This is the 60th issue of Cypress Lifestyle and marks our five-year anniversary! What an amazing journey it’s been!

When I started this publication in 2018, I wanted to connect our community by sharing intriguing stories about the residents, nonprofits, businesses, and history of Cypress. Five years later, I am honored to have shared stories about so many amazing people and organizations that make Cypress the place where we love to live, work and play.

I have always said that without our advertising partners, we could not bring you these stories every month. I am beyond grateful to each one of my business partners listed on the opposite page. 1-7: Bridgeland hosted the 15th annual Nature Fest on Saturday, May 6. This year’s event brought more than 6,000 attendees to Oak Meadow Park, raising $10,500 for Cy-Hope, which provides opportunities for at-risk children in the Cy-Fair community. Eventgoers enjoyed educational programming from Texas Snakes, Crocodile Encounter, Wildlife Revealed and Jungle Jack’s Magic Show as well as headliner Jeff Musial, a nationally renowned wildlife expert and TV personality. Other activities included pony rides, a petting zoo, kids’ inflatable zone, naturethemed exhibitors, outdoor laser tag, face painting, kids’ craft area, and balloon artists.

8-10: The Cy-Fair Women’s Club awarded 25 CFISD 2023 graduates $1000 scholarships at their annual reception held in May. The non-profit places particular emphasis on the candidates’ community service, grades and extracurricular activities. To date, CWC has awarded over $200,000 to more than 200 students. The funds for the scholarships are generated from the community, as well as their Shop ‘til You Drop Marketplace fundraiser held in September. 11-14: JST Cares hosted its annual “Putting for a Purpose” benefitting Elijah Rising, a 501c dedicated to combatting sex trafficking through prayer, awareness, intervention, and restoration. Creekwood Grill owners Brian Sandel and Mark McShaffrey, recently opened PO's at Creekwood Grill, a 21 and up bar with a limited menu. The building sits next to Creekwood Grill and was the site of a burgers and beer restaurant by the same name established in 1980. TELL ME A LITTLE BIT ABOUT YOURSELF.

Howdy! I am Shannon Raske, a proud mother, Cypress resident of twenty-two years, and photographer and owner of Lunalux. With little more than a BFA in photography, a battered Nikon and a desire to kick some butt, I landed my first client in 1998 and I’m still going! I shoot everything from people to food to pets. But! I don’t do weddings! When I put down the camera, I’m usually editing photos, cooking or hanging out with my family.

WHAT FIRST GOT YOU INTERESTED IN PHOTOGRAPHY?

Photography just spoke to me. I love looking through the viewfinder, framing my shot, pressing the shutter and hearing that lovely sound of the camera recording the moment. I started out using film and developing negatives in the darkroom. I remember the excitement of picking up contact sheets from my local lab – it resembled Christmas morning! The thrill of seeing what I had captured days prior was intoxicating.

WHAT LED YOU TO STARTING YOUR OWN PHOTOGRAPHY BUSINESS?

I was influenced by entrepreneurs and encouraged to start my own business. So, I did! I am a documentarian at heart so it’s pretty easy for me to help others document their lives…true joy!

WHAT IS YOUR GREATEST PERSONAL ACHIEVEMENT?

Honestly, being a mother. My daughter is the coolest girl I know. We are very close and have tons of fun together despite the 171 miles between us. She inspires me, makes me laugh and gives some pretty good advice. She is my best friend.

WHAT IS THE PROFESSIONAL ACCOMPLISHMENT YOU’RE MOST PROUD OF?

I had the opportunity to photograph George Strait at an event at Perry’s Steakhouse several years ago. I captured a lovely photo of George holding a pretty beverage leaning against the bar. I told George Strait how to pose–woohoo! As Mathew McConaughey would say, Green Light!

WHO IS YOUR INSPIRATION?

My friends and family inspire me. Doing the right thing, doing the wrong thing, love, acceptance and forgiveness… We’re all just living life and taking care of the people we love. There’s an art to that and the people I surround myself with get it.

WHAT PIECE OF ADVICE WOULD YOU GIVE YOUR YOUNGER SELF?

Always know your worth and respond to life accordingly. Oh, and when you’re offered a chance to spend the weekend with Willie Nelson, Woody Harrelson and Owen Wilson – do not decline!

WHAT’S YOUR FAVORITE WAY TO GIVE BACK?

In 2020 when covid hit, a friend suggested that I take pictures of families on their front porches at no charge, just to remain active in the community. I thought it was the dumbest

idea ever. Then someone contacted me about doing that very thing! I worked on a donation only basis and raised $5,000 for the Houston Food Bank. I was thrilled. Now that’s giving back!

WHAT’S A PRO TIP EVERYONE SHOULD KNOW WHEN HAVING THEIR PICTURE TAKEN?

Ready for a few pro tips on posing? Here we go… Always, always, chin forward and slightly down. This technique hides a double chin and sagging neck. And your body, you ask? Well, turn your hips at a 45 degree angle to the camera and keep your shoulders back. This creates a more defined jaw, minimizes the width of the hips and thighs and can hide those lovely muffin tops and love handles.

Fabulous Flatbread

This dish is from Chef Evon Profitt, the director of culinary operations for all of Westside Concepts in Arizona. This flatbread with grilled peaches, house-made rosemary paneer cheese, soppressata, fresh mint, and pistachios with a balsamic drizzle is to die for.

Grilled Peach Flatbread with House-Made Rosemary Paneer Cheese

Yield: 4 flatbreads

INGREDIENTS:

• 2 peaches cut into 8 pieces each

• 12 slices soppressata or any salami

• Fresh mint

• 1 tbsp. olive oil

• ¼ cup pistachios, chopped

• Balsamic reduction

• 4 baked naan bread

FOR

THE PANEER CHEESE:

• 6 cups whole milk

• 2 tbsp. rice wine vinegar

• ½ tbsp. fresh rosemary, chopped

• 1 tsp. kosher salt

HOW TO MAKE PANEER CHEESE:

Paneer cheese is made by curdling milk using an acidic additive such as lemon juice or vinegar. Paneer cheese does not use any kind of rennet, nor fermentation or aging.

In a pot, bring 6 cups of whole milk to 200 degrees. Once milk has reached temp., stir in the 2 tbsp. of vinegar and turn off heat; milk will begin to separate. Allow milk to curd for 5 minutes, strain whey and curds into a cheesecloth-lined colander. Transfer curds to a mixing bowl and add chopped rosemary and 1 tsp. kosher salt, mix ingredients together, reserve the cheesecloth for the next step. Place the curds back into the cheesecloth, pull the corners of the cloth together, ring out excess whey from the curds, and hang for 30 minutes to continue draining. Once the curds have drained, place cheesecloth-wrapped curds back into the colander and place a heavy item on top, in order to press the curds into shape and press more of the whey from the cheese, for 3-4 hours. Use cheese fresh or keep refrigerated up to 4 days.

FLATBREAD:

Brush olive oil onto both sides of naan flatbread, and place in oven on rack for 10 minutes at 400 degrees, or grill for 2 minutes each side. Grill peach slices for 2 minutes each side, or place in oiled sauté pan till each side begins to caramelize. On a cutting board, lay flatbread down, and place grilled peach slices around flatbread. Take small pieces of Paneer cheese and place throughout over the peaches. Be creative and find place for the soppressata or salami of your choice. Garnish with crushed pistachios and torn fresh mint. Cut flatbread, transfer to serving plates, and drizzle with balsamic reduction.
