HOSPICE OF ST. FRANCIS' FOUR-LEGGED VOLUNTEER PROGRAM BRINGS COMFORT TO PATIENTS FOR FOUR DECADES, HOSPICE OF ST. FRANCIS HAS BEEN COMPASSIONATELY SERVING THE COMMUNITY BY EMPOWERING PEOPLE TO LIVE LIFE TO THE FULLEST. Brevard’s only free-standing, independent, not-for-profit facility in Titusville has been giving back to the community, providing resources and support for the terminally ill since 1977. And the volunteers continue to serve a vital role as the interdisciplinary team caring for patients and their loved ones—most recently those of the canine variety. Along with the current outreach programs that include Bereavement, Caregiver Education and Resource, the North Star for Grieving Children groups and Pathway to Healthcare, and the Pet Promise program, Hospice of St. Francis has now added a four-legged volunteer program. FOR A DELICIOUS SALAD USING LOCALLY SOURCED INGREDIENTS, CONSIDER MAKING A CAPRESE SALAD, JUST LIKE THOSE CREATED AT ZARRELLA’S ITALIAN & WOOD FIRED PIZZA IN CAPE CANAVERAL, USING FRESH GRAPE TOMATOES, BASIL AND MOZZARELLA CHEESE. It’s quick and easy to make, and it can be a light main dish or served as a cool side or starter salad with a meal.

CAPRESE SALAD I N G R E D I ENTS + 10-12 grape tomatoes, halved + 12 fresh basil leaves, chopped + 16 ounces fresh mozzarella cheese, salted + 1-2 cloves garlic minced, depending on personal taste + Ground black pepper + Kosher or sea salt + ¼ cup extra-virgin olive oil, plus a small amount for drizzling + 1½ tablespoons balsamic vinegar

I N S T R U C TIONS 1. Start by mixing the olive oil and balsamic vinegar and then set aside. 2. Next, place the grape tomatoes and basil in a bowl and season them with salt, black pepper and minced or granulated garlic to taste. 3. Then, add a light drizzle of olive oil to the bowl and gently toss until the ingredients are evenly coated. 4. While that’s resting, slice fresh mozzarella in ½-inch thick wedges. 5. Finally, plate ingredients in front of or on the mozzarella slices and drizzle balsamic/olive oil mixture over the top and serve. For added flavor, you can include a small amount of prosciutto ham on the plate. This provides a nice mix of color, flavor and texture to the dish.

IF YOU’RE NOT HIP TO SUSTAINABLE GARDENING YET, YOU CAN LIKEN IT TO CONSCIENTIOUS GARDENING, BECAUSE, AT ITS CORE, THAT’S WHAT IT’S REALLY ALL ABOUT. It’s eco-friendly. It’s about eliminating harmful and often unnecessary chemicals. It’s also about saving space and making the most of what you have to work with smarter, more creative ways. In a nutshell, it’s about getting back to basics and innovative thinking, and the rewards of this growing trend are safer, healthier produce; a reduction in groundwater contamination from hazardous runoff; and the conservation of our already-stretched natural resources. It’s the greener, better way to go. Sustainable gardening has increased in Brevard County in recent years, and Rockledge Gardens is a part of that growth. Established by Harry and Mary Witte, for 60 years it has been a staple for discerning gardeners looking for the kinds of quality plants, statuary and garden design a lot of their competitors just don’t supply. THE FARM Still owned and operated by the family today, the original concept was expanded upon by the youngest member of the Witte family, Theresa Riley, who decided to make Rockledge Gardens her career. Since 2012, that expansion has included The Farm, located directly across the street from the garden center at 2153 U.S. Route 1 in Rockledge, Florida. The Farm hydroponically grows beautiful produce using sustainable organic controls with the idea of providing local, fresh, healthy produce for the community. Crops include different tomatoes, lettuce, spinach, kale, chard, herbs and edible flowers. It also has fruit-bearing crops such as lemon, lime, avocado and banana trees, as well as blueberries and blackberries, too. FARMERS MARKET A farmers market is held twice weekly at the garden center to provide a venue for the sale of all of The Farm's hard work. The market includes additional crops and produce grown by other farms located within Brevard and Volusia Counties. At the height of growing season, October through May, The Farm sells thousands of pounds of produce, including a very popular bagged mix of lettuces, baby greens and edible flowers. To further entice consumers in search of wholesome goodness, there are a number of local vendors who take part on market days, selling such items as farm fresh eggs and meats, sea salt, baked goods, local honey, fair-trade organic coffee, spices, sauces, cheeses, soaps, skin care products containing essential oils, craft items and more. If you’re interested in attending, the farmers market takes place from 10 a.m. to 3 p.m. on Wednesdays and Saturdays, but if you want to see what the vendors have to offer, you should be aware that most of them participate primarily on Saturdays.

Along the same vein, on the second Saturday of each month, they expand the entire market experience by bringing in additional vendors and setting up tents outside the market building where visitors will find various crafts and homemade items showcased. The event is aptly called Farm & Friends Saturday, and it also features a petting farm along with inside vendors who do cooking demos. Two food trucks that supply customers with fresh, delicious foods on Saturdays and Wednesdays round out the experience. The first is Udo’s Doener Booth, which offers a German sandwich similar to a gyro, and the second is EatQual Street Food, which provides vegan fare. GARDENER’S PARADISE If you’ve never been to either facility, you really should make the brief drive because it’s well worth the effort. With workshops and insightful gardening tips, both spaces provide a gardener’s paradise few can resist, whether you have a green thumb or not, plus you can bring your dog. What better way to spend an idyllic Saturday afternoon?

WHEN IT COMES TO KEEPING THINGS CLEAN IN OUR COUNTY, KEEP BREVARD BEAUTIFUL IS THE GO-TO PLACE FOR MAINTAINING THIS LITTLE SLICE OF PARADISE WE CALL HOME. And it’s not just about keeping up appearances, although that’s nice too. It’s about maintaining a quality of life we’ve all come to expect and want desperately to keep. KBB is instrumental in helping Brevard residents in

their efforts to clean up the area through some well-organized programs. These efforts make it easier for all of us to do our part. Whether it’s adopting a segment of highway or assisting periodically in picking up neighborhood trash, we all have a job to do when it comes to saving the planet for future generations. One way you can get involved is to volunteer to be a part of the beach litter events that happen regularly throughout the year. In January, KBB organized the Cocoa Beach Community Trash Pickup. The event was put together in response to storm debris that had accumulated, but most of the collection projects they seek help with aren’t storm- or hurricane-related. Tony Sasso of KBB notes that more people than ever are using our beaches. In response, the organization has staff out daily, from sunup to sundown, working to keep Brevard beautiful, along with countless volunteers that show up most weekends. The Adopt a Shore project has proven to be extremely popular, with cleanup efforts focusing on shorelines throughout the county. Currently, KBB is waiting on a new experimental net for use on beaches that will act as a magnet for microplastics. A few years ago, Saltwater Brewery in Delray Beach came up with biodegradable six-pack rings made from beer dregs that are actually edible, should wildlife decide to nibble on them, in their own efforts to reduce plastic waste. This is especially important for fish and sea turtles that are regularly harmed by these waste products. More education is needed to enlighten the masses and change behavior when it comes to sustainability, but the goal is obtainable.
