I'm so glad I live in a world with Octobers!

October brings us pumpkin spice (lattes at 1418 Coffee!), outdoor festivals (Troubadour Fest!), and football weather (Go Bobcats!). With the changing seasons also comes a change in what we are craving, and with fall that often means comfort food. October is our most delectable issue of the year, filled with some of our favorite dishes and beverages around town.

We have the pleasure of sitting down with the owner of 1418 Coffee and learn why this gathering spot is not only a great place to get a cup of joe but also to absorb the local atmosphere. We have also included in this issue a new pumpkin bread recipe for you to try at home, whether you’re making it for just your family or as a tasty gift for someone else. Speaking of food gifts, in Found Downtown see what yummy treats our shops are now offering.

Celina Lifestyle contributing writer, Sharla Davenport, shares with us on page 50 how to “fall” in love with wine this season. During the month of October, the North Texas Wine Association hosts the annual North Texas Wine Country Fall Wine Trail. This Trail consists of over thirty-five Texas wineries located around North Texas finishing at the Red River including our very own Valley Vines in downtown Celina.

It is with great pleasure to announce the Outstanding Student Athlete of the Month as selected by the Celina Independent School District (CISD) Athletic Coaching Team. This month’s selection is Aimee Clarke. Aimee, a senior athlete at Celina High School (CHS), is a four year letterman in Cross Country and Track and a part of the Texas State back-to-back Champion Girls Cross Country Team (2021 & 2022.)

She started running in fifth grade with Speed Kids and Apex Track Team and ran her first two years at CHS alongside her older sister Adele. Her efforts have earned her many awards including All District, All Region, and TGCA All State three times, CCCAT All Region and All State twice, and Milesplit TX All State! Her favorite memory is winning State in GIrls Cross Country with her sister in

2021! In addition to cross country and track, Aimee is on the CHS Theater Tech Team and the Yearbook Committee.

She attends Lifeway Church and was a Girl Scout for ten years. She loves driving her Jeep and hanging out with friends when she is not running. Aimee always puts in 100% during a race. Anyone who has ever watched Aimee close a race will see that her kick leaves everything on the course/track, and that is also how she approaches life. After high school, Aimee plans to attend college in Texas.

We know that Aimee has a bright future beyond CHS, and we can’t wait to see all that she accomplishes. Congratulations to Aimee Clark and her selection as the October Outstanding Student Athlete of the Month!

Our local neighborhoods are the heart of Celina. Andy “Hop” Hopkins, owner of The UPS Store, is highlighting one of many of Celina’s finest communities on a monthly basis.

COMMUNITY: GLEN CROSSING

LOCATION: Community located in Celina, Texas within desirable Celina ISD tucked between Preston Road and the Dallas North Tollway. Property was once owned by the Glendenning family - hence, Glen Crossing was named as a way to honor the family that lived here for three generations.

OVERVIEW: A quiet, peaceful neighborhood with room to roam and close proximity to the bustling historic downtown Celina and the Square.

AMENITIES: This community offers hike and bike trails, an amenity complex featuring a resort-style pool and cabanas, multiple community ponds and a small event lawn. Being near to the Dallas North Tollway, big city amenities are only a short drive away.

EVENTS: Glen Crossing residents gather for Halloween trick-or-treating. Planned holiday activities are hosted near the pool for the kids with bounce houses and food trucks. Glen Crossing also offers a book club for resident adults. Swim parties are often hosted at the pool area.

Run Celina Hosts The Inaugural Celina Turkey Trot Presented By Celina Lifestyle

What do tutus, pumpkin pies, and the great city of Celina have in common? Run Celina’s very own inaugural Turkey Trot! The Celina Turkey Trot is sure to become one of the area’s beloved Thanksgiving themed events sponsored by Celina Lifestyle, REX Real Estate, Toasted Walnut, Valley Vines, C3 Aesthetics, Advanced Plumbing Solutions, Martin Marietta, The UPS Store Celina, Atomic T-Shirts & Signs, and Compass Bible Church.

The Celina Turkey Trot is a fun, engaging, family-friendly way to celebrate Thanksgiving. Bright and early on Thanksgiving morning, runners, joggers and walkers alike can come together for a morning of fun. Turkey Trot is a celebration of gratitude, community, and friendly competition.

You’re in for a treat this November; each participant who crosses the finish line will receive a mini apple pie or mini pumpkin pie, baked with love from one of Downtown Celina’s newest editions, Granny's Bakery. On top of that, every racer will receive a medal. Of course, there are placement awards for a wide range of age groups and gender-specific ranks as well. There will be booths of all kinds lined up at the starting point; specially-designed Run Celina merch, which includes shirts, hoodies, and more; tables and tents from local vendors and shops. There will even be a hot chocolate stand by Blue Engine Bakeshop. There’s so much fun to be had and the perfect event for the entire family.

And YES, you can walk the Turkey Trot! One of the most common questions is whether or not walking is acceptable. While it is considered a race, it’s also a time to gather with friends, family, and celebrate the holiday, and walking is a perfect way to do that. The course is a clearly marked double-loop around Old Celina Park, with a whopping total of 42 arrows pointing you towards the finish line.

If you’re looking for something for the kids, there’s also a Thanksgiving-themed one-mile fun run. Come dressed in costumes! There’s even a contest for the best costume so dress up as a turkey, your favorite Thanksgiving side dish, or anything festive!

Melissa Gresham is the brains behind Run Celina and the Turkey Trot. A long history with running has served her well; it began in the military when the exercise was not optional. Yet it surely grew to a passion that Melissa can’t get enough of now. She soon found a desire to bring her favorite pastime to her own city. Celina was the best option to bring her love of running and share it with others in the tight-knit community. It started with small funruns, then grew to 5Ks and other long-endurance runs. But Melissa wanted running to be fun and she wanted Run Celina to stand out.

And thus, Turkey Trot has come to Celina. Along with other 5ks and 10ks, Run Celina is devoted to making running as fun as possible, and the Celina Turkey Trot is sure to be at the top of the list of most exciting runs Celina has ever seen.

This year, a portion of the proceeds from Turkey Trot will benefit Lovepacs, a nonprofit serving many areas throughout Texas. Serving over 18 communities and 270 schools, Lovepacs is devoted to feeding children facing food insecurity during the holidays. They provide non-perishable and easy to use food items to children in Texas school districts, made possible through donations and support from local families and districts. They want to give every child the opportunity to celebrate the holiday seasons.

CHANGING THE WORLD ONE CUSTOMER AT A TIME THROUGH INCLUSION

Coffee.N.Crumbs began in 2018 as a result of Dana Leach noticing her older kids’ friends didn’t quite know how to interact with her youngest son, James Ryan, who has Down Syndrome. Her idea of modeling inclusion for her children and their friends developed into a mobile beverage trailer employing high school and college students of all learning styles.

According to their website, the official non-profit organization, Inkorporated, was created to model, promote, and provide inclusive opportunities for purposeful employment, meaningful relationships, creative expression, and community living for all abilities. The goal is two-fold. First, to employ students who are future hiring managers, employers, voters, and policymakers who can reflect on their experiences working beside people with intellectual and physical disabilities and then use those experiences to normalize their inclusion in the workforce. Second, to provide a space for those with disabilities to learn to be an employee, be a member of a work team, experience community, and be a part of an environment that celebrates the unique abilities of each person.

MAKING THE ROUNDS

The Coffee.N.Crumbs teal vintage trailer makes the rounds in northern Collin County logging stops at farmer’s markets and events in Melissa, McKinney, Prosper, and Celina, even making an appearance at the Garden Club of Celina 2023 Home Garden Tour. They serve teas, lemonades, sodas, Italian ice, ice cream, and most importantly, coffee. Their coffee is a specialty grade coffee from Honduras picked this year, roasted and shipped two days later making the freshest cup around. And don’t miss special concoctions like iced Peach Cobbler Chai or frozen Dessert Pear Lemonade. Leach mentions “we like our customers to be surprised about how good our drinks are and how good the service is”.

The large staff is on hand to personally mix, create, and serve the menu items and everyone has a role. James Ryan Leach has the task of training the team on the process of steaming milk. They all have a hand in providing the service customers have come to expect at Coffee.N.Crumbs. Mrs. Leach says, “The more time we spend together, the more we understand each other”. This idea crosses the counter to customers, too. Customers love to hear the story of inclusion and enjoy playing a part in the learning process.

Coffee.N.Crumbs is an award-winning organization receiving the People’s Choice Award and Community Service Award, both in McKinney. The beverage trailer can be booked for neighborhood events, for PTOs and PTAs, Teacher Appreciation Week, and almost any time that calls for delicious drinks and friendly service.

MAKE AN IMPACT

Dana encourages people to find someone who is different than them and engage. Learn to say “hi” and don’t be afraid to be around people with a disability. Regardless of ability, people want to be with their peers so be brave and engage. James Ryan has had the privilege of engaging with the Bobcat football team at Celina High School where he is a junior. He is known as “Puck” by friends and teammates and since his start in CISD, automatically found inclusion. His involvement with the football team has made an impact on him and the team.

Coffee.N.Crumb is also looking for volunteers who enjoy planning events. The goal is to be a self-sustaining business to support their large paid staff and that calls for more farmer’s markets, more special events, and more opportunities to sell their specialties. Have you ever needed a place to catch up with a friend? Or maybe you want to work outside the office, have some coffee, and grab a bite to eat?  The common denominator revolves around the most popular drinks in the world: coffee. Coffee brings people together and 1418 Coffee in Prosper understands that concept.

1418 Coffee is located on the way to downtown Prosper in one of the most recognizable buildings– the old Prosper Post Office. This building is partially the reason for the town’s name, and the Bryant family realized it was distinctive, historic, and a perfect place for coffee.

The coffee shop is owned by the Bryant Family, David and LeeAnn. David, a native Texan who grew up in Richardson, spent most of his career in corporate life eager to start a new venture he could share with his family. The Bryants have lived in Celina for over seven years and their children and grandchildren live in both Celina and Prosper. So, when they saw the old post office available, David knew it was kismet.

David notes that the company’s business plan was to look for communities in need of places that desired a gathering spot, a good cup of coffee, and something that would celebrate the local atmosphere --the old post office was just the place.

It took over a year in renovation and construction, but the Bryants understood the location’s significance and saved some of the post office’s markers and relics for the shop’s design. David says, “We value community, coffee, and compassion. The Prosper location abides by all of that. We serve the community with great coffee.”

This is not the only location for 1418 Coffee. In fact, the Prosper location is the third for the company. While David was looking for a place to build in Celina (close to home),

he discovered a building located on Plano’s oldest streets, 1418 K Avenue. It was unique and notable, so David jumped on the opportunity and created the first coffee shop, 1418 Coffee, using the street number as its point of origin.

Shortly after, 1418 Coffee opened its second shop in Garland, then in Prosper for the third, theoretically making 1418 Coffee a local chain restaurant.

1418 Coffee is a place to connect with great coffee but is also home to some really good food. 1418 partnered with Lauren Loafman, owner of Sugar Loaf Bakery, to create phenomenal pastries, sandwiches, and bakery items. While people love 1418 Coffee, the customers rave about the food here as well.

“You can’t exist on coffee alone. People want and need something to go with the coffee,” David says. “Sugar Loaf Bakery makes incredible food, in-house, pairing amazingly well with our coffee. It completes the entire 1418 Coffee experience,” he continued.

In addition, the company distributes its coffee, known as Celina Coffee Roasters, to many local restaurants including Lucy’s  in downtown Celina, plus The Wick , a new restaurant opening soon in Celina. Here the coffee will be branded “Swirls” pairing perfectly with The Wick’s infamous Swirls Cinnamon Rolls.  Overall, the company hopes to sell Celina Coffee Roasters in grocery stores and restaurants throughout the DFW Metroplex.

Provide a place to gather, enjoy the second most popular drink in the world, and consume great pastries is the overall mission of 1418 Coffee. David Bryant knew 1418 Coffee would be successful and is grateful for the response from customers in Prosper and Celina. “1418 has been embraced by the town just as we had hoped,” he notes. One would argue the 1418 Coffee is not just flourishing, but “Prospering”.

TROUBADOUR FESTIVAL IS BACK!

THIRD ANNUAL EVENT EXPECTED TO BE THE BIGGEST YET

East Texas natives Cody Johnson and Chase Colston, lifelong friends and owners of Double Tap Entertainment, LLC., brought their love of live music and barbeque to Celina two years ago. Modeled after Chase’s Red Dirt BBQ & Music Festival, Troubador Festival was born and brought to Celina as a “bigger, more dynamic, and even better experience...” for festival-goers. Celina has proven to be the perfect home for Cody and Chase’s fruitful vision. This month, the third annual Troubadour Festival will be the biggest yet.

The first annual event took place in Old Celina Park in 2021 and will return to the same spot this year on October 21. Headlining the event, accomplished country star Chris Young will highlight the evening. Chris is a muti-platinum artist known for his classic baritone and melt-your-heart ballads. His most recent album release “Famous Friends” is his eighth album and earned him one of the crowning achievements of country music: becoming a member of the Grand Ole Opry.

Chris will follow Randy Houser, another popular country music singer and songwriter. Randy caught his break as a

musician following a brief songwriting career in Nashville, most notable for artists he co-wrote songs with including Jamey Johnson, Dallas Davidson, and Trace Adkins. As an artist, he topped the charts with multiple of his songs and received a 2015 Country Music Association Awards Song of the Year nomination.

Want to “fall” in love with wine this fall? This season is associated with pumpkins, football, and Oktoberfest, but it is also a time for wine.  During the month of October, the North Texas Wine Association hosts the annual North Texas Wine Country Fall Wine Trail.

The North Texas Wine Country Fall Wine Trail consists of over thirty-five Texas wineries located around North Texas finishing at the Red River.  From October 1-31st you can visit wineries and vineyards in towns like Ovilla, Denison, Grapevine, Muenster, and of course, Celina. Two Celina businesses will be part of this year’s event: Eden Hill Vineyard and Valley Vines Tasting Room.

Once you purchase a ticket, you may visit the participating wineries any day they are open and taste a minimum of three wines at each location. Ticketholders will be able to taste 100 or more wines at their own pace throughout the entire month. It is a $400 value for only $49.95.

Doug Samuelson, owner of Valley Vines Tasting Room in downtown Celina, notes most people will plan their wineries according to location and days wineries are open as many are open at various parts of the week. He continues that most come to Valley Vines on Sunday as they are one of the few that are open on that day.

Samuelson reports the vineyards and wineries taking part of the wine trail are “absolutely amazing”, picturesque with Texas scenery. They may be located on 400 acres of rolling green grass or, like Valley Vines, on a quaint town square with small town charm. Doug and his wife, Melody, partook in the fall wine trail almost ten years ago as customers. Back then only eight wineries were involved in the tastings, and now the event has grown to over thirty-five. The wine trail brings people from all over Texas and the country with many who return each year,

whom a vast majority not from Celina. “It is great for Celina’s commerce and tourism,” says Doug.

Valley Vines Tasting Room has been involved with wine trails for the last two years.  Doug and Melody enjoy meeting people from all over the country.  Doug believes many people would not have come to Celina had it not been for the North Texas Wine Country Fall Wine Trail. “Once they see downtown Celina, they fall in love with it,” he proudly says.

March 2021. They joined North Texas Wine Association which included the option of joining the wine trail events. Thinking it would bring in business and name recognition, Valley Vines immediately participated. The event allows people to come in and see the shop, taste wines from the Pacific Northwest and some of their four local wines as well. The wines with Celina labels are very popular. Customers usually join the wine club as a result.

The couple has lived in Texas since 1995 as they followed their company’s headquarters relocating here.  They have been in the foodservice industry for their entire careers with many friends working for vineyards or wine distribution. It was their friends’ distribution business which prompted the Samuelsons to do the same.  For six years, they operated a wine distribution business in Texas but really wanted to share wine directly with people and opened Valley Vines Tasting Room.

Going to the Celina Square with family is how the Samuelsons were introduced to the town as their children and grandchildren live here. “Celina was our first, and only, choice when we decided to open our tasting room,” Doug notes.

Now as a regular establishment on The Square, the Samuelsons believe Valley Vines has become the “Cheers” of Celina, where everyone knows everyone by name. It is an entertainment spot to taste delicious wines, hear local live music, plus enjoy great food like flatbread pizzas, bruschetta, and charcuterie.

Valley Vines features wines from Washington State, Napa Valley California, four local labels, and even some from Croatia. They have a very popular wine club that releases a new wine every quarter. This October they will release a special Octoberfest theme label honoring the celebration.

True crime fans and foodies alike will enjoy this beautifully written novel. The novel follows a Vancouver based chef, Jeremy Papier and his failing bistro. As Papier tries to hold his dreams together, his homeless father drags him into a real-life, 1940’s “cold case” investigation. The novel mindfully uses the investigation as well as Papier’s commitment to locally grown foods to pay tribute to Vancouver’s landscape and history.

Love is in the air at this Monday night cooking school. The novel follows a cast of hapless students as they are instructed in both the kitchen and in life by the school’s owner, Lillian. Lillian is the group’s fairy godmother as she hands out morsels of advice and challenges the students with advanced recipes. A cozy read, be prepared to fall in love with the decadence of the school’s dishes as well as the sweet message that lingers long after you put down the book.

A Moveable Feast

Published after his untimely death, A Moveable Feast is Hemingway’s memoir. A love letter to 1920’s Paris and the literary movement, Hemingway charters the reader through his early years there, one cafe at a time. Along the way, familiar characters like Gertrude Stein and F. Scott Fitzgerald float in and out. This no-frills prose will stick to your ribs and leave you satisfied.

If you love science fiction, this big-hearted, culinary space opera is sure to hit the spot. The story follows impoverished Kenna, an aspiring guru who hungrily wanders the cosmos until he wins dinner at the galaxy’s most renowned restaurant, The Sol Majestic. A novel that is both fun and thought provoking, Steinmetz uses striking food imagery to explore what truly excites the spirit.

THE FLAVOR OF FALL

Apples are the trademark fruit of fall, and with the many varieties to choose from, there is an apple that is sure to please any palate. They can be included in both sweet and savory dishes and are delicious and incredibly healthful. We all have heard the saying, “An apple a day keeps the doctor away.” While they aren’t a cure-all, apples are packed full of polyphenols, antioxidants, vitamin C, B vitamins and fiber. Make the most of autumn’s best produce and the flavors of fall with these simple recipes.

APPLE GALETTE WITH CARAMEL DRIZZLE

Easier than pie but with all the same textures, this gooey warm dessert is sure to please. For simplicity, this can be made with a premade crust.

INGREDIENTS:

Crust:

• 1 1/2 cups flour

• 1/4 cup sugar

• 1/4 teaspoon salt

• 1 stick cold unsalted butter, cubed

• 1/4 cup iced cold water

Filling:

• 2 apples, peeled and sliced into thin slices

• 1/4 cup packed dark brown sugar

• 1 1/2 tablespoons flour

• 1 1/2 teaspoons lemon juice

• 1 teaspoon cinnamon

• 1/4 teaspoon ground nutmeg

• Caramel sauce

• Optional: 1/4 chopped walnuts or pecans

INSTRUCTIONS:

Crust:

(Note: If running short on time, store bought crust works great, too.)

Mix flour, salt and sugar together in a bowl. Cut in the butter. Add water and mix until moistened. Lightly knead the dough and then form into a ball. Next, flatten dough into a thick circular form and refrigerate for one hour.

Filling: Mix the apples, flour, lemon juice, cinnamon, nutmeg and brown sugar together in a bowl.

Assemble and Bake:

Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Roll the dough into a circle and set on parchment paper. Arrange apples in center of dough, leaving about one inch of space for the edges. Fold crust over the apples and press to seal edges. Drizzle with caramel sauce and sprinkle with pecans or walnuts. Bake for 35 minutes. Serve with caramel sauce and ice-cream.

ELEVATED GRILLED CHEESE

This take on the classic grilled cheese is sure to satisfy your fall cravings. With the combined flavors of savory and sweet, it packs a punch for your taste buds.

INGREDIENTS:

• 1/4 red onion, sliced

• 2 tablespoons brown sugar

• 1 tablespoon olive oil

• Sliced sourdough bread

• 1-2 tablespoons butter

• 4 ounces Brie, sliced

• Fig jam, or preferred choice of jam

• 1 Granny smith apple, sliced

• Arugula

• Thinly sliced ham, optional

INSTRUCTIONS:

Heat olive oil in the skillet and add sliced onions. Cook for a few minutes and then add brown sugar. Sauté until soft. Set aside. Butter the outside of the sourdough bread. Next, spread jam on the inside of both slices. Add cheese, apples, onions and arugula. If using meat, add as well. Top with slice of bread and grill on skillet until both sides are toasted and cheese is melted. Serve and enjoy!

It’s Pumpkin Bread Season

The Perfect Recipe For Some Autumn Comfort

Ingredients:

• 1 1/2 cups all-purpose flour

• 1 teaspoon baking soda

• 1/2 teaspoon baking powder

• 1 1/2 teaspoon ground cinnamon

• 1 teaspoon nutmeg

• 1/2 teaspoon ginger

• 1 teaspoon salt

• 1 1/2 cups canned pumpkin

• 1 1/2 cups sugar

• 2 teaspoon vanilla extract

• 1/2 cup vegetable oil or canola oil

• 1/2 cup melted butter

• 2 eggs

Directions:

1. Preheat the oven to 350 degrees.

2. In a mixing bowl, add the flour, baking soda and baking powder, spices, and salt. Set aside.

3. Combine the oil, butter, and vanilla in a liquid measuring cup.

4. In a mixing bowl (with a paddle attachment), beat the pumpkin, sugar, and eggs until combined.

5. Turn the mixer to low and slowly add the liquid ingredients. Let this process take about 1 to 2 minutes so the mixture becomes light and fluffy.

6. Using a spatula, fold the dry ingredients into the wet and slowly fold until the ingredients are blended.

7. Prepare a 10 x 5 loaf pan by buttering it really well and then adding a strip of parchment paper to the bottom and up the sides for easy removal.

8. Bake in a preheated 350-degree oven for 1 hour. The bread will be fully risen in the center, like a loaf. Make sure it’s fully cooked and brown on the top otherwise it will fall in the middle once removed from the oven.
