This popular southeast Asian street food is elevated to fit your summer party plans. For this recipe, we used chicken thigh meat but you can substitute it for anything else. An essential part of this recipe is the Peanut Sauce, which packs so much flavor you’ll be putting it on everything. Chicken Satay pairs well with white wine, a cocktail, or a tall glass of lemonade while you enjoy the perfect Denver evening.

GRILLED CHICKEN SATAY SKEWERS

CHICKEN SATAY ingredients: FOR THE CHICKEN • 1 stalk lemongrass, smashed and chopped • 1/3 c. Coconut Milk • 1 1/2 lb. boneless, skinless chicken thighs, sliced into 1” pieces. • 1 tsp. ground turmeric • 2 tbsp. fish sauce • 2 tbsp. packed brown sugar • 2 tbsp. lime juice • 2 cloves garlic, chopped • 1 shallot, chopped • 1 tbsp. fresh ginger, chopped • 1 1/2 tbsp. chili paste FOR THE PEANUT SAUCE • 1/2 c. smooth peanut butter • 1/4 c. reserved marinade • 1 tbsp. soy sauce • 1 clove garlic, grated • 1 tsp. lime zest • 1 tbsp. freshly grated ginger • 1/4 c. boiling water

instructions: FOR THE CHICKEN Combine ingredients into a marinade and coat chicken, let it rest at room temperature for 30 minutes, or chill for 2 hours in the refrigerator. FOR THE PEANUT SAUCE Whisk all ingredients together until smooth and well combined.

Pitcher Vodka Lemonade Yield: Makes six cocktails Ingredients • 48 ounces homemade lemonade (or store-bought) • 12 ounces vodka • Ice, for serving • 1 lemon, sliced thinly • Fresh mint for garnish Instructions • Make the lemonade or pour store-bought in a pitcher. • Add vodka and lemon slices (can be made the day before). • To serve: pour cocktail over ice and garnish with fresh mint.

Grilled Corn Salad Yield: Serves 4-6

Ingredients • 2 ears corn, grilled and cut from the cob • 1 small shallot, thinly sliced into rings • 1/4 cup fresh feta or goat cheese, crumbled • 3 sprigs basil, leaves removed and torn • 1/4 cup extra virgin olive oil • 1 tablespoon red wine vinegar • Black pepper to taste • Jalapeño, thinly sliced (optional) Instructions • Place corn kernels into a bowl with the rest of the ingredients and stir to combine. • Taste, and re-season with salt, pepper, and vinegar to taste.

Steak with Chimichurri Sauce Yield: Makes about 1 cup Ingredients • 1 cup (packed) fresh Italian parsley • 1/2 cup olive oil • 1/3 cup red wine vinegar • 1/4 cup (packed) fresh cilantro (optional) • 2 garlic cloves, peeled • 3/4 teaspoon dried crushed red pepper • 1/2 teaspoon ground cumin • 1/2 teaspoon salt Steak • 1 ½-2 pounds flank steak, or steak of choice Instructions • Make sauce: Puree all ingredients in processor. Transfer to bowl. (Can be made 2 hours ahead. Cover and let stand at room temperature.) • Preheat grill to medium-high heat. Sear steak for 6-8 minutes on each side until heavily browned on the outside and slightly pink in the middle. • Thinly slice steak across the grain and top with Chimichurri sauce.

Bags are packed, reservations are made, and the Out of Office automatic reply is letting everyone know you have officially entered vacation mode. There’s one thing that’s lingering: how to go on vacation without pressing pause on the fitness progress you’ve made, or avoid commuting to a gym and paying drop-in fees. Mayhem Athlete provides online programming that guarantees challenging workouts which can be done in 30 minutes or less. These quick but effective workouts incorporate compound movements such as burpees, push ups and lunges. Compound movements use more than one muscle group, requiring more energy from your muscles to recover. This means you can continue to burn calories while enjoying the beach or sitting at work, long after the workout is over. The Mayhem Athlete M30 program offers two options for all fitness levels. Mayhem Bodyweight, a 30-minute format that requires no equipment, and Mayhem Minimal, a 30-minute format which only requires a couple dumbbells.
