I am particularly humbled thinking of my mother, who we lost last year after a long illness. My biggest cheerleader and most compassionate counselor – I am thankful for her wisdom, character and faith that helped shape me. In this month’s issue we are sharing stories of women who have made their mark in our community by “Making a Difference.” You will love reading about these amazing local super stars! Local Experiences’ “Gals on the Town” has us ready to grab our besties and head out for a day of pampering, time spent outdoors, or just being artsy. Paige Meloni Appointed LISD Chief Financial Officer Paige Meloni has been named LISD’s new Chief Financial Officer. “I am thrilled to welcome Ms. Meloni to the LISD family as part of the district’s leadership team,” LISD Superintendent of Schools Dr. Lori Rapp says. “Her extensive experience in educational finance will be a tremendous asset to our district as we maintain being good stewards of taxpayer dollars.” Before joining LISD, Meloni was Chief Financial Officer for Client Business Services at Education Service Center (ESC) Region 20 in San Antonio.

Flower Mound Public Library Receives Excellence Award For the 18th consecutive year, the Flower Mound Public Library has received the Achievement of Excellence in Libraries award from the Texas Municipal Library Director’s Association. The award is given to libraries that demonstrate consistent excellence and outstanding contributions to public library services in their communities.
LISD Partners with Local Businesses for ‘Career Out’ Businesses throughout the community provided job shadowing experiences for more than 300 LISD students this spring. LISD created the Career Out program in 2019 to give students hands-on experience in a desired career field. In the words of Dolly Parton, “If your actions create a legacy that inspires others to dream more, learn more, do more and become more, then, you are an excellent leader.” This month, Cross Timbers Lifestyle celebrates four women in the community who inspire others daily through their leadership.
Dr. Lori Rapp has been an integral part of Lewisville ISD for 26 years. Now she is leading the system for which she has worked her entire professional career. “I live in this community; my children attend LISD schools; and there is nothing more important to me than being a good steward of this incredible district,” Dr. Rapp says. She hopes to cultivate a sense of belonging in all LISD schools. “That means providing opportunities of all types for our very diverse student body, recruiting and retaining incredible staff members by valuing and supporting them and ensuring our families and communities have ample opportunities to be involved in our schools in a variety of ways.” Dr. Rapp has been praised for her leadership skills and her ability to inspire change in a collaborative way. In 2008, she received the LISD Administrative Support Employee of the Year award. She was awarded a Texas PTA Lifetime Membership in 2019. And she was featured as an Inspiring Leader by the Texas Association of School Administrators in 2021. Though she is thankful for the accolades, Dr. Rapp says, “The thing I am proudest of without question is my wonderful family. My girls and my husband have supported me with every opportunity that has come my way, and I absolutely could not have chased after the dream of being LISD superintendent without their full support.”

Denton County Commissioner, Precinct 3
Denton County Commissioner Bobbie Mitchell has lived in Lewisville for more than 50 years. She knows the county better than most and has seen it grow and change throughout the years. “I have seen many changes, some good and some not so good, but through it all, God has blessed us to be a place where others are eager to become a part of the community,” she says. “I enjoy the sense of community – the small hometown feel – where you still recognize others at the grocery store,” Bobbie says. “I love it when someone says, ‘Are you Darin Mitchell’s mother or Mrs. Reinacher’s mother?’” In her role as County Commissioner, Bobbie serves along with the County Judge on the Commissioner’s Court. She has numerous duties from overseeing the management of the County’s budget to the building and maintenance of roads and bridges. Bobbie says the most rewarding aspect of being a County Commissioner is “being able to make a difference in the community by helping others.” Her work in the community garnered her a Dr. Bettye Myers Humanitarian Award in 2019. “It is a blessing to serve the citizens of Denton County, and I thank everyone for all of their love and support,” Bobbie says. Perhaps the accomplishment she is most proud of is her family. Bobbie has two children, nine grandchildren and five great-grandchildren. “Grandchildren are the ultimate blessing. They love you unconditionally, and if you are blessed like I am, you get to lay everything else aside and give them your undivided love and attention,” she says.

Melanie Vest began working at DATCU Credit Union as a part-time teller while she was a UNT student. This year, she became the first woman president of the company. “It is a huge honor, and I am grateful for the opportunity,” she says. “I know it is very rare to spend your entire career in one place, however I will tell you DATCU is a rare place to work. I have had the tremendous opportunity to work in all areas of the credit union, and this has enabled me to grow my knowledge and experience in learning from mentors before me, as well as those who work beside me today.” Melanie credits the DATCU community for her success. “While to some it may seem cliché, we are family,” she says. “As soon as I began my career at DATCU, I knew it was different. We do life together. We genuinely care about our employees… We grow leaders. We provide encouragement for our team to learn and grow. I am an absolute product of that system and believe in it.” Melanie says she is passionate about serving DATCU patrons, as well as the community. She serves as chair of the Children’s Advocacy Center for North Texas and is an active board member of Serve Denton. Melanie is married to Zack Vest and has three children, Ethan, Kailyn and Eli.

Keep Flower Mound Beautiful
“This program was created to allow volun-
Marilyn Lawson’s goal is to keep Flower Mound beautiful. In fact, she has been a vital part of the Keep Flower Mound Beautiful organization for 17 years. She has served as a volunteer, president and treasurer. Marilyn handles the day-to-day needs of the organization and also helps organize the popular Adopt-A-Spot program, monthly workdays, Lend A Hand Program, community service program and the spring and fall town-wide trash events and recycle drop-offs. The Lend A Hand Program helps local residents who are disabled, elderly or financially unable to maintain their property. “I oversee this program by meeting with residents in need, organizing workdays for volunteers to help out and finding and scheduling contractors to do repairs that we are not skilled to do,” she says. “We have completed 72 projects over the time we have been doing this and are currently working on two more.” The community service program allows members of the community to fulfill Honor Society or court appointed community service hours. “This program was created to allow volunteers to go out on their own to pick up trash anywhere in Flower Mound,” Marilyn says. “The volunteers have removed a lot of trash from our parks, trails and roadways.” Marilyn was named the Flower Mound Outstanding Citizen of the Year in 2017 and Volunteer of the Year with Keep Texas Beautiful in 2017. During her time at KFMB, the organization has received numerous accolades, including the Governor’s Community Achievement Award and Sustained Excellence Award 2016-2021. Marilyn is married to Pat Lawson and has a son, Michael. When she’s not volunteering with KFMB, she is a full-time accountant.

CELEBRATE THE OCCASION WITH THESE TASTY & HEALTHY RECIPES
PROSCIUTTO MELON MINT SALAD ingredients: • • • • • • • • • •
1 cantaloupe melon 1 personal size seedless watermelon 1 honeydew melon 6 ounces prosciutto, chopped ¼ cup pistachios, lightly salted & chopped 1 cup olive oil ¼ cup mint leaves 6 tablespoons lemon juice 2 tablespoons honey ½ teaspoon salt
instructions: Use a melon baller to scoop round spheres of each melon and put them in a large bowl. In a blender combine the olive oil, lemon juice, mint leaves, honey and salt. Blend on high for a few seconds until emulsified. Drizzle about ¼ cup of the dressing over the melons and stir gently to coat. Garnish with prosciutto, pistachios and extra mint leaves. Serve with extra mint dressing as desired.

SMOKED SALMON & HERB FRITTATA ingredients: • 8 eggs • 1 cup asparagus, cut on the bias into small size pieces • 8 ounces smoked salmon, chopped • 3 tablespoons butter or ghee, divided • ½ cup green onions • ¼ cup plain, unsweet coconut yogurt • 2 tablespoons fresh tarragon, chopped • ¾ teaspoon salt • ½ teaspoon pepper • Freshly ground finishing salt
instructions: Preheat the oven to 425. Crack the eggs into a bowl and whisk in the coconut yogurt and the salt & pepper. Stir in the green onions and herbs. Set aside. Cut the asparagus, on the bias, into bite-size pieces. Melt 1 tablespoon of butter or ghee over medium high heat in 10-inch oven safe skillet. Sauté asparagus for 2-3 minutes, until just slightly starting to soften. Add in the remaining butter/ghee and melt in the skillet with the asparagus; add the egg mixture and swirl to the edge of the pan. Arrange the smoked salmon over the top of the skillet and allow to cook long enough for the edges to get firm. Transfer skillet to oven and cook an additional 8-15 minutes until the top is firmly set and browned. Once done, cut into pie shaped slices and serve hot.

ingredients: For the cake: • 3 cups walnuts, divided • 6 eggs, separated • ¾ cup maple sugar • ½ cup arrowroot flour For the glaze: • 1 ¼ cup organic powdered sugar (can also use powdered monk fruit sugar) • 4 tablespoons orange juice • 1 teaspoon vanilla extract • ¼ teaspoon ground cardamom Other necessary tools: • Quality spray oil • 9-inch springform pan • Parchment paper
instructions: Preheat oven to 350. Grind 2 ½ cups of the walnuts in food processor to coarse flour like substance. Chop the remaining ½ cup walnuts into small pieces with a knife. Set aside. Put the egg yolks into a large bowl. Remove 2 tablespoons of the maple sugar and set aside. Whisk egg yolks together with the remaining sugar until completely combined. Stir in the ground walnuts and arrowroot flour. The mixture will be very stiff and thick at this stage. Place the egg whites into the bowl of a stand mixer and turn on medium-high until soft peaks form (this will take 2-4 minutes); then slowly add in the remaining 2 tablespoons of sugar and continue beating 1 more minute. Stir in a large spoonful of the egg white mixture into the bowl with the walnut batter and fold in. Then add remaining egg whites to cake batter and continue stirring until completely mixed. Add in the ½ cup of chopped walnuts and mix well.
WALNUT CAKE WITH ORANGE CARDAMOM GLAZE
Prepare a 9-inch springform pan by spraying it with quality oil and then lining the bottom with a circle of parchment paper. Lightly spray the top of the parchment as well. Spoon the batter into the prepared cake pan and bake in preheated oven for 28-32 minutes until a toothpick inserted into the middle comes out clean. Once the cake is done, cool in the pan 10 minutes, then remove from the pan and transfer to a cooling rack for 10 minutes. When ready to glaze, place cake on a rimmed cake plate and make the glaze. To make the glaze: Combine the powdered sugar and the cardamom in a small bowl. Then pour in the orange juice and the vanilla and whisk. Drizzle the glaze over the cake and serve. ORGANIZATION HELPS WOMEN RECLAIM THEIR LIVES

Sex Trafficking is a national industry in which 80% of the victims ultimately end up living on the street without safe housing. Refuge for Women is working to change that. The faith-based, non-profit organization has served more than 300 women throughout the country and is changing lives in North Texas. “Refuge for Women first started with the desperate need for healing homes for women who had escaped a life of exploitation, but had nowhere to go,” Executive Director Abby Germer says. “After pivotal conversations with groups who did outreach, Refuge for Women opened its first home in 2009 to provide a place for these women to go. Since then, Refuge for Women has opened locations in six different states.” In 2016, the North Texas location opened its Program House. Women who take part in the program live in the house and participate in trauma-informed programs, attend counseling and receive round-theclock staff support. In addition, the women receive higher education at no cost. “One hundred percent of our residents have experienced homelessness, so providing free services is essential because it breaks the barrier of not having access to healing services,” Abby says. Two years ago, Refuge for Women opened its Transitional Living Home to provide more support and help the participants find full-time occupations. The organization also launched its social enterprise Survivor Made to break the barrier of employment for sex trafficking survivors. “Survivor Made has established itself as a key program element where residents have the opportunity to be employed with Survivor Made to earn income, build confidence, practice job skills and overcome barriers to employment,” Abby says. “This is especially important as 100% of our residents experience post-traumatic stress disorder (PTSD), anxiety and depression. Survivor Made serves as a safe environment for residents to reacclimate into a workplace setting and learn how to cope with their trauma triggers.” Through Survivor Made, the participants learn how to create high quality leather handbags, earrings, other leather goods and candles to sell on the Survivor Made site, survivormade.org. In addition, they learn business skills like accounting, stocking inventory and workplace management, Abby says. “All of our artisan, handcrafted products are stylish, high quality and change lives one sale at a time.” The ability to live and work in a safe and supported environment has been a transformative experience for the women who participate in the Refuge for Women program. “Having the chance to be in a safe place to heal, means somebody thought I was worth it, even when I dared not believe I was,” explains one resident. Abby says Refuge is fulfilling needs that many may not realize exist. “Often times people think human trafficking only happens in foreign countries, but in reality, it occurs in our own backyard,” Abby says. “Texas has the second highest rate of sex trafficking in the nation.” Escaping human trafficking can be extremely difficult because of the lack of support systems nationwide. But she says, the vast majority of women who participate in the Refuge for Women programs do not return to the sex industry, remain sober and stable and are able to reestablish relationships with loved ones. “Over half of the women in our program are mothers and with mediation from our staff, they are able to safely reconnect with their families,” Abby says. “Our goal as an organization is to give these women their life back so they can become the mother, daughter or successful businesswoman they always wanted to be. Residents graduate with the tools to go from surviving to thriving.”

As one resident says, “I could laugh again, and it felt good. I could smile at people instead of looking away. I held my head and didn’t look down. But most of all I was no longer a victim. I was a survivor, an overcomer with a desire to help other women like me. Today I am a mother, daughter, sister, aunt and friend. Today the world can’t tell me who I am.”

HOW CAN YOU HELP? “Refuge for Women North Texas operates mainly with the support from our amazing community,” Abby says. “The heart of our mission is our volunteers who volunteer their time, talents and resources.” The organization holds various fundraising events, including its Annual Celebration Dinner and Silent Auction, Ladies Luncheon, Community Awareness Events and Micro Events. Volunteers donate services, items and help plan and run the events. “Our donors play a role in keeping our program and long-term houses running and operational,” Abby says. Community members can contribute to Refuge for Women by becoming monthly donors called “Freedom Fighters” or through community foundations, family foundations and churches. “Some of our wonderful donors even host fundraising parties in their homes with their friends,” Abby says. “We are so grateful for our giving community who not only contributes toward our funding needs, but also contributes their skills as volunteers.” Visit refugeforwomen.org to find out how you can contribute.
