Our May issue is dedicated to celebrating the women in our lives. As I reflect on the many women in my life, I am thankful for each one and the impact they have made. One of the best qualities a woman can possess is having confidence with oneself, but at the same time being able to see the beauty and talent in other women and call out greatness in them, too. Women celebrating women and encouraging each other to succeed rather than competing with each other is so beautiful and rewarding. Encouraging and empowering the people in our own life can be something that comes naturally, but the impact of intentionally looking for ways to build up those in our greater community is so powerful. We all want to be seen, and when we share encouragement and consideration to those around us, barriers break down and warmth follows. Each May, some of the greatest women we celebrate are mothers. My Momma, always a teacher at heart, has inspired many as well as myself with her power to give selflessly, love endlessly, and endure always. She has been a role model of female strength to me and my daughter, her family, her church, her friends. She is involved and always present in her community. We are thankful she has shown us how to put others at ease with simply a smile and a pat on the shoulder or warm Texan hug. In this month’s issue we are sharing stories of women who have made their mark in our community in one way or another. Learn more about the Ladies Who Bingo and the difference they are making monthly. We are also recognizing local female entrepreneurs like the Six Sips Coffee Sisters and also young women like a few of our graduating Lady Bobcats who have taken their sports to a new level this past school year. All have left me inspired. In a world that thrives on competition, let’s take time to encourage each other, appreciate the beauty in everyone and lift each other up, perhaps even a stranger. I also encourage you to take time to reflect on the inspirational women in your own life and reach out to them to thank them for their impact on your life. You won’t regret it. As always, thank you for reading and we'll see you around town!

We have so much fun playing together. We also love to sit in the hot tub and just catch up on life. NAME A TIME WHERE YOU EARNED YOUR #1 MOM MUG. Probably all of the times I attend the kids sporting events (there are a lot of them!). I will drop everything to be there to support them. I love being their biggest cheerleader. HOW HAS MOTHERHOOD CHANGED YOU? It made me take the focus off of myself and it became all about my kids. I feel like I found myself when I became a mom. It has made me a happier person.

HOW DO YOU MEASURE SUCCESS AS A MOM? In my mind, real success as a mom is measured when your kids are grown and you get to see all of your love and hard work in action. I want to see my kids become adults who are good friends, hard workers, loving spouses and great parents. DID YOU FEEL PREPARED FOR MOTHERHOOD? Certainly not. I had just started my professional career so there were some work/life balance issues. I figured out quickly that I needed to be near family back in Celina. Here I was able to find my village. WHAT HAS BEEN THE MOST HEARTWARMING MOM MOMENT SO FAR? The day I locked eyes with those two for the first time. I dreamt of having kids my whole life and imagined what being a mom would look and feel like. The reality of it was even better than the dreams.

Barbara Bush once said, “I think togetherness is a very important ingredient to family life.” This embodies the family of the Six Sips Coffee Co in Celina. Six Sips Coffee Co, also known as “the coffee sisters,” is run by three sisters and their husbands. In other words, six who sip coffee. The sisters and their husbands are Ashley and Rex Cotten, Brittany and Brandon McLeod, and Cynda and Jeremy Bearden. The Cottens and McLeods live in Celina while the Beardens live in Gunter. The sisters like to say they are always together; Ashley and Brittany even have connecting backyards! All the siblings have full-time careers but after a visit to a local farmer’s market in June 2021, they decided to start a family business.

SIX SIPS COFFEE CO

Ashley saw a food trailer and coffee cart and thought “we -- my sisters and I -could do that.” After a dinner with the sisters, Six Sips was born. Immediately the siblings had a mission to focus on “purposeful relationships, clean ingredients & sustainable practices.” Brittany says that the company will ask “does this match our mission and vision for our company” before they partner with any business. It is of utmost importance to them that the products are from clean ingredients and locally sourced. They serve quality drinks that bring people together. The business now consists of the mobile coffee cart, espresso, cold brew, and other coffee related items plus monthly subscriptions. Six Sips Coffee takes the coffee cart to events like neighborhood gatherings, school festivals, and weddings. While they all have the same business goal, each bring a unique skillset. Some have backgrounds in finance, while others in teaching, restaurant equipment, or administration. Ashley says these different talents lend to a successful business. How do they keep up with it all? They use an app designed for sports teams…that and lots of coffee, of course. Six Sips Coffee hopes to expand with new business ventures. They currently are booking special events and contacting neighborhoods to get more involved with the community. Additionally, they will be at Celina’s Friday Night Markets selling items like cold brew and coffee. It is those events that make the siblings love Celina and Gunter. Brittany particularly adores Celina’s square reminiscent “of a Hallmark movie.” Cynda loves the small town feel where everyone knows everyone. When you talk to the sisters, you cannot help but want to be a part of this family. Ashley said their whole life people have asked to become “the fourth sister, because we are a close and valued family.” Like their mission statement says, they serve quality drinks that bring people together, perhaps the most important ingredient of all. Mother’s Day Brunch TREAT YOUR MOTHER AT HOME WITH THESE BRUNCH CLASSICS

Surprise the woman in your life with breakfastin-bed! These easy-to-make classics will put a smile on her face. Round out your brunch with a cup of coffee made from CELINA coffee beans sold at Lucy’s on the Square (downtown Celina) and fresh flowers.

C H O C O L AT E-D IP P E D S T R AW B E R R IE S INGREDIENTS • 1/2 cup semisweet chocolate chips • 3 tablespoons heavy cream • 12 long-stemmed strawberries

DIRECTIONS 1. Melt chocolate and heavy cream together in a bowl set over simmering water until just melted. Stir and remove from the heat. Dip each strawberry in the chocolate and set aside on waxed or parchment paper to dry.

B R E A K F A S T TA R T W I T H P A N C E T TA & GREEN ONIONS by Giada De Laurentiis INGREDIENTS • Butter and Flour, for the pan • 1 9-inch unroll-and-bake refrigerated pie crust • 1 large egg white, lightly beaten • 2 teaspoons vegetable oil • 3 ounces pancetta, cut into 1/4-inch pieces • 5 large eggs, at room temperature • 1/2 cup mascarpone cheese, at room temperature • 2 cups shredded gruyere cheese • 3 scallions, white and pale green parts, thinly sliced • 1/2 teaspoon salt • 1/2 teaspoon ground black pepper

DIRECTIONS 1. Place an oven rack in the center of the oven. Preheat the oven to 400 F. 2. Butter and flour the bottom and sides of a 9-inch tart pan with a removable bottom. Unroll the pie crust and gently press into the bottom and sides of the pan. Trim any excess from the top. 3. With the tines of a fork, prick the bottom of the pastry. Using a pastry brush, brush the crust with the beaten egg white. Put the pan on a baking sheet and bake for 10 minutes, until the egg white has set. Let cool 10 minutes. 4. Meanwhile, in a medium skillet, heat the oil over medium-high heat. Add the pancetta and cook, stirring frequently, for 6 to 8 minutes, until browned and crispy. Drain on a paper towel-lined plate. 5. In a medium bowl, lightly beat the eggs. Whisk in the mascarpone, gruyere, scallions, salt, pepper and pancetta. Pour into the cooled crust and bake for about 18 minutes, until the mixture has set and the top is golden 6. Cool for 10 minutes and then remove from pan. Cut the tart and serve warm or at room temperature. CONTINUED >

AV O C A D O TOASTS INGREDIENTS • One 8-ounce ripe avocado, halved, pitted and peeled • Fine salt and ground black pepper • 4 slices whole grain bread • 1 clove garlic, peeled and halved • 2 tablespoons extra-virgin olive oil • Flaky sea salt, for serving • Crushed red pepper flakes, optional DIRECTIONS 1. Mash the avocado with a fork until chunky. Season with fine salt and black pepper. 2. Toast the bread until browned and crisp. Lightly rub 1 side of each slice with the cut side of the garlic until fragrant; discard the garlic. Lightly brush the toasts with oil, and season with fine salt and pepper. Divide the mashed avocado evenly among the toasts, and top with more flaky sea salt, more black pepper and red pepper flakes if using.

S T R AW B E R R Y MIMOSA INGREDIENTS • 2 cups orange juice fresh squeezed or store bought with pulp (chilled) • 1/2 cup fresh strawberries with green tops removed • 1 25-ounce bottle champagne Brut, Cava, or dry Prosecco are all good options (chilled) DIRECTIONS 1. Add orange juice and strawberries to blender and blend until smooth. 2. With champagne flute tilted at a 45 degree angle, slowly fill glass halfway with champagne. 3. Top with orange-strawberry juice mixture. Garnish with strawberry and orange slices optiona.

Celina High School Female Athletes Shine in the 2021-2022 Season

Celina’s female athletes have been a force in the recent years. Cross Country and Celina Cheer brought home UIL State Titles. Volleyball made school history becoming the State Runner Up. Last month, the Girls Soccer team became State Champions. This is just a snippet of the many accomplishments of our Celina female athletes. A few of these young ladies are taking the next step and continuing their sport in college. Meet these amazing athletes. 30

MEGAN HODGES

Megan started playing volleyball at nine years old. She has been a part of club teams who have qualified for the USA Junior National Championship at the highest level. Megan has played varsity for Celina all four years. She has won numerous awards including District Setter of the Year, was MVP in multiple tournaments and was a part of the UIL All-State tournament team. Megan received a full 4-year scholarship to play D1 volleyball at Tarleton State where she is planning on majoring in Mathematics.

Taylor has been playing soccer since she was four years old. She has received numerous awards including U-15 Girls Development Academy Playoffs Golden Boot, The Dallas Morning News’ 2021 girls soccer Player of the Year, USA Today HS Sports Girls HS Soccer Player of the Year, United Soccer Coaches/MaxPreps Texas High School Player of the Week in February, ECNL Texas U-17 1st Team All Conference 2020-2021. Taylor was awarded MVP of the State Championship game in April. She has received at full scholarship to play soccer at Texas Tech where she plans to study Architecture. CONTINUED >

Addie started playing lacrosse in the second grade, most recently playing with McKinney Lacrosse Club. She has played for five travel club lacrosse teams and is currently on the nationally ranked team, Grit (Dallas) Lacrosse. Addie’s high school team won the 2021 District and State Championship, where she was named All-District. She was elected Captain this Spring. Addie will play lacrosse for Notre Dame College (NDC) in Cleveland, Ohio, joining brother Reagan where he plays football. She plans to major in Accounting with a double minor in Intelligence and Cybersecurity with hopes of being in the FBI.

Adele started running in a small running club in the fourth grade. That lead to her running 5ks, 10ks and even a half marathon. She started running track and cross country in middle school and her love and passion continued. She has won an State Championship in cross country and track plus a team championship in cross country. She has broken the 3200, 1600, and 800 school records throughout her career and still owns the 1600 and 800 with times of 4:58 and 2:11 respectively. Adele will be running for Texas Tech University and plans to study Media and Communications.

Ladies Coming Together to Help Local Philanthropies Thrive, one Bingo Ball at a Time

If you have lived in Celina for any time at all, you know that one of the greatest things about Celina is the giving spirit of its people. The covid pandemic took a toll on many of the local non-profits as requests for services increased while fundraising slowed. All non-profits rely on donations and fundraising to cover their costs of operating. In 2021, nationally nonprofits experienced a 35% increase in demand for services while 75% of them reported it negatively impacting their revenues and funding. Ladies who Bingo, created in the summer of 2021 by Brandi Guerrero, Laura Pierce, Danielle Poche, Lori Puckett, and Wendie Wigginton, is a group of Celina/Prosper mothers who saw local philanthropies struggling and knew there must be a way to help. The goal was to create a local event where “it didn’t matter what community you lived in as everyone came with the common goal of enriching our communities through these local philanthropies,” notes founding member Brandi Guerrero. For three hours once a month we are just women, coming together, “helping the families and the children of our community” adds Lori Puckett, founding member and the Prosper mom in the group. Ladies who Bingo events are held the third Tuesday of the month at Two 29 On The Square and all money raised at the events goes directly into the hands of philanthropies located in the Celina, Prosper and Gunter areas. The first event, held in August of 2021, brought 125 women from all different social groups together to support Helping Hands of Celina (a charity dedicated to supporting teachers and students in Celina ISD) handing over a check for over $3,000. These events are held

in partnership with local businesses/groups/ organizations who provide prize donations and desserts. As a result, they have been able to grow this to an event that brings together 200 women, sells out in under an hour, and continues to allow the team of ladies to find more charities in need to support. When you start to put that into perspective what does that mean for our community of Celina? Carter Morris, Executive Director of Grace Bridge, shared that a check for more than $6,700 meant that they could serve over 14,900 meals to local families. The idea that two hundred women in a room for 3 hours could change the lives of so many families is incredibly powerful and a sign that with little work comes great promise. Organizing committee member, Laura Pierce, said it best when she noted that “it’s allowed us to meet so many incredible women from our community…and it’s amazing to hear what our donations mean to them and how many people it will help.” In the short seven months that that Ladies Who Bingo has held events, $40,000 has gone to support local charities. Ask the Ladies who Bingo members and they will tell you that the look on the faces of the philanthropies is worth every minute spent putting these events on. Ladies who Bingo events are held the third Tuesday of the month at Two 29 On The Square. Tickets for each month’s event go on sale at 2:00PM the Sunday following an event.
