Instead, take this starting point as an opportunity to improve your emotional health, to maintain or improve the relationships in your life and the chance to enrich your life by getting involved in things that are important to you.

CHESTERFIELD INSTALLS “MEETING PLACES” ART SCULPTURE IN CENTRAL PARK The Chesterfield Parks, Recreation

Department recently installed its newest art sculpture, “Meeting Places” by artist Catharine Magel, in Chesterfield’s Central Park. “Meeting Places” is a sculpture that explores the possibility and relationship between form and surface and the intersection of cultures East and West.

The color is evocative of flowing music. Color has emotion like music and therefore the piece is colorful and energetic. The sculpture itself is made of aluminum and the design was drawn in CAD. Water jet cut pieces are made from the drawings and the aluminum will be sprayed with etching spray. As part of the Sounds of Summer Concert Series with Live Art, artist Catharine Magel was chosen to create a permanent sculpture as part of the landscape of the park. The goal was to inform the public about the arts initiatives in Chesterfield by integrating art with the ongoing concert series.

The program is meant to engage the public, bring artwork to the outdoors as a reminder of the area’s identity and establish Chesterfield as a creative place maker in the community. The sculpture is located on the north side of the lake near the trail in Chesterfield’s Central Park.

he majority of New Year’s resolutions focus on eating right, exercising or saving money. But what about making a goal this year for better sleep?

Sleep is essential to maintaining our physical and emotional

health. So, even the occasional sleeping problems can disrupt daily life. For many of us, sleep deprivation is linked to our lifestyles – whether we have jobs that require us to work late, indulge in late-night TV binges or just have difficulty settling down at night.

A recent National Sleep Foundation Sleep Index study revealed that more than 1 in 3 adults rated their sleep as “poor” or “fair,” and 1 in 4 reported they did not wake up feeling refreshed at least once during the previous seven days. A continual lack of shut-eye can make you irritable and impatient, decrease your concentration, compromise your safety on the road, leave you fatigued at work and lead to health problems.

Many times people disregard sleep problems as something to be expected, but there is a point when you should see your physician.

A primary sleep disorder should be suspected if daytime sleepiness has worsened. If you’re struggling to catch your zzz’s, it’s time to see a doctor if you experience any of these other symptoms: •

Struggle to stay awake during the day during routine activities

Loss of interest in activities and have poor sleep quality

•

Increase in snoring or excessive snoring

•

Observed apneas (which consists of one or more pauses in breathing or shallow breaths while you sleep)

•

Drowsiness when driving

•

Mental fogginess and inability to complete tasks

•

Trouble falling asleep out of proportion to typical stress with prolonged periods of wakefulness

•

Waking more frequently at night or having trouble maintaining sleep

•

Worrying about sleep apnea with snoring and have other health issues such as hypertension or other heart problems

•

Excessive need to move legs out of proportion to level of activity

•

Need for increases in caffeine even when getting adequate sleep

According to the National Institutes of Health, more than 40 million Americans suffer from chronic, long-term sleep disorders, with an additional 20 million reporting occasional sleep problems. Don’t prolong your sleep problem by ignoring it.

As Julia Child says, "I enjoy cooking with wine, sometimes I even put it in the food I'm cooking."

Wine should be added to food early enough in the cooking process that it has time to simmer. As wine cooks down, the alcohol evaporates away and the flavors begin to concentrate. Use a light hand at first until you get familiar with cooking with wine.

Typically, white wines impart their delicate flavor to seafood, and dishes like chicken piccata and vegetable risotto. Red wine adds depth to bolder dishes like beef bourguignon, mushroom steak sauce, and of course, great-grandma's famous pasta sauce.

Using wine in a reduction or to deglaze a pan creates an intense and complex sauce.

It easily picks up those coveted brown bits that elevate the flavor of any dish. But be careful—light and overly fruity wines can ruin a sauce. The fruitiness is lost during the cooking process and will leave the sauce too acidic, ensuring those lovely brown bits have gone to waste.

Red or White?

Let's be clear about what is considered a good cooking wine. The so-called "Cooking Wine" found in your local grocery store next to the fancy vinegars and Worcestershire sauce is a poor excuse for a cooking ingredient. They are low in alcohol content, highly acidic, and contain a massive amount of salt.

Instead, choose a wine you would pair with the meal. Use one that is fruity, medium or full-bodied, and with little or no oak flavor. Wine aged in oak barrels tends to turn bitter and harsh when cooked in food.

For red wines, Pinot Noir and blends such as Côtes du Rhône will produce consistent results. Again, avoid wines aged in oak such as the robust Cabernet Sauvignon. White wines should also be dry and full-bodied. Try a Sauvignon Blanc, unoaked Chardonnay, or even a French Vermouth.

• Mix wine with different herbs and olive oil to make a delicious salad dressing.

• Stir in a couple tablespoons of red wine into brown gravy. Slowly simmer to create a luscious sauce for beef.

• Freeze leftover drinking wine in ice cube trays for future cooking use.

• Use a wine-based marinade to help keep meat, poultry or seafood moist while it cooks.

RED WINE REDUCTION FOR SAUCES

Makes about 2 tablespoons Two tablespoons of this potent wine reduction can be substituted in a recipe, such as a pan sauce, tomato sauce, or roast beef jus, that calls for one-half to three-quarters cup of wine. Add this reduction near the end of the cooking time—the way you might finiswh a sauce by swirling in some butter. The reduction can be kept for up to two weeks in an airtight container in the refrigerator.

1 small carrot, chopped fine (about 2 tablespoons) 1 medium shallot, minced (about 2 tablespoons) 2 button mushrooms, chopped fine (about 3 tablespoons) 1 small bay leaf 3 sprigs fresh parsley 1 cup fruity, smooth, medium-bodied red wine blend Heat all ingredients in 12-inch nonstick skillet over low heat; cook, without simmering (liquid should be steaming but not bubbling), until mixture reduces to 1 cup, 15 to 20 minutes. Pour through strainer and return liquid (about 1/2 cup) to clean skillet. Continue to cook over low heat, without simmering, until liquid is reduced to 2 tablespoons, 15 to 20 minutes.

ften, the word “diet” is casually used as a step we take towards becoming healthier. We often distinguish between the “healthy” and “not healthy,” ultimately creating a thought pattern that can be the toxic source of bad habits. “Diet” simply means—that which is being consumed. With all connotations aside, we can understand eating and drinking as

innate, so let’s recreate the baseline: everyone is on a diet! With this perspective, our understanding of meals can shift from the simplicity of good or bad, towards thinking about how individual foods make us feel—immediately and long term. The following descriptions of food can be consumed as a smoothie—a fantastic example of a meal supplement or replacement that can fulfill our flavor fixes and nutritional needs.

Mangoes If you have a sweet tooth and are partial to fruit over vegetables in your daily search for healthy foods, be sure to include a healthy dose of flavorful fruit in your smoothie. While fresh fruit is a beautiful option—it can also be a seasonal one. Missouri winters are a reality and the good news is that frozen fruit can offer essential vitamins and nourishment when local farmers are in the off seasons. Frozen fruit is storable and often cheap, as 12-16oz bags can be purchased for only a few dollars. Buy in bulk and better your budget! A personal favorite is frozen mango chunks. Mangoes are rich in antioxidants and vitamins, linked to better eyes, asthma prevention and digestive health just to name a few. Mangoes contain beta-carotene—an antioxidant linked to healthy skin and eyes. A general benefit to eating fruit is the energy boost that comes from the natural sugars. The intake of natural sugars are essential to recovery, especially after exercise. (An added benefit of frozen fruit is that it replaces the need for ice, saving your blender from the wear and tear of thrashing ice cubes. Your smoothie will be ready to serve cold with no need for additional refrigeration!)

Plain Greek Yogurt Although it is not a fruit or vegetable, plain Greek yogurt to a daily diet can have immense and immediate health benefits. Avoid pre-flavored yogurts. They will have excess sugar. Instead, use Plain Greek yogurt in a smoothie that is flavored with fresh or frozen fruit, or add mix-ins, such as nuts, granola or honey. Greek yogurt will have a thicker creamier texture than regular yogurt which is a result of the straining process it went through to reduce sugars. It is an excellent source of protein and probiotics which will help good bacteria grow in your stomach to boost digestive health. Plain Greek yogurt is an excellent option for breakfast.

Leafy Greens Leafy Greens can be a vital addition to smoothies. Think spinach and kale and other greens rich in color. Spinach will almost entirely blend into a smoothie’s texture, becoming unnoticeable to the point that the smoothie’s color may turn green before its flavor does. Kale—a more bitter and crunchy substitute will add a prominent texture and flavor.

Leafy greens contain essential vitamins and dietary fibers. Kale contains omega-3 fatty acids; natural fats also found in avocados that are essential to brain and heart health.

Try these options as daily staples for establishing an achievable, long-term health plan. Your life doesn’t hinge on one meal, so be kind to yourself, and balance the occasional treat with consistent, nutritious consumption, one day at a time.
