dinner for 24, hosts set the stage and craft a menu for guests that engages all senses. Verbena Catering Co. hosted a hearty dinner for six at the Ranch at Bandy Canyon. Celebrating the fall harvest and setting the stage for an autumn feast, shying away from the typical turkey and gravy, and opting for roasted prime rib, wine glazed mushrooms, and creamy pumpkin soup. Executive Chef Jonathan Freyberg shares his recipes and Jessica Gillon, Verbena Catering Co's Event and Marketing Manager, gives some tips on how to set the tone for an enviable and stylish event. ROASTED PUMPKIN SOUP INGREDIENTS:
1 Onion, julienne 1 Roasting pumpkin, peeled and sliced 4 Garlic cloves 1 Tbsp Ginger, peeled, minced 1 Vanilla bean, scraped 1.5 cups White wine 2 Tbsp Olive oil Thyme 1 sprig Chicken stock to cover ½ cup Cream Salt and Pepper to taste DIRECTIONS:
Cut pumpkin, scraping seeds and removing skin. Roast in 375-degree oven for 45 minutes, set aside. In a stainless-steel pot over medium-high heat, cook onion, garlic, ginger, thyme, vanilla bean, salt and pepper (with minimal olive oil) until translucent. Deglaze with white wine and simmer for two minutes. Place roasted pumpkin in the pot then fill with chicken stock to cover. Simmer one hour until tender. Blend everything with an immersion blender or one cup at a time in a blender, finish with cream, salt, pepper. Top with toasted almonds and chive oil.

MADEIRA WINE MUSHROOM INGREDIENTS:
2 lbs. Mountain Meadow Mushroom Farm Button Mushrooms, quartered 2 Tbsp. Shallots, diced 1 Tbsp. Garlic, minced 2 Tbsp. Olive oil 1 cup Madeira wine 2 cups Chicken stock 1/2 cup Chestnuts, cleaned 2 Tbsp. Salted butter, diced 2 tsp. Ground Black pepper DIRECTIONS:
Wash the mushrooms in cold water and dry. In a sauté pan, heat the oil over medium-high heat, add the mushrooms and cook until they are semi-golden. Add the chestnuts, then the shallots and garlic. Then deglaze with the wine and cook down till almost dry. Add the chicken stock and continue to cook to sauce consistency, then add the butter and pepper.
PEPPER CRUSTED PRIME RIB ROAST INGREDIENTS:
5 lb. Prime rib roast 6 Tbsp. Coarse sea salt 6 Tbsp. Coarse ground black pepper 1 Garlic clove, cut in half, crushed 3 sprigs Rosemary 12 sprigs Thyme ½ cup Extra Virgin Olive Oil DIRECTIONS:
Preheat oven to 375 degrees Fahrenheit and rub roast generously with the olive oil. Season roast all sides with the salt and pepper then rub top side of roast with the garlic, thyme, and rosemary. Place on a roasting rack and move to oven. After 30 minutes, turn temperature down to 300 degrees and set a timer for 50 minutes. Remove from oven and let rest for 30 minutes. Slice and serve.

Topaz “THE STONE FOR STRENGTH AND SUCCESS” The stone for strength and success, topaz has adorned people throughout history for its magical prowess, not to mention beauty. Although blue topaz may be the most common variety found in retail stores, consumers wouldn’t always be aware that this color is rarely found in nature and stones are almost always color enhanced… some may not even know that other colors exist. The name topaz was derived from an island in the Red Sea, “Topazos”, today called Zabargad, the ancient source of the green mineral peridot. This gem is an aluminium silicate with varying amounts of fluorine and hydroxyl and can be expressed as Al2(F,OH)2SiO4.
Although this stone measures a high 8 on MOH’s scale of hardness it is not necessarily a ‘tough’ stone due to its perfect basal cleavage. Cleavage refers to a stone’s tendency to ‘cleave’ or ‘split’ along certain crystallographic structural planes due to a weakness in their atomic bonds. Although a gemstone doesn’t necessarily become weak because of perfect cleavage, the gem cutter and jeweler must practice caution to ensure cleavage does not occur. In topaz’s case, the cleavage occurs in one direction parallel to the basal plane and stones are best cut at a 12-15% off this cleavage plane. Crystalizing in the orthorhombic crystal system, Topaz crystals are generally well-formed prims with striations parallel to the c-axis (length of the crystal). Crystals are terminated with domes and pyramids which make them easy to confuse with danburite, a mineral that shares an almost identical crystal form. When fashioned, topaz gemstones (particularly blue/colorless) are often free of visible inclusions or flaws and because of their elongated crystal form, stones are mostly fashioned into pears, ovals and rectangles to yield more carat weight. Topaz, when in its purest state, is colorless and owes its varying hues to impurities, defects in the crystal structure or enhancements by the gemstone industry rather than an element of its basic chemical composition. Unearthed in varied palette from yellow, orange, brown, pink, red, purple red, blue, light green and colorless, it is the man-made shades of blue and the natural rich golden tones of “Imperial” Topaz that get the most attention. In nature, topaz is most commonly colorless with naturally occurring strong blue gems being extremely rare. In the marketplace they are plentiful due to color treatments being common practice. A combination of radiation and heat has been used to produce blue hues
since 1970. This irradiation is perfectly safe as a “cooling down” period is taken into account. This is an acceptable treatment and should be assumed for all blue colored topaz gemstones. The deepest of blues with a slight green tone is known as ‘London Blue’, a vivid medium blue is known as “Swiss Blue” and a light but bright icy-toned blue is known as “Sky Blue”. Imperial topaz is a golden yellow, pink to orangey-red and gains this color due to the presence of iron and chromium. First discovered in the Ural Mountains in Russia during the nineteenth century, pink and red topaz were reserved exclusively for the family of the czar hence its ‘Imperial’ title. Today industry dealers’ state that stones must exhibit specific pleochroic colors to be classified as Imperial topaz otherwise they are simply named golden topaz as they lack the prized overtones. hen you are tasked with bringing a dessert to a dinner party and are look-
ing for an alternative to the ubiquitous apple pie, give this sweet yet tangy confection a try. We suggest pairing with a scoop of vanilla bean ice cream and a drizzle of dark chocolate. Serves 8 - 12 INGREDIENTS:
Pie crust (your choice) 5 cups fresh or frozen cranberries 1 1/2 cups sugar (add up to another 1/2 cup if you like sweeter or decrease by 1/2 cup if you like tart) 1/2 cup chopped walnuts, toasted 1/4 teaspoon nutmeg 1/2 teaspoon cinnamon 1/4 teaspoon allspice pinch of cloves zest from one orange 4 teaspoons instant tapioca 2 Tablespoons cold butter, cut into small chunks Demerara sugar for sprinkling on top (optional) METHOD:

Preheat oven to 325°. Prepare your favorite pie crust. While it is chilling, combine cranberries, sugar, walnuts, spices, zest, and tapioca in a bowl.

Roll out the crust and transfer it to your tart pan. Pour in all of the filling as it will cook down. Dot the top of the tart with butter.
•
Bake for about one hour, until the crust is browned and the filling is bubbly. If the crust starts to brown before the filling is done, cover the crust with a ring of aluminum foil.
•
Sprinkle top with sugar, if desired. Allow to cool and set completely before serving.
