Including a money tree, philodendron, different species of succulents, a huge and slowly growing cactus, air plants, spider plants, a nerve plant, aloe, and a mysterious tree I adopted. Each of these living creatures has different needs and demands. They have different watering schedules, sun requests, and even plants that are the same species need individual care. Overall, living with plants is one way to get in touch with nature. I feel a connection with my plants and a strong sense of responsibility to keep them healthy and happy.

Shouldn't the same logic be applied to all of Mother Nature? Hey, I'm not a saint when it comes to conservation, sustainability, and being green, but it's the small collective actions that make a huge impact. Take Jax Fish House for example. Our feature story is about sustainable seafood, a buzz word in the news these days. Despite Colorado being landlocked, Executive Chef Shiela Lucero and a small team traveled to D.C. in 2017 to lobby for sustainability. Jax was also the first restaurant in Colorado to partner with the Monterey Bay Seafood Watch, a program that helps consumers choose seafood that is fished or farmed to support a healthy ocean. They also partner with James Beard’s First Catch, The Blue Ocean Institute, and Sea to Table, among others. We Don't Waste is another eco nonprofit we got an in-depth look at this issue. Food waste is not as typical of a concern, but it should be. The nonprofit saved nearly 4,000

RECLAIMING FOOD AND LIVES WITH DENVER'S WE DON'T WASTE.

AFTER MONTHS OF THINKING, TINKERING WITH AND PLANNING A WAY TO DO SOMETHING ABOUT DENVER'S FOOD WASTE, ARLAN PREBLUD DECIDED TO FILL HIS CAR UP WITH FOOD THAT WAS ABOUT TO GO INTO THE TRASH AND FIND SOMEONE THAT WANTED TO EAT IT. Just like that, in an instant, his nonprofit was born. Preblud’s organization is now known as We Don’t Waste, a Denver-based nonprofit that gathers quality food headed for trash cans and redistributes it to organizations, shelters, agencies, and kitchens that will make it into a meal for families and individuals in need. Founded in 2009 out of the back of Preblud’s car, the nonprofit saved nearly 4,000 tons of food in 2017, which resulted in nearly 10 million meals served. “I was a sole practitioner, and it was difficult to compete with the bigger firms. I had enough of the practice of law, and I thought there might be an opportunity [to switch to nonprofit work],” says Preblud. “I spent about six months doing research, putting together a business plan, and figuring out how I might do it. One day my kids said, ‘Dad, just do it. Quit trying to build a better mousetrap and just do it.’" So he did just that. “I had a Volvo Station Wagon, so I bought a tarp, folded the seats down, and started knocking on the doors of caterers. They universally said, ‘well, where have you been?’ and that was the start of it.” In the state of Colorado, one in six children are reportedly food insecure, and as a country, 40 percent of all produced food is reportedly tossed into the trash. We Don’t Waste does not solve these crises, but it does put a dent in the problem, and it should do a considerable amount more in the future with the addition of the Food Rescue and Distribution Center this year.

In the past, should Preblud and his staff receive a call about food to be picked up, it was essential that they found a home for it before the end of the day. With the new 11,570-square foot Food Rescue and Distribution Center, (including a state-of-the-art walk-in 1,000-foot cooler), We Don’t Waste is no longer pressed to find suitable donation stations by the end of the day. A day inside the We Don’t Waste trucks consists of several stops through the city and running into bakeries, kitchens, and distribution centers, wheeling food in and out of trucks, and making quick decisions throughout the day to determine where food will go, when, and how much of it. In an unpredictable sector of nonprofit work, the only constants are hungry people and food on the verge of waste. Thankfully, Preblud and his team have found a niche in the nonprofit sector that comes with little restriction. Because they do not charge donators for pickup, nor do they pay to donate, We Don’t Waste can take in and deliver food that food banks or other nonprofits cannot. Despite being comprised of less than a dozen staffers and a trusty handful of volunteers, We Don’t Waste is an essential part of delivering meals to people in need. Impacting food waste doesn’t require a team, food storage and distribution center, a walk-in cooler, or even a genius law practitioner: it just takes knocking on some doors, a tarp, and some folded down seats inside something like a Volvo Station Wagon.

For years they have worked with stores across the country, paying close attention to those they admired and using them as inspiration. Ferguson is a jewelry designer, and her 18 years in the industry have earned her a keen eye for especially remarkable pieces. Through Signet, Mancini and Ferguson have sought to create a distinct customer experience. The boutique is modern, featuring warm decor and mindful customer amenities, such as a chic customer area to host events and consultations. In their view, looking at jewelry should be a fun, relaxed endeavor, leaving behind the sterile, imposing environments that often pervade the industry. Signet boasts a carefully curated collection of fashion, artisan and fine jewelry at a range of price points, wanting to be known for having “something for everyone.” The boutique’s imaginative offering includes artists like Boulder's Todd Reed, whose artisanal luxury collections offer a unique alternative to traditional jewelry with “alternative bridal" collections, one-of-a-kind pieces, men’s jewelry, and accessories. Aside from jewelry, Signet also features complimentary lifestyle objects, such as handblown glass from Italy, and botanic cubes crafted in Asia. Above all, Mancini explains, Signet’s selection is entirely unique to Denver. They have fostered exclusive relationships with numerous artists, with 4-5 local artists featured at any given time. The two owners are very particular about who they work with, as they are committed to supporting sustainable sourcing and environmentally-conscious practices. Mancini and Ferguson feel their ultimate goal is to connect with the community. They have already made strides in this regard, partnering with local chefs and restaurateurs like Troy Guard, who they worked with for their March 7th Grand Opening. They're also hosting public events, like their upcoming “Mixology and Metals,” where people can come enjoy fun mixology recipes while learning about sustainable sourcing of metals and stones. Signet Jewelry is already making its mark on Denver, providing a new, fresh take on jewelry. Their distinctive boutique is a welcome addition to the Cherry Creek community.

WHEN THE SUMMER MONTHS HIT, THE COLLECTIVE RUSH TO FLEE THE FRONT RANGE IN SEARCH OF THE HEALING POWERS OF THE ROCKY MOUNTAINS CAN BE ANXIETY-INDUCING. Bearded, flannel wearing men and women donning Chacos race to fill the trunks of the Subarus by the thousands. Finding locations to escape for the weekend can feel impossible and wildly competitive. Worry no more, whether you’re gearing up for backpacking or a simple night of car camping accompanied by a hike, here are two less-traveled getaways to put on your radar. Located in central Colorado in Jefferson County just a two-and-a-half-hour drive from Denver via U.S. Route 285, sits nearly 120,000 acres of Lost Creek Wilderness, situated within Pike National Forest. Offering a collection of out-and-back hikes with campsites peppered along the way and one of the best backpacking loops on the Front Range, the Lost Creek Wilderness Loop. Consisting of around 28 miles of more difficult trail and nearly 3,500 in vertical gain, this loop provides everything from stream crossings (prepare for mud in the early season), to aspen groves, to views of Pikes Peak, and traveling past granite rock features on Bison Peak. (Reminiscent of what you might imagine Mars to look like.) Starting from Lost Park or Goose Creek trailheads, folks can choose to complete the full loop in two to three days. Plan to set up camp at least 100 feet from the tail and any water source and enjoy the fantastic Marslike rock gardens atop Bison Peak. For an easier, single night trip with developed campsites, there’s the option to camp at Goose Creek Campground within Lost Creek Wilderness. From Goose Creek Trailhead, there is access to trails along Goose Creek and Hankins Pass Trails. CONTINUED >

JAX FISH HOUSE IS SUPPORTING SUSTAINABILITY, ALL THE WAY TO THE EAST COAST HOW DO YOUR OYSTERS GET HERE? It’s a good question for any seafood diner to ask—especially one in Denver, smack dab in the middle of a landlocked state a thousand miles from either coast. It’s also a very common question, according to Sheila Lucero, executive chef of Jax Fish House. The short answer? Quickly. At Jax, oysters are flown in daily, so fresh that they are still alive until they are shucked and placed on your plate.

“I always remind people, how fast could I get to the coast if I took a plane? Two, three hours? Our oysters can fly here just as quickly, and they do,” says Lucero. She chuckles and adds, “Actually, they fly Southwest.” As for the long answer? Well, you’d have to go back about 20 years. In the early 2000s, a pair of cousins in Virginia inherited their grandfather’s Chesapeake Bay oyster farm. At the time, the Bay was declining in health from overfishing, and the oyster population was at an all-time low. Despite these obstacles, the cousins fought to reintroduce native oyster farming to their community. Relying on the know-how of local enthusiasts and a variety of cutting-edge techniques, in just a few short years they were ready to begin selling their first oysters. The cousins then set out on a cross-country tour, visiting restaurants and doing their best to put Chesapeake Bay oysters back on the culinary map. “I remember these guys pulling up in a van and asking if I wanted to try some of their oysters,” laughs Lucero. “I was like, 'Not out of the back of your van, I don’t!'” Despite the amusing introduction, Lucero was impressed. Jax began carrying Rappahannock Oysters shortly after and has been serving them ever since. “Oysters are actually a keystone species,” notes Lucero. “Without them, the food chain would not exist like it does today—it would be devastating.”

Massive filterers of water, oysters can filter up to 50 gallons a day, naturally making marine environments more hospitable for other species. Thanks to the work of sustainable farmers like the Rappahannock Oyster Company, today Virginia is bringing in record harvests and now leads the East Coast in oyster production. I sample a few of their Eastern oysters, which are briny and slightly sweet—Lucero recommends adding a squeeze of lemon juice for a bright, tangy bite. “If you’ve never tried oysters before, these are a great place to start. You’ll be hooked,” she promises. And Jax’s work with businesses like the Rappahannock Oyster Company is just the tip of the iceberg. Jax was the first restaurant in Colorado to partner with the Monterey Bay Seafood Watch, a program that helps consumers choose seafood that is fished or farmed to support a healthy ocean. They also partner with James Beard’s First Catch, The Blue Ocean Institute, and Sea to Table, among others.

In 2017, Lucero and a team from Jax were able to travel to Washington, DC to meet with members of Congress and lobby for sustainability.

Living in Colorado, a car’s drivability in snowy conditions is a common concern. Since the 911 Turbo has all-wheel drive, all that’s required are proper snow tires and it is winter ready. Sunfield also mentioned that one could drive 911 Turbo to the Tetons for a weekend or on a long road trip to Las Vegas without feeling a need to take a break to stretch your legs every couple hours. This car reacted smoothly and quickly to whatever situation I was in, no matter how fast or slow, highway or city street.
