The Perfect Steak ARTICLE BY CASEY WEBER, TALL GRASS MEAT COMPANY Nothing describes summer better than a good cookout! And what is a cookout without a good, quality steak and the perfect grilling recipe? 1. Thaw and acclimate the steak. For searing to occur, the proteins in steak need to be heated to at least 310°F. Tossing cold meat onto a hot grill lowers the temperature and can prevent a crust from forming, so it’s important that any frozen steaks are thawed completely before cooking. 2. Salt your steak 30-45 minutes before grilling. This causes the salt to draw moisture from within the steak up to the surface, where it dissolves the salt and creates a brine that gets reabsorbed into the steak where it breaks down tough connective tissues. 3. Oil the grate on the grill, not the steak. Use tongs and a paper towel dipped in vegetable oil to lube your grates. 4. Manage your heat well. Remember that your grill needs to be hot for your steak to get a good sear. But if it’s hot enough to cause your oil to smoke, it’s too hot.

5. Use the 60/40 rule. The best-tasting steaks are seared on both sides and cooked evenly in the middle. The simplest way to do that is to only flip your steak once. The 60/40 rule suggests that 60% of your cook time should be spent on one side, and 40% on the other. 6. Keep the lid closed. It may be tempting to peek, but trust the experts and keep it shut! Opening the lid makes your grill lose heat, which makes steaks cook unevenly. 7. Check for doneness. A meat thermometer will give you the most accurate temperature reading: • Rare: 120°F • Medium Rare: 130°F • Medium: 140°F • Medium Well: 150°F • Well: 160°F 8. Let your steak rest. Pull your steaks from the grill once they’re cooked to 5-10 degrees below your target temperature and rest for 10-15 minutes.
H E A LT H Y T I P S fo r t h e NEW YEAR inging in the new year also comes along with new R resolutions to encourage ourselves to become the best versions of ourselves. It is a great opportunity to look to ourselves, yet placing an excessive emphasis on your New Year’s Resolution will ultimately be met with disappointment. So many New Year’s Resolutions, and goals in general, fail when they lack specificity, a plan on how the goal will be achieved, accountability, and when the goal is unrealistic. To ensure success, try creating a small goal focusing on one habit that you’d like to address. This small goal can be reassessed and modified periodically as you are seeing your desired change. Finally, during this time, there are many promotions for different fad diets. Fad diets are proven to not be effective in sustainable weight loss and most have undesired associated health consequences. Various characteristics of a fad diet to look out for include promise of an increased amount of weight, specifically in a short window of time; requirement of the elimination of a particular food group; promotion of one specific food or food group; and encouragement of a particular product or liquid meal replacement. Given the promised results, participating in a fad diet can be tempting; however, it is essential that lifestyle changes are sustainable. Unfortunately, the faster weight loss is achieved, the faster you will gain it back when your behaviors deviate from the diet; therefore, sticking to small changes at a time can promote an overall more healthful and sustainable outcome.

The Best Green Smoothie After a few weeks of indulging in holiday celebrations, January always makes me crave some fruit and veggie packed recipes; something a bit healthier. This green smoothie is always my first starting point. Not only is it pack with nutrients, it’s filling, and delicious. Green juices often get a bad reputation but I promise you this is the best one I’ve ever tasted
IN G R E D I E N T S • 2 heads of romaine lettuce • 1/2 cup spinach (usually I just put in a giant handful) • 1/2 cup coconut water • 1 whole banana, peeled • 1 whole apple • 1 whole pear • 1 whole lemon, rind removed • ice
and I swear every time I drink it consistently, my skin is noticeably brighter. Thanks, vitamins! The recipe below requires a regular sized blender (think Vitamix) as there are many whole ingredients but it does produce two large smoothies which is great for sharing or storing in your refrigerator for the next day. Enjoy!
DIRECTIONS 1. Combine romaine, spinach and coconut water and blend to create more space in the blender. 2. Add your fruit and ice and blend until smooth. You can add more water here if you prefer a thinner smoothie. 3. Pour into a glass & enjoy!

YOU'RE AN INSTRUCTOR AT PURE BARRE DARIEN, TELL US A LITTLE BIT ABOUT WHY YOU LOVE THAT WORKOUT AND WHAT MADE YOU DECIDE TO BECOME AN INSTRUCTOR?
KB: I fell in love with Pure Barre after my first class. I immediately saw how this is a lifelong workout with ample physical and mental benefits. I grew up dancing ballet and jazz and never thought I'd find a workout that evoked the love I had for dancing as a kid into my adult life. I love that it is musically driven (I think this is my favorite aspect), is individualistic while being community driven at the same time, allows you to take your body at its own pace (which can differ from day-today) and grants you 50 minutes to yourself. This is not a workout you can get lost in your thoughts and phone in; you have to be present and in the moment which I think we can all agree is not as easy as it sounds when we have so much going on in our lives. When I walk out of a Pure Barre class, I feel physically strong and mentally relaxed. I struggled with the concept of becoming a teacher because of how reserved I can be. It's not uncommon for me to not be heard in a conversation at a moderately loud restaurant because I can be soft-spoken and my heart rate drastically increases if there's a chance I have to speak in front of a group of people. Considering these are two key components of leading a Pure Barre class, I was conflicted. I knew I believed in the workout and all the good that it brings to anyone who walks into the studio (mentally, physically and emotionally) but

“When I walk out of a Pure Barre class, I feel physically strong and mentally relaxed.” I wasn't sure if I was the right person to lead others through that. Thankfully the studio saw something in me that I didn't quite yet see in myself and before I knew it, I was on the plane to Denver, embarking on an adventure that has helped form who I've become as a woman, a wife and a mom. I never fully understood someone who said they loved their job before I started teaching Pure Barre. I thought a job was something you did to fund the life you wanted to live. I had no idea a job could become a passion, something that excited you daily, something that made your heart happy. I love teaching Pure Barre and I can't imagine my life without it. Everything that I love about the workout is why I ultimately got on that plane and why I wanted to teach. I love guiding folks through their workout for the day - encouraging and motivating members to take 50 minutes to push themselves both physically & mentally, giving them 50 minutes of their day to focus on them. One extra push up on their toes, taking their seat a half an inch lower in chair, staying up for the 90 second plank - all things we strive towards as early as our first class - I get to help people accomplish the goals and intentions they set for themselves and there is no other feeling like it when they come out of class with a smile, knowing they achieved something they hadn't yet been able to do.
WHAT IS YOUR FAVORITE SPOT TO PICK UP A HEALTHY SNACK/MEAL?
KB: Barvida in Darien is my go-to for a quick, healthy and unbelievably delicious
snack & lunch. After a great workout (or a morning of teaching back-to-back classes), I love to pick up the Mood Manager with added vanilla protein powder and the Vitamin CEO. I am both lactose & gluten free so it is rare that I can walk into a restaurant and feel comfortable ordering pretty much anything I want. As a bonus, their smoothies come in these adorable lidded glass jars that make an excellent salad dressing container!
WHAT IS YOUR FAVORITE WAY TO UNWIND?
KB: I grew up learning and loving to cook from a very early age. Reading cookbooks, watching cooking shows and helping my parents in the kitchen was always something that brought me happiness and peace. There is nothing that brings me more joy than walking into the market looking for the best, freshest ingredients and creating something for my loved ones. When I'm in the kitchen cooking (while listening to classic rock!), I'm at my most relaxed. Watching my family then enjoy the meal just wraps it all up in a bow for me!
WHAT ARE YOUR HEALTH & WELLNESS GOALS FOR 2024?
KB: For 2024, I have a few health & wellness goals I would like to work towards. Physically, I would like to improve on my flexibility. Pure Barre has brought me such a long way from where I started. I have always wanted to do a split and for the first time this year (during thigh stretch this summer), that seemed like it was a true possibility. I believe if I keep CONTINUED >

working towards it, 2024 might just be the year I can complete one, fully. If there's one thing everyone knows about me, it's that I'm a true night owl. I seem to come to life after 5PM which is a big reason I love teaching the evening classes. I don't know many at the studio who don't joke when they see me on the schedule for an 8AM class. I could never teach a 6AM class (I envy those who do!) but would gladly host a 12AM class if that was of interest to anyone! While I don't think I'll be a morning person any time soon, I do see how I can improve upon the time that I'm awake. I would love to commit to disconnecting from electronics earlier in the evening and using my time to read more books. I have been known to read cookbooks in bed (very similar to a novel); I have a library that I would like to make my way through in 2024.

DL: What inspired you to become a public speaker and write a second book? LF: My passion for giving back, whether through benefit auctioneering or inspiring others, led me to become a public speaker. The desire to share insights on confidence, sparked by frequent questions from women asking about my journey, inspired my second book. I aim to empower others to claim their confidence because, as I believe, confidence is not born; it is made. This mission now extends to my podcast, "Claim Your Confidence," allowing me to reach even more individuals.
DL: What motivates you and keeps you passionate about what you do? LF: The unwavering support and encouragement from my family have been the driving force behind my fearless pursuit of new challenges. Their belief in trying anything without the fear of failure serves as a constant inspiration, fueling my passion for what I do. Their influence has not only shaped my professional journey but also instilled a profound sense of motivation to continuously explore and embrace new opportunities.
DL: What are some of the biggest challenges you've faced in your career, and how did you overcome them? LF: Historically, auctioneers have been male. When I trained as an auctioneer, I always thought I had to wear a black suit on stage and affect a formal British accent so I didn’t stick out. That all changed when I realized I’d be far more successful selling as myself, in my bright, bold dresses and statement jewelry and my big Southern personality. Whenever I need a reminder to claim my confidence I use the SLAM method - a surefire way to rid myself of Imposter Syndrome. • S - stop counting yourself out. • L - listen to what people are saying and don’t make up a negative ending • A - accept there are no good stars in life • M - make your point and don’t back down
DL: Describe a typical day or week in your professional life. LF: No two days in my life are the same, but they all touch my true passions: auctioneering, motivating and inspiring others, and exploring the world. training gin auctioneers. I find time to do some sort of exercise every day whether that be running or biking - or simply walking to school drop off and all my meetings in NYC which can easily mean 5-6 miles of walking. Exercise is a huge priority for me - the way we show up for our body is the way we show up for everyone around us.
DL: How do you balance your work and personal life? LF: I don’t believe a true work life balance exists. I prefer to think of the balance as sprint & plateau periods. My job is SO busy in the prime auction season (fall and spring), I spend every minute when I am not onstage or traveling with my family. During the slow periods I have more coffee meetings, informational interviews and lunches. In the off seasons, I make it my mission to travel with my family as often as possible. Throughout the year, though, I find that open communication with both your partner and your kids is crucial - especially when there are very busy periods.
DL: Can you share details about any current projects you're working on? LF: I’m thrilled to have just announced my first, annual “Claim Your Confidence Retreat”, which will be held in January at Shou Sugi Ban House in the Hamptons. If you are looking to kickstart 2024 with a boost of confidence and a road map to help you get there, this retreat is for you! I designed the retreat as an intimate gathering to help attendees build their confidence from the inside out. I’m taking many of the concepts I discuss in my books – from networking to the art of negotiation to public speaking – and turning them into interactive workshops and oneon-one discussions that will arm attendees with the tools they need to kick-off the New Year with intention and confidence. My hope is that everyone who attends this retreat will leave feeling rejuvenated and ready to jump into 2024 with a clear vision of their goals, and a roadmap for how to achieve them.
DL: With January being our Health and Wellness issue, what would you say to inspire people who have made a resolution to change their approach or mindset going into 2024?
LF: Start by writing down your three biggest priorities in life, and then make sure that whatever you are pursuing in 2024 aligns with those values. Always remember that you can change your life at any time, and that anything is possible when you see roadblocks as hurdles instead of barriers. Pineapple Banana Bowl INGREDIENTS: • 2 cups frozen pineapple • 1 frozen banana • 1 handful spinach (optional) • 1 tablespoon freshly squeezed lemon juice • 1 tablespoon manuka honey (or other natural sweetener) • ¼ inch fresh ginger • ½ cup coconut water
Start your day with a nutritious and vitamin-packed breakfast. Smoothie bowls are a great way to add a variety of fruits and vegetables. Top with chia or flax seeds for an extra omega-3 boost, nuts or seeds for added protein, or sliced fruit for additional vitamins and fiber. Including a hint of turmeric or ginger can aid in digestion and has anti-inflammatory properties. Eating a variety of fruits and vegetables can aid in cellular repair and gut health, and smoothie bowls are a delicious way to incorporate more into your day. Try some of these simple recipes, or create your own combinations to give your health a boost.
