Welcome to Cross Timbers Lifestyle!
NOVEMBER 2017 PUBLISHER
H
ello friends and neighbors, and welcome to the premiere issue of Cross Timbers Lifestyle, where we’re inspired by community, and hope this magazine inspires you, too! We’re thrilled to be your source for all things local here in the southern Denton County area–a gorgeous and inspiring place to call home. As part of the Cross Timbers Texas region, our community has a rich history. Two narrow bands of forest that extended south of Oklahoma into Central Texas divided the plains and prairies and became known as the Cross Timbers. Native Americans called the area home and later as pioneers pushed into Texas, the bands of timber served as a famous landmark. That same pioneer spirit is alive and well in our community today–whether you live in Flower Mound or Copper Canyon, we are all still seeking – opportunity, love, wisdom. Through the pages of Cross Timbers Lifestyle, it is our goal to educate and enrich you and to have a little fun along the way. As you flip through these pages, you’ll be drawn into the incredible stories behind the people and places that call our community home. In my short stint as publisher, I’ve already been awestruck by the talented, hardworking men and women who passionately serve the community through their local business and philanthropic endeavors. There is no shortage of people working very hard every day to make this community stronger–making sure our schools are better supported, our churches open and welcoming, that needs are met for the less fortunate. As we take the time to put our issues together from month to month, you—the Cross Timbers Lifestyle readers—will always be in our minds. We strive to bring you the good and relevant news of the day and to fill the pages of this magazine with the people and stories you care about—and we can’t wait for you to join us each month. If you have suggestions or ideas for a story, please let us know. We can’t promise that we incorporate every idea, but appreciate your interest and feedback. Take a moment to "like" us on Facebook and let us hear from you! Finally, thank you to my family and many friends for your ideas, love and support. It’s November, but I am thankful and blessed every day of the year by each of you. Happy Thanksgiving!

Students were able to walk away from the field trip with more than just knowledge for a future acting role. “The biggest impression this experience has had on me is that there are so many people in this world, but only few are courageous enough to protect and be brave for our country,” seventh-grader Halle Jackson says. At the end of the tour, students met and listened to two guest speakers; a Gold Star family member Alicia Allbaugh who lost her brother Jeremy Allbaugh in military service, as well as retired United States Air Force General Mike Skinner. FMS Theatre will perform “Booby Trap” for a University Interscholastic League One-Act Play competition on November 1 at Lewisville High School. Two back-to-back public performances of “Booby Trap” and “Women and War” are set for 6 p.m. November 9 at 6 p.m. at Forestwood Middle School, 2810 Morriss Road. BRIDLEWOOD ELEMENTARY EGG-DROP EXPERIMENT REACHES NEW HEIGHTS Bridlewood Elementary fifth-graders participated in a memorable lesson to test their question and collaboration skills by creating a contraption to safely land an egg unscathed after being dropped from various heights. This year, Bridlewood Principal Robin Block and fifth-grade science teacher Patricia Jordan wanted to take the lesson to greater heights—literally. Enter Flower Mound Fire Department firefighters from Station 4. First, student groups were challenged to create and design a contraption that would prevent a raw egg from cracking when dropped from 25, 35 and 50 feet by an FMFD firefighter at the top of a fire engine’s extended ladder. “We knew it was going to be exciting, but to see the students’ faces when the ladder went all the way to 50 feet was amazing,” Jordan says. “We had a great time helping out with the egg-drop experiment,” Flower Mound Fire Department Captain Ronnie McCarroll says. “The excitement each student showed during their experiments was a lot of fun to see.”

Through designing their own contraptions with no more than three materials of their choice, students were able to discover the difference between testable questions and non-testable questions. In addition, they were able to expand on learning to collaborate with one another to create a design and construct it together. “I feel that having to collaborate will help them in the future with jobs and with everyday living,” Jordan says. “Students had to get out of their comfort zone and work with others that maybe they had never worked with before.” Even if their designs failed, students were more than thrilled to participate in the experience. “It was so much fun to watch other students’ creativity in their egg contraptions, and it didn’t really matter if it worked or not because we

hen hairstylist Zairy Portillo first walked through the double doors of Rogers
Premier Salon Suites in Flower Mound, her jaw dropped. “This is gorgeous! The entry is so pretty!” she thought, not expecting to be met with such grandeur. At the time, she worked at a nearby salon and witnessed the property transform from a UFC Gym to a one-stop shop for beauty needs. Her curiosity led her to investigate the new facility, and she made up her mind on the spot. “I thought, ‘This is it! I can make this my own,'” she says. Owners Ed and Michele Rogers wanted to take the salon-suite concept up a notch. “We want to be the Neiman-Marcus for salon and medical professionals,” says Michele, who was a hairstylist long before she became a business owner. “I started off in a commission-based salon putting myself through school. There was never anything like this.” The $2 million build-out was completed in July at Robertson’s Creek, a retail development on the border of Highland Village and Flower Mound. Located at the southwest corner of Long Prairie and Dixon Roads, its flagship stores include Belk’s, Hobby Lobby, Dick’s Sporting Goods and JCPenney.

ROGERS PREMIER SALON SUITES PAIRS ELEGANCE WITH EXCELLENCE
WE’RE EXCITED ABOUT DOING BUSINESS HERE,” ED SAYS, AND MICHELE AGREES. “IT’S SUCH A GREAT LOCATION. WE COULDN’T BE HAPPIER!” “Everything we did is top-shelf,” Michele explains. She made all of the design choices for Rogers Premier Salon Suites. Stylish sconces flank the rows of individual suites, and clients waiting for their appointments can relax on custom upholstered furnishings. Glass chandeliers hang from the high ceilings and the walls are finished with double crown moldings. Michele chose serene moodscapes to grace the walls and added touches of greenery. “We didn’t want it to be trendy or modern, but elegant and comfortable,” she says. “Our goal is to be the best of salon studios,” Ed, a former president of Jack LaLanne European Health Spas, says. He and Michele retired a few years ago as partners of All American Family Fitness before becoming interested in the

salon-suite concept. “We provide facilities for hair, skin, nails, massage—for all kinds of beauty professionals,” he explains. “Our goal is to provide the ultimate atmosphere to showcase their skills.” Fifty-four suites line the hallways of the 11,000-squarefoot facility. The rooms give beauty professionals, like Zairy, the opportunity to independently run their own small businesses. They can set their own rates, sell their own products and keep 100 percent of their profits. There are “quiet” suites specifically for massage, skin care and medical treatments, and ventilated suites for nail operators. Already, the salon suite is at two-thirds capacity. “It’s like a salon in a salon,” says Sandy Jones, a client from Lantana, who, along with her friends, enjoys the convenience of shopping at nearby Robertson’s Creek. She appreciates that walls separate her from other clients during appointments so she can comfortably converse with her hairstylist without being overheard. “Close the blinds! Shut the door!” she laughs.
Kristina Garza owns Salon K.
Lash Out Loud owner Britney Franklin sought to rent space in the area when she stumbled upon Rogers Premier Salon Suites. Britney provides niche services, specifically eyelash and hair extensions, and this is her first time to strike out on her own. She called her decision a “leap of faith,” but added, “you don’t know what you can do until you try.” Owning her own business allows Britney the flexibility to create her own schedule and to take time to do detailed, quality work. As opposed to a fast-paced, commission-based setting, “being in a suite makes that possible,” she says.

The environment gives tenants the opportunity to create their own identity. The suites are plumbed and equipped with what the professionals need to launch their business. Britney, for example, requested a massage table and a dimmer switch to darken the room during eyelash extension procedures. “I want to make sure my clients feel comfortable and relaxed. It’s best if they can fall asleep,” she says. She brought in her own special touches: a soft pink office chair on rollers, a matching knitted blanket and Pinterest-inspired wall décor. “Our salons are usually two to three sizes larger than most suite salons, which allows us to have competitive rates,” Ed says. Rogers Premier Salon Suites offers 24-hour security and has a full-time, on-site manager/concierge who makes sure tenants and clients feel welcome. “We want them to feel respected and special because they are special.”

Let Someone Else Do the Baking This Holiday Season
W
hen November rolls around, thoughts turn to the Cowboys’ Thanksgiving day game, corn bread dressing,
succulent turkey and pies. Heavenly pie crusts, fruit-laden or shimmering with golden pecans—whatever
strikes your fancy, a traditional Thanksgiving dinner will most certainly include a delectable pie or two.
Baking pies may be your tradition and if so–carry on! But if you are in the mood to let someone else do the
baking this Thanksgiving, here are some local establishments that won’t disappoint. It’s pie time. Be thankful!

Pastry chef Cara Vasquez grew up a self-described “baking kid” influenced by her mother, a talented home economics teacher. Cara’s passion led her to culinary school and a 10-year career at Bread Winners in Dallas, where she served as bakery manager. In 2011, Cara’s dream became a reality when she opened the doors to The Flour Shop Bakery in Highland Village. Cara makes amazing cakes, pies, cookies, bars, brownies, breads and many other bakery treats. It’s important to her that a wide variety is kept on hand for folks to drop in for a sweet treat. Cara keeps things traditional—the way her mom taught her—and is fulfilled when someone tells her that something she baked evokes a long-held memory, perhaps something their grandmother made. "For us, it’s about creating something special," Cara says. "It’s about awakening a memory or emotion.” During Thanksgiving, pies are best-sellers. The traditional favorites are pumpkin and pecan, but they receive many requests for strawberry rhubarb also. Chocolate cream and coconut cream pie are also very popular and can be made with meringue as a special request. Everything is made on-site and from scratch using only the best ingredients. Cara says it’s a marathon the day before Thanksgiving with chefs baking all night, but it’s worth it to be part of their customer’s holiday. Special orders are recommended. And, while you can still visit Cara and the team at their present location for Thanksgiving, soon the store will be moving down the street near Firehouse Subs. The new space is double in size, and more breakfast and dessert items will be available, plus additional seating where customers can gather.

Judy Balunda didn’t set out to open a pie shop. After 25 years teaching special education, she retired in 2013 from Grapevine Middle School and was looking forward to some well-deserved time off. Instead, she began baking pies, using her mother’s well-loved recipes. When the requests and raves became increasingly louder, Judy knew she might be looking at a second chapter. She continued to hone her pastry skills, even completing a Le Cordon Bleu pie-making course. Judy Pie just celebrated one year in business in Old Town Grapevine. Judy laughingly recalls, “We handed out 16,000 pie samples during Grapefest 2016. Then, we closed for a week and re-opened to the public.” They haven’t slowed down since. Chefs bake daily on-site utilizing only the freshest, from scratch ingredients. And while sweet pies are the name of the game with everyday favorites chocolate cream, key lime, strawberry rhubarb and coconut cream, Judy Pie also offers savory selections—chicken pot pie and shepherd’s pie—and some phenomenal hand pies–Nutella, strawberry goat cheese and bourbon maple peach to name a few. Pumpkin and pecan pie are Thanksgiving highlights, and most of Judy’s recipes are courtesy of her mother, Rhoda. However, the Judy Pie chefs will also bake custom pies for customers, using family recipes handed down or seasonal twists on old favorites. Judy’s goal for Judy Pie was to create a warm and inviting place where customers can meet for book cub, enjoy dessert after dinner or just pick up a slice of heaven to go. Mission accomplished! Thanksgiving orders will be taken until the Monday prior to Thanksgiving.

bakery more than 16 years ago in the growing town of Flower Mound. Swirl Bakery serves breakfast, soups, salads and sandwiches, and a classic, comforting menu for dinner. Custom baking and decorating with real butter occurs daily and you will be tempted by the sweet treats behind the glass case and in the “pie tower." It’s no accident that Swirl Bakery has become a community favorite by creating wholesome food from scratch. Melissa contends it is quite a bit of labor, but the quality control makes it worth it. The Norwoods support several initiatives and cater many events within the Lewisville Independent School District–school functions for Flower Mound High School, LEF gala and many others throughout the area. They live in Flower Mound and enjoy supporting the community and getting to know their neighbors. “It’s fun to see kids who have grown up coming to the restaurant come back," Melissa says. "We’ve even had birth announcements here!” For Thanksgiving, pies are the name of the game–pumpkin, pecan, buttermilk and apple will lead the pack along with chocolate cream and coconut cream. Every pie is baked fresh daily and your guests will appreciate the attention to detail. Stop by to check out the pie table during the holidays but if you want your favorite guaranteed, don’t leave it to chance. Swirl Bakery can also cater your entire Thanksgiving meal if it suits your fancy. You might even be able to pass off some of their home cooking as your own! Melissa recommends ordering ahead for pies or the meal.

Soup is
GOOD
for the
SOUL
T
his is definitely the easiest and best way to make rich-tasting butternut squash soup, without having to peel and dice a large,
awkwardly shaped vegetable. You start by cutting the squash in half lengthwise and roasting it in a hot oven. Scrape the roasted flesh from the skin, and simmer it with sautéed yellow onion, fresh sage, and a tart Granny Smith apple. When everything’s soft and the flavors have melded, purée it all in the blender. Finally, enrich the soup with a bit of heavy cream.

1. Heat the oven to 425°F and arrange a rack in the middle. Line a baking sheet with aluminum foil. Place the squash pieces cut-side up on the baking sheet. Melt 1 tablespoon of the butter and brush all of it over the tops and insides of the squash halves (alternatively, you can rub it on evenly with your fingers). Season generously with salt and pepper. Roast until knife tender, 50 minutes to 1 hour. 2. Meanwhile, peel, core, and cut the apple into medium dice. Cut the onion into medium dice. Melt the remaining tablespoon of butter in a large saucepan or Dutch oven over medium heat. Add the apple, onion, and sage, season with salt and pepper, and cook, stirring occasionally, until softened,

Nestled in the Texas Hill Country, northwest of San Antonio, is a perfect place for a golfing weekend getaway at one of the best Hill Country Resorts - Tapatio Springs Hill Country Resort. Traveling on the winding road through the hills to the resort from Boerne and Interstate 10, you appreciate the magnificence and peacefulness of the Hill Country. When you coast down the last hill you'll spot the sparkling lake on the right spilling over the road and into a lake on the left, the towering limestone cliff with a huge beautiful home sitting on top, the Tapatio Springs sign with a waterfall, the lush green fairways of the golf course, and some of tallest hills in Texas dotted with nice homes, you'll get a sense that you are in for a special treat. The resort sits in a valley surrounded by rolling hills and incorporates the best that Mother Nature has to offer including a variety of trees, wildflowers, axis and whitetail deer, rolling tree lined hills with deep valleys, limestone cliffs rising out of springs and lakes, and panoramic views from the towering cliffs. To be clear, they are only Texas hills but they are some of the tallest in the area and rise to 1900 feet. Plus you get to enjoy consistently perfect weather with an average annual high of 68 degrees which creates excellent conditions for year round golf and other activities. During the summer, the higher elevation is an average of 12 degrees cooler than San Antonio. Perfect for being outside. The resort has a variety of accommodations for guests including suites and hill country guest rooms. Each guest room is larger than the typical hotel room and has a flat screen TV, seating area and desk, coffee maker, hair dryer and iron, and upgraded bath amenities including two sinks and lots of counter space. Best of all each room has a very comfortable king or double queen bed and either a private balcony or patio - an excellent spot to relax with a morning cup of coffee and enjoy the view of the golf course, deer, beautiful hills, or take in a spectacular Hill Country sunrise or sunset. One of the primary reasons to keep coming back to Tapatio Springs Hill Country Resort is to play golf on 18 of the best holes in Texas. Each nine is unique and different and will test your accuracy and course management skills with a combination of tight landing zones, water features, elevation changes, forced carries, and challenging doglegs. But don't let that scare you away - the course is fair and there are four sets of tee boxes plus a combo on the scorecard. Not only is the layout challenging but it is very scenic with rolling hills, waterfalls, colorful flowers, sparkling ponds, CONTINUED >

beautiful homes scattered along the hillsides, and towering trees. The front nine plays through the valley with water coming into play on six holes and it's a enjoyable par 35. The back nine plays up and along the ridge line of the rolling hills and then back to the valley. This nine is a blast to play with elevation changes, doglegs, forced carries, and some fun holes. After, or even before, 18 holes of golf I'm ready to eat and The La Cascada Restaurant which adjoins the pro shop is perfect with it's spectacular views of the cliff-top mansions, golf course, a water fall, and lakes from the floor-to-ceiling windows. You can eat in the nicely appointed dining room, in the bar area, or on the really cool outdoor patio. On Friday and Saturday you can enjoy live music on the patio. La Cascada serves breakfast, lunch, and dinner and a wide selection of choices plus Happy Hour and specialty drinks. We enjoyed just about everything from the breakfast, lunch and dinner menus. Literally waddling away from our completely cleared plates obviously impressed with the food. After golfing, bike riding, and hiking most of us are ready for a spa treatment at Puresol Salt Cave & Spa which is in the center of the guest rooms and next to the pool and fitness center. Guests have the option to enjoy the likes of a "Deep Tissue Sports Massage" that "relieves aches and pains that are stored in the deepest part of the muscles" and/or select a HydraFacial Treatment (a new breakthrough in skin resurfacing technology) at Puresol Spa. I'm told by a reliable source that the facial is relaxing, soothing, and very refreshing. We spent forty relaxing and refreshing minutes in the salt rock cave, what? lounger while being surrounded by soothing music, and literally emerge not only more relaxed and tension-free, but healthier as well. I fell asleep during most of my forty minutes. After the salt rock cave I felt like a new man - relaxed, and ready to go for, well, another nap. There is a lot to do at Tapatio Springs Resort and the weather is perfect most of the year and some of the amenities you can enjoy include: an adults pool with a waterfall, hot tub, and relaxing pool furniture, a fitness center loaded with fitness equipment, miles of hiking, and biking trails around lakes and creeks and up and down the hills with some stunning scenery, horseshoe pits and bean bag toss, fire rings for s'mores and the resort pool with a bar, more fire pits, cabanas, a kids slide, and comfortable pool furniture. Tapatio Springs Resort can also schedule special events and activities like horseback riding, wine tasking, antique shopping, kayaking, tubing, or birding and more. Speaking of horseback riding, we had an extraordinary adventure with a geniune gentleman cowboy. The four of us were privileged to have bronco buster retired Willie Stricker lead us through the hill country on his former through-bred race horses. They were well cared for and simply beautiful animals. As a true Texas legend, you know by the casual and confident drawl, Willie shared his Christian faith with us in a number of colorful stories from the past of his cowboy life. I highly recommend calling Willie and experiencing real Texas Hill Country hospitality on horseback in the rolling hills. You will not be disappointed, although you will need to pay attention and watch your lip. Call him on his cowboy flip-phone at 210-508-9349 and tell him Frisco Tim sez "howdy!"
