I was so excited to catch up with former Olympian Jonathan Horton. You'll find out what he's been up to lately, and it's obvious there is no slowing him down. CY-FAIR SENIORS WIN SCHOLARSHIPS FROM THE TOUCHDOWN CLUB Cy-Fair High School senior Graham Lakin placed second for the Touchdown Club of Houston’s 2018 High School Scholar-Athlete of the Year. Five finalists hailed from CFISD high schools, which was the most from any area school district. Joining Graham in being honored from CFISD were seniors Travis Arey, Cypress Ranch High School; Demetric Mass, Cypress Springs High School; Dias Redmond, Cypress Ridge High School; and Jake Tesch, Cypress Woods High School. All finalists received a $500 scholarship, with the top three honorees receiving additional scholarship money.

Success Means Sticking the Landing CATCHING UP WITH OLYMPIAN JONATHAN HORTON SUCCESS MEANS STICKING THE LANDING. Just ask Olympic gymnast and Cypress Texan Jonathan Horton. He started gymnastics when he was 4 years old. He fondly remembers what led to his parents enrolling him in gymnastics class with a chuckle. He decided to go explore a store by himself during a shopping trip with his mom. They found Jonathan 25 feet above them after he had climbed a pole. His father suggested they enroll him in gymnastics, and the rest is history. Fast forward to the 2008 Summer Olympics, and Jonathan won the silver medal on high bar. He is the 2010 all-around bronze medalist, and he is a two-time U.S. National all-around champion. “Gymnasts have to be strong, flexible and they have to be fast learners," he says. What inspired him to pursue gymnastics at the competitive level was watching Carrie Strug stick the landing on her broken ankle during the vault routine at the 1996 Olympics. “That moment shifted my mind. I knew what I wanted. I started rising up the competitive ranks and at 22 years old made the Olympic team," he says. Every day in training, he visualized the pressure of the Olympics to prepare for the real thing. He had to focus on the form and function of the moves he had practiced for years and trust his ability. "It was 90 percent mental and 10 percent physical. I had to work hard to wrap my head around the environment at the Olympics visualizing the lights and cameras and create the nervous energy in my head before the competition. Sheild Bearer Offers Family Counseling and Tr a u m a R e c o v e r y THE NONPROFIT OFFERS PROGRAMS TO CYPRESS RESIDENTS IN NEED

FRONT LINES CHAMPIONING HEALTHY RELATIONSHIPS, HEALTHY FAMILIES AND STRONG COMMUNITIES. Shield Bearer promotes individual growth and development, preserves and enriches relationships and strengthens and unites families. The organization helps individuals become whole so they can engage in relationships in a full and healthy way. Through a variety of mission-focused programs and services, including professional counseling, seminars, retreats and workshops, Shield Bearer is an active partner with community-based organizations, hospitals, universities, schools and churches. Shield Bearer’s counseling expertise lies in trauma recovery and relationships. Their trauma specialists work with survivors of human trafficking, veterans, crime victims and their families, and disaster survivors. On Aug. 25, Hurricane Harvey began dropping 50 inches of rain across the Houston area, leading to epic, catastrophic flooding. The historic and unprecedented flooding affected the entire area, shutting down transportation and ruining homes. Sadly, dozens lost family members, tens of thousands lost their homes and hundreds of thousands lost their vehicles. More than 6 million people were affected by school and business closures. As the rains lifted and the flood waters began to subside, the reality of the losses began to set in. Shield Bearer staff and volunteers jumped into action in the rescue and restoration efforts, volunteering at shelters and collecting and distributing clothing, food, diapers, formula and cleanup supplies. While their offices were closed due to road closures, their client relations specialists remained available to take calls and schedule appointments. Counselors kept their appointments virtually, through conference calls and HIPAA-compliant video sessions. 14

Shield Bearer knows what it means for affected flood survivors. They walked with Katrina evacuees, Ike survivors and last year’s “Tax Day” floods through the devastating trauma of losing so much. Their expertise in working with sex traffic survivors, veterans and survivors of crime has been put to use bringing peace and hope to Hurricane Harvey survivors. One of Shield Bearer’s significant success stories is a family of five whose apartment complex was flooded by Hurricane Ike. They called with trauma-related symptoms. Two of the elementary schoolaged children were unable to sleep as their nightmares wakened them. Their 13-year-old had started cutting her arms. Her mom was depressed and had no motivation to get out of bed anymore. Their dad was drinking any time he was not working. Shield Bearer’s team of trauma specialists began working with them each week during individual sessions and every other week in a longer family session. When counselors met with them, they discovered the family members were Katrina evacuees who had lost everything a few years earlier. The double trauma of losing what they had rebuilt again had delivered a devastating blow to their psyches. Over the course of 23 months, each moved from hopelessness and despair to peace and hope. They each began to see a future. Instead of feeling like they have no control, they began to see how they could change their world for the better. Instead of fighting and blaming, they began to see their other family members as a place of hope and strength. After the mother’s heart and mind were in a better place, she decided to go back to school. A few years later, she joined the Shield Bearer team as a counselor. She is someone who is able to look into the eyes of flood victims and relate to them since she has experienced the same trauma firsthand. And for that reason, she can set them on a path toward healing that much faster. Shield Bearer has become the largest professional counseling service provider to sex traffic survivors in the Greater Houston area. They have helped heal the hearts of hundreds of victims as young as 12 years old. Their core team of complex trauma counselors are leaders in sex traffic survivor treatment across the United States. They help train other counselors to work with this population and work with the majority of safe houses, shelters, residential programs and drop-in centers across the Greater Houston area to provide counseling services to survivors of sex trafficking. Shield Bearer could not do what they do without volunteers. From stuffing gift bags that each client receives during their first visit to helping with events—like the March 30 5K and Family Fun Run—and data entry, Shield Bearer needs volunteers to help with all aspects of the effort. The best way to keep up with volunteer needs is to complete a volunteer application and go through a brief, one-hour orientation process. Volunteer positions are always posted at ShieldBearer.org. Shield Bearer offers a monthly community breakfast that includes facility tours and questions about how to get involved. Interested parties can RSVP for the orientation by contacting Events@ShieldBearer.org. The orientation session occurs monthly the first Tuesday of every month from 9-10 a.m. All of their prevention, training and counseling services in any of their six locations are accessible by contacting their client relations specialists at 281.894.7222. 2. Cut tops and bottoms off beets and place in rosemary. Loosely wrap foil and place in oven for 60 minutes. The beets are done when you can easily slice a knife through them. 3. When beets are done, immediately squeeze juice from 1 orange over the top and let rest, reserving juice. (This step is essential to sweetening the beets and removing some of the earthiness.) 4. Remove rosemary sprig and strip fronds (leaves) from the stem. Dice. 5. In a small bowl, combine goat cheese and dried rosemary; add a splash of milk. Mix in for a creamy texture. Set aside. Slice baguette into thin rounds and line onto serving dish. 6. Dice red onion and add to a small bowl. 7. When beets are ready, dice into bite-sized squares; chop basil leaves and add to onions. Drizzle with honey and combine with reserved juice; stir together. 8. Assemble your appetizer by topping each round with herbed goat cheese and arranging on serving platter. When ready to serve, top each round with beet mixture and finish with a few sprigs of microgreens.

Spatchcock Chicken

Spatchcock is replacing the tradi-

tional roasted chicken on dinner tables across the country. This cut allows browning of all sides of a whole chicken while remaining succulent and reduces cooking time. The technique is simple: Grab a sharp pair of kitchen shears, place the chicken breast side down with the wings and neck facing you. Cut the backbone with the shears and discard. Season with salt and pepper. Flip the chicken over with the breast side up and press down with your palm so the chicken lays completely flat. When choosing a chicken, nothing beats a pasture-raised bird from a local farmer. This succulent bird was raised in Tomball at Three Sister Farms. (Use the leftover bird to make a stock for your next risotto!)

HOW-TO 1. Preheat oven to 425 F. Salt and pepper the chicken. Combine butter, mustard and herbs. Slather chicken with mixture. 2. Place in oven and cook 1 hour or until thermometer registers 155 to 160 F, basting at the 30-minute mark. Remove from oven, cover in foil and allow to rest for 15-20 minutes. Carve chicken, finish with a jus and serve warm.

Risotto seems intimidating, but it’s quite sim-

ple. Risotto is versatile and can be used with any combination of vegetables, meats and cheeses. Our risotto features this season’s power-packed spinach and takes advantage of the bounty of leftover lemons from December’s harvest!

INGREDIENTS + 1 tablespoon butter + 3 cloves garlic, minced + 1/2 onion, diced + 2 cups arborio rice + 3/4 cup white wine + 5 cups chicken stock + 1 tablespoon lemon zest + 1 tablespoon fresh lemon juice + 1 tablespoon fresh rosemary, chopped + 1 tablespoon fresh sage, chopped + 1 tablespoon fresh thyme, chopped + 1 cup fresh spinach, chopped + 1/4 cup Parmesan cheese + 1/4 cup feta cheese

HOW-TO 1. Place 5 cups chicken broth in medium saucepan and heat through. (You will ladle broth from this saucepan into the rice to cook to al dente.) 2. Heat butter over medium heat, cooking garlic and onion until soft. 3. Turn heat to high, add 2 cups of arborio rice and cook, stirring constantly, for 2 minutes. 4. Add 3/4 cup white wine and cook until wine has soaked into rice. 5. Ladle warm chicken broth into saucepan, 1 cup at a time, until 4 cups have been used, allowing all of the liquid to soak into the rice before adding the next cup. 6. When the fourth cup has been absorbed and rice is plump, turn heat to low. Zest lemon and squeeze juice into mixture. 7. Add herbs, spinach and cheeses while stirring to combine. 8. Add salt and pepper to taste. 9. Finish with last cup of broth to allow risotto to loosen up and develop a creamy texture. 10. Serve warm.

The studio offers yoga to all ages, and they have a kids program that has parents and kids practicing at the same time. “The most important thing about yoga practice is that you keep showing up. If you say you can’t practice yoga because you can’t touch your toes, then bend your knees and you might be able to access your toes,” Jenny says. Remember, everything takes practice.
