Farm-to-Table, Year to Year

I

f I can claim any capacity for gardening—and I’m not sure that I truthfully can—know that my thumb is such the lightest tinge of green that it’s practically yellow. But I test it every spring with the hope of an abundant harvest. Or a meager harvest. Or just a little sumthin-sumthin to eat.

On the south side of our house there is a sunny patch against the wall that is warm and dry and perfect for planting. By summer, this small swath of dirt will be home to a few tomato plants, some zucchini, maybe an eggplant, cukes, herbs, prolific raspberries—just whatever tiny shoots seem to end up in my cart at the garden center. I simply plant—I don’t tend; I’m not nit-picky; I don’t weed. Picking comes only when kids wander from the trampoline to eat cherry tomatoes off the vine and in the evenings, when I want to cook.

This cookable harvest won’t be for months, but now is when I start dreaming about it, and our lazy mid-summer dinners on the deck. There is something about these dinners, or something about the sunshine and food picked minutes before it’s served that elevates the whole meal, making it more “experience” than just food… and where we talk and linger and laugh and are together—friend and family.

This is farm to table in its most simplistic terms, with the most basic elements, crafted by an unsteady, yellow-thumbed hand. So just imagine what would happen with some pros at the helm of it. In the coming months, Urban Farm & Feed will open up shop in Draper, and offer—among other things—genuine farm to table dining experiences. I love the “community” of our community and the notion of these dinners strike me as a quintessential community thing: outside in Draper, at a communal table with residents of Draper, eating things grown in Draper.

A couple of months ago we featured the Rasmussen family in these pages, and I can’t help but think of the full circle aspect of this coincidence in our town rich with farming history. Seasons play a role in farming, and the true seasons of life are evident in this new generation of farmers. And in this way, local cultures persist.

City Council member, Michele Weeks, hosts a luncheon every year for our teachers, honoring them for helping to raise all our Draper kids; crossing guards literally usher these children safely to school every day; older students help younger students make their way through the ever-confusing teenage years; and because it’s Autism Awareness month, we feature a mom who chronicles her journey with her son’s autism.

Indeed, the older generation will always foster the younger generation. It’s just as the Rasmussens said to me months ago: you reap what you sow. And in that case, I’m confident Draper will be good for years to come.

Draper residents will be able to enjoy the freshest tastes of the seasons at Urban Farm & Feed’s new farm stand, opening in June, located at 310 East and 13800 South.

their farm stand opens in June, residents will be able to buy fruits and vegetables straight from the farmland they are standing on. The farm stand isn’t about the monotonous task of buying your weekly groceries, it’s about the community atmosphere and learning opportunity you will experience.

In addition to their homegrown produce, they will also be selling their local grass-fed beef and lamb, farm-fresh eggs and cheeses, and fresh homemade pies. You will also be able to find artisan packaged foods from other local producers including raw honey, jams, hummus, salsa, and breads.

The Alston’s are leasing 17 acres of this Draper location, made possible through the Salt Lake County Urban Farming Program and Utah Open Lands. They are excited to be farming in Draper because “Draper is one of the cities committed to saving some farmland,” they say.

Additionally, all their cattle are raised in Torrey, Utah, where they graze on pasture grass and are not given any supplemental feed, hormones, or antibiotics. The eggs and cheeses sold at the farm stands come from free-range chickens and goats that forage on pasture, organic feed, and produce, and are raised in Holladay, Utah.

The Alston’s are a local couple, busy raising two young boys and trying to figure out this farming thing. As first-generation farmers who “started with no land, no equipment, no nothing,” as Marty puts it, has built their business “from the relationships and connections we have established, and now have been able to obtain pieces of ground and acquired the equipment.” Having farmland in an urban setting is important to the Alstons. Maryann adds, “Our commitment is to future generations. I feel strong about laying out the framework for future people to become farmers and to know they can make a sustainable living off farming.”

The farm stand won’t be the only excitement from Urban Farm & Feed; the Alstons also plan to host a few farm-to-table dinners at this Draper location. They are excited to have the grove of trees as their backdrop for this event which includes meals that are prepared with food on-site and involves other local producers.

Draper Communities that Care Coalition JUAN DIEGO HOSTS STUDENTS FOR "COMMUNITIES TALK" ARTICLE NEVAH STEVENSON

N

avigating the teen years has never been easy. Bad influences, long sprung from the confines of locker rooms and late-night parties loom large and accessible on the ubiquitous mobile device found in every teen’s hand. Bullying, substance abuse, depression and school apathy are far more prescient today thanks to cyber peer pressure.

So how do we mitigate teen problems when the scope is so vast? Modern times surely necessitate a contemporary approach.

Such was the thinking of the Draper Communities that Care Coalition (CTC), whose mission is to protect Draper youth from high-risk behaviors through prevention.

Coalition leaders opted to put ownership of

teen awareness of tough issues back in the hands of teens themselves. Perhaps the course to inspiration is best set by those who must navigate it. Thus the “Communities Talk” forum took shape.

Hosted in January at Juan Diego Catholic High School, the creative forum brought seven Draper schools together to share information. The student led and produced event premiered in true “Late Night TV” fashion, with a teen host, a desk and a couch. Music greeted the nearly 800 parents and students who filled the auditorium. They sat in school groups: American Preparatory Academy, Channing Hall, Corner Canyon High School, Draper Park Middle School, Juan Diego Catholic High School, Saint John the Baptist Catholic Middle School and Summit Academy, each with an advisor on hand and a topic to present. Juan Diego Catholic High School Student Body President, Katie Whittington, offered the opening prayer, then the program unfolded with teen emcee (and Draper CTC Youth Chairperson,) KatilynmWampler at the helm. Draper City Mayor Troy Walker addressed the audience, as did Police Chief Bryan Roberts, but it was the students who drove the messaging.

Draper Park Middle School tackled the depressive symptoms of suicide. PTA President Bryn Johnson noted that several DPMS students produced their video about the warning signs of suicide, while others were on hand to present it. DPMS Student Representative, Emma Johnson offered thoughts on the experience. “I think students do a better job presenting because sometimes adults are too serious and kids are more likely to listen to someone their own age.” American Preparatory Academy performed a musical plea to stay committed to school. Students danced through the aisles to the strains of “Y.M.C.A.” The lyrics, altered to “Why stay in school,” were peppered with the reasons teens should stay engaged in education. Summit Academy Junior High addressed prescription drug abuse. Juan Diego Catholic High School focused on underage drinking. Channing Hall spoke to the ills of marijuana use, and Saint John the Baptist Catholic Middle School presented a power point on E-cigarettes and vaping. Leata Hunt’s smile is contagious, her faith is strong, and her passion and determination for everything she does is fierce! That’s not all, Hunt is also a wife, mother, and soldier in the Army National Guard, where she serves as a Human Resources and Multi-Media Specialist, and is currently on Inactive Ready Reserves (IRR). Hunt has had a tough couple of years, from being diagnosed with hyperthyroidism leaving her with practically no energy, to a pregnancy that resulted in six months of bed-rest, she was not feeling like her energetic and athletic self. This immobility was a very traumatic experience for her.

Once she gave birth to her baby girl, Oceania, she knew she had to make some changes. Hunt was more than thrilled to be picked for the Draper Lifestyle Transformation Challenge and knew this would give her the opportunity and motivation she needed. Her ultimate goal going into this competition was to get back to the level of strength and health to be able to serve her country with her fellow comrades and soldiers. Her biggest motivation is her family; she plans to be a healthy and strong wife for her husband, Ralph Hunt, and role model for her daughter and other family members.

Hunt has been training at ilovekickboxing and has fallen in love with every aspect of it, from the facility and the atmosphere, to the support of trainers and the meal plans. “The atmosphere is highly motivating and fun-loving, no matter where you are at in your fitness journey, you come in and you leave feeling like a champ.

The instructors truly care about why you are there and your goals, they want to help you,” she says.

On her first day at ilovekickboxing, Hunt realized how out-of-shape she was and it made her feel completely exhausted emotionally and physically. She realized how much work she needs to put in to be able to get back to where she was physically. The trainers and instructors have kept her fired-up, motivated, and stuck right by her side through each transition and stage.

“It is a team environment. You have to put in the work and they never give up on you. They are genuine and I would highly recommend ilovekickboxing to everyone out there,” she says.

If Hunt isn’t enjoying her new daughter or kickboxing, you can find her sharing her heritage, culture, and family traditions through Polynesian dancing and performing. Hunt says she already has more energy since starting the challenge and hopes to give her diagnosis of hyperthyroidism a beat down, so she can join her soldiers once again, and be an active mother.

He wasn’t sure when he would have the time to participate in a transformation challenge with his hectic and busy life. Sadie Hawkes Sadie Hawkes is a 32-year-old wife and mother who loves being active with her family, especially water- and snow-skiing. Since giving birth to her four-year-old and three-year-old she hasn’t been focusing on herself. Over time, she has noticed that she is doing less and being less active because her weight is an insecurity. She doesn’t feel comfortable doing some of the fun family activities, and that is leaving her unhappy.

Hawkes says her biggest struggle is eating, she knows she needs to make better, healthier choices, but it seems to be easier for her when someone is motivating and pushing here. This motivation is one reason she has loved training and getting her workouts in at Treehouse Athletic Club.

“Treehouse Athletic Club is seriously the best gym ever. I’ve tried other gyms and there is nothing else like this gym. The locker rooms are amazing and they have everything you need. They are always updating the gym and getting new equipment, and staying up to date with the newest classes and much more. It is such a fun family environment.” Says, Hawkes.

Hawkes’ end-goal is to lose 40 pounds. She knows achieving this goal will help her feel more confident in her clothes and feel more comfortable participating in active family events. Hawkes says her trainers are so experienced and go more in depth with training than anyone else she has ever met. “Jason and Nicole are outstanding. I hit the jackpot! They push and motivate me,” Hawkes says.

Alfonso rodriguez ALFONSO RODRIGUEZ

Alfonso Rodriguez is a 56-year-old husband, father, brother, and son, all roles he takes very seriously. He was raised in Los Angeles California with eight other siblings in a two-bedroom house. Rodriguez loves anything to do with computers, is a Windows PC gamer, and enjoys helping others with computer related issues. His love for technology has developed into a successful career as a Sales Engineer for a software company.

Rodriguez joined the transformation challenge to lose weight and get back in shape.

He has diabetes and knows he needs to start taking care of himself so he can be available for his four daughters and watch his three grandchildren grow. Rodriguez has lost two of his siblings to diabetes and another brother is currently battling Renal Kidney Failure. He is completely motivated to working out, eating right and staying healthy to prevent the diabetes from further harming his body. Rodriguez’s goal is to drop below 200 pounds and create a healthy life-change! “ilovekickboxing is the best answer for my condition. I couldn’t have asked for a better workout and, more important, support team. The entire team, trainers, and members are encouraging and friendly. I have multiple trainers, each has their own style and I like all of them. Each session is different. They are all great--Stephanie, Brittney, and Missy are outstanding!” says Rodriquez.

Rodriguez says the hardest thing was just getting started, getting motivated to do the work, and kicking bad habits. But he has tremendous support from his family and coworkers, who are all cheering him on, which has helped him stay motivated.

Even though Rodriguez loves chili-cheese hotdogs, he has had a lot less of them, and is making better and healthier decisions every day. If anyone asks for advice to start a life-changing transformation, Rodriguez says, “just get up and do it! Once you start, you will start to see your body change. You will stop craving unhealthy food. More important, commit to it. Once you get the mind-set, just keep going.”

Harker is training at Aerobatics with Lance Nielsen. She says the toughest part about the transformation challenge so far is the endurance, she gets very tired and worn out, but her trainer keeps pushing her forward and motivating her to finish what she started. Harker also says she has surprised herself by sticking to her meal plan.

She originally thought the eating/meal plan part of this challenge would be the toughest part, but it has come easier than expected.

Harker continues to be motivated by her trainer, and her end-goal and says, “Aerobatics has been amazing! Everyone at the gym has such an amazing attitude and they are so nice and friendly. The environment is totally amazing and I look forward to going there!”

Her advice for someone trying to reach their goals or desiring body-image confidence is to get ready to work hard. She says, “You are completely changing your daily routine from the things you eat, to what you do during the day. Work hard, but have fun while you're doing it! It is totally worth it!

very day, and especially every holiday, Sandy Smith misses her nine grandchildren.

Luckily, she has a few hundred kids at Channing Hall who make great substitutes.

“They’re all my grandkids,” says the crossing guard of 6½ years. Chatting with her young

charges makes her day, and she loves the thank-you’s she receives as she safely escorts them across the street.

Since her grandkids live in West Virginia—where she was born and raised—her surrogate Channing Hall “grandkids” reap those treats Grandmas like to give, especially around the holidays. For Christmas she hands out candy canes, for St. Patrick’s Day it’s green Andes Mints, for Valentine’s Day heart-shaped suckers.

She patrols the crosswalk in front of the school, starting at 6:45 a.m. and then returns for after-school patrol. Besides the kids, it’s the job’s flexibility she likes.

What she doesn’t care for are hurried, multi-tasking drivers. “If more people slowed down, paid attention to the children and not their cell phone, things would be so much better,” she says and adds that she is prepared to protect her kids no matter what.

“The children are the most important thing in the world,” she says. “Watch for them.”

The Draper resident and mom of three has been a crossing guard for 10 years, the first seven of which she worked three crossing shifts a day. Then she narrowed it down to two. Now, she works as a substitute guard between her full-time job as hall monitor at Alta High school.

efore Michele Weeks joined the Draper City Council in January 2016, she knew that recognizing Utah’s teachers was a priority in her mind. So, just two months into her council position, she took it upon herself to solicit donations for and coordinate the first annual Teacher Appreciation Night at the Aquarium.

“When I ran for state senate, I started to realize that we have some of the best teachers in the United States here. When you look at our class sizes and the amount of money these teachers receive, it showed me that our teachers are very dedicated to our community.

I believe they are the heart of our community because they are the ones raising our kids and making sure that Utah has a bright future.

With my kids in school, I noticed the difference in an exceptional teacher. When my child has an exceptional teacher, my child thrives.

But it didn’t feel like they were getting the recognition that they deserved. When you reach out and thank a person for doing a great job it inspires them more,” Weeks said.

She found that companies and sponsors jumped on board, seeing the need for this kind of recognition and the need to keep excellent teachers in our school system.

As a result, teachers and their families totaling 900 people gathered last May for an evening of dinner, door prizes, recognition, and exclusive access to the aquarium. “I didn’t want it just to be the teacher and their significant other, I wanted it to be so the teachers could bring their families to enjoy a night of dinner and the evening at the aquarium,” Weeks said. Last year’s door prizes included such things as televisions, cameras and potted plants, and this year Weeks hopes to add prizes like resort passes.

The teachers who were invited had been chosen Teacher of the Year for their school from each of the schools in the six area districts;

Canyons, Alpine, Murray, Jordan, Salt Lake City and Granite. All schools select a Teacher of the Year in March or April. Then the PTA or School Community Council narrows the nominations to a handful that go on to the school’s foundation to choose the final winner. Each district ultimately selects one teacher. Finally, the governor selects one from the entire state as Utah’s Teacher of the Year.

Weeks realized that only one teacher from each district is ultimately selected Teacher of the Year, so there were many great teachers whose recognition she felt needed to go further than just within their particular school. “I felt we ought to recognize more teachers that were selected Teacher of the Year and make sure they know the community really supports their contributions to our society,” Weeks said.

“Little kids were so proud of their mom or dad for being recognized as Teacher of the Year. You could see how proud these families were,” Weeks said of last year’s gathering. Following the event, she put together a book of pictures and quotes from the evening that she gave to the sponsors. Quotes from the book include: “Thank you so much for giving my family the opportunity to celebrate at the aquarium. Parenting on the Autism Road ARTICLE KATHRYN PORTER

P

arenting a child on the autistic spectrum is not an easy road, but it’s not as hard as one might think. There are bumps and rough spots, but sometimes the road is smooth and one meets many travel companions along the way. Each person’s road is different.

My son was diagnosed with Autism Spectrum Disorder, but one wouldn’t know it just by looking at my him. What people see is a teen who appears neuro-typical. He enjoys hanging out with friends, learning about history and science, playing computer games, and sleeping in late. On our road, we didn't have an immediate diagnosis.

As a toddler, my son screamed if we took him outside without sunglasses. He disliked most clothing, insisting on wearing his favorite super soft Superman pajamas every day. There were small indicators, but he was very much like the average toddler.

As he entered the preschool years, he had difficulty pronouncing words that his peers could articulate. He didn’t show the classic signs of autism, but there were still signs—delayed speech and sensory processing issues. The sensory challenges became prominent at the dinner table due to what my husband and I called his “supersonic” hearing—we couldn’t hear what he heard.

Producing loud, blood curdling screams, our son yelled that the sound of chewing food hurt his ears. He was the only preschooler I knew who was “kicked out” of Sunday school. When other children sat coloring, he would be the child running around or hiding under tables.

Kicking, hitting, and biting were his way of navigating social situations.
