After all, February is the month of love. Sharing Celina Lifestyle with our town was a dream for me well worth taking the time to pursue. With the hectic schedules we often keep, it is easy to let our talents and special interests fall by the wayside. We just have to be deliberate about allowing ourselves time to pour into interests that we love and that fill us up. This month we check in with The Man Behind the Murals, Celina artist Bristen Lee Phillips, and learn about his passion for art and family. We also spotlight our local Donkey and Horse Rescue in Love and Rescue. Read about "Donkey Whisperer", Karla Vargas, and her love for helping these beautiful creatures find homes. Robert Neely, Celina resident and reigning Chili Cook-Off winner, shares his award-winning chili recipe as well as his heartfelt story on Typical Miracles that remind us all that we'll see miracles all around us if we just take a moment to reflect. grew, Lori shifted to community service serving on the Celina City Council. She said it was an amazing time to be on council because developers were pitching ideas for the housing communities that are now well-established. She also spent time serving on the Main Street Board. Lori enjoyed this because the city created events still hosted today like the Friday Farmers Market and Celina Movie Night. The board also worked on the downtown revitalization efforts and she is proud to see those ideas now implemented. Currently, Lori is a member of the Leadership Celina Inaugural Class. She particularly likes Leadership Celina because “the people in this class are from all career backgrounds holding leadership positions in their work.” She appreciates the organization’s charitable focus. Lori also is involved with Helping Hands of Celina assisting the organization with the school supply drive, the clothing drive and aid to foster families. It is her focus “because they help people of our community” she says. As a Celina realtor for well over a decade, Lori values that Celina is community-driven even with growth. She likes how the city balances the small-town charm and the commercial development. She says, “I know it is growing but Celina is still special.

The City has prepared properly for the growth. We had years to plan." When asked how real estate has changed in Celina, Lori is glad that there are actually houses to sell compared to limited inventory like in the early 2000’s. Today, new communities are popping up all over, as well as the current thriving established neighborhoods. Lori believes her career is not in sales but instead an opportunity to provide five star customer service. She states you cannot do her job without the service component, and she is happy to give back to Celina where she has spent “a third of my life having raised my children here plus making lifelong friends.” Something she believes is a blessing from above serving a town she loves. Typical Miracles A TYPICAL FAMILY MAN FINDS MIRACLES ARE HAPPENING ALL AROUND US

Looking out my backyard window during the pandemiclockdown, I had plenty of time to reflect. We are a typical family with all the typical things: 2 kids, 2 dogs, modest house, stay-at-home Mom and corporate American Dad. Pretty unremarkable to be honest, very typical and definitely nothing miraculous going on. How did we get to where we are today? What events led us to getting married, having these kids, being in this moment right now? The answer is, a series of miracles. I met my wife through my first job. I was the analyst on a project, and she was the project manager. I didn’t usually work on her projects, but the usual analyst was out on leave. I was in Atlanta and she was in St Louis. Dating folks in other states wasn’t really part of my program I had going at the time, but we instantly had chemistry. Four months after meeting on the phone through work, we met in New Orleans and the rest is history. Here we are 20 years of marriage later. Miracle number 1. It took over a year for my wife to get pregnant with our firstborn. Through that process we learned that my wife and I are both carriers of the cystic fibrosis gene. chance our child would have cystic fibrosis. Average life expectancy is around 40 years. Our son Hunter was born healthy by the grace of God. Our second child, our daughter, is adopted. We went through multiple failed in vitro attempts to try for a second child. Through DNA testing and multiple cycles of analyses, the doctors said future attempts would not be wise and the fact that we ever got pregnant with our son was remarkable. With that news, we started the adoption process. We had heard all the horror stories of failed adoptions people being in the delivery room and the birth mother changing her mind, people going years with no match, etc. Within 5 days of signing on with the agency, we were matched with a woman in Round Rock, Texas who was having a little girl. We could not believe it happened so quickly and were a little suspect to be honest. Five months later my wife cut the cord as our daughter was delivered while I stood in the hallway sobbing with tears of joy. We named her Isabella, the same name the birth mother had chosen. Our kids are miracles 2 and 3. March 2018 changed our lives forever. My wife was diagnosed with a very rare and deadly form of cancer, stage 3 cholangiocarcinoma or bile duct cancer. It is rare but now more frequently diagnosed because in the past it was commonly misdiagnosed as pancreatic cancer. The 5-year mortality rate for cholangiocarcinoma is 80%. For a few days, it felt like you constantly had a cinder block on your chest with shortness of breath, fear, anxiety. We made a decision that we were going to fight and not take one day for granted. No one is guaranteed tomorrow so we chose to rejoice in each day and take this cancer head on. That involved lots of prayer and support from family and friends. The community of Celina played no small part

in that journey. People we didn’t even know showed up with meals and gifts. People we did know offered to help in all kinds of ways. Celina's lifestyle is not something we take lightly. We are so grateful for this town and the people in it. It was hard to accept the help at first but became easier after a conversation with a good friend after I declined her offer of help. She said, “Don’t steal people’s joy, let people help you.” After 15 rounds of chemo, several major procedures, and a third opinion from a transplant surgeon in St Louis, my wife underwent a Whipple procedure with right liver resection. We were told she was inoperable by two other oncologists at other cancer centers. That was 3 years ago and today she is cancer-free. The doctors, both surgeons and the oncologist said there was no tumor tissue to be found when they went in so they even requested to see the initial biopsy slides to verify that it was indeed cancer at diagnosis. After all she had gone through and was going to go through post-surgery, I remember saying to the team, “You know, I hate to say this, but it better had been cancer.” It was. They had never seen anything like this with this cancer and that it was nothing short of a miracle. So, there you go, miracle number 4. Like I said we are typical, just like most folks, unremarkable. There are miracles happening all around us and all around you. Sometimes it just takes some reflection looking out a window during a worldwide pandemic to make you take notice and appreciate them. Meet the Artist, Bristen Lee Phillips 22

One of the best attractions in downtown Celina are the amazing murals. Did you know that many of them were painted by a Celina resident? Meet the artist, Bristen Lee Phillips. A native Texan, Bristen grew up in the Panhandle. His grandparents owned a ceramic studio in Turkey, Texas, where Bristen found his love for art. Living “in the middle of nowhere”, Bristen says they were always painting as a family. In high school he would create graphic designs, paint murals for athletic teams and local businesses, or commission paintings. After briefly playing basketball in college, Bristen lived and worked in Dallas while painting murals on the side. He then decided to finish his art degree at Texas Tech, as a third generation Red Raider. At Tech, he learned business techniques, art promotion, and how to hone his craft. Bristen always assumed he would teach art and coach basketball. He certainly did not imagine a full-time art career when he and his wife, Sara Denmark Phillips, returned to Sara’s hometown of Celina. As the father of five, Bristen stays at home and works on his art at night while Sara focuses on her career. He began posting his work online selling the art for as little as fifty dollars hoping sales would grow. CONTINUED >

This led to the City of Celina mural projects. Bristen was awarded the winning mural bid and researched historic Celina to create the collage for the first mural. Now his work can be found all around downtown Celina -- behind the Toasted Walnut, on Ohio Street, plus the Annie Jack Boutique store front. He is currently finishing up “the big wall” and about to start another mural also downtown. You can commission Bristen’s artwork as well. He paints “what people want unless they let me come up with something”. He

continues, “I am all about family." A lot of people say, ‘You probably don’t want to paint our family’, but that is honestly what I like to do.” It’s the family climate of Celina that he appreciates. Bristen loves the friendliness of Celina where the “culture is thick” with traditions. When he paints the murals, he considers the values of Celina and says, “I am grateful that I can do that.” Bristen’s kids continue the love for art constantly painting in his backyard studio in his downtown Celina home. He believes

it’s his duty as a dad to help his children discover how to build a business out of doing what you love. In fact, he advises any aspiring artist to “find what you like to do and just do it.” Words Bristen lives by today.

Love and Rescue DONKEY AND HORSE RESCUE IS A LITTLE COUNTRY MIXED WITH A LOT OF LOVE ARTICLE BY WENDIE WIGGINTON | PHOTOGRAPHY BY HOLLY FARROW

As Celina continues to grow and building takes shape along Preston Road, it’s hard not to notice a beautiful group of donkeys grazing on grass and greeting visitors with their friendly brays at the corner of Preston and Sunset. But until the sign went up in early 2021, most people didn’t know these donkeys were rescue animals. In fact, all of the animals (donkeys, horses, and mules) housed at the Rescue (on Preston) and at their second facility (Donkey and Equine Haven), are animals that Celina resident, Karla Vargas, and her team at Donkey and Horse Rescue have saved from North Texas kill pens. To date more than 50 of these formerly neglected, abused, and abandoned rescue animals have found their way onto local farms as pets and to help provide protection to local farmers and their livestock. Karla Vargas has been around equine her whole life. She grew up in Mexico City, where she started riding at the age of nine. Years later she moved to Texas bringing with her two mares and settling into the Celina area. Seven years of working with local cutting legend Punk Carter and his introducing her to her first donkey Dixie, now retired, was the driving force behind Karla’s want to rescue. If you take a moment and look at any donkey grazing in a pasture you will see they have a dark cross running across their shoulders and down their backs. A

little spiritual research ties the cross on their backs to the carrying of Jesus to the crucifixion. Science would tell you it’s a gene driven camouflage mechanism much like you see in zebras, who may be close descendants. Karla would share that the donkey's “earthy nature" connection is really what makes them special. She also believes that donkeys are especially drawn to children because of their spiritual purity. Getting the animals ready to rehome takes a lot of hard work and resources. Every animal taken from one of the local kill pens starts with a “bail” that must be paid before the animal can be rescued. Once Karla gets the rescued donkey to the Haven the arduous process of rehabilitation begins. These animals come from very abusive environments that included mistreatment and starvation. The medical bills just to get them healthy comes at significant cost. This includes specialized medications, nutrition, and follow-up care including transporting them back and forth. Donkey and Horse Rescue has a wonderful relationship with Weems and Stephens Equine Hospital in Pilot Point in caring for these animals. The emotional abuse most of these animals have endured will also require significant time to rehabilitate their hearts in addition to their bodies. The team CONTINUED >

spends hundreds of hours working with each animal to try and get them ready for a new home. And for those animals who aren’t rehabilitated, they get to spend their years in the Rescue. When asked where they could use more help in addition to money to cover the costs of the food, medical care, and rehabilitation, they ask for help in the following areas:

COLLECTING TRASH Trash is thrown and blown into areas along the fence lines and inside the property. Ingesting any of those items can make the animals sick and or kill them. Any local groups or individuals willing to come by once every week and collect the trash to keep the animals' environment safe.

TAMING AND SOCIALIZING Bring your family or group out to interact with the animals and hear their happy brays. This socialization goes a long way to getting these animals ready to rehome. Look for Marilyn Monroe and her daughter Bette Davis, both white donkeys on the property, who would love to spend time with you. Bring a couple of apples or carrots and stay a while. It will be an amazing memory for you and will have a huge impact on helping tame these beautiful animals.

After tasting all of the tough competition, Judge Chef Joey Dawkins chose Robert as the clear winner. Robert graciously shares his winning recipe with us.

Char, peel, seed and chop • Vegetable oil • 1 yellow onion and a pod of garlic chopped • 1 medium can crushed tomatoes • 1 medium can tomato sauce • 1 jar of your favorite red and green salsas • 1 chili seasoning packet • 3 tablespoons Bolners pinto bean seasoning • 1 tablespoon hatch green chili dust • 1 tablespoon New Mexico Carne Adovada seasoning • 1 tablespoon Knorr Tomato Chicken bouillon powder • 1 tablespoon smoked paprika • 1 tablespoon cocoa powder • 1 heaping teaspoon cinnamon • 1 bottle of Shiner Bock • 1 cup water and corn starch slurry

DIRECTIONS 1. Chop aromatics and veggies. Next, brown all of the protein together in a large pan, drain and put in a large pot. Sweat the onions and garlic, along with the roasted peppers in the pan. Cook until just tender, be careful not to burn the garlic. Now take everything except the corn starch slurry and add it to the pot. Bring to a boil and then turn down to a simmer, cook for 1-2 hours until preferred consistency. The last step is to add in the water and corn starch slurry and stir. 2. Serve with chopped onion, fresh or pickled jalapenos, cilantro, cotija cheese and sour cream. Serve it up at your Super Bowl party or heat up a bowl on a cold Texas night. Enjoy!
