I am grateful for growing up in a school district that provided many opportunities for students with different interests and passions to get hands-on experience. For me in high school, it was the journalism program at Lakota East that planted the seed for my future career in magazines. It was also where I explored my interest in music through choir and theater. From competing nationally to writing and producing albums and music videos, members of Centerville High School’s a cappella group, Forte A Cappella, have certainly had their share of hands-on experience. This group first impressed me when they hosted my college a cappella group at the International Championship of Collegiate A Cappella at Centerville High School. Learn more about how this group has grown into a perennial powerhouse in the music world. Learning doesn’t stop at the classroom and the Dorothy Lane Market Culinary Center knows there is knowledge to be gained in the kitchen. Their series of Young Chef Classes help kids learn about healthy eating, cooking techniques, and even math. Take a look at one of their recent classes and try out a few of instructor Mary Cooney’s recipes with your kids at home. It’s important to celebrate accomplishments and create long-lasting memories with our families. One sweet way to do this is taking a trip to Le Macaron French Pastries at Liberty Center in Liberty Township. We’re excited to share a selection of their gelato, macarons, and other sweet treats with you. We didn’t forget our furry friends. Our Giving Back story spotlights Xeniabased nonprofit 4 Paws for Ability. Read about how they are helping people with disabilities, including a Centerville family, one service dog at a time. We hope your summer has been filled with sun, fun, and memories. Our team is wishing good luck to all students as the new school year begins. Class 101-Dayton Recognizes Five Outstanding Students Springboro high school graduate, Alex Atallah, was awarded with the $1,000 national 101 Scholar award in July. Class 101-Dayton also presented $500 scholarships to Jordyn Horstman, Grace Vollmar, Hannah Hurlburt, and Isabelle Lambert. The 101 Scholar program celebrates students who excel in leadership and academics. The DeRosa family also awarded the students with $500 in honor of the late Beth Jamison, a vocal music teacher at Springboro High School who passed away in November. Class101.com

Proudly Serving Centerville: RTA Debuted New Bus at Americana Festival The Greater Dayton Regional Transit Authority (RTA) debuted their new “Proudly Serving Centerville” bus to the community at the 50th anniversary Americana Festival. The Centerville bus design features Leonard E. Stubbs Memorial Park and Centerville Community Amphitheater, Activity Center Park, Centerville Municipal Building, Benham’s Grove and the Americana Festival. This is the 7th bus in the RTA’s “Proudly Serving Project,” which pays tribute to 22 communities the RTA serves in Montgomery County. IRideRTA.org

Centerville Business and Organization of the Year Awards Centerville recently honored two local businesses and an organization. Making Music Magic FORTE A CAPPELLA BRINGS A TRADITION OF PERFORMANCE EXCELLENCE TO CENTERVILLE AND BEYOND.

When you think about high school singing groups, visions of cumberbunds and risers may come to mind. You might picture kids singing the “Hallelujah Chorus” while lined up stiffly on stage with a choir director at the piano. Centerville High School’s audition-only a cappella group, Forte A Cappella couldn’t be further from these impressions. Just watch their Evolution of Madonna video on YouTube that has already accumulated 11,000 views. With the vocal talent, musical arrangement, and choreography you could mistake their video for a clip from the TV show Glee. Twelve years ago, outgoing director Ben Spalding turned Forte exclusively a cappella and from there they hit the ground running. The group started recording a minimum of one album per year and even recorded

three albums of all-original music by the students. Forte competed every other year in the International Championship of High School A Cappella (ICHSA) and was the national runner-up four times and crowned the winner in 2016. The group started filming music videos as well, and now films them each and every year. We sat down with Kelly Korpusik, incoming director of the group for the 2022-2023 school year and a few current and former Forte members to learn more about how the magic happens. Kelly is taking over for Ben, who after building this amazing program is pursuing a new venture. When Kelly started teaching private voice lessons at Centerville High School back in 2015 she had a front row seat to everything that the group was accomplishing.

As Ben continued to grow the choir program, there became a need for a supplemental position and Kelly was offered the role. “Every single year the goal is to make the current year better than the one prior. You always have to look to improve in order to stay hungry and keep the program performing at an optimal level,” explains Kelly about how Forte consistently pushes the limits of what a high school a cappella group can achieve. Most recently the group performed as a part of the top 10 a cappella groups in the country at the National A Cappella Convention in Orlando. Forte was invited to close out the top 10 showcase and was met with a standing ovation by the crowd. Class of 2022 graduate Danielle MacConnell recalls that moment as her fondest memory of working with CONTINUED >

the group: “As we ended our set, everyone in the room leapt onto their feet to give us a standing ovation. All of us in Forte had been working so hard toward this performance and the feedback was indescribable.” These students are committed to the program and to say that they work hard would be an understatement. Incoming senior Sam McClain joined the group because he loves a challenge. Sam talks about how being a part of Forte has been “an amazing addition” to his high school experience. Despite the hard work involved, Sam tells us how ending his day with his Forte class gave him “a great outlet to express myself and decompress after five other periods.” Joel Korpusik, Kelly’s son, joined the group as a sophomore and echoes Sam’s sentiment, “Being in Forte has made school life 100 times better...with Forte I’m always excited to head to school.” Class of 2022 graduate Jack Cawthon joined Forte for the opportunities. He remarks that, “Forte gets to work with giant names in the a cappella community that few other groups get the luxury of meeting.” Forte recorded three videos this past school year in a partnership with producer Shams Ahmed. Shams owns the group AcaPop with Grammy winners Ben Bram, arranger for Pentatonix, and Scott Hoying, lead singer for Pentatonix. This kind of recognition draws the attention of people from around the world. Forte continues to push the envelope for contemporary a cappella each and every year. It’s clear that the leadership from Ben Spalding and Kelly Korpusik has been instrumental in not only making Forte the standard for excellence in high school a cappella groups, but also a group that the students enjoy and benefit from being involved in.

Kelly plans to keep it that way saying that one of her main goals for the 2022-2023 school year is to make her new role a smooth transition for the students. She shares, “Change can be hard and I want the kids to be excited and confident that the excellence and fun that the choir program currently offers will remain the same.” Kelly says her additional goals for the upcoming school year are to, “Continue to record new tracks, make new videos and look for new ways to collaborate with others in the industry.” The community can look forward to more great things from Forte A Cappella next year and for years to come. Some families cook with their kids often, but for others, just thinking about it is overwhelming. With some realistic expectations, extra time, and a bit of planning, it can be a positive experience for everyone and you’ll make good memories along the way. Between leading cooking classes and culinary camps for Dorothy Lane Market (DLM) Culinary Center and raising a large Italian family, Mary Cooney has spent a considerable amount of time cooking with kids. She is happy to share helpful ideas you may not have considered for working with kids in the kitchen. She also shares a few (rather tasty) kid-tested recipes! For Mary, letting kids help prepare food is not only a fun thing to do, it’s essential and beneficial for everyone in the family. “My analogy is that the family is like a team. One person can’t do it all, you need the other players and everyone knows they have an important job to do.” Not sure where to start? “Let kids help with desserts,” Mary advises. “Kids love to make cookies, brownies, and other desserts. That gets them interested and gets you used to working together to make something.” You’ll need a bit of extra patience, so Mary points out that realistic and lowered expectations help. “Give yourself double the time you would usually need. You’ll be explaining things, they’ll be moving slow, they might lose focus and need to be brought back to the task. Expect clean-up to take longer too,” says Mary. But as she’s learned, it gets easier the more you do it. The benefits of cooking with kids are worth the extra effort. “Getting the family involved slows

things down. Instead of eating and rushing off to the next thing, we talk and laugh while we cook. The kids open up more when we’re in the kitchen. I’m amazed at the bonds created when we work together,” Mary shares. FRESH PASTA DOUGH Makes 1 pound of pasta

Ingredients • 2 2/3 cups King Arthur all purpose flour, plus extra as needed • 4 large eggs • 2 tablespoon extra-virgin olive oil Instructions Make dough 1. Process flour, eggs/yolks, and oil in food processor until mixture forms cohesive dough that feels soft and is barely tacky to touch, about 45 seconds. Pinch dough; if any dough sticks to your fingers, add extra flour 1 tablespoon at a time. Process until flour is fully incorporated after each addition, 10-15 seconds, before retesting. If dough doesn’t become cohesive, add up to 1 tablespoon of water until it just comes together, then process 30 seconds longer. 2. Knead and let rest. Turn out dough onto a dry counter and knead until smooth, 1-2 minutes. Shape dough into 6-inch log. Wrap in plastic wrap and let rest at room temperature for at least 15 minutes. 3. Cut dough into six equal pieces. Working with one piece of dough at a time while keeping the remaining pieces covered, dust both sides generously with flour, and press into flatter rectangle. 4. With a pasta roller or a pasta machine, turn the knob to the widest setting (#1). Insert the first piece of dough and roll it through the machine. Continue running the dough through the roller, reducing the width setting between each run, until you reach #5. 5. Place on parchment paper so it can dry slightly. (Repeat with remaining pieces of dough.) After 5-8 minutes, turn each sheet over so the other side can dry slightly too. Note: when the dough is slightly dry, it should feel leathery, not sticky or tacky. 6. Once slightly dry on both sides, cut each sheet into pasta. Place back on parchment paper and sprinkle with flour. To Cook 1. Cook fresh pasta noodles in a large pot of boiling water (salted). Use about 6 quarts of water for 1 pound of pasta. Fresh pasta takes considerably less time to cook than dried pasta, usually one to 3 minutes, so watch it carefully. 2. To test, remove a noodle with tongs or long-handled fork, let cool slightly and take a bite. Pasta is best when cooked al dente (tender but firm to the bite). 3. As soon as it is done, drain in a colander.

MARY'S MEATBALLS Makes about 30 meatballs

Ingredients • 1 1/2 pounds of ground chuck • 1 1/2 pounds ground pork • 1 cup whole milk ricotta cheese • 3 tablespoons heavy cream • 1 cup freshly grated Parmesan cheese • 3 large eggs • 1/3 cup fresh parsley, finely minced • 3 large garlic cloves, finely minced • 1 tablespoon kosher salt • 1 1/2 teaspoons fresh ground pepper • 2/3 cup cold water (The secret to great meatballs!) Instructions 1. Preheat oven to 400°F. 2. Brown the ground chuck and ground pork. Mix meat and all ingredients except the cold water in a large bowl. Stir cold water into the rest of the ingredients last. Refrigerate for 2 hours (or up to 24 hours). 3. Form into meatballs with an ice cream scoop or roll into balls and place on a pan with sides. (No need to leave space between the meatballs.) Bake at 400° for 18-20 minutes or until lightly golden on top.

CHEESY GARLIC BREAD Makes 8 to 10 servings

Ingredients • 2 cloves garlic, finely minced • 3 tablespoons butter • 3 tablespoons extra-virgin olive oil • 1 French baguette, split in half but still attached • 3 thin slices of provolone cheese, cut in half • 4 tablespoons Parmesan cheese, finely grated • 2/3 cup shredded mozzarella • 1 teaspoon fresh parsley, finely minced Instructions 1. Preheat oven to 375°F. 2. Combine garlic, butter, and olive oil in a microwave-safe dish. Heat for 1 minute on high. 3. Open/cut the baguette, leaving it attached in the middle, so it opens like a book. Brush garlic butter/oil mixture on both cut sides of the bread. Place a single layer of provolone slices on one cut side of the bread. Sprinkle with parsley, mozzarella, and Parmesan cheese. 4. Close the loaf and wrap in foil, rolling the foil down on both the long and short ends of the bread. Place on a cookie sheet and bake for 15-20 minutes. Cut into 8-10 pieces and serve warm! TOMATO SAUCE WITH MEAT Makes 12 cups of sauce

Ingredients • Cooked meatballs (see recipe) • 1 1/2 pounds boneless pork meat (country-style ribs) • Kosher salt and freshly ground pepper, to taste • 2/3 cup olive oil • 1 medium-large onion, chopped • 3 large garlic cloves, finely minced • 1 cup red wine • 1 (28 ounce) can San Marzano whole peeled tomatoes, hand crush • 2 cups chicken stock • 1 tablespoon pesto • 1 red pepper, cut in half • 1 Parmesan cheese rind • 1 package (3/4 ounce) fresh basil (reserve one stem with leaves attached) • 2 (26 ounce) boxes Pomi strained tomatoes

Instructions 1. Season pork meat with salt and pepper. Heat the olive oil in a large stock pan and cook meat until brown on both sides. Add onion and cook for about 5 minutes or until onion is transparent. Add garlic, then wine. Allow it to completely reduce. 2. Crush tomatoes then add them, along with chicken broth, pesto, red pepper, and cheese rind. Add half package of basil, reserving one stem for later. 3. Preheat oven to 400°F. Continue cooking on medium-high heat for 15-20 minutes. 4. Once tomatoes have broken down, add 2 boxes of strained tomatoes. Bring to a boil and place a piece of parchment paper on top of pan before you cover with a tight-fitting lid. Place covered pan in oven for 1.5 hours. Add the meatballs during the last 10-15 minutes of cooking. 5. Remove meatballs, pork meat, cooked basil stems, and red pepper, set aside. 6. Remove all the leaves from the reserved basil stem. Stack the leaves on top of each other and cut into thin ribbons. Add to sauce after meatballs have been removed.

When Kelly Camm discovered 4 Paws for Ability, she fell in love with it immediately. “I couldn’t get 4 Paws out of my mind,” she says. “Now I’ve been development director for 12 years. I love how we change lives in significant ways here.” Service dogs are born and trained at 4 Paws for Ability, a nonprofit based in Xenia, Ohio. Dogs are specifically raised and “made to order” for each disabled child, adult or veteran. Centerville readers may have even heard of 4 Paws before, as some of their service dogs were featured in a Netflix special called Dogs in Season 1, Episode 1. While the dogs act as companions like ordinary dogs, they do much more. The pups can

help mitigate disabilities. 4 Paws has dogs that specialize in 11 disability areas. Some of the most common are autism and seizure dogs. “Our service dogs do wonderful things for kids with disabilities. They can stop meltdowns for children or track them if they get lost. The dogs can also medically alert a seizure onset,” explains Kelly. Centerville resident Tina is mom to Kenley and service dog Blaze, who provides seizure alerts for Kenley. Tina shares about 4 Paws, “Since Blaze arrived, Kenley has gained more daily independence. She has also been more confident in her social interactions since having Blaze by her side. She loves to show him off! We are so thankful to have an organization like 4 Paws in our lives.” One of the best ways to help support the life-changing work 4 Paws does is to become a volunteer trainer, which you can do from your home! 4 Paws is in need of more amazing volunteer trainers (VT) for their service dogs in training (SDiT). Some of the 4 Paws volunteer roles include: • Puppy Starters take in eight week old puppies until they are fully vaccinated at 16 weeks and can then be paired with full time VTs. • Full-time VTs are paired with a SDiT of whatever age they prefer or is available, and care for them throughout their journey of becoming a service dog. • Weekday/Weekend VTs provide a relaxing break for the dogs who are working with their trainers Monday through Friday in advanced training.
