This month we get to celebrate not only our nation’s birthday but the sense of adventure and reflection that summer awakens in all of us. Hopefully, you’ll get to enjoy some of our local Fourth of July festivities and get time to relax and unwind with family and friends. There’s nothing quite like getting to reconnect with those we love for the best holiday of the summer season. And if you need help figuring out what to bring, check out our culinary creations section for some inspiration starting on page 14. While many of us will choose to travel this summer it’s worth saying that some of the best summers are often not filled with constant activities. The dog days of summer can be a season where we learn to move at a slower pace and relish the simple moments around us. I always enjoy reflecting on things that remind me of my own childhood. Some of my favorite summer memories are of me and my brother and sister loading up into the back of my dad’s old pickup truck to go for a long swim at the neighborhood pool. Afterwards, we’d get back home, sit on our towels still soaked with pool water and eat popsicles while we watched cartoons. We hadn’t a place to be or care to think of. These days, it really makes me smile to do some of the same things with my daughter, Grace. What about you? What are some of your favorite summer memories? Drop me a note because I’d love to hear your story. This month, I hope you are able to enjoy some of the many things Cypress offers during these sultry summer days. Cy-Hope Acquires New Property for Baseball Program The non-profit Cy-Hope recently acquired a seven-acre property near Campbell Middle School with plans to use it to expand its Dierker’s Champs youth baseball program. Cy-Hope is fundraising to develop the field with the total cost of the project between $3-$5 million. Colorful Summer Salads P ERF EC T S A L A D S FOR A SUMMER COOK-OU T Add a festive flair to your summer gatherings with these light, fresh and beautiful side salads.

B A C O N & S P IN A C H O R Z O S A L A D INGREDIENTS • 8 strips bacon (about 8 ounces) • 12 ounces dried orzo pasta (about 2 cups) • 8 ounces baby spinach (about 6 packed cups), coarsely chopped • 1/2 cup oil-packed sun-dried tomatoes, drained and chopped • 1 medium shallot, diced • 1/2 cup white wine vinegar • 1 1/2 tablespoons honey • 1/2 teaspoon kosher salt • 1/4 teaspoon freshly ground black pepper • 4 ounces Asiago cheese, diced INSTRUCTIONS 1. Place the bacon in a large skillet over medium-low heat. Cook until the fat has rendered out and the bacon is crispy, flipping halfway through, about 10 minutes total. Transfer the bacon to a paper towel-lined plate. Once cool, break the bacon into small crumbles. Meanwhile, bring a large pot of salted water to a boil over medium-high heat. 2. Reduce the heat to low. Add the shallot to the skillet and cook, stirring occasionally, until soft, about 3 minutes. Add the vinegar, honey, salt, and pepper and whisk until emulsified. 3. Add the orzo to the water and cook until al dente, 6 to 7 minutes. Drain well. Transfer to a large bowl. Add the spinach, sun-dried tomatoes, and half of the dressing. Stir gently until the spinach is slightly wilted. Drizzle with the remaining dressing, add the bacon and cheese, and stir to combine. Serve warm. Courtesy of Kitchn.com

SOUTHWESTERN QUINOA SAL AD INGREDIENTS • 1 cup uncooked quinoa, well rinsed • 1/2 teaspoon salt • 2 cups water • 1/3 cup diced red onion • 2 tablespoons lime juice • 1 (15-ounce) can black beans, drained and rinsed • 1 cup frozen corn, defrosted, OR 1 cup of fresh corn, parboiled, drained and cooled (approximately the amount of kernels from one ear of corn) • 3 medium tomatoes, seeded and cut into chunks • 5 ounces Queso fresco, Queso Panela, fresh Mozzarella or other mild farmer's cheese, cut into 1/4-inch to 1/2-Inch cubes • 1 jalapeño, seeded and finely chopped • 1/4 cup chopped cilantro, including tender stems, packed • 3 tablespoons extra virgin olive oil

INSTRUCTIONS 1. Put the rinsed quinoa, salt and water into a pot and bring it to a boil. Cover and simmer gently until the quinoa absorbs all the water, about 10-15 minutes. Remove from heat and let sit for 5 minutes. Place into a large bowl and fluff up with a fork to help it cool more quickly. 2. While the quinoa is cooking, prepare the rest of the salad. Soak the red onions in the lime juice and set aside. Soaking the onions in lime juice (or lemon juice or water) helps take the edge off them. 3. Mix the prepped black beans, corn kernels, tomatoes, cheese, jalapeños, cilantro, and oil into a large bowl. 4. When the quinoa has cooled, mix it into the bean mixture. I am standing on the edge of a Swiss mountain, looking down at a steep, rocky cliff. Tethered to my paragliding instructor, I listen as he gives his brief, but vital instructions, about what would happen next. “When I say run, run,” he says. “And don’t stop until I tell you to stop, even if we are in the air.” That was it. All the words I hear before jumping off of a cliff. Moments later, we both sprint toward the edge of the mountain, only for the paraglider to catch the air at the exact moment it needed to before the cliff drops away. While my instructor navigates the parasail, I take in the breathtaking views of Lake Geneva, a glistening crescent-shaped lake shared by France and Switzerland. My instructor points out that from the air, we could see both countries and the border in between. He also tells me about a famous tree that resides in the middle of Lake Geneva, as well as the iconic Château de Chillon, a thousand-year-old Swiss castle built on the water’s shores. This is Switzerland: a country filled with majestic sights and a vivid history. This bucket list location has activities for everyone—from sightseeing, to nature-filled adventures to shopping. The country is landlocked, bordered by five other countries - Au stria, France, Germany, Italy, and Liechtenstein - so you can easily visit one or more of these countries during your stay. Here are some of the ways to make the most of your travels to this mesmerizing country.

can seem intimidatingly dangerous, it is actually very safe for adventurers of all ages, with a minimum age of just six years old. While there are several good sights to soar above, two of my personal favorites include over Lake Geneva or through Mont Blanc, France. While you can parasail during all seasons, there are a few tips and tricks that make for an enjoyable flight year-round. Sunglasses, hiking boots, and sunscreen have proven to be useful tools in the mountains. If flying during the wintertime, expect to see the mountainside dotted with both snow and skiers. If sailing during the summertime, you may catch a glimpse of a few lakes or medieval castles.

PARASAILING

SIGHTSEEING

Parasailing is a popular activity in Switzerland, and there are several locations around the country that offer it during all four seasons. Most parasailing sessions last for about 20 minutes of air time, and offer great views of Switzerland. While parasailing

HIKING

Some of the best hiking can be found in Annecy, France—approximately a 45 minute drive from Geneva, Switzerland. Lake Annecy is surrounded by a multitude of mountains, perfect for hiking in the spring and summer. The trails on these mountains are ideal for all levels of hiking, catering to the beginners, the experienced, and those in between. After soaking in the beautiful views from up above, make sure to explore the restaurants that Annecy has to offer.

The country of Switzerland is 731 years old, and has been the setting of several historical events during its lengthy lifespan. Because of this, there are several medieval castles that are worth a visit. In Switzerland, you can get a pass for the historical castles, and visit them at your leisure. One of my favorites is the Château de Chillon, located just outside of Geneva. This castle is located just on Lake Geneva, and is surrounded by mountains, rivers, and trails for both walking and hiking. Not only are the views amazing, but the castle itself is a beautiful work of architecture. Tours are offered in all languages, or you can simply take a pamphlet for a self-guided tour. After touring the castle, visit the ice cream stand nearby to enjoy a sweet treat on the water before embarking on a walk around the lake.

You can also choose one of the many scenic train rides to explore the country. One of them, The Grand Train Tour of Switzerland lets you travel in style as you discover the country through panoramic views along the route. You can hop on and off to visit the different towns and landmarks, experiencing the entire tour using your Swiss Travel Pass.

SKIING

Known as one of the best ski destinations in the world, Zermatt, Switzerland is the perfect place to learn, or practice your skills. Sporting incredible views of the famous Matterhorn, a towering Alpine mountain that you may have seen on Toblerone Chocolate boxes. Take the incline shuttle from the Zermatt city center to any height on the initial mountain, then from there, explore the mountains surrounding the Matterhorn. Zermatt is on the border of both Switzerland and

Italy making it an ideal spot for tourists wanting to pack in multiple sights and activities. If you start skiing in the morning, you can reach Italy in time for lunch and take the lift back to Zermatt before dinnertime. Skiing is offered year-round in Zermatt, as it snows all months of the year. If you go during a warmer season, however, be prepared for shorter skiing hours. If skiing is not for you, don’t worry! Zermatt also features a variety of shops, restaurants, and outdoor activities. There are numerous hiking trails from the city center, and tobogganing down the mountain is a fun activity for all ages!

BIKING

One of the most relaxing things to do is to bike around the city of Zurich. Follow the waterways of Zurich to the heart of the city for a unique glimpse of both wildlife and city life.

Europeans are known for having impeccable style, and the Swiss are no different. When visiting, make sure to stop by one of the many shoe stores, as the Swiss are known for their love of stylish tennis shoes. Some styles are released in Europe before America, so be sure to keep your eyes peeled. Local Swiss brands are also often sustainably made, and very trendy. Take a few hours out of your trip to explore the shops around Switzerland.

DINING

While in Switzerland, it is necessary that you visit a traditional fondue restaurant. These restaurants are easy to find in all Swiss cities, and are perfect for a quick bite, lunch or dinner. Since Switzerland is also surrounded by five European countries, it can be a fun adventure to visit another country for a bite to eat. For example, if you are staying in Geneva, France is about a 30 minute-drive away.

Fitness lovers can turn up the heat on their workout routines at the new Hotworx Barker Cypress, a stylish studio that combines high-energy programming inside heated, infrared saunas. The 24-hour gym features sessions inside private and semi-private wooden sauna boxes equipped with infrared lighting and digital instruction. Sessions, all coached by virtual instructors, range from fat-blasting 15-minute cardio workouts on a stationary bike or rower, to gentle–yet effective–hot yoga and pilates sessions. Each room is equipped with its own controls for temperature, infrared light and volume so clients can make their time as customized and efficient as possible. The heat–which can be set to be as high as 131 degrees–serves to raise the body’s core temperature while the infrared light penetrates the skin and helps speed up the body’s post-workout healing. The result is twice the workout in half the time, says Melissa Rabuck, owner of Hotworx Barker Cypress. The short but intense sweat sessions make Hotworx ideal for busy moms who want a unique spin on exercise and need targeted, effective routines. Hurricane season is underway, making summer a peak shopping season for those interested in flood insurance. We sat down with Robert Oncken, founder of Oncken Insurance Agency, to learn more about some of the sweeping changes happening with the industry.

WHAT’S CHANGING ABOUT FLOOD INSURANCE THESE DAYS?

It’s a little hard to say right now. This is a complete revamping of the rating system not just a rate increase. Some rates will get better, some worse. Let’s use my house as an example. I had a FEMA policy that was $572 per year. I moved to a private policy last year and that one was $500. I just quoted my home yesterday for a FEMA policy and it was running about $1,800 per year. Another important issue, if you’re planning to renew your flood policy don’t be late with the payment. There is some level of grandfathering going with renewals on now that offsets the price increase. But once your policy lapses (around 29 days after your renewal date), you won’t be able to reinstate the policy and you will lose all of the grandfathering protection. A new FEMA policy will most assuredly cost you more than the renewal.

FEMA is doing away with its pre-packaged preferred-risk policy and revamping their pricing structure. Those policies were only available to people in the lowest risk flood zones and everybody in those flood zones pretty much got the same package and price. The intent of the new pricing structure is to rate the property based on the characteristics of the individual property and not the flood zone as a whole. They consider characteristics such as how far the home is from repetitive flood areas and elevation. This now applies to both low and high-risk flood areas. Customers in higher-risk flood zones used to need a flood elevation certificate. That certificate was used to evaluate the risk of that property. That process now applies to ALL flood insurance policies, although the certificate is optional and is no longer required. It could still make sense to obtain that certificate, but it may or may not save you money. FEMA’s changes rolled out in full starting with the April 2022. If you see rates change dramatically, it’s probably due to the new rating program.

WHAT’S YOUR ADVICE TO HOMEOWNERS NOW THAT WE’RE ENTERING THE HURRICANE SEASON? Talk to somebody about your flood insurance options, even if you already have flood insurance. Look at the cost and the benefit to determine the value a flood policy can give you and your family. You want somebody who can give you options and explain things to you so you know what you are buying. It may be better to look at a private flood policy instead of FEMA. An independent agency (like our

WHY SHOULD SOMEONE CONSIDER FLOOD INSURANCE? There’s a level of comfort knowing that you’re going to have help should your house flood. When Hurricane Harvey happened, we had water up to the threshold on all four sides of our house. So we picked everything off the floor that we could to try to mitigate what was about to happen and we went to bed for the night. I was fully expecting there to be water in the house when we woke up. But when we woke up the next morning, the water had receded just a few feet – just enough to see some grass.
