Gentleman: a chivalrous, courteous, or honorable man

This month, we honor the modern-day gentlemen of Dripping Springs—those who exemplify integrity, respect, and compassion—who make our town proud.

Nearly two years ago, my wife and I embarked on a transformative journey as I left behind the stability of my corporate career to embark on the path of print publication—an endeavor that some might have deemed risky in today's digital age.

This decision reshaped my life, unveiling unforeseen opportunities and growth, and it was the unwavering support of my male mentors that encouraged me during moments of uncertainty. Through networking, mentorship, and camaraderie, the men of our community have showcased an unstoppable spirit when united in purpose and collaboration.

I recognize the importance of faith and family in shaping the character of a gentleman. As a father of three boys, I see that it is within the walls of our homes that we do our best, albeit not without struggles, to instill values that shape our children into the men we aspire for them to be. Actions speak louder than words.

This month's pages honor the gentlemen among us—those who lead, inspire, and embody the spirit of our community. The doctor, the karate instructor, the chef, the musicians, the stay-at-home-dad are each so different but share the common thread of building up our town using their God-given gifts.

Dripping Springs: It’s the gentlemen who meet at Oak Creek Café each morning; it’s the athletics-supporting alumni showing up for games even when their kid has graduated; it’s the young bagger at H-E-B who did his job with a smile and simple conversation that left a customer happy.

Dripping Springs is more than just a location; it's a blend of brotherhood, mutual support, and belonging. As we celebrate the men of our community, let's reaffirm our commitment to living lives of purpose and integrity.

In Dripping Springs, chivalry is alive—it's in holding doors open and lending a helping hand. Let's pay tribute to the modern-day gentlemen shaping our town, and we wish a happy Father’s Day to those shaping our future generation.  May God continue to show His favor over the Dripping Springs community.

Beyond Mere Appearance

Strategies for Embodying the Gentleman Ideal

This month we celebrate the gentleman. My position is that being a gentleman goes beyond mere appearances and social etiquette. It reflects a deeper commitment to values that guide one's actions and interactions with others and the self. It is transcending the indulgences of boyhood and developing discernment and self-control. I’d like to discuss some strategies for becoming that man.

MENTAL WELLBEING | WELLNESS

Our physical health is vital to the way we function in the world. To truly be healthy and happy, we need good posture, a strong body, and the ability to move well in our world. We need the trillions of processes that run every minute in our cells and tissues to operate without our attention. We need to turn the food we eat into human tissue.

When these processes are compromised, we end up with pain, a lack of function, and eventually lowered self-esteem and confidence. Always reacting to pain and physical problems is a poor strategy for maintaining our masculine presence. Alternatively, preventing degeneration and deterioration saves us time and money in the long run and leads to a better quality of life for ourselves and for those who love us. With our bodies feeling well, we can show up as our authentic selves. We can achieve this by eating real food, exercising, staying hydrated, getting plenty of sleep, and through spinal care and massage therapy.

Our mental and emotional health are vital to expressing the essence of a gentleman. My personal

strategies for daily mental/emotional/spiritual care involve meditation, reading, expressing gratitude, spending quality time with my son, and checking in with my men’s group. In our culture, it is often difficult for men to be vulnerable, especially with other men. Intentional time and space for working with other men on issues of the heart and spirit can be life changing. Support from men who are certainly going through many of the same challenges can provide a much-needed boost during hard times. This is also the case for sharing wins and having a group of guys to celebrate your successes.

At my practice, our team focuses not just on anatomy and physiology, but on the whole self and the community in which the self lives. We are each unique and a part of our communities and families. I would encourage every man to value all aspects of health, and that includes plugging in to a community that shares your values and genuinely finds joy in your wins. That’s the community we want to build in our practice, our neighborhoods, and our city.

Dedicated Dad Matt Walker

Matt Walker is a dedicated father of two and the epitome of the modern, involved dad. His journey from the corporate world to becoming a stay-at-home dad has been transformative, not only for his family life but also for his community engagement.

Transitioning from a career in construction project management to fulltime fatherhood wasn’t an easy decision, but after the schools closed during the coronavirus pandemic and Walker’s job went through a management change, he embraced his new role.

As his children grew, so did his involvement in their schools and extracurricular activities. Starting with timid steps into Parent Teacher Association (PTA) meetings, Walker soon found himself diving headfirst into volunteer opportunities, eventually taking on leadership roles in both the Sycamore Springs Middle School and Rooster Springs Elementary School PTAs.

Walker’s dedication to the PTAs goes beyond just volunteerism—it’s about fostering a welcoming environment for all parents to get involved and have an active voice in their children’s schools.  Drawing from his own experience as a shy person navigating the realm of school engagement, he understands the importance of amplifying the voices of quieter volunteers.

But it’s not all school participation for Walker. His favorite moments are spent bonding with his 13-year-old daughter and 10-year-old son over sports, from soccer to basketball and recently even ice hockey. Walker cherishes the time he gets to spend kicking around a soccer ball with his daughter or hitting the ice with his son. When summer rolls around, the Walker family seeks cooler temperatures and embraces new adventures like road trips to Maine and hiking in Park City.

Reflecting on his journey, Walker acknowledges the privilege of being able to prioritize family over career and credits his wife’s support for making it all possible. Their partnership has not only lightened the load on her shoulders but has also strengthened their family bond. “Being a stay-at-home dad has greatly improved my relationship with my kids because I’m more present,” he says. “It was tough when I had a stressful full-time job and I felt exhausted when I saw them by the end of the day. Now I get to have a lot more time to hang out with them, kick the soccer ball, or just hang outside.”

As Walker takes on the PTA president role at Sycamore Springs Middle School this fall, his commitment to creating a more inclusive and supportive community remains unwavering. Through his actions, he sets an inspiring example for parents everywhere, demonstrating that dedication and giving your time and talents to something bigger than yourself can change your family and your community for the better.

Your ability to be there for your family, pursue your goals, and contribute to the world hinges on your personal well-being.

Imagine someone advising you to invest everything into a single asset, and that asset is a racehorse. You might find the idea absurd. Yet this scenario serves as a powerful metaphor for a crucial investment many overlook: investing in oneself.

Let’s consider that you own a million-dollar racehorse that is your sole income source. If this horse wins a race, you earn a million dollars. Naturally, you would provide the best care for it—proper nutrition, adequate rest, and regular exercise. Now, here's the twist: Think of yourself as that racehorse. Unfortunately, many people, particularly men in the U.S., often neglect this asset, treating their health and well-being as expendable.

The journey toward being healthy, wealthy, and wise is interconnected; these aspects bolster one another. However, our society tends to focus heavily on wealth accumulation, often at the expense of health and personal wisdom. This default societal game leads to frustration and a sense of futility because, when playing by someone else’s rules, winning is impossible.

This flawed approach not only affects individuals but also sets a poor example for the next generation. To realign, start by identifying what truly matters to you. Common core values include family, purpose, and personal growth. Examine your daily schedule: Does it reflect these values? Often, there’s a disconnect; actions are not in alignment with values.

This imbalance is common, and it can be corrected by recalibrating priorities to reflect personal values more closely. Your ability to be there for your family, pursue your goals, and contribute to the world hinges on your personal well-being.

Improving your health doesn’t need to be complicated but requires intentionality. Begin with simple actions:

• Physical Health: Engage in regular walks, incorporate weight training, increase protein intake, drink more water, and establish a consistent sleep routine.

• Mental Health: Dedicate 20 minutes a day to reading, set clear boundaries at work, plan your days in advance, and take time for strategic reflection.

• Emotional Health: Foster connections through time spent alone, especially in nature; prioritize interactions with your spouse; engage deeply with your children; maintain adult friendships; and create opportunities for family gatherings. You don’t have to overhaul your lifestyle overnight. Start with one or two changes that resonate with you and gradually integrate more. Taking care of yourself may feel indulgent, but it is actually the greatest gift you can give to your family and community. Master Nelson Nathaniel Teaches Presence and Strength

Dripping Springs boasts the Austin Karate Center (AKC), founded by black belt master Nelson Nathaniel. At a young age, Nathaniel discovered that he needed karate to regulate and grow his mind, body, and spirit. Now he shares his gift with the world to empower others.

Nathaniel started karate when he was four and was instructing karate classes by age 16. Through his dedication to the sport and by receiving mentorship from leading karate masters worldwide, he holds awards in sparring, weapons, kung fu, kickboxing, and kata. During the coronavirus pandemic, he competed 54 times and won first or second place consistently, including double grands at the grand championship. He also earned U.S. Hall of Fame recognition for kata and sparring.

Karate proved to be a tool to keep Nathaniel present while struggling with ADHD. “Anxiety keeps us fixated on the future. Depression keeps us focused on the past,” he comments. With karate as “the medium to keep people present in a chaotic world,” he’s seen success in his life and in the lives of his students.

Nathaniel is most proud of seeing his students succeed. “Watching their wheels turn and seeing it click drives me,” he says. “They understand one small part of a movement, then another, and eventually it all melds and they see the big picture.” His students continually win state and world championships.

AKC’s unique teaching methodology sets it apart from other centers. Nathaniel shares, “In teaching people of all backgrounds and as a musician, I applied these principles to karate—how do I learn this one movement, add another, and combine to build a harmony?” Similarly, karate highlights and teaches the foundational building blocks of the body, feet, and muscles.

From Division I football player to business owner, coach, father, and philanthropist, Jamey has learned—and demonstrates—the value of hard work, dedication, sacrifice, and leading by example.

Jamey grew up in his father’s automotive repair shop in Buda, the family business since 1979. Jamey remembers, “When I was a little kid, I grew up running around brake shops.”

From there, Jamey turned to running around the track and the football field, earning a scholarship to play football for Rice University. After college graduation, he returned to the auto shop and worked alongside his father for 16 years.

Although Jamey grew up in Buda, his entire family hails from Dripping Springs, stretching back four generations. In fact, his great aunt and uncle once owned Hamilton Pool, and his grandfather graduated from Dripping Springs High School in the 1950s. “All my family is from here, from Hamilton Pool to Oak Hill,” he says. So in 2006 when Jamey and his wife Heidi wanted their children, Sky and Jake, to attend top-notch schools, it was natural for them to head to Dripping Springs. “When we moved to Drip, we felt like we had moved home,” he shares.

Settled in town, Jamey took ownership of his dad’s Dripping Springs shop in 2015. Whitlock Automotive serves as a go-to shop for all vehicle needs, from check engine lights to transmission repairs, and its experienced service experts use the best, most advanced diagnostic equipment.

But when Jamey put his name on the door, he strived to take an innovative approach to what can be an antiquated industry. “We wanted something cool, something fresh,” he says. “And we want our customers to feel it. We want our technicians to feel it.”

Speaking of cool, in 2018 Jamey built upon his passion for off-road vehicles and branched out with THOR Off Road, a premier truck and offroad vehicle outfitter that creates customized trucks and adventure vehicles. Jamey puts his personality into each design to create a dream vehicle that will express his customers’ style and individuality. “I take all the things that they want to do and I try to put all the pieces together,” he says. “It’s purpose-built and purpose-driven, which makes it fun.”

In both businesses, Jamey aims for an authentic, customer-centered experience for those who walk through his door. “I always focused on the customer experience because I always wanted my shop to feel experience driven, not transactionally driven,” he shares.

“My customers are my friends, not just my customers, and I want to treat them that way.”

This congenial attitude is evident. (And it may have prompted the “unofficial mayor” moniker.) Loyal patrons stop by the shop daily just to spend time with the man they consider a friend. “People see my truck parked here and they just come in,” he says. Jamey is happy to share a soda and chat with anyone who steps into his location. “I never met a stranger in my life,” he says. “I got that from my grandfather.”

Outside the shop, Jamey builds relationships as he wholly engages in the community through sponsoring schools, athletic teams, Patriots’ Hall, and various foundations. In particular, he is a strong supporter of Hill Country Rally for Kids, whose mission is to raise awareness and funds for local children’s non-profit organizations through events such as clay shooting tournaments and car shows.

He reflects on a unique experience when several of the Dripping Springs auto shop owners joined forces to help with a car for Rally for Kids. “I seriously doubt that there’s any other community where all the automotive shop owners got together to do something for a foundation like Rally for Kids—and did it all together even though, on a day-to-day basis, we are business competitors,” he says. “It was super cool that we put our heads together and made a collective effort for something that was bigger than ourselves.”

Another of Jamey’s most treasured experiences serving the community was born of a father-son hobby.

When his son Jake joined the Dripping Springs High School shooting team, Jamey was recruited to be the coach. During his two years in this position, Jamey was able to take students who had barely touched a gun to shooting in competitions … and then winning competitions. More importantly, Jamey taught students the value of character and hard work. “I wanted to create a positive environment to make better kids,” he says.

Some of his shooting students still stop to say hello and share their lives with him when they happen to meet in town; according to Jamey, being their coach was “one of the most rewarding things I’ve done.”

Whether serving as a father, coach, community member, employer, or friend, Jamey makes a point of leading through character and by example. “I’ve done a lot of things right in my life, but I’ve done a lot of things wrong too,” he says. “I would hope that I consistently fail forward, and take all the things that were tough … and all the things that didn’t work out the way that I wanted them to … and use them to move forward. And I hope that humility is motivational to the people around me.”

Juan Chan Keeps Family in Focus While Building Business

If you’ve recently attended a Dripping Springs school celebration, church festival, or community event, chances are you’ve spotted the big white ice cream truck named for a 10-year-old boy.

“I loved the idea of owning an ice cream truck,” says owner Juan Chan, so in 2022 he purchased the treat-mobile and put his youngest son’s name on it. Now when Evan’s Ice Cream truck rolls up, Juan always draws a crowd as he dishes out his creamy softserve ice cream in cups, cones, and root beer floats.

But it all actually started in 2016 with a food truck named Le Muse Coffee Bar, offering coffee, smoothies, iced drinks, tea, breakfast tacos, and pastries. Soon Juan added a brick-and-mortar location that has grown into Le Muse Coffee and Wine, now nestled in the Caliterra community.

Community matters to Juan, so everything in this cozy coffee shop is locally sourced, from the coffee beans to the tea, wine, souvenir mugs, and succulent centerpieces. “We support other businesses in town,” he says. “That’s the way it should be.” He also sponsors local sports and performing arts groups, RED Arena, Foster Village, and Founders Day.

In this family business, Juan’s wife, Thavy Maes, manages things behind the scenes. Behind the counter, you might find the couple’s 21-year-old son, Eric, who has been helping out since he was just 13.

As for Evan, he’s still a bit young to pour coffee, but Juan has started teaching him how to serve ice cream. For now, “He mostly makes appearances,” laughs Juan, but “I think he’s going to be a big part of Le Muse in the future.”

“Make time for your kids. No matter how busy, how stressed you are, family has to come first.”

Indeed, the fourth grader will likely lean toward being involved in his dad’s business, as Juan is dedicated to prioritizing family. “Make time for your kids,” he states. “No matter how busy, how stressed you are, family has to come first.” Juan shares lunch with Evan each week at the elementary school and commits to being there for every school drop-off and pick-up.

In the latest Le Muse news, the business is opening a second location in Dripping Springs’ Clock Tower Square in June. With a full kitchen, the new shop will roast its own coffee beans and expand to offer lunch and dinner items. And of course, the menu will also include home-made desserts that pair perfectly with—you guessed it—soft-serve ice cream.

“One hundred percent of people talk about the vibe,” says founder and musician Mike Morgan.

“They feel comfortable. We’re the ‘get-away from everything’ place. It’s the retreat. That’s the point of this place.”

His partner, fellow multi-instrumentalist Pat Manske, chimes in, “We never worry about an ambulance blowing by and killing a take.”

“Maybe a coyote!” jokes Morgan.

Morgan custom built the studio in 1996. Unlike many recording spaces, this

isn’t a retrofitted house or church. It’s a single-purpose building that’s been the creative birthplace of some of the most enduring music ever to come out of Texas.

Robert Earl Keen recorded his last five records in this room. Ray Wiley Hubbard has been working here for 26 years. The client list reads like a who’s who of Texas, Americana, red dirt, and country music stars: The Chicks, Parker McCollum, Jerry Jeff Walker, Jason Bolland and the Stragglers, Cory Morrow, Joe Ely.

The soundboard isn’t like most you see on television. Sure, wires sprout in every direction, some plugged in, others flailing loose. The custom setup is a digital and analog Frankenstein creation. It’s all about getting a different sound; that’s by design. “Even in the same space, it can sound very different,” says Morgan. “No two days are

the same. Each band is unique and we give them their own treatment.”

This custom approach differentiates the music made here from the cookie-cutter country of the Nashville machine. It’s a big reason the studio is booked 300 days a year. Morgan and Manske know what they're doing.

The music recorded here is heard far beyond dance halls in Texas. The band Gaelic Storm regularly sells out 10,000-person venues in Chicago and across the Northeast. They’ve recorded here for years while selling records and touring around the world.

“Prog rock, jazz, Irish, pop, rock—the variety is what we love,” Morgan says.

Besides Morgan and Manske, you’re most likely to see legendary musician and producer Lloyd Maines at The Zone. He works here about 100 days per year. “He’s just the best. He knows how to call the shots and 90% of the time, it’s the right shot to call,” says Manske.

Twisted X is Brewing Success

Community Connection Leading to Expansion in Dripping Springs

It’s no secret that Dripping Springs is growing rapidly. So is its oldest brewery, Twisted X.

Its signature hazy IPA, McConahaze, is one of the best-selling beers in Central Texas. Before long, it will be one of Dripping Springs’ most visible exports, as all of the brewery’s offerings will soon be available at all Dallas-Fort Worth-area H-E-B stores. The company has also partnered with Texas Monthly BBQ to showcase its Pitmaster Pilsner across the state.

While Twisted X is amping up production, general manager Drew Gamino is adding lots of activity to the scenic grounds surrounding the brewery. He came on board last year and aims to build a family culture and a place for neighbors to enjoy every day.

"We’re trying to create relationships with the community," Gamino shares. "We want to be known for live music and a place for families in Dripping Springs to enjoy seven days a week." Future parties will

include monthly live-fire cooking festivals and dances in conjunction with Cedar Break Barn. The sprawling property will also host kickball leagues, flag football games, and disc golf.

Beer is still the focus and heart of Twisted X. Head brewer Sam Leatherwood has been with the brewery for more than 10 years and oversees the brewing and fermentation processes. “I feel like I’ve been on the ground floor. I’ve seen it grow and become something special,” he says. “I’m proud to have been a big part of that.”

Leatherwood is excited about the special seasonal beers pouring this summer, including a Bock and a Hefeweizen. “I have the freedom to collaborate with the other brewers and create something we want to enjoy and are proud of,” he shares.

According to Gamino, “We’re always focused on showcasing the beer. It’s what created this place and what’s gonna take it to the next level.”

The Negroni is a classic cocktail known for its perfect balance of bitterness, sweetness, and herbal flavors.  directions:

• 1 ounce gin

• 1 ounce sweet vermouth

• 1 ounce Campari

• Orange twist or slice, for garnish

• Ice cubes

Step 1. Fill a mixing glass or stirring glass with ice cubes.

Step 2. Pour the gin, sweet vermouth, and Campari into the glass.

Step 3. Stir well for 20 to 30 seconds to chill the ingredients and properly dilute the drink.

Step 4. Strain the mixture into a chilled rocks glass filled with ice cubes.

Step 5. Garnish with an orange twist or slice.

Step 6. Serve and enjoy your classic Negroni. Cheers!
