. Fill the glass with ice. Top with club soda or sparkling water. Stir gently. Garnish with a mint sprig, a lime wedge, and, if desired, edible rose petals.
