CHARTS, SUPER MARIO BROS. had just been released on Nintendo, and Ronald Reagan was in the White House. The year was 1985, and Del Mar was having its first go at designing a civic center. The city council tried again in 1991, enlisting the talents of internationally acclaimed New York architect Robert A.M. Stern. But it was not to be. Last month, after 33 years and multiple aborted attempts, our coastal craftsman-style civic center finally arrived. This time, Seattle-based architect Mike Jobes  of the Miller Hull Partnership  was the design principal on the project. He was far from alone, however, which may be why the project actually came to fruition this round. Assistant City Manager Kristen Crane diligently managed the entirety of the two years of construction. Mayor Dwight Worden provided vision of the facility as an amenity for the community. And former Council Member Don Mosier — whom Mike describes as “Awesome. Brilliant. He would constantly challenge us to do more, do better.” — consulted on all manner of sustainability. Spurlock Landscape Architects took on the giant task of setting the scene with the terrain. And Mike became a fixture at Les Artistes Inn a couple minutes from the site. “We sweep everybody out and start making sure that the next morning you won’t know that we had a party,” says Lacey. “Our overnight crew comes in and cleans, straightens, returns all the couches and chairs to their correct places. They'll reset the whole hotel and you'll walk in and not know that we just had a huge crowd of partygoers.” THURSDAY, FRIDAY & BEYOND “Our living room is just absolutely fabulous and for the rest of the week we’ll have live music in there, and we'll have pop-up food offerings from six o’clock on, in different styles,” says Lacey. If by some cruel twist of fate you’re out of town during opening week, L’Auberge will also offer pre-track music and food on Fridays throughout the season. “We'll start food pop-ups and music early in the afternoon on summer Fridays,” says Lacey. “People can come over from work, hang out and have drinks and snacks, before they start heading over to the track. We have a shuttle that will take them to the track, and we'll pick them up and bring them back here after.” You’ll also find music in the L’Auberge living room on Thursdays and Saturdays all summer long. But, if you do indeed miss this year’s opening-week events, don’t let these make-up opportunities make you complacent. Once you’ve bowled a 300 or screamed “Yahtzee!” from the rooftops, help your guests cool off—both from the heat and some intense competition. Lemonade, the resident summer drink cooler, is even better in frozen form. Try this tart, creamy concoction combined with Jell-O—the food that makes anything a little bit more fun—and hit it out of the park with these after-party treats. PRO TIP: Punch the popsicle stick through a cupcake liner to catch those messy drips!

FROZEN LEMONADE ICE POPS WITH JELL-O WHAT YOU NEED Popsicle molds Popsicle sticks Jell-O (we recommend berry blue and watermelon) 4 cups cold water 1 cup Country Time lemonade drink mix 1 tub (12 ounces) Cool Whip, thawed 1 tablespoon lemon zest

WHAT YOU DO 1. Prepare the Jell-O as directed on the box. Pour into dishes so about 1 inch thick and refrigerate until set. 2. Blend water, lemonade mix, Cool Whip and lemon zest until smooth. 3. When Jell-O is set, remove from dishes and slice into small cubes (they’ll need to fit in the popsicle molds). 4. Fill the popsicle molds about halfway with Jell-O cubes, then fill the remaining space with the blended lemonade mixture. 5. Add popsicle sticks if needed and freeze overnight.

FROZEN FRUIT POPS To make these frozen fruit pops, blend your fruit of choice (we recommend honeydew, pineapple, dragonfruit or nectarines) with water until smooth. Add water as needed for a thinner consistency. Once blended, pour the first fruit layer to fill 1/3 of the popsicle mold, then freeze to set (about 20 minutes). Once the first layer is set, pour the second fruit layer to fill 1/3 of the popsicle mold, and repeat until full. Freeze overnight and enjoy!
