In this issue, we highlight some of our favorite spots and experiences. We head to Flora De Mel, the area's only meadery, and we follow along on owners Jay and Stephanie Martin’s journey from beekeepers to restaurateurs. Signal Mountain Cookie Lady Re-Opens The sweet treat fixture re-opened its doors after a vehicle crashed through the storefront in July. Though no one was injured in the accident, repairs to the store took longer than expected. Owner Sandy Benson says she is overwhelmed by the support from her neighboring businesses. In a nod to the ordeal, Benson debuted a new cookie flavor: lemon. The sign on the counter reads "When Life Gives You Lemons, Bake Something Sweet."

A craft meadery and restaurant, Flora De Mel offers a relaxed atmosphere highlighted by quality food and unique drinks. With impressive brunch and dinner menus, the restaurant also hosts regular music nights and special events. In 2017, Jay and Stephanie Martin began beekeeping as a hobby. They wanted to find ways to support the honeybee population while simultaneously creating a sustainable business. In 2019, while visiting a small meadery in Western North Carolina, they found their answer. The couple began researching, obtaining equipment, making experimental mead batches, and creating a business plan. It was then that Flora De Mel was born. Widely thought to be one of the oldest alcoholic beverages and often referred to as the “nectar of the gods”, mead has ancient origins dating back thousands of years. Mead is simply alcohol made from honey. Fermented like wine or cider, honey is used as the primary ingredient. From there, herbs, spices, fruits, and berries are added to make unique flavors. Flora

De Mel offers two styles of mead. Session meads, which are refreshing, carbonated, and 7% ABV, are available on tap. Barrelaged products, which are bolder and more complex, are aged in wine and whiskey barrels for six months. The owners are proud to support Chattanooga-area businesses by incorporating locally sourced ingredients such as coffee from Goodman Coffee Roasters, grapes and cider from Wheeler’s Orchard, ginger and turmeric from Rising Fawn Gardens, and locally sourced fruits and berries. Many of these ingredients can be found in the Blueberry Basil, Good Man, Space Flower, Cosmic Crisp, Wildflower, and Meditatious barrel-aged house meads. Flora De Mel also offers experimental batches that can be seen fermenting behind the bar. When creating new flavors, the team at Flora De Mel does not shy away from trying new combinations. Jay told us, “We’ve found that trying everything we can think of instead of waiting for the perfect idea is key. The recipes are truly a collaborative effort from the whole Flora De Mel team.”
Flora De Mel continues to expand their reach by providing access to mead outside of their brick and mortar building. Their Airstream, equipped with session meads on tap, has made appearances at events throughout North Georgia and Flora De Mel will be represented this month at Wine over Water. A full list of scheduled events is available on their website. With their hives still active today, Jay and Stephanie will soon be offering hive sponsorships to increase support and provide more people with access to local honey. For those who find a new passion for mead, Flora De Mel offers a Mead Club subscription. Members in the club receive mead delivered to their doorstep each month. Members also receive access to limited releases to new meads and discounts to special events. Members can pick from three monthly packages: Bronze (2 bottles), Silver (4 bottles), or Gold (6 bottles). The daughter of a veteran, Briana Garza knows all too well how overwhelming it can be to move to a new city. Garza, the owner of Chatt Taste Food Tours, has lived on three different continents. In each new place, finding where the locals frequently ate was her family’s first step in getting acclimated and finding community. This is where the idea for Chatt Taste Food Tours tour originated. Chatt Taste Food tours allow locals and visitors to explore and experience the restaurants, architecture, and history that make Chattanooga a growing culinary destination. Each tour includes three to four local restaurants where guests are able to experience the culture and community of Chattanooga. There are five tours to choose from. Tours are offered seven days a week—making them a great option for date nights, networking, and small company gatherings. Available tours include: Downtown, MLK, Southside, Mural & Munch, and Vegan Food Tours. Upcoming tours include: Dessert & Drinks and Farm to Table. Currently, twenty-three establishments are partnered with Chatt Taste Food Tours. In order to qualify to be featured on the tour, establishments must be locally owned, have an
incredible story, and have unique cuisine. If you are not sure which tour to book first, Garza recommends starting with the Downtown Chattanooga Food Tour based out of West Village as it is the oldest and most highly trafficked tour. What would a tour be without a guide? A guide, or ambassador, accompanies guests for the duration of each tour providing trivia and history of the city and featured establishments. Each tour lasts two to three hours with about thirty minutes designated for each location. To ensure each tour is a smooth and fun experience, the chefs at each location serve tapas-sized portions. Guests indicate allergies and dietary restrictions at ticket purchase and these considerations are used by each establishment to curate a personalized dining experience for each tour. This process makes it a fun experience for the chefs as well. Garza shared there is one location on the Downtown Chattanooga Tour that has never served the same dish twice. To begin each tour, guests meet their guide at an established meeting location—the first restaurant of the tour. This information is provided in a logistics email that is sent once a tour is booked. guests, along with their guide, walk or drive to the next locations with walking distance ranging from one-third to one-half of a mile. If transportation is needed between locations, Chatt Taste Food Tours provides curbside pickup at each location so that guests are able to have a relaxing experience. What should guests wear? The good news is there is no dress code. Guests can wear whatever makes them comfortable. Garza’s only suggestion is that comfortable shoes be worn for walking tours. Available dates and times for each tour are accessible when booking through the Chatt Taste Food Tours website (www. chatttaste.com). Tours range from $69 to $89 per person (with all food and gratuity included); each tour includes anywhere from two to ten guests. If a more intimate experience is desired, private tours can also be requested by emailing chatttaste@gmail.com with pricing for private tours based on group size (up to eight guests). So, if you’re looking for a new way to experience the city, book a Chatt Taste Food Tour to build community through food and conversation.

The Orange Grove Center is a private non-profit organization serving individuals with intellectual and developmental disabilities. Founded in 1953 by community leaders and parents seeking better services for children with disabilities, the organization has been a national figurehead in developing education about and services for individuals with disabilities. Today, the Center offers individualized services and programs to over 1,000 children and adults each year. The Orange Grove Center is committed to transforming their community into a place that is “truly inclusive and diverse, where all of its citizens have the skills and support necessary to live the life they want.” Maintaining long-term support for individuals with disabilities is paramount to the Center's mission. In an effort to sustain this support, the Orange Grove Center hosted a sold-out “Bingo for the Grove” fundraiser. Held at the Hunter Museum, the event began with a cocktail hour where drinks were enjoyed along the panoramic views of the Tennessee River. As the sun set, Bingo, a silent auction, dinner and entertainment by The Atlanta Allstars followed.

The fundraiser was successful in increasing social awareness and garnering financial support for the Center. Funds raised at the event supported the center’s physical education, art, and music programs. Because Orange Grove does not receive funding outside what they raise independently, these programs are entirely dependent upon the success of the Center’s fundraising events. The Orange Grove Center is named after the Osage orange, a plant that bears inedible fruit. While the fruit of the tree does not have conventional use as a food source, the tree has a wide variety of uses that often go unnoticed. Similarly, the Orange Grove Center, led by those who nurture and bring awareness to those with immense potential who might otherwise be overlooked, continues to elevate our community.

Praline Pecan Crunch Snack Mix Ingredients • 8 cups brown sugar or cinnamon cereal squares • 1 cup pecan halves • 1/3 cup light corn syrup • 1/3 cup firmly packed brown sugar • 3 tablespoons butter • 1 teaspoon vanilla • 1/2 teaspoon baking soda • 2 cups white chocolate-covered pretzels • 1 cup salted peanuts • 2 packages of large waffle cones or paper bags Instructions 1. Heat oven to 250°F. Spray a 13 x 9-inch baking pan with non-stick cooking spray. Combine cereal and pecans in pan and set aside. 2. In a 4-cup microwaveable bowl, combine corn syrup, brown sugar and butter spread. Microwave on HIGH 1 minute 30 seconds. Stir. Microwave 30 seconds to 1 minute 30 seconds or until boiling. 3. Stir vanilla and baking soda into mixture. Pour over cereal mixture; stir to coat evenly. Bake for 1 hour, stirring every 20 minutes. Spread on baking sheet and cool completely; break into pieces. When cooled, add peanuts and pretzels. Makes about 10-11 cups. Store tightly covered.
