It's hard to believe how quickly this past year has flown by! We couldn’t imagine a sweeter way to celebrate than with our first-ever Food & Drink Issue. Here, you'll find some delicious recipes to prepare at home this fall season and fun foodie spots to enjoy around town.

Let's dig into some juicy beef with our very own native Texan, cattle rancher, and legendary Hall of Fame baseball icon Nolan Ryan and his Goodstock by Nolan Ryan. MEGAN: There aren't enough words to describe how much I love visiting food trucks. It's something that I really didn't get into until I was going to college in Austin, where food trucks are plentiful. But with the growth of the food truck community in our area, it's quickly become an addiction of mine. If you have yet to grab a bite to eat from The Good Lot, Brushy Creek Food Park, or Leander Trucking Company, you're missing out! You should also check out the trucks that pop up at our local markets, festivals, and community events next time you are in attendance. Cool down with Kona Ice!  It's all over town!

PAM: I’m a wine-and-dine kind of gal and with all of the wonderful vineyards across the Texas Hill Country, one of my favorites is here in our backyard at Flat Creek Estate Winery. You can shop, taste flights of wine, eat delicious chef-inspired foods, and enjoy outdoor music with your family and friends. I love a rich glass of Cabernet Sauvignon but my all-time favorite from this vineyard is their Sparkling Almond. In a rush to entertain, you can purchase Flat Creek Wines in town at local retailers.

Your Local Butcher Shop's Legendary Legacy

When Nolan Ryan was about five years old, he realized he had a passion for cattle. This passion led to him purchasing his first calf as a young boy for just one dollar.

Having a love for the cattle business, and never anticipating a professional baseball career of 27 years, he had a plan in mind for his life after baseball. And that always involved beef.

“When I grew up in Alvin, Texas, there were three butcher shops. I always thought it was unique to be able to walk into a butcher shop

and look at the different cuts of meat and talk to the butcher,” says Nolan. “Over time, I think we’ve lost that, but I think people are finding a real interest in it again; the opportunity to talk to their butcher, discuss different products and how to prepare them. It broadens their perspective on beef.”

As you walk into Goodstock’s boutique butcher shop, you might feel as if you’re walking into a different world; a place that calls back to a simpler time. After being greeted by one of the many friendly faces behind the counter, you’re immediately drawn to the bright meat case filled with huge Tomahawks, eye-popping ribeyes and filets, and Nolan’s signature “No Fuss” burgers. On your way to the meat case, you pass coolers full of briskets, sausages, chicken wings, and other premium meats for your grill or smoker.

After perusing the meat case and coolers, you’ll find yourself looking all around at the historic memorabilia. Among the testaments to Nolan’s baseball career, the shop houses personal photos and ranching memorabilia that speak to Nolan’s history. That includes ranching and veterinary books that he used to read on the road during his playing days.

One piece of memorabilia that Nolan is especially proud of is his National Golden Spur award. Presented to him in 2011 as a testament to his decades-long contributions to the ranching community, it’s an award that he holds in very high regard. “I was very proud and honored to be selected for that award,” he says, as it is the highest honor among the livestock and ranching communities and is given to those who make a significant, positive impact on the industry and amongst

their peers. For Nolan, it’s a matter of following the Cowboy Code, which is a reflection of people of high moral character who stand for what is good, decent, and fair.

“Being a Texan means living with integrity. As Texans, and especially as ranchers, we take great pride in caring for the land and animals, and treating everyone like a neighbor,” says Nolan. “Family is the most important part of life, and that extends to the community—everyone has a seat at the table.”

Bringing the best in Texas beef to this community is something that means a great deal to Nolan and the Goodstock team. From Patch to Plate

ENJOY THE FLAVORS OF FALL WITH FANCY APRON COOKING’S BUTTERNUT SQUASH LASAGNA RECIPE

ingredients:

• 1 butternut squash

• 1 lb sausage

• 1/4 cup pinot grigio

• 2 cups marinara sauce

• 8 slices provolone cheese

• 1/2 cup shredded parmesan cheese

• 1 tbsp olive oil

• 1/2 tsp salt

directions:

1. Preheat oven to 375F.

2. Cut off the top of a butternut squash. Discard the bottom of the bulb. Peel the outside with a vegetable peeler. Use a mandolin to slice the squash into 1/8” slices.

3. Lay butternut squash slices onto two baking sheets. Lightly drizzle with olive oil and sprinkle with salt. Bake the squash for 15 minutes.

4. While the butternut squash cooks, heat a pan or skillet on medium-high. Brown the sausage and drain the fat. Add 1/4 cup wine and stir. Cook for 1-2 minutes.

5. Add tomato sauce to the sausage and cover. Reduce heat to medium-low and cook for 15 minutes.

6. Once the sauce and butternut squash are cooked, prepare your baking dish. Start with a layer of tomato sauce at the bottom. Then layer the squash, meat sauce, provolone cheese, and so on for three layers. Top with parmesan cheese.

7. Bake assembled lasagna for 20 minutes.

8. Take out of the oven and let cool for 10 minutes before serving.

For 17 years, Jonathan and Meredith Viguers have been running their business, Let Us Do The Cooking. Between its homecooked meals and exceptional service, Let Us Do The Cooking has become the region's largest full-service catering company. REDEFINING DINING

Explore Jay Roush's journey as a restaurateur at Moonie's Burger House and Tuscano Italian Kitchen

If you grew up as a military brat, you are likely familiar with moving great distances and being introduced to many regional cultures. This was the experience of Jay Roush. With a father in the US Army, Roush traveled both across the States and internationally. He has been exposed to food and cooking styles from around the world, taking those years of knowledge with him to the Greater Austin area.

“When I bought Moonie’s - Anderson Mill, I had never actually worked in a restaurant. But I’m passionate about food, love to cook, and understand good customer service,” says Roush. “Moonie’s was a great place to get my start in the restaurant business. The Anderson Mill location was a successful store—we just added some enhancements.”

These enhancements included focusing on food quality, creating a burger of the month, and making more menu items in-house. Gone away are the days of pre-cooked bacon and frozen chicken tenders! Roush also updated the look and feel of the restaurant through renovations targeted at improving the overall customer experience.

“All of this proved to be very useful with the purchase of Gino’s and the launch of Tuscano,” says Roush. “Of course, a full-service, upscale restaurant is much more labor-intensive. It requires more time, effort, and energy. That being said, we accomplished in the first five months at Tuscano what took years to accomplish at Moonie’s.”

At Tuscano, Roush tackled everything from building upgrades to staffing to menu formulation. Throughout the process of this complete rebrand, the goal was to really turn things around and drive the sustainable business that the location deserved. Today, Roush feels most fulfilled when guests come into Tuscano and rave about its improvements.

“I tell my staff at both restaurants that customers can go to ten different Italian or burger restaurants within a five-mile radius. We have to give them reasons to come here,” says Roush. “Part of that is great food and, to some degree, menu items they can’t get anywhere else. The other part is doing everything we can to make their visit to our restaurants enjoyable.”

In an industry that is known for its ups and downs, Roush is proud of the memorable dining experiences that his team has been able to establish. And whether you are in the mood for Fettucini Laredo or a Blue Moon burger, they have you covered.

THE FLAVOR OF FALL

Apples are the trademark fruit of fall, and with the many varieties to choose from, there is an apple that is sure to please any palate. They can be included in both sweet and savory dishes and are delicious and incredibly healthful. We all have heard the saying, “An apple a day keeps the doctor away.” While they aren’t a cure-all, apples are packed full of polyphenols, antioxidants, vitamin C, B vitamins and fiber. Make the most of autumn’s best produce and the flavors of fall with these simple recipes.

APPLE GALETTE WITH CARAMEL DRIZZLE

Easier than pie but with all the same textures, this gooey warm dessert is sure to please. For simplicity, this can be made with a premade crust.

INGREDIENTS:

Crust:

• 1 1/2 cups flour

• 1/4 cup sugar

• 1/4 teaspoon salt

• 1 stick cold unsalted butter, cubed

• 1/4 cup iced cold water

Filling:

• 2 apples, peeled and sliced into thin slices

• 1/4 cup packed dark brown sugar

• 1 1/2 tablespoons flour

• 1 1/2 teaspoons lemon juice

• 1 teaspoon cinnamon

• 1/4 teaspoon ground nutmeg

• Caramel sauce

• Optional: 1/4 chopped walnuts or pecans

INSTRUCTIONS:

Crust:

(Note: If running short on time, store bought crust works great, too.)

Mix flour, salt and sugar together in a bowl. Cut in the butter. Add water and mix until moistened. Lightly knead the dough and then form into a ball. Next, flatten dough into a thick circular form and refrigerate for one hour.

Filling: Mix the apples, flour, lemon juice, cinnamon, nutmeg and brown sugar together in a bowl.

Assemble and Bake:

Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Roll the dough into a circle and set on parchment paper. Arrange apples in center of dough, leaving about one inch of space for the edges. Fold crust over the apples and press to seal edges. Drizzle with caramel sauce and sprinkle with pecans or walnuts. Bake for 35 minutes. Serve with caramel sauce and ice-cream.

ELEVATED GRILLED CHEESE

This take on the classic grilled cheese is sure to satisfy your fall cravings. With the combined flavors of savory and sweet, it packs a punch for your taste buds.

INGREDIENTS:

• 1/4 red onion, sliced

• 2 tablespoons brown sugar

• 1 tablespoon olive oil

• Sliced sourdough bread

• 1-2 tablespoons butter

• 4 ounces Brie, sliced

• Fig jam, or preferred choice of jam

• 1 Granny smith apple, sliced

• Arugula

• Thinly sliced ham, optional

INSTRUCTIONS:

Heat olive oil in the skillet and add sliced onions. Cook for a few minutes and then add brown sugar. Sauté until soft. Set aside. Butter the outside of the sourdough bread. Next, spread jam on the inside of both slices. Add cheese, apples, onions and arugula. If using meat, add as well. Top with slice of bread and grill on skillet until both sides are toasted and cheese is melted. Serve and enjoy!

It’s Pumpkin Bread Season

The Perfect Recipe For Some Autumn Comfort

Ingredients:

• 1 1/2 cups all-purpose flour

• 1 teaspoon baking soda

• 1/2 teaspoon baking powder

• 1 1/2 teaspoon ground cinnamon

• 1 teaspoon nutmeg

• 1/2 teaspoon ginger

• 1 teaspoon salt

• 1 1/2 cups canned pumpkin

• 1 1/2 cups sugar

• 2 teaspoon vanilla extract

• 1/2 cup vegetable oil or canola oil

• 1/2 cup melted butter

• 2 eggs

Directions:

1. Preheat the oven to 350 degrees.

2. In a mixing bowl, add the flour, baking soda and baking powder, spices, and salt. Set aside.

3. Combine the oil, butter, and vanilla in a liquid measuring cup.

4. In a mixing bowl (with a paddle attachment), beat the pumpkin, sugar, and eggs until combined.

5. Turn the mixer to low and slowly add the liquid ingredients. Let this process take about 1 to 2 minutes so the mixture becomes light and fluffy.

6. Using a spatula, fold the dry ingredients into the wet and slowly fold until the ingredients are blended.

7. Prepare a 10 x 5 loaf pan by buttering it really well and then adding a strip of parchment paper to the bottom and up the sides for easy removal.

8. Bake in a preheated 350-degree oven for 1 hour. The bread will be fully risen in the center, like a loaf. Make sure it’s fully cooked and brown on the top otherwise it will fall in the middle once removed from the oven.
