Learn the stories and people behind the ventures, as well as what tasty treats each truck offers. So yummy! For those of you who love to grill, Oren Molovinsky from Farmboy Market shares his tips on which wood to use for grilling different types of meat (pg. 32). Follow his advice and you’ll have perfectly cooked and perfectly flavorful meat. Trust me, I’ll be giving a copy of that page to my hubby, who loves to grill up a good steak. His are great, but now they’ll be even better! And, since the Valley is known for its top-notch and celebrity chefs, we spoke with three of them. They helm restaurants from Chandler to Paradise Valley to Phoenix, and they gave us the scoop on where they choose to eat when they’re not at their own locations (plus what they crave from their own menus, of course!). In the center, there is a cigar humidor with a glass front and top." The Desert Mountain home cellar has diverse elements, including brushed metal racking with bottles laying horizontally but placed with bottles front to back. This cellar is larger, with an 800-bottle capacity and is the focal point of the home with the opposite side facing the kitchen. CHARLES WILEY HEARTH ’61, MOUNTAIN SHADOWS His culinary career spans more than 40 years and includes several stints as the executive chef for luxurious resorts around the U.S. and launching lauded eateries such as Elements at Sanctuary Camelback Mountain Resort & Spa. So it's easy to assume Charles Wiley’s tastes lean toward haute cuisine that requires exotic ingredients with names that are tricky to pronounce and a lot of tedious fuss to get it on the plate. However, that assumption would be incorrect. In fact, Wiley, who was named one of "The Ten Best Chefs in America" by Food & Wine (amongst other honors), almost apologizes for possibly disappointing readers in his personal palate preferences. “I’m a very basic guy. I like very simple food in its purist form,” says Wiley, who oversees all food and beverage operations for Mountain Shadows and Hotel Valley Ho. “I’m afraid I’m not very exciting.” So what spots hit Wiley’s yearning for simple yet impeccable quality over fancy glitz when he’s got a free night? Wiley is known to haunt FnB in Old Town Scottsdale, where he says Chef/Co-Owner Charleen Badman “is a master at vegetables.” He also frequents Pomo Pizzeria near his Scottsdale home for its dishes crafted with fresh ingredients. “What I love about Pomo is their so, so simple and beautiful Neapolitan-style pizza,” he says. 26

JUSTIN BECKETT BECKETT’S TABLE AND SOUTHERN RAIL Nightly, Justin Beckett’s restaurants are packed with patrons drawn to his elevated versions of comfort food that run the gamut from Beckett’s Table’s cast iron chicken and bacon biscuit stuffing to the cornmeal fried okra and iconic fried chicken at Southern Rail. While they dine while seated on comfortable chairs and at tables, Beckett doesn’t have that luxury. “I do a lot of grazing while standing,” says the Phoenix restaurateur who garnered a nomination for Food & Wine magazine’s “People’s Best New Chef” award in 2012, and gained national attention with an appearance on the Food Network’s Chopped. When Beckett does have time to sit, he hits The Parlor for the calabrian pie topped with spicy Calabrese salumi, burrata and watercress. Pizzeria Bianco and Tratto are also favorites, where he opts for vegetable dishes and the pasta specials. On his own menus, Beckett has a soft spot for the grilled cheese that flaunts a crunchy exterior that surrenders to a melty gooey fourcheese mélange interior, and the pork osso buco confit that is accompanied by späetzle at Beckett’s Table. At Southern Rail, he’s partial to the fried green tomatoes with pimento cheese and the smoked chicken and andouille gumbo, on which he snacks the most. “It needs to be consistent, so I try it multiple times a week. It’s quality control, but it’s also so good,” he says. His advice to Valley diners? “Don’t just get a salad and commit to one entrée. Get four different appetizers for your entrée. GINGER MONKEY Jackson Armstrong, the owner of Ginger Monkey, is revving up one of the newest Chandler food trucks on the block. The truck itself was built by a friend of Armstrong’s who served up French fries, but now it’s an extension of Ginger Monkey Tavern, a brickand-mortar restaurant that offers its own unique cuisine. “I’ve never been in the food truck business,” says Armstrong. “There’s definitely a learning curve. August was our first month.” In addition to restaurant favorites, new items are served from the truck. Five creative menu concepts were also created for events, festivals and even weddings. One of the staples served from the truck is the T.V. dinner—but it’s certainly not something you’ll find in the freezer section of a grocery store. Instead, think of a gourmet alternative with a side of nostalgia, modeled after their house recipe. Armstrong is also working on a T.V. tray design that truck foodies can keep or toss. The truck has a from-scratch-kitchen, and dishes are always made to order. “Our cooks prep the day of or the day before. It’s the advantage to having a free-standing restaurant,” Armstrong says. Armstrong looks forward to catering opportunities and hopes to partner with bars that don’t offer food service. “I had no idea how big a time commitment and how many moving parts go with a food truck. I’ve got such a great team who has been with me since the beginning. We make decisions as a family, and the truck’s profits are to be shared among us,” he says. OH SO GOOD MINI DONUTS Suki Saysana and Ramon Camacho, the owners of Oh So Good Mini Donuts, opened for business more than three years ago. They began by serving their tasty treats out of a tent, then worked their way up to a hot pink mobile trailer painted with sprinkles and brightly colored donuts. “We took a trip to Seattle where we were introduced to these delicious bites of heaven. It was such a cool concept, we just had to share it with everyone,” explains Saysana. Their mini donuts are made fresh to order, and customers can watch the process. “It is such a delight to watch their excitement, both children and adults, as the mini donuts drop and move along the conveyor belt,” says Saysana. The donut menu is ever-changing, guided by the season and sweet inspiration. Their most popular treat is a toss-up between the strawberry cheesecake or That Girl, named after that girl who repeatedly requested the magical concoction of minis coated with cinnamon sugar, powdered sugar and maple icing. It’s now a hit. Saysana’s favorite is the Tutti Frutti. It’s covered in glaze and topped with Fruity Pebbles. He relives his childhood in every bite. “We started on this journey by chasing our dreams with no prior experience in business ownership or food. Through hard work and support from our families, we were able to help our business grow. We would like to thank all of our food truck family and especially our customers,” says Saysana. TACO BOUT IT MORE Taco Bout It More is a family-owned food truck that hit the streets in October of 2016. Their clever name was inspired after hours of deliberation when somebody said, “Let’s taco bout it tomorrow.” The play on words quickly evolved into the name they have today. “Being the taco chef for over seven years, I know that there’s more to it than just cooking and making a taco. It’s the love that is put in every taco, in every dish that is made, that makes Taco Bout it More unique,” says David Damore, who also goes by el jefe de tacos. Taco Bout It More’s salsa is made in-house daily, and their corn tortillas are always fresh. The tacos come with a choice of marinated carne asada or pollo asada, then topped with fresh cilantro, onions and cotija cheese. “I love the salsa because it’s full of flavor,” shares Damore. “Every bite of taco is robust and intensely fulfilling—what a taco should be.” Other fan favorites include their elote (street corn) and nachos topped with creama,

guacamole
and
cotija
cheese. They’ve shaken things up with their Guatemalan shuco dog, an all-beef dog butterflied with carne asada and cilantro onions. It’s accompanied by either a cream sauce made with a hint of cilantro or a mild sauce made with fresh herbs. The truck can be found at events and taco festivals, of course. They also cater private parties. During the week they serve lunch and post their stops daily on Facebook and Instagram at @tacoboutitmore. A
RECORD-BREAKING, WORLD-CLASS COMPETITION FOR ONE CHANDLER RESIDENT. Andrew McCreery, whose genealogy traces back to one of the original Scottish clans, has always identified with his heritage “and all things Scottish.” For his 50th birthday, his wife and sisters conspired to surprise him with a family kilt and a registration to compete in the Portland Highland Games, a sporting event of strength and brawn that dates back more than a thousand years. At the games, competitors throw heavy boulders, hammers, bales of hay, and the infamous caber (a 19-foot wooden pole that weighs more than 100 pounds and which must be tossed endover-end to qualify). Although being Scottish isn’t a requirement to play, wearing a kilt is. So when McCreery opened his gift that fateful birthday, he was thrilled to finally own his family kilt. He laughed at the idea of wearing it at the next day’s Highland Games, thinking he’d look authentic as a spectator. Behind the scenes though, his new team of gamers was preparing for the newbie to join them in the Master’s Class (men aged 50-55). Without any training, and nothing but team spirit and blind optimism, McCreery entered the first event of the day, The Portland Stone, where a 97-pound river rock is thrown—and the farthest distance wins. With a little fear and a lot of excitement, he threw that stone shot-put style almost over 14 feet, and broke the Oregon state record that had been in place for 11 years! McCreery has now spent the last two years competing in games around Arizona and Oregon. In March, at the Phoenix Highland Games, he qualified to compete in the World Master’s Championship. In September, McCreery competed in Stuttgart, Germany, alongside world-class champions, in a battle for the world title!
